Finding us hiding under the table, they decided to take Tobias as a substitute for Papa. ‘When your husband hands himself in, we’ll release the boy,’ was what they said. ‘It was cold outside – a freezing Austrian winter’s night – but they wouldn’t let Tobias fetch his coat. As soon as they laid hands on him, Mama started screaming. She let go of Gerta and grabbed Tobias – we both did – pulling on his arms, yelling that they couldn’t take him, that he’d done nothing wrong. Gerta was barking. I saw one of the men swing his boot at ther. She went flying across the room, hitting the mantelpiece. It was awful. She didn’t bark after that.’ It took a moment for the horror of what she was saying to sink in. ‘Don’t tell me any more if you don’t want to,’ I said gently. She stared straight ahead like she hadn’t heard me. ‘They took my brother anyway. He was ten years old. ‘We ran into the street after them, and it was chaos – like the end of the world or something. The whole town was fully of Nazi uniforms. There were broken windows, burning houses, people sobbing in the gutter. The synagogue at the end of our street was on fire. I was terrified. So terrified I couldn’t move. But Mum kept running. Shouting and yelling and running after my brother. I didn’t see what happened but I heard the gunshot.’ She stopped. Rubbed her face in her hands. ‘Afterwards they gave it a very pretty name: Kristallnacht – meaning “the night of broken glass”. But it was the night I lost my mother and my brother. I was sent away soon after as part of the Kindertransport, though Papa never got used to losing us all at once. Nor did I. That’s why he came to find me. So I put my arm through Esther’s and we sat, gazing out to sea, two old enemies who were, at last, friends. She was right – it was her story to tell. But hoppel poppel is fly by the seat of your pants, it doesn't need a recipe; it's a mess, just like me. It's just what the soul needs. I grab an onion, and chop half of it. I cut up the cold cooked potatoes into chunks. I pull one of my giant hot dogs out, and cut it into thick coins. Grand-mere used ham, but Joe loved it with hot dogs, and I do too. Plus I don't have ham. I whisk six eggs in a bowl, and put some butter on to melt. The onions and potatoes go in, and while they are cooking, I grate a pile of Swiss cheese, nicking my knuckle, but catching myself before I bleed into my breakfast. By the time I get a Band-Aid on it, the onions have begun to burn a little, but I don't care. I dump in the hot dogs and hear them sizzle, turning down the heat so that I don't continue to char the onions. When the hot dogs are spitting and getting a little browned, I add the eggs and stir up the whole mess like a scramble. When the eggs are pretty much set, I sprinkle the cheese over the top and take it off the heat, letting the cheese melt while I pop three slices of bread in the toaster. When the toast is done, I butter it, and eat the whole mess on the counter, using the crispy buttered toast to scoop chunk of egg, potato, and hot dog into my mouth, strings of cheese hanging down my chin. Even with the burnt onions, and having overcooked the eggs to rubbery bits, it is exactly what I need.

When faced with a choice, Bay picks “all of the above” every time. He’s like a dog in one of those obedience trials who’s like, “Obedience? I don’t know her,” and just goes buck wild on the sausages. Except instead of “obedience” it’s “having a coherent plot that holds the audience’s attention” and instead of “sausages” it’s “explosions, Ferrari chases, and how many different cool kinds of box could a gun come in.

Then add 2 1/2 cups milk, one 13-ounce can evaporated milk, 2 tablespoons nutmeg, 2 tablespoons vanilla, a loaf of wet bread in chunks and pieces (any bread will do, the worse the better) and 1 cup raisins. Stir to mix. Pour into a deep greased casserole and bake at 350* for 2 hours, stirring after the first hour. Serve warm with hard sauce.

I watch an entire twenty-five minutes of a girl in Tokyo with dyed wine-red-fading-into-pink hair eating sausages, toast, a Japanese corn dog made with hotcake mix dipped in ketchup, demae hot sesame ramen with an egg plopped in, pizza, stir-fried udon, seaweed salad and barley rice, tapioca and black tea ice cream, soy-glazed salmon on okayu, pearl milk bubble tea. Each time she eats, the microphone hones in on the sounds of her eating---slurping, chewing, crunching. When she drinks her bubble tea, there's a loud pop as the straw goes through the lid, and the sound of gulping. Gulp, gulp, gulp. I realize that I'm gulping along to the video, imagining that the bubble tea is blood.
