The hardest part of returning to a truly healthy environment may be changing the current totally unsustainable heavy-meat-eating culture of increasing numbers of people around the world. But we must try. We must make a start, one by one.

Similarly, a vegetarian, thinking that answering these questions will provide enlightenment, may patiently explain that if plants have life, then why not be responsible solely for the plants one eats at the table rather than for the larger quantities of plants consumed by the herbivorous animals before they become meat? In each case a more radical answer could be forwarded: "Men need first to acknowledge how they benefit from male dominance," "Can anyone really argue that the suffering of this lettuce equals that of a sentient cow who must be bled out before being butchered?" But if the feminist or vegetarian responds this way they will be put back on the defensive by the accusation that they are being aggressive. What to a vegetarian or a feminist is of political, personal, existential, and ethical importance, becomes for others only an entertainment during dinnertime.

CHEESE Cheese is the result of microbes such as bacteria or fungi competing for a food source. Each microbe attempts to use chemicals to convince other forms of life not to eat that food source. Sometimes we call those chemicals antibiotics or mold toxins; other times we call them “delicious.” As your liver works to process cheese toxins, your Labrador brain demands energy, and you are likely to experience food cravings as a result. This is why so many people simply love cheese—they eat it, and then they crave more. Mold toxins in cheese and dairy come from two places. The first is indirect contamination, which happens when dairy cows eat feed containing mycotoxins that pass into the milk. The more contaminated animal feed is, the cheaper it is, so producers don’t normally strive to eliminate toxins from animal food. The second source of toxins in cheese comes from direct contamination, which occurs when we accidentally or intentionally introduce molds to cheese. The most common mycotoxins that are stable in cheese are citrinin, penitrem A, roquefortine C, sterigmatocystin, and aflatoxin. Some others, like patulin, penicillic acid, and PR toxin, are naturally eliminated from cheese. Sterigmatocystin is carcinogenic.22 I’m not trying to be alarmist. By later Vedic and early Hindu times, during the first millenium B.C., the feasts came to be managed by the priestly caste of Brahmans, who erected rituals of sacrifice around the killing of animals and distributed the meat in the name of the Aryan chiefs and war lords. After 600 B.C., when populations grew denser and domestic animals became proportionately scarcer, the eating of meat was progressively restricted until it became a monopoly of the Brahmans and their sponsors. Ordinary people struggled to conserve enough livestock to meet their own desperate requirements for milk, dung used as fuel, and transport. During this period of crisis, reformist religions arose, most prominently Buddhism and Jainism, that attempted to abolish castes and hereditary priesthoods and to outlaw the killing of animals. The masses embraced the new sects, and in the end their powerful support reclassified the cow into a sacred animal. So it appears that some of the most baffling of religious practices in history might have an ancestry passing in a straight line back to the ancient carnivorous habits of humankind. Cultural anthropologists like to stress that the evolution of religion proceeds down multiple, branching pathways. But these pathways are not infinite in number; they may not even be very numerous. It is even possible that with a more secure knowledge of human nature and ecology, the pathways can be enumerated and the directions of religious evolution in individual cultures explained with a high level of confidence.

Since the 1980s virtually all the sodas and most of the fruit drinks sold in the supermarket have been sweetened with high-fructose corn syrup (HFCS) -- after water, corn sweetener is their principal ingredient. Grab a beer for you beverage instead and you'd still be drinking corn, in the form of alcohol fermented from glucose refined from corn. Read the ingredients on the label of any processed food and, provided you know the chemical names it travels under, corn is what you will find. For modified or unmodified starch, for glucose syrup and maltodextrin, for crystalline fructose and ascorbic acid, for lecithin and dextrose, lactic acid and lysine, for maltose and HFCS, for MSG and polyols, for the caramel color and xanthan gum, read: corn. Corn is in the coffee whitener and Cheez Whiz, the frozen yogurt and TV dinner, the canned fruit and ketchup and candies, the soups and snacks and cake mixes, the frosting and candies, the soups and snacks and cake mixes, the frosting and gravy and frozen waffles, the syrups and hot sauces, the mayonnaise and mustard, the hot dogs and the bologna, the margarine and shortening, the salad dressings and the relishes and even the vitamins. (Yes, it's in the Twinkie, too.) There are some forty-five thousand items in the average American supermarket and more than a quarter of them now contain corn. This goes for the nonfood items as well: Everything from the toothpaste and cosmetics to the disposable diapers, trash bags, cleansers, charcoal briquettes, matches, and batteries, right down to the shine on the cover of the magazine that catches your eye by the checkout: corn. Even in Produce on a day when there's ostensibly no corn for sale, you'll nevertheless find plenty of corn: in the vegetable wax that gives the cucumbers their sheen, in the pesticide responsible for the produce's perfection, even in the coating on the cardboard it was shipped in. Indeed, the supermarket itself -- the wallboard and joint compound, the linoleum and fiberglass and adhesives out of which the building itself has been built -- is in no small measure a manifestation of corn.

Egg-laying hens, for example, have a complex world of behavioural needs and drives. They feel strong urges to scout their environment, forage and peck around, determine social hierarchies, build nests and groom themselves. But the egg industry often locks the hens inside tiny coops, and it is not uncommon for it to squeeze four hens to a cage, each given a floor space of about 10 by 8.5 inches. The hens receive sufficient food, but they are unable to claim a territory, build a nest or engage in other natural activities. Indeed, the cage is so small that hens are often unable even to flap their wings or stand fully erect. Pigs are among the most intelligent and inquisitive of mammals, second perhaps only to the great apes. Yet industrialised pig farms routinely confine nursing sows inside such small crates that they are literally unable to turn around (not to mention walk or forage). The sows are kept in these crates day and night for four weeks after giving birth. Their offspring are then taken away to be fattened up and the sows are impregnated with the next litter of piglets. Many dairy cows live almost all their allotted years inside a small enclosure; standing, sitting and sleeping in their own urine and excrement. They receive their measure of food, hormones and medications from one set of machines, and get milked every few hours by another set of machines. The cow in the middle is treated as little more than a mouth that takes in raw materials and an udder that produces a commodity. Treating living creatures possessing complex emotional worlds as if they were machines is likely to cause them not only physical discomfort, but also much social stress and psychological frustration.

The female calves, like their mothers, face a lifetime of repeated forcible impregnation and anguish over their stolen babies. Their bodies are strained to the limit in order to squeeze out every last drop of milk. Today, British cows typically produce 10 times more milk than they would naturally in order to feed their calves.

The human commitment to harmony, justice, peace, and love is ironic as long as we continue to support the suffering and shame of the slaughterhouse and its satellite operations. Vegetarians do not eat animals, but, according to the traditional use of the term, they may choose to consume dairy products and eggs, in which case they are called lacto-ovo (milk and egg) vegetarians. In reality, the distinction between meat on the one hand and dairy products and eggs on the other is moot, as the production of milk and eggs involves as much cruelty and killing as meat production does: surplus cockerels and calves, as well as spent hens and cows, have been slaughtered, bludgeoned, drowned, ditched, and buried alive through the ages. Spent commercial dairy cows and laying hens endure agonizing days of pre-slaughter starvation and long trips to the slaughterhouse because of their low market value.

It is the logical solution to what would be, just business. So the Matrix story albeit written to lift for all the ceiling of what is possible, has inevitably shined a light on the entire path that was chosen and the pre-chosen road ahead that collective corporations were on creating a separate state of politically connected elite and those seeking award through serving them. A natural progression of what was set in place from the beginning. The flaw was in the design of the collective corporate system, globally intertwined now, and immersed in politics, protecting its own, making the question real this time, how to balance the equation.

Larry took to following the dice with such ease and joy compared to the soul-searching gloom that I often went through before following a decision, that I had to wonder what happened to every human in the two decades between seven and twenty-seven to turn a kitten into a cow. Why did children seem to be so often spontaneous, joy-filled and concentrated while adults seemed controlled, anxiety-filled and diffused? It was the Goddam sense of having a self: that sense of self which psychologists have been proclaiming we all must have. What if - at the time it seemed like an original thought - what if the development of a sense of self is normal and natural, but is neither inevitable nor desirable? What if it represents a psychological appendix: a useless, anachronistic pain in the side? - or, like the mastodon's huge tusks: a heavy, useless and ultimately self-destructive burden? What if the sense of being some-one represents an evolutionary error as disastrous to the further development of a more complex creature as was the shell for snails or turtles? He he he. What if? indeed: men must attempt to eliminate the error and develop in themselves and their children liberation from the sense of self. Man must become comfortable in flowing from one role to another, one set of values to another, one life to another. Men must be free from boundaries, patterns and consistencies in order to be free to think, feel and create in new ways. Men have admired Prometheus and Mars too long; our God must become Proteus. I became tremendously excited with my thoughts: 'Men must become comfortable in flowing from one role to another' - why aren't they? At the age of three or four, children were willing to be either good guys or bad guys, the Americans or the Commies, the students or the fuzz. As the culture molds them, however, each child comes to insist on playing only one set of roles: he must always be a good guy, or, for equally compulsive reasons, a bad guy or rebel. The capacity to play and feel both sets of roles is lost. He has begun to know who he is supposed to be. The sense of permanent self: ah, how psychologists and parents lust to lock their kids into some definable cage. Consistency, patterns, something we can label - that's what we want in our boy. 'Oh, our Johnny always does a beautiful bower movement every morning after breakfast.' 'Billy just loves to read all the time...' 'Isn't Joan sweet? She always likes to let the other person win.' 'Sylvia's so pretty and so grown up; she just loves all the time to dress up.' It seemed to me that a thousand oversimplifications a year betrayed the truths in the child's heart: he knew at one point that he didn't always feel like shitting after breakfast but it gave his Ma a thrill. Billy ached to be out splashing in mud puddles with the other boys, but... Joan wanted to chew the penis off her brother every time he won, but ... And Sylvia daydreamed of a land in which she wouldn’t have to worry about how she looked . . . Patterns are prostitution to the patter of parents. Adults rule and they reward patterns. Patterns it is. And eventual misery. What if we were to bring up our children differently? Reward them for varying their habits, tastes, roles? Reward them for being inconsistent? What then? We could discipline them to be reliably various, to be conscientiously inconsistent, determinedly habit-free - even of 'good' habits.

The animal let out a guttural Mooooooooooooo!, and as he did, the contents of its large intestine emptied all over my hand and forearm. Tim said, “Okay, Ree, you can take it out now.” I did. I didn’t know what to do. My arm was covered in runny, stinky cow crap. Was this supposed to happen? Should I say anything? I glanced at my sister, who was looking at me, completely horrified. The second animal entered the chute. The routine began again. I stuck it in. Tim branded. The steer bellowed. The crap squirted out. I was amazed at how consistent and predictable the whole nasty process was, and how nonchalant everyone--excluding my sister--was acting. But then slowly…surely…I began to notice something. On about the twentieth animal, I began inserting the thermometer. Tim removed his branding iron from the fire and brought it toward the steer’s hip. At the last second, however, I fumbled with my device and had to stop for a moment. Out of the corner of my eye, I noticed that when I paused, Tim did, too. It appeared he was actually waiting until I had the thermometer fully inserted before he branded the animal, ensuring that I’d be right in the line of fire when everything came pouring out. He had planned this all along, the dirty dog. Seventy-eight steers later, we were finished. I was a sight. Layer upon layer of manure covered my arm. I’m sure I was pale and in shock. The cowboys grinned politely. Tim directed me to an outdoor faucet where I could clean my arm. Marlboro Man watched as he gathered up the tools and the gear…and he chuckled. As my sister and I pulled away in the car later that day, she could only say, “Oh. My. God.” She made me promise never to return to that awful place. I didn’t know it at the time, but I’d found out later that this, from Tim’s perspective, was my initiation. It was his sick, twisted way of measuring my worth.

If the race for food is to be the deciding conflict, let no one say it came without this warning. From the beginning of time, wild humans have stood helpless, watching the very soil they nurtured give birth to a competitor that could outeat them. Just as we must not let our teacher the insect consume what we require for survival, we must not launch a similar rampage of our own. The pace of our planet’s growing cycle cannot be denied. It is possible for insects or for man to destroy in a single week what could have fed millions for an entire year.

Nowadays, enormous importance is given to individual deaths, people make such a drama out of each person who dies, especially if they die a violent death or are murdered; although the subsequent grief or curse doesn't last very long: no one wears mourning any more and there's a reason for that, we're quick to weep but quicker still to forget. I'm talking about our countries, of course, it's not like that in other parts of the world, but what else can they do in a place where death is an everyday occurrence. Here, though, it's a big deal, at least at the moment it happens. So-and-so has died, how dreadful; such-and-such a number of people have been killed in a crash or blown to pieces, how terrible, how vile. The politicians have to rush around attending funerals and burials, taking care not to miss any-intense grief, or is it pride, requires them as ornaments, because they give no consolation nor can they, it's all to do with show, fuss, vanity and rank. The rank of the self-important, super-sensitive living. And yet, when you think about it, what right do we have, what is the point of complaining and making a tragedy out of something that happens to every living creature in order for it to become a dead creature? What is so terrible about something so supremely natural and ordinary? It happens in the best families, as you know, and has for centuries, and in the worst too, of course, at far more frequent intervals. What's more, it happens all the time and we know that perfectly well, even though we pretend to be surprised and frightened: count the dead who are mentioned on any TV news report, read the birth and death announcements in any newspaper, in a single city, Madrid, London, each list is a long one every day of the year; look at the obituaries, and although you'll find far fewer of them, because an infinitesimal minority are deemed to merit one, they're nevertheless there every morning. How many people die every weekend on the roads and how many have died in the innumerable battles that have been waged? The losses haven't always been published throughout history, in fact, almost never. People were more familiar with and more accepting of death, they accepted chance and luck, be it good or bad, they knew they were vulnerable to it at every moment; people came into the world and sometimes disappeared at once, that was normal, the infant mortality rate was extraordinarily high until eighty or even seventy years ago, as was death in childbirth, a woman might bid farewell to her child as soon as she saw its face, always assuming she had the will or the time to do so. Plagues were common and almost any illness could kill, illnesses we know nothing about now and whose names are unfamiliar; there were famines, endless wars, real wars that involved daily fighting, not sporadic engagements like now, and the generals didn't care about the losses, soldiers fell and that was that, they were only individuals to themselves, not even to their families, no family was spared the premature death of at least some of its members, that was the norm; those in power would look grim-faced, then carry out another levy, recruit more troops and send them to the front to continue dying in battle, and almost no one complained. People expected death, Jack, there wasn't so much panic about it, it was neither an insuperable calamity nor a terrible injustice; it was something that could happen and often did. We've become very soft, very thin-skinned, we think we should last forever. We ought to be accustomed to the temporary nature of things, but we're not. We insist on not being temporary, which is why it's so easy to frighten us, as you've seen, all one has to do is unsheathe a sword. And we're bound to be cowed when confronted by those who still see death, their own or other people's, as part and parcel of their job, as all in a day's work. When confronted by terrorists, for example, or by drug barons or multinational mafia men.

Future visitors from outer space, who mount archaeological digs of our planet, will surely find ways to distinguish designed machines such as planes and microphones, from evolved machines such as bat wings and ears. It is an interesting exercise to think about how they will make the distinction. They may face some tricky judgements in the messy overlap between natural evolution and human design. If the alien scientists can study living specimens, not just archaeological relics, what will they make of fragile, highly strung racehorses and greyhounds, or snuffling bulldogs who can scarcely breathe and can't be born without Caesarian assistance, of blear-eyed Pekinese baby surrogates, of walking udders such as Friesian cows, walking rashers such as Landrace pigs, or walking woolly jumpers such as Merino sheep? Molecular machines - nanotechnology - crafted for human benefit on the same scale as the bacterial flagellar motor, may pose the alien scientists even harder problems... Given that the illusion of design conjured by Darwinian natural selection is so breathtakingly powerful, how do we, in practice, distinguish its products from deliberately designed artefacts?... One day Marlboro Man invited my sister, Betsy, and me to the ranch to work cattle. She was home from college and bored, and Marlboro Man wanted Tim to meet another member of my family. “Working cattle” is the term used to describe the process of pushing cattle, one by one, through a working chute, during which time they are branded, dehorned, ear tagged, and “doctored” (temperature taken, injections given). The idea is to get all the trauma and mess over with in one fell swoop so the animals can spend their days grazing peacefully in the pasture. When Betsy and I pulled up and parked, Tim greeted us at the chute and immediately assigned us our duties. He handed my sister a hot shot, which is used to gently zap the animal’s behind to get it to move through the chute. It’s considered the easy job. “You’ll be pushing ’em through,” Tim told Betsy. She dutifully took the hot shot, studying the oddly shaped object in her hands. Next, Tim handed me an eight-inch-long, thick-gauge probe with some kind of electronic device attached. “You’ll be taking their temperature,” Tim informed me. Easy enough, I thought. But how does this thing fit into its ear? Or does it slide under its arm somehow? Perhaps I insert it under the tongue? Will the cows be okay with this? Tim showed me to my location--at the hind end of the chute. “You just wait till the steer gets locked in the chute,” Tim directed. “Then you push the stick all the way in and wait till I tell you to take it out.” Come again? The bottom fell out of my stomach as my sister shot me a worried look, and I suddenly wished I’d eaten something before we came. I felt weak. I didn’t dare question the brother of the man who made my heart go pitter-pat, but…in the bottom? Up the bottom? Seriously? Before I knew it, the first animal had entered the chute. Various cowboys were at different positions around the animal and began carrying out their respective duties. Tim looked at me and yelled, “Stick it in!” With utter trepidation, I slid the wand deep into the steer’s rectum. This wasn’t natural. This wasn’t normal. At least it wasn’t for me. This was definitely against God’s plan.

Consider the life of a pregnant sow. Her incredible fertility is the source of her particular hell. While a cow will give birth to only a single calf at a time, the modern factory sow will birth, nurse, and raise an average of nearly nine piglets — a number that has been increased annually by industry breeders. She will invariably be kept pregnant as much as possible, which will prove to be the majority of her life. When she is approaching her due date, drugs to induce labor may be administered to make the timing more convenient for the farmer. After her piglets are weaned, a hormone injection makes the sow rapidly “cycle” so that she will be ready to be artificially inseminated again in only three weeks. Four out of five times a sow will spend the sixteen weeks of her pregnancy confined in a “gestation crate” so small that she will not be able to turn around. Her bone density will decrease because of the lack of movement. She will be given no bedding and often will develop quarter-sized, blackened, pus-filled sores from chafing in the crate. (In one undercover investigation in Nebraska, pregnant pigs with multiple open sores on their faces, heads, shoulders, backs, and legs — some as large as a fist — were videotaped. A worker at the farm commented, “They all have sores. . . . There’s hardly a pig in there who doesn’t have a sore.”) More serious and pervasive is the suffering caused by boredom and isolation and the thwarting of the sow’s powerful urge to prepare for her coming piglets. In nature, she would spend much of her time before giving birth foraging and ultimately would build a nest of grass, leaves, or straw. To avoid excessive weight gain and to further reduce feed costs, the crated sow will be feed restricted and often hungry. Pigs also have an inborn tendency to use separate areas for sleeping and defecating that is totally thwarted in confinement. The pregnant pigs, like most all pigs in industrial systems, must lie or step in their excrement to force it through the slatted floor. The industry defends such confinement by arguing that it helps control and manage animals better, but the system makes good welfare practices more difficult because lame and diseased animals are almost impossible to identify when no animals are allowed to move.

There is no fault that can’t be corrected [in natural wine] with one powder or another; no feature that can’t be engineered from a bottle, box, or bag. Wine too tannic? Fine it with Ovo-Pure (powdered egg whites), isinglass (granulate from fish bladders), gelatin (often derived from cow bones and pigskins), or if it’s a white, strip out pesky proteins that cause haziness with Puri-Bent (bentonite clay, the ingredient in kitty litter). Not tannic enough? Replace $1,000 barrels with a bag of oak chips (small wood nuggets toasted for flavor), “tank planks” (long oak staves), oak dust (what it sounds like), or a few drops of liquid oak tannin (pick between “mocha” and “vanilla”). Or simulate the texture of barrel-aged wines with powdered tannin, then double what you charge. (““Typically, the $8 to $12 bottle can be brought up to $15 to $20 per bottle because it gives you more of a barrel quality. . . . You’re dressing it up,” a sales rep explained.) Wine too thin? Build fullness in the mouth with gum arabic (an ingredient also found in frosting and watercolor paint). Too frothy? Add a few drops of antifoaming agent (food-grade silicone oil). Cut acidity with potassium carbonate (a white salt) or calcium carbonate (chalk). Crank it up again with a bag of tartaric acid (aka cream of tartar). Increase alcohol by mixing the pressed grape must with sugary grape concentrate, or just add sugar. Decrease alcohol with ConeTech’s spinning cone, or Vinovation’s reverse-osmosis machine, or water. Fake an aged Bordeaux with Lesaffre’s yeast and yeast derivative. Boost “fresh butter” and “honey” aromas by ordering the CY3079 designer yeast from a catalog, or go for “cherry-cola” with the Rhône 2226. Or just ask the “Yeast Whisperer,” a man with thick sideburns at the Lallemand stand, for the best yeast to meet your “stylistic goals.” (For a Sauvignon Blanc with citrus aromas, use the Uvaferm SVG. For pear and melon, do Lalvin Ba11. For passion fruit, add Vitilevure Elixir.) Kill off microbes with Velcorin (just be careful, because it’s toxic). And preserve the whole thing with sulfur dioxide. When it’s all over, if you still don’t like the wine, just add a few drops of Mega Purple—thick grape-juice concentrate that’s been called a “magical potion.” It can plump up a wine, make it sweeter on the finish, add richer color, cover up greenness, mask the horsey stink of Brett, and make fruit flavors pop. No one will admit to using it, but it ends up in an estimated 25 million bottles of red each year. “Virtually everyone is using it,” the president of a Monterey County winery confided to Wines and Vines magazine. “In just about every wine up to $20 a bottle anyway, but maybe not as much over that.

write animal stories. This one was called Dialogues Between a Cow and a Filly; a meditation on ethics, you might say; it had been inspired by a short business trip to Brittany. Here’s a key passage from it: ‘Let us first consider the Breton cow: all year round she thinks of nothing but grazing, her glossy muzzle ascends and descends with impressive regularity, and no shudder of anguish comes to trouble the wistful gaze of her light-brown eyes. All that is as it ought to be, and even appears to indicate a profound existential oneness, a decidedly enviable identity between her being-in-the-world and her being-in-itself. Alas, in this instance the philosopher is found wanting, and his conclusions, while based on a correct and profound intuition, will be rendered invalid if he has not previously taken the trouble of gathering documentary evidence from the naturalist. In fact the Breton cow’s nature is duplicitous. At certain times of the year (precisely determined by the inexorable functioning of genetic programming) an astonishing revolution takes place in her being. Her mooing becomes more strident, prolonged, its very harmonic texture modified to the point of recalling at times, and astonishingly so, certain groans which escape the sons of men. Her movements become more rapid, more nervous, from time to time she breaks into a trot. It is not simply her muzzle, though it seems, in its glossy regularity, conceived for reflecting the abiding presence of a mineral passivity, which contracts and twitches under the painful effect of an assuredly powerful desire. ‘The key to the riddle is extremely simple, and it is that what the Breton cow desires (thus demonstrating, and she must be given credit here, her life’s one desire) is, as the breeders say in their cynical parlance, “to get stuffed”. And stuff her they do, more or less directly; the artificial insemination syringe can in effect, whatever the cost in certain emotional complications, take the place of the bull’s penis in performing this function. In both cases the cow calms down and returns to her original state of earnest meditation, except that a few months later she will give birth to an adorable little calf. Which, let it be said in passing, means profit for the breeder.’ * The breeder, of course, symbolized God. Moved by an irrational sympathy for the filly, he promised her, starting from the next chapter, the everlasting delight of numerous stallions, while the cow, guilty of the sin of pride, was to be gradually condemned to the dismal pleasures of artificial fertilization. The pathetic mooing of the ruminant would prove incapable of swaying the judgment of the Great Architect. A delegation of sheep, formed in solidarity, had no better luck. The God presented in this short story was not, one observes, a merciful God.
