When a drip of green tea skated across the surface of the hot meal, we poured out a huge gob of batter. It sputtered and heaved. With a metal spatula and chopsticks, we pushed and nagged the massive pancake until it became firm and golden on both sides. Our Japanese neighbors were doing the same. After cutting the doughy disc into wedges, we buried our portions under a mass of mayonnaise, juicy strands of red pickled ginger, green seaweed powder, smoky fish flakes, and a sweet Worcestershire-flavored sauce. The pancake was crispy on the outside, soft and savory inside- the epitome of Japanese comfort food. Another day, one of Bob's roommates, Theresa, took me to a donburi restaurant, as ubiquitous in Japan as McDonald's are in America. Named after the bowl in which the dish is served, donburi consists of sticky white rice smothered with your choice of meat, vegetables, and other goodies. Theresa recommended the oyako, or "parent and child," donburi, a medley of soft nuggets of chicken and feathery cooked egg heaped over rice, along with chopped scallions and a rich sweet bouillon. Scrumptious, healthy, and prepared in a flash, it redefined the meaning of fast food.

What would happen at your neighborhood bar if a couple of confused foreigners came in with a child and didn't even know how to order a drink? Would someone send them a free fish? I should add that it's not exactly common to bring children to an izakaya, but it's not frowned upon, either; also, not every izakaya is equally welcoming. Some, I have heard, are more clubby and are skeptical of nonregulars, whatever their nationality. But I didn't encounter any places like that. Oh, how was the food? So much of the seafood we eat in the U.S., even in Seattle, is previously frozen, slightly past its prime, or both. All of the seafood at our local izakaya was jump-up-and-bite-you fresh. This was most obvious in the flounder and the scallops. A mild fish, steamed, lightly seasoned, and served with tofu does not sound like a recipe for memorable eating, but it was. The butter-sauteed scallops, meanwhile, would have been at home at a New England seaside shack. They were served with a lettuce and tomato salad and a dollop of mayo. The shellfish were cooked and seasoned perfectly. I've never had a better scallop.

First, a sushi feast, a twelve-piece procession of Tsukiji's finest- fat-frizzled bluefin, chewy surf clam, a custardy slab of Hokkaido uni- washed down with frosty glasses of Kirin. Then a bowl of warm soba from the outer market, crowned at the last second with a golden nest of vegetable tempura.

At the end, on the right, is pickled sweetfish sushi, served whole. The round dish at the bottom is a selection of wild vegetables: butterbur buds, devil's-walking-stick, ostrich fern, momiji-gasa, bracken shoots, and smilax. Normally those would be served as tempura, but I've gone for something a little different and deep-fried them Western-style instead. Sprinkle them with matcha salt if you like, or they go very nicely with this green peppercorn-infused Worcestershire sauce." Nagare produced a bottle of white wine. Here's the soup. Nothing new, but if you're going to have broth in summer, it has to be botan-hamo: lightly boiled hamo eel, named for the way it's cut into the shape of a peony to remove the bones. As for this ayu rice, the only ingredient is in the name. The fish are deboned, so all you need to do is sprinkle some of these chopped mitsuba leaves on top. The pickles on the side are eggplant and myoga ginger. Now, you tuck in, and I'll bring you a cup of hojicha.

Everything on this platter is hamo eel or ayu sweetfish: two essential parts of Kyoto summer cuisine," explained Nagare. "Starting from the top left: miniature hamo sushi rolls. One teriyaki-style, and one shirayaki--- without any seasoning, that is. Next to that, in the small bowl, is shredded hamo eel skin, pickled and served with okra. On top of the bamboo grass leaf are two little ayu, caught in the Katsura River--- salted and grilled. The deep-fried dish in the middle on the right is ayu fry. They're sprinkled with sansho pepper salt, so you can enjoy them as they are. Bottom right, on the perilla leaf, is hamo no otoshi: boiled slices of the eel, served with pickled plum paste and myoga ginger. Bottom left, meanwhile, is hamo no hasamiyaki, which is seasoned with white miso and fried between slices of Yamashina eggplant.

Shokado bento boxes were originally paint boxes, you know--- that's why they're divided up into squares like that. Anyway, in the top left are the appetizers. Wakasa winter mackerel, marinated in vinegar and served sashimi-style; Hinase oysters simmered in a sweet soy and mirin sauce; Kyoto-reared chicken, deep-fried in the Toji temple style using a yuba batter; vinegared Taiza crab; stewed Shishigatani pumpkin; and Omi beef, marinated and deep-fried Tatsuta-age style. All served bite-size. In the top right is what we call 'imobo'--- dried codfish stewed with ebi-imo taro. I've served it with grated yuzu from Mio. Should brighten up the flavor a little. Bottom right is a selection of sashimi: lightly salted Wakasa tilefish served on a bed of kelp, and Toyama winter yellowtail, sliced extra thin and wrapped in thin slices of lightly pickled Shogoin turnip. Try those with a bit of the shredded shio-kombu--- kelp simmered in soy sauce. And bottom left is the rice, cooked in soft-shelled turtle broth. It's a very delicate flavor, so you can eat it just like you would plain white rice. In that little sake cup is some squeezed ginger juice--- try drizzling that on the rice, if you like. It'll really bring out the flavor. The soup is white miso with chunks of millet cake. Take your time, and enjoy!

They ordered all the things they'd never eaten before, things from the sea: Venus clams and whelks, potatoes pressed with caviar, champagne and Chambertin, Rex finally pulling the waiter aside and asking for more caviar, making a bowl with his giant hands, the best caviar he'd ever eaten, and by god, he wanted his fill. They would eat caviar all across the city that week, in fine restaurants and cafés and bistros, mounded in ice bowls, from tiny ivory spoons, spread on toast, on blinis, on eggs and potatoes, but Rex would always return to that first night, his first bite, and how he would never have another as good.

Cutting a bit of translucent smoked sturgeon, you expected it to shred if you breathed on it. Manya achieved status as his sturgeon expert. She had grown up with sturgeon, a staple along the Black Sea, and she pronounced a sample too salty, too mealy from being packed in ice, too strong in flavor, or absolutely perfect. Saperstein, a purist, inevitably felt sad that his customers did not truly appreciate his top-of-the-line products. He communed with Bubby over a slice of sturgeon or belly lox as if having a religious moment. Even when bad weather kept customers away from our restaurant and we were low in cash, Bubby invested in a few slices of smoked sturgeon, not for her customers, but for our family. She could ignore lox, smoked whitefish, pickles or fresh herring, but she couldn't do without a weekly treat of sturgeon. To prove that he was a sporting man who approved of her taste, Saperstein created a cone from white paper and dropped in some caviar, which he kept in a tin secreted in a hole under the counter- God forbid during a robbery, the thieves would never discover his hiding place.

Truffles, foie gras, seafood, and caviar for forty-five people exceeded the restaurant's resources in both finances and prep time. The food at family meal was intended to be simple but tasty. We cooks took turns organizing and cooking for the restaurant staff before the first seating of the evening. In the early years, hand-stretched pizza had made regular appearances, as did roasted chicken, spaghetti and meatballs, and vats of chicken noodle soup. Recently, though, some newer recruits in the kitchen had turned family meal into more of a family feud. Eager to show Alain their individual style and prowess, the newbies had whipped up ten square feet of vegetarian lasagna with made-from-scratch ribbons of pasta, individual Beef Wellingtons with flaky pastry crusts, pillowy gnocchi dunked in decadent Bleu d'Auvergne with a finish of nutmeg grated tableside. Irritatingly good but, in my opinion, completely missing the point.

I’d gotten to the restaurant first and settled down with a gin and tonic, knowing Musk would—as ever—be late. His head tilted slightly down while walking, a quick handshake hello after reaching the table, and then butt in seat. From there, Musk needs a few minutes before he warms up and looks at ease.

Grapevines have been cultivated in the Greek Isles for some four thousand years. Wines from Rhodes and Crete were already renowned in antiquity, and traders shipped them throughout the Greek Isles and beyond. The light reds and gently sweet whites complement the diverse, multiflavored Greek seafood, grilled meats, and fresh, ripe fruits and vegetables. Sitting at a seaside tavern enjoying music and conversation over a midday meze and glass of retsina, all the cares in the world seem to evaporate in the sparkling sunshine reflected off the brightly hued boats and glistening blue waters.
