Here’s my protocol for my usual monthly 3-day fast from Thursday dinner to Sunday dinner: On Wednesday and Thursday, plan phone calls for Friday. Determine how you can be productive via cell phone for 4 hours. This will make sense shortly. Have a low-carb dinner around 6 p.m. on Thursday. On Friday, Saturday, and Sunday mornings, sleep as late as possible. The point is to let sleep do some of the work for you. Consume exogenous ketones or MCT oil upon waking and 2 more times throughout the day at 3- to 4-hour intervals. I primarily use KetoCaNa and caprylic acid (C8), like Brain Octane. The exogenous ketones help “fill the gap” for the 1 to 3 days that you might suffer carb withdrawal. Once you’re in deep ketosis and using body fat, they can be omitted. On Friday (and Saturday if needed), drink some caffeine and prepare to WALK. Be out the door no later than 30 minutes after waking. I grab a cold liter of water or Smartwater out of my fridge, add a dash of pure, unsweetened lemon juice to attenuate boredom, add a few pinches of salt to prevent misery/headaches/cramping, and head out. I sip this as I walk and make phone calls. Podcasts also work. Once you finish your water, fill it up or buy another. Add a little salt, keep walking, and keep drinking. It’s brisk walking—NOT intense exercise—and constant hydration that are key. I have friends who’ve tried running or high-intensity weight training instead, and it does not work for reasons I won’t bore you with. I told them, “Try brisk walking and tons of water for 3 to 4 hours. I bet you’ll be at 0.7 mmol the next morning.” One of them texted me the next morning: “Holy shit. 0.7 mmol.” Each day of fasting, feel free to consume exogenous ketones or fat (e.g., coconut oil in tea or coffee) as you like, up to 4 tablespoons. I will often reward myself at the end of each fasting afternoon with an iced coffee with a bit of coconut cream in it. Truth be told, I will sometimes allow myself a SeaSnax packet of nori sheets. Oooh, the decadence. Break your fast on Sunday night. Enjoy it. For a 14-day or longer fast, you need to think about refeeding carefully. But for a 3-day fast, I don’t think what you eat matters much. I’ve done steak, I’ve done salads, I’ve done greasy burritos. Evolutionarily, it makes no sense that a starving hominid would need to find shredded cabbage or some such nonsense to save himself from death. Eat what you find to eat.

Soon we were at Camp Eagle, a U.S. military base near Tuzla in Bosnia. The Tuzla airstrip was in constant use, sending planes to bomb the Taliban. As I talked to the service members there, I learned that before Camp Eagle had mostly been a peacekeeping mission to keep the Bosnian War from being reignited. They talked about having to be careful of landmines left behind. “I’m staying put with you guys then,” I said. I was mortified that before I came there, I had never even heard of Bosnia, and certainly didn’t know that American troops were there. When I’d reached out to the USO to volunteer to perform for service members, I’d had a vision of these sorts of big brothers and sisters in the military coming in to save the day. I was gonna put on this big show for them, high-octane with lots of red, white, and blue peekaboo clothes that I felt I had to wear for them. I even had a bikini top made from parachute material to go with army pants. But when I met actual service members, I wasn’t prepared for them to be so young. They were all my age or even younger. I did “God Bless America” as my last song at each stop, a capella, and Bosnia is where things changed. It was right at that first “stand beside her and guide her.” These men and women started to sing along with me, and I noticed they were just bawling their eyes out, so of course I did, too, and I knew that this was more than a song. It was a prayer. They just wanted to be with the people they loved, in the prairies, the mountains, and, yes, the rivers. I was so privileged to share in that moment. I have done a lot of singing at bases and aircraft carriers since, and every time I do “God Bless America,” I ask everyone to sing along. “I don’t care if you think you can’t sing,” I say. “I want to hear you.

Alto Adige day seems to always be a bit easier, as these northern wines tend to have a nice palate-cleansing and reviving acidity that certainly helps when there are so many wines to taste. On that day we taste wines like crisp, clean Sauvignon Blanc from Zemmer and the elegant Chardonnays of Elena Walch, both made from international grape varieties, and Hofstatter Pinot Bianco and Mayr-Nusser Lagrein made from homegrown grapes. On the other hand, Tuscany day can be a tough one, with all of the rich, high-octane reds that are typically presented, and for the tremendous number of high-quality wines that we just cannot bring ourselves to forgo swallowing. Tuscany provides us with glassfuls of the classic Sangiovese-based Chianti, Brunello di Montalcino, and Vino Nobile di Montepulciano, and their more reasonably priced facsimilies: Sangiovese Toscana, Rosso di Montalcino, and Rosso di Montepulciano. The neoclassic Tuscan reds include the blends in which Sangiovese is married with grapes like Cabernet Sauvignon, Merlot, and Syrah. These are the Super Tuscan wines. We call these few weeks of intense wine tasting “The Gauntlet.” As much fun as it sounds, you realize that tasting can actually be very hard work. Thank goodness for the chef’s sandwiches: Sicilian Tuna to revive the palate after all of that Sicilian Nero d’Avola, Bresaola and Arugula on Lombardy day when we have been drinking Sforzato di Valtellina and its simpler cousin, Rosso di Valtellina, both made from Chiavennesca—all perfect vehicles for bringing our palates and ourselves back to life!
