Milk thistle (Silybum marianum) has been studied in the treatment of liver disease. The active component, silymarin, is found in the entire plant but is concentrated in the fruit and seeds. Silymarin is a potent antioxidant and acts as a toxin blockade by inhibiting toxins from binding to membrane receptors on the surface of liver cells (called hepatocytes). Silymarin can protect the liver from being injured by, for example, different toxins, radiation, and iron overload. It has been successfully used to treat alcoholic liver disease, acute and chronic viral hepatitis, and toxin-induced liver diseases. (There are also some studies showing no effect of silymarin and many studies showing that vitamin C is just as good.) While seeds are generally avoided on the Paleo Approach, milk thistle seed extract may be a beneficial supplement (unless the very small amount of alcohol in the supplement is not tolerated; see here). Milk thistle tea is also a good option.

It works well served warm with custard, or cold with a cup of tea in place of a traditional fruit cake. 3 apples, peeled, cored and sliced 2 tsp golden syrup 1 tbsp butter 1 tsp ground cinnamon Sponge mix: 4 oz butter 2 tbsp golden syrup 4 oz caster sugar 2 eggs 4 oz self-raising flour 1 tbsp milk Simmer the apples with the syrup, butter and cinnamon for a few minutes until tender but not mushy. To prepare the topping, soften the butter and golden syrup in a bowl over a basin of hot water. Remove from the heat and beat in the sugar and eggs. Fold in the flour, adding milk to give the consistency of lightly whipped cream. Place the apple chunks in a greased tin or ovenproof dish and pour over the topping. Bake at Gas Mark 4 for 25 to 30 minutes until the sponge is golden brown and springy to touch.

Only paupers eat dark bread adulterated with peas and left to sour, or purchase horse-bread instead of man-bread, often baked with the floor sweepings, because it costs a third less than the cheapest whole-meal loaves. When brown bread makes it to the tables of the prosperous, it is as trenchers- plates- stacked high with fish and meat and vegetables and soaked with gravy. The trenchers are then thrown outside, where the dogs and beggars fight over them. Crusts are chipped off the rolls of the rich, both to make it easier to chew and to aid in digestion. Peasants must work all the more to eat, even in the act of eating itself, jaws exhausted from biting through thick crusts and heavy crumb. There is no lightness for them. No whiteness at all. And it is the whiteness every man wants. Pure, white flour. Only white bread blooms when baked, opening to the heat like a rose. Only a king should be allowed such beauty, because he has been blessed by his God. So wouldn't he be surprised- no, filled with horror- to find white bread the food of all men today, and even more so the food of the common people. It is the least expensive on the shelf at the supermarket, ninety-nine cents a loaf for the storebrand. It is smeared with sweetened fruit and devoured by schoolchildren, used for tea sandwiches by the affluent, donated to soup kitchens for the needy, and shunned by the artisan. Yes, the irony of all ironies, the hearty, dark bread once considered fit only for thieves and livestock is now some of the most prized of all.

There aren’t many soup machines around, but you are probably familiar with beverage vending machines. Such machines usually have a slot for coins, an opening for cups, and rows of buttons. The first row has buttons for coffee, tea and cocoa. The second row is marked: no sugar, one spoon of sugar, two spoons of sugar. The third row indicates milk, soya milk, no milk. A man approaches the machine, inserts a coin into the slot and presses the buttons marked ‘tea’, ‘one sugar’ and ‘milk’. The machine kicks into action, following a precise set of steps. If a movie portrayed a man and woman in the ecstatic dance of love—actually showed naked bellies and breasts, burning lips and adoring eyes and the glistening, impassioned organs of sex—most people I know would rather their children watch the vile action movie. For boosting antioxidant levels and for general health, I take a comprehensive vitamin-and-mineral combination, alpha lipoic acid, coenzyme Q10, grapeseed extract, resveratrol, bilberry extract, lycopene, silymarin (milk thistle), conjugated linoleic acid, lecithin, evening primrose oil (omega-6 essential fatty acids), n-acetyl-cysteine, ginger, garlic, l-carnitine, pyridoxal-5-phosphate, and echinacea. I also take Chinese herbs prescribed by Dr. Glenn Rothfeld. For reducing insulin resistance and overcoming my type 2 diabetes, I take chromium, metformin (a powerful anti-aging medication that decreases insulin resistance and which we recommend everyone over 50 consider taking), and gymnema sylvestra. To improve LDL and HDL cholesterol levels, I take policosanol, gugulipid, plant sterols, niacin, oat bran, grapefruit powder, psyllium, lecithin, and Lipitor. To improve blood vessel health, I take arginine, trimethylglycine, and choline. To decrease blood viscosity, I take a daily baby aspirin and lumbrokinase, a natural anti-fibrinolytic agent. It’s an all-time favorite with my family, too, and, when it’s my turn to host fellowship hour at church, it’s always part of my repertoire!   Ingredients for Cake 1 cup sugar ¼ pound butter (softened) 1 cup sour cream 1 teaspoon vanilla 2 eggs 2 cups flour (sifted) 1 teaspoon baking powder 1 teaspoon baking soda Pinch salt   Ingredients for Topping ½ cup chopped walnuts ½ cup sugar 1 teaspoon cinnamon   Directions Mix topping ingredients together. Set aside. Preheat oven to 350 degrees Fahrenheit. Grease and flour angel-food cake pan. Cream together butter and sugar with electric mixer. Add eggs and sour cream and beat until smooth. Sift together remaining dry ingredients in a separate bowl and blend into mixture. Batter will be thick. Spread half the batter into the angel-food cake pan and sprinkle with half of the sugar, cinnamon, and nut topping. Spread remaining batter on top and sprinkle remaining sugar, cinnamon, and nut mixture. (I gently press down the topping with the back of a spoon.) Bake for 40 minutes or until toothpick comes out clean. Let cool and remove from pan. Enjoy anytime with a hot cup o’ coffee or tea or a big glass of milk!

In our Christian walk we are encouraged not to remain like babes and children, but to wean ourselves from spiritual milk and soft food and grow into healthier foods. God wants us to exhibit signs of maturity, and many times this comes through very difficult life situations. My experience validates that we grow through difficulties and not through just the good times. If we are not mature, the reason is observable: We have not been workers but idlers in our study of the Bible. Those who are just "Sunday Christians" will never grow to maturity-it takes the study of the Scriptures to become meat-eaters of God's Word. We must be workers in the Scriptures. Paul told Timothy, "Be diligent to present yourself approved to God as a workman... accurately handling the word of truth" (2 Timothy 2:15). We must roll up our sleeves and do the job ourselves instead of expecting a pastor or teacher to do it for us. PRAYER Father God, thank You for inspiring men of old to write Your Scriptures. I remember many of us getting together where we sat, each of us holding our cup and mixing the coffee powder with a little bit of water or milk inside. The more you swirled, the better the foam created in the cup. We preferred the tube milk over the fresh milk of the Kibbutz. Mixing coffee with our hands till it foamed  was a kind of a ceremony. Over time it became something of a ritual. I think in those days, there was intense activity of the commercial companies distributing instant coffee among consumers. “Ness café”, they called it. There was a great demand for milk, which arrived to us in tubes. It was imported. Maybe they were manufactured in Holland. Drinking instant coffee with that milk and the foam we created with our own hands using a simple spoon, was the heart's desire of all coffee lovers in the nest. I was moved by the very simple preparation of it – boiling water in an electric kettle, one teaspoon of this new wonder, the instant coffee in the cup, and you have your coffee. It was amazing. I used to compare this action to the method of tea preparation by my mother at home, or the rare preparing of the black coffee for guests, and suddenly I realized how debilitating and complex her job was compared to what we were doing. There in Shomrat Kibbutz I learned to drink and enjoy instant coffee.

Use the empty containers to measure the other ingredients 2 eggs 2 containers sugar (or just one, depending on how sweet you like it) 1 teaspoon vanilla Just under 1 container vegetable oil 4 containers flour 1 1⁄2 teaspoons baking powder Crème fraîche (optional) Preheat oven to 375oF. Use vegetable oil to grease a 9-inch round cake pan or a loaf pan. Gently combine the yogurt, eggs, sugar, vanilla, and oil. In a separate bowl, mix the flour and baking powder. Add the dry ingredients to the wet ingredients; mix gently until ingredients are just combined (don’t overmix). You can add 2 containers frozen berries, a container of chocolate chips, or any flavoring you like. Bake for 35 minutes, then five minutes more if the cake doesn’t pass the knife test. It should be almost crispy on the outside, but springy on the inside. Let it cool. The cake is delicious served with tea and a dollop of crème fraîche.

Or what about the milk in our tea? We’re not told these things on the label but it doesn’t make them any less true.

The crowd trails us through the park as we play games at the Penny Arcade and ride Pirates of the Caribbean. Eriku insists on sampling all the foods available. In between Splash Mountain and Big Thunder Mountain, we eat Ukiwaman, shrimp in a doughy bun in adorable Donald Duck packaging. We have curry rice and then a milk tea drink with berries on the bottom and whipped cream and nuts at the top for lunch.
