In many different ways those of us living a simpler life are all walking the path less travelled. We see what is considered ‘normal’ now, we know that consumption is the ‘standard’ way and we have decided to reject it. Instead of buying all that is new and shiny, we are standing our ground and going back to basics. It’s comfortable there. It’s warm oats soaked overnight and cooked slowly rather than cornflakes; it’s home-baked bread instead of sliced white in plastic wrap; it’s ‘come over and I’ll teach you how to knit’ instead of ‘let’s go shopping’. Instead of buying fast food, we have it slow and easy bubbling away in the oven when the family comes home in the evening. Even the smell of that home-cooked food in the air when they walk through the door tells your family that someone loves them enough to make it all happen. It’s sitting around the table, talking about today and tomorrow. It’s really knowing your friends and family instead of just knowing what they tell you.

See … it makes for a better article when you associate the food with a personality. Richman, along with the best and worst of his peers, built up these names, helped make them celebrities by promoting the illusion that they cook—that if you walk into one of dozens of Jean-Georges’s restaurants, he’s somehow back there on the line, personally sweating over your halibut, measuring freshly chopped herbs between thumb and forefinger. Every time someone writes “Mr. Batali is fond of strong, assertive flavors” (however true that might be) or “Jean Georges has a way with herbs” and implies or suggests that it was Mr. Batali or Mr. Vongerichten who actually cooked the dish, it ignores the reality, if not the whole history, of command and control and the creative process in restaurant kitchens. While helpful to chefs, on the one hand, in that the Big Lie builds interest and helps create an identifiable brand, it also denies the truth of what is great about them: that there are plenty of great cooks in this world—but not that many great chefs. The word “chef” means “chief.” A chef is simply a cook who leads other cooks. That quality—leadership, the ability to successfully command, inspire, and delegate work to others—is the very essence of what chefs are about. As Richman knows. But it makes better reading (and easier writing) to first propagate a lie—then, later, react with entirely feigned outrage at the reality.

Personally, I'd prefer to eat food that tastes good and is an honest reflection of its ingredients, than a 3-foot-tall caprice constructed from lemon grass, lawn trimmings, coconuts and red curry. You could lose an eye trying to eat that. When a job applicant starts telling me how Pacific Rim-job cuisine turns him on and inspires him, I see trouble coming. Send me another Mexican dishwasher anytime. I can teach him to cook. I can't teach character. Show up at work on time six months in a row and we'll talk about red curry paste and lemon grass. Our neighborhood ramen place was called Aoba. That's a joke. There were actually more than fifty ramen places with in walking distance of our apartment. But this one was our favorite. Aoba makes a wonderful and unusual ramen with a mixture of pork and fish broth. The noodles are firm and chewy, and the pork tender and almost smoky, like ham. I also liked how they gave us a small bowl for sharing with Iris without our even asking. What I really appreciated about this place, however, were two aspects of ramen that I haven't mentioned yet: the eggs and the dipping noodles. After these two, I will stop, but there's so much more to ramen. Would someone please write an English-language book about ramen? Real ramen, not how to cook with Top Ramen noodles? Thanks. (I did find a Japanese-language book called State-of-the-Art Technology of Pork Bone Ramen on Amazon. Wish-listed!) One of the most popular ramen toppings is a soft-boiled egg. Long before sous vide cookery, ramen cooks were slow-cooking eggs to a precise doneness. Eggs for ramen (ajitsuke tamago) are generally marinated in a soy sauce mixture after cooking so the whites turn a little brown and the eggs turn a little sweet and salty. I like it best when an egg is plunked whole into the broth so I can bisect it with my chopsticks and reveal the intensely orange, barely runny yolk. A cool egg moistened with rich broth is alchemy. Forget the noodles; I want a ramen egg with a little broth for breakfast. Finding hot and cold in the same mouthful is another hallmark of Japanese summer food, and many ramen restaurants, including Aoba, feature it in the form of tsukemen, dipping noodles. Tsukemen is deconstructed ramen, a bowl of cold cooked noodles and a smaller bowl of hot, ultra-rich broth and toppings. The goal is to lift a tangle of noodles with your chopsticks and dip them in the bowl of broth on the way to your mouth. This is a crazy way to eat noodles and, unless you've been inculcated with the principles of noodle-slurping physics from birth, a great way to ruin your clothes.

The people we find truly anathema are the ones who reduce the past to caricature and distort it to fit their own bigoted stereotypes. We’ve gone to events that claimed to be historic fashion shows but turned out to be gaudy polyester parades with no shadow of reality behind them. As we heard our ancestors mocked and bigoted stereotypes presented as facts, we felt like we had gone to an event advertised as an NAACP convention only to discover it was actually a minstrel show featuring actors in blackface. Some so-called “living history” events really are that bigoted. When we object to history being degraded this way, the guilty parties shout that they are “just having fun.” What they are really doing is attacking a past that cannot defend itself. Perhaps they are having fun, but it is the sort of fun a schoolyard brute has at the expense of a child who goes home bruised and weeping. It’s time someone stood up for the past. I have always hated bullies. The instinct to attack difference can be seen in every social species, but if humans truly desire to rise above barbarism, then we must cease acting like beasts. The human race may have been born in mud and ignorance, but we are blessed with minds sufficiently powerful to shape our behavior. Personal choices form the lives of individuals; the sum of all interactions determine the nature of societies. At present, it is politically fashionable in America to tolerate limited diversity based around race, religion, and sexual orientation, yet following a trend does not equate with being truly open-minded. There are people who proudly proclaim they support women’s rights, yet have an appallingly limited definition of what those rights entail. (Currently, fashionable privileges are voting, working outside the home, and easy divorce; some people would be dumbfounded at the idea that creating beautiful things, working inside the home, and marriage are equally desirable rights for many women.) In the eighteenth century, Voltaire declared, “I disagree with what you say but I will fight to the death for your right to say it.”3 Many modern Americans seem to have perverted this to, “I will fight to the death for your right to agree with what I say.” When we stand up for history, we are in our way standing up for all true diversity. When we question stereotypes and fight ignorance about the past, we force people to question ignorance in general.

How to Apologize Ellen Bass Cook a large fish—choose one with many bones, a skeleton you will need skill to expose, maybe the flying silver carp that's invaded the Great Lakes, tumbling the others into oblivion. If you don't live near a lake, you'll have to travel. Walking is best and shows you mean it, but you could take a train and let yourself be soothed by the rocking on the rails. It's permitted to receive solace for whatever you did or didn't do, pitiful, beautiful human. When my mother was in the hospital, my daughter and I had to clear out the home she wouldn't return to. Then she recovered and asked, incredulous, How could you have thrown out all my shoes? So you'll need a boat. You could rent or buy, but, for the sake of repairing the world, build your own. Thin strips of Western red cedar are perfect, but don't cut a tree. There'll be a demolished barn or downed trunk if you venture further. And someone will have a mill. And someone will loan you tools. The perfume of sawdust and the curls that fall from your plane will sweeten the hours. Each night we dream thirty-six billion dreams. In one night we could dream back everything lost. So grill the pale flesh. Unharness yourself from your weary stories. Then carry the oily, succulent fish to the one you hurt. There is much to fear as a creature caught in time, but this is safe. You need no defense. Once my father saw my tears, he sat down with me and said, “Firoozeh, when the Prophet Muhammad forbade ham, it was because people did not know how to cook it properly and many people became sick as a result of eating it. The Prophet, who was a kind and gentle man, wanted to protect people from harm, so he did what made sense at the time. But now, people know how to prepare ham safely, so if the Prophet were alive today, he would change that rule.” He continued, “It’s not what we eat or don’t eat that makes us good people; it’s how we treat one another. As you grow older, you’ll find that people of every religion think they’re the best, but that’s not true. There are good and bad people in every religion. Economists can pull the same explanations from their hats every time. Dream worlds of total social exclusion and endless consumerism grow where they can be left in peace, at a safe distance from the poverty and environmental destruction they spread around themselves. Alternative universes for privileged human life forms. The stock market rises and the stock market falls. Countries devalue and currencies ripple. The market’s movements are monitored minute by minute. Some people always walk in threadbare shoes. And you arrange your preferences to avoid meeting them. It’s no longer possible to see further into the future than one desire at a time. History has ended and individual freedom has taken over. There is no alternative.

In a firefight, running from danger, blasting with guns, you can’t not be frightened, but you can go berserk and get the rush, and so the second time he goes berserk. The second time he fucking wreaks havoc. Living right out there on the edge, full throttle, the excitement and the fear, and there’s nothing in civilian life that can match it. Door gunning. They’re losing helicopters and they need door gunners. They ask at some point for door gunners and he jumps at it, he volunteers. Up there above the action, and everything looks small from above, and he just guns down huge. Whatever moves. Death and destruction, that is what door gunning is all about. With the added attraction that you don’t have to be down in the jungle the whole time. But then he comes home and it’s not better than the first time, it’s worse. Not like the guys in World War II: they had the ship, they got to relax, someone took care of them, asked them how they were. There’s no transition. One day he’s door gunning in Vietnam, seeing choppers explode, in midair seeing his buddies explode, down so low he smells skin cooking, hears the cries, sees whole villages going up in flames, and the next day he’s back in the Berkshires. And now he really doesn’t belong, and, besides, he’s got fears now about things going over his head. He doesn’t want to be around other people, he can’t laugh or joke, he feels that he is no longer a part of their world, that he has seen and done things so outside what these people know about that he cannot connect to them and they cannot connect to him. They told him he could go home? How could he go home?

Steve was a warrior in every sense of the word, but battling wildlife perpetrators just wasn’t the same as old-fashioned combat. Because Steve’s knees continued to deteriorate, his surfing ability was severely compromised. Instead of giving up in despair, Steve sought another outlet for all his pent-up energy. Through our head of security, Dan Higgins, Steve discovered mixed martial arts (or MMA) fighting. Steve was a natural at sparring. His build was unbelievable, like a gorilla’s, with his thick chest, long arms, and outrageous strength for hugging things (like crocs). Once he grabbed hold of something, there was no getting away. He had a punch equivalent to the kick of a Clydesdale, he could just about lift somebody off the ground with an uppercut, and he took to grappling as a wonderful release. Steve never did anything by halves. I remember one time the guys were telling him that a good body shot could really wind someone. Steve suddenly said, “No one’s given me a good body shot. Try to drop me with a good one so I know what it feels like.” Steve opened up his arms and Dan just pile drove him. Steve said, in between gasps, “Thanks, mate. That was great, I get your point.” I would join in and spar or work the pads, or roll around until I was absolutely exhausted. Steve would go until he threw up. I’ve never seen anything like it. Some MMA athletes are able to seek that dark place, that point of total exhaustion--they can see it, stare at it, and sometimes get past it. Steve ran to it every day. He wasn’t afraid of it. He tried to get himself to that point of exhaustion so that maybe the next day he could get a little bit further. Soon we were recruiting the crew, anyone who had any experience grappling. Guys from the tiger department or construction were lining up to have a go, and Steve would go through the blokes one after another, grappling away. And all the while I loved it too. Here was something else that Steve and I could do together, and he was hilarious. Sometimes he would be cooking dinner, and I’d come into the kitchen and pat him on the bum with a flirtatious look. The next thing I knew he had me in underhooks and I was on the floor. We’d be rolling around, laughing, trying to grapple each other. It’s like the old adage when you’re watching a wildlife documentary: Are they fighting or mating? It seems odd that this no-holds-barred fighting really brought us closer, but we had so much fun with it. Steve finally built his own dojo on a raised concrete pad with a cage, shade cloth, fans, mats, bags, and all that great gear. Six days a week, he would start grappling at daylight, as soon as the guys would get into work. He had his own set of techniques and was a great brawler in his own right, having stood up for himself in some of the roughest, toughest, most remote outback areas. Steve wasn’t intimidated by anyone. Dan Higgins brought a bunch of guys over from the States, including Keith Jardine and other pros, and Steve couldn’t wait to tear into them. He held his own against some of the best MMA fighters in the world. I always thought that if he’d wanted to be a fighter as a profession, he would have been dangerous. All the guys heartily agreed.

Keep your weak hand up by your face, so that you can easily defend your head if a punch is unexpectedly thrown. Use the weak hand to scratch your head or cheek, brush your hair, wipe your brow, adjust your hat, etc., but keep that hand up. Remember that you will most likely be reacting to an assault, and therefore it will take too long to bring a hand up from your waist to your head to defend yourself against a sneak attack. Cover This block/cover comes from boxing, and is identical to the one taught in my book The Cook Method of the Sap for Law Enforcement and Civilians. The weak (left) hand comes up and brings the hand to the ear as though you are talking on the phone. The upraised elbow and bent arm create a large, strong defense against any type of blow, especially a hook punch, which is difficult to defend against by trying to parry or block with the hand. You can also think of this move as raising the left elbow upward. In close, this shielding move can be used as a strike, hitting the attacker with an upward elbow strike. Train this move by having a partner slowly and lightly swing with his right hand at your head. If you get boxing headgear and gloves, you can gradually increase the speed and power of this strike. It is also possible for your partner to swing at your head using the punch mitts. Hammerfist As the left elbow comes up and the left hand is placed just off your ear, your right hand –which has been resting near your left armpit-- snaps outward, striking with the bottom of the fist. Aim for the opponent's jawline. A problem with punching on the street is that it's easy to damage your knuckles when hitting someone's skull or teeth. The bottom-of-the-fist blow, also known as a hammerfist, is a very powerful blow that can be delivered with little risk of injury to the knuckles or wrist. It has proven itself to be devastatingly effective in the full-contact cage matches of the mixed martial arts. Practice doing both motions at the same time; raising the left elbow up to cover the head while striking out with the right hammerfist. Practice slowly at first, then move to the heavy bag. You can also have a partner with the focus mitts swing the right mitt while holding the left mitt up as a target for you to hit with the right hand. Once you have the form down, make the move explosive. Burst outward with the elbow and hammerfist simultaneously. Snap the hammerfist, bringing it quickly back to the start position. Another tip as you practice this move is to drop your head down, so that your chin and the side of your face are not exposed. With your chin down, the striking right hand and arm will help to shield your head from attacks with the opponent's left hand. This is how you defend yourself when an opponent has surprised you with a flurry of punches –not by trying to block a rain of blows, but by striking while protecting your head.

Another key to a perfect salad is the sauce, or vinaigrette. Most people don’t think of vinaigrette as a sauce but it is one of the most important in the French repertoire. It always includes mustard, and shallot, garlic, or chives, either vinegar or lemon juice, and most often peanut oil, though olive and canola oil are rapidly becoming more common. The proportions are 1 tablespoon vinegar, 1 teaspoon mustard, ¼ cup (60ml) oil, a pinch of salt. There can be more to a vinaigrette. Try adding a bit of soy sauce (1 teaspoon) when you add the vinegar, mix oils or use just a nut oil—hazelnut and walnut are my favorites, but almond and peanut oil are delicious, too. You can add different herbs aside from the traditional chives—try tarragon, mint, thyme, basil, or fennel fronds—a flavored mustard, a mix of ground peppercorns. One vital tip for making a great salad, whether green, composed, or otherwise, is to thoroughly toss the leaves in the vinaigrette. Some people ask me if they should toss salad with their hands. My resounding response is “Ugh.” Apparently someone at some time said the French do this but I’ve never witnessed this behavior and cannot imagine anything worse. The best utensils for tossing salad are a wooden spoon and fork, though you can use whatever is easiest for you. The point is to fatiguer la salade, tire out the lettuce, by lifting it up and out of the bowl, turning it, and letting it fall back into the bowl as many times as it takes for the lettuce leaves to begin to feel heavy. When they do, they’re perfectly dressed. And finally, toss the lettuce right before you plan to serve the salad. You cannot do this in advance. The acid in the vinaigrette begins to “cook” the leaves almost immediately—they’ll soon be wilted and soft if they’re left to sit.
