For example, the mention that the land of the dead is "green and beautiful" in Ibn Fadlan's account is mirrored in a passage from Saxo (The medieval Danish historian, as you likely recall). In Saxo's telling of the story of Hadding, the hero travels to the "Underworld" and finds a "fair land where green herbs grow when it is winter on earth." His companion even beheads a rooster just outside of that land and flings its carcass over the wall, at which point the bird cries out and comes back to life - a feat which is highly reminiscent of another detail from Ibn Fadlan, namely the beheading of a rooster and a hen whose bodies are then tossed into the dead man's boat shortly before it's set aflame. In both cases, the emphasis is on abundant life in the world of the dead, even when death and absence prevail on earth.

The whole suggestion is predicated on a damnable fucking lie—the BIG lie, actually—one which Richman himself happily helped create and which he works hard, on a daily basis, to keep alive. See … it makes for a better article when you associate the food with a personality. Richman, along with the best and worst of his peers, built up these names, helped make them celebrities by promoting the illusion that they cook—that if you walk into one of dozens of Jean-Georges’s restaurants, he’s somehow back there on the line, personally sweating over your halibut, measuring freshly chopped herbs between thumb and forefinger. Every time someone writes “Mr. Batali is fond of strong, assertive flavors” (however true that might be) or “Jean Georges has a way with herbs” and implies or suggests that it was Mr. Batali or Mr. Vongerichten who actually cooked the dish, it ignores the reality, if not the whole history, of command and control and the creative process in restaurant kitchens. While helpful to chefs, on the one hand, in that the Big Lie builds interest and helps create an identifiable brand, it also denies the truth of what is great about them: that there are plenty of great cooks in this world—but not that many great chefs. The word “chef” means “chief.” A chef is simply a cook who leads other cooks. If you fell sick a thousand years ago, it mattered a great deal where you lived. In Europe, the resident priest would probably tell you that you had made God angry and that in order to regain your health you should donate something to the church, make a pilgrimage to a sacred site, and pray fervently for God’s forgiveness. Alternatively, the village witch might explain that a demon had possessed you and that she could cast it out using song, dance, and the blood of a black cockerel. In the Middle East, doctors brought up on classical traditions might explain that your four bodily humors were out of balance and that you should harmonize them with a proper diet and foul-smelling potions. In India, Ayurvedic experts would offer their own theories concerning the balance between the three bodily elements known as doshas and recommend a treatment of herbs, massages, and yoga postures. Chinese physicians, Siberian shamans, African witch doctors, Amerindian medicine men—every empire, kingdom, and tribe had its own traditions and experts, each espousing different views about the human body and the nature of sickness, and each offering their own cornucopia of rituals, concoctions, and cures. Some of them worked surprisingly well, whereas others were little short of a death sentence. The only thing that united European, Chinese, African, and American medical practices was that everywhere at least a third of all children died before reaching adulthood, and average life expectancy was far below fifty.14 Today, if you happen to be sick, it makes much less difference where you live. In Toronto, Tokyo, Tehran, or Tel Aviv, you will be taken to similar-looking hospitals, where you will meet doctors in white coats who learned the same scientific theories in the same medical colleges. They will follow identical protocols and use identical tests to reach very similar diagnoses. They will then dispense the same medicines produced by the same international drug companies. There are still some minor cultural differences, but Canadian, Japanese, Iranian, and Israeli physicians hold much the same views about the human body and human diseases. After the Islamic State captured Raqqa and Mosul, it did not tear down the local hospitals. Rather, it launched an appeal to Muslim doctors and nurses throughout the world to volunteer their services there.15 Presumably even Islamist doctors and nurses believe that the body is made of cells, that diseases are caused by pathogens, and that antibiotics kill bacteria.

I put a dozen pansies in my cart and moved on to carnations. Carnations are the candy of the flower world, but only the petals. The white base is bitter, she'd instructed, handing me one to try. In my young mind carnations had been in the same category as jelly beans and gumdrops. Treats to enjoy. "Impatiens." I browsed the aisles of Swansons, reading signs aloud. "Marigolds." Marigolds taste a little like citrus, and you can substitute them for saffron. My mother's face swam before my eyes, imparting her kitchen wisdom to little Lolly. It's a poor woman's saffron. Also insects hate them; they're a natural bug deterrent. I placed a dozen yellow-and-orange marigolds into my cart along with a couple different varieties of lavender and some particularly gorgeous begonias I couldn't resist. I had a sudden flash of memory: my mother's hand in her floral gardening glove plucking a tuberous begonia blossom and popping it in her mouth before offering me one. I was four or five years old. It tasted crunchy and sour, a little like a lemon Sour Patch Kid. I liked the flavor and sneaked a begonia flower every time I was in the garden for the rest of the summer.

She had her own copies of these works in the White Acre library. She had read Boehme, though she never admired him. Jacob Boehme was a sixteenth-century cobbler from Germany who had mystical visions about plants. Many people considered him an early botanist. Alma's mother, on the other hand, had considered him a cesspool of residual medieval superstition. So there was considerable conflict of opinion surrounding Jacob Boehme. The old cobbler had believed in something he called "the signature of all things"- namely, that God had hidden clues for humanity's betterment inside the design of every flower, leaf, fruit, and tree on earth. All the natural world was a divine code, Boehme claimed, containing proof of our Creator's love. That is why so many medicinal plants resembled the diseases they were meant to cure, or the organs they were able to treat. Basil, with its liver-shaped leaves, is the obvious ministration for ailments of the liver. The celandine herb, which produces a yellow sap, can be used to treat the yellow discoloration brought on by jaundice. Walnuts, shaped like brains, are helpful for headaches. Coltsfoot, which grows near cold streams, can cure the coughs and chills brought on by immersion in ice water. 'Polygonum,' with its spattering of blood-red markings on the leaves, cures bleeding wounds of the flesh.

Beyond the pork, the only other sure bet in a bowl of ramen is negi, thinly sliced green onion, little islands of allium sting in a sea of richness. Pickled bamboo shoots (menma), sheets of nori, bean sprouts, fish cake, raw garlic, and soy-soaked eggs are common constituents, but of course there is a whole world of outlier ingredients that make it into more esoteric bowls, which we'll get into later. In fact, in the sprawling ecosystem of noodle soups, it may be the alkaline noodle alone that unites the ramen universe: "If it doesn't have kansui, it's not ramen," Kamimura says. Noodles and toppings are paramount in the ramen formula, but the broth is undoubtedly the soul of the bowl, there to unite the disparate tastes and textures at work in the dish. This is where a ramen chef makes his name. Broth can be made from an encyclopedia of flora and fauna: chicken, pork, fish, mushrooms, root vegetables, herbs, spices. Ramen broth isn't about nuance; it's about impact, which is why making most soup involves high heat, long cooking times, and giant heaps of chicken bones, pork bones, or both. Tare is the flavor base that anchors each bowl, that special potion- usually just an ounce or two of concentrated liquid- that bends ramen into one camp or another. In Sapporo, tare is made with miso. In Tokyo, soy sauce takes the lead. There are not many of us left these days, or at least not many who depend on the craft for their living. But there are a few still, if one knows where to look.
