Watching my parents I've learnt a lesson many do not recognize. True love is not signaled by romantic, candle light dinners, red roses glistening with dew, or even Valentine's day celebrations. What a joy this book is! I love recipe books, but it’s short-lived; I enjoy the pictures for several minutes, read a few pages, and then my eyes glaze over. They are basically books to be used in the kitchen for one recipe at a time. This book, however, is in a different class altogether and designed to be read in its entirety. It’s in its own sui generis category; it has recipes at the end of most of the twenty-one chapters, but it’s a book to be read from cover to cover, yet it could easily be read chapter by chapter, in any order, as they are all self-contained. Every bite-sized chapter is a flowing narrative from a well-stocked brain encompassing Balinese culture, geography and history, while not losing its main focus: food. As you would expect from a scholar with a PhD in history from Columbia University, the subject matter has been meticulously researched, not from books and articles and other people’s work, but from actually being on the ground and in the markets and in the kitchens of Balinese families, where the Balinese themselves learn their culinary skills, hands on, passed down orally, manually and practically from generation to generation. Vivienne Kruger has lived in Bali long enough to get it right. That’s no mean feat, as the subject has not been fully studied before. Yes, there are so-called Balinese recipe books, most, if I’m not mistaken, written by foreigners, and heavily adapted. The dishes have not, until now, been systematically placed in their proper cultural context, which is extremely important for the Balinese, nor has there been any examination of the numerous varieties of each type of recipe, nor have they been given their true Balinese names. This groundbreaking book is a pleasure to read, not just for its fascinating content, which I learnt a lot from, but for the exuberance, enthusiasm and originality of the language. There’s not a dull sentence in the book. You just can’t wait to read the next phrase. There are eye-opening and jaw-dropping passages for the general reader as Kruger describes delicacies from the village of Tengkudak in Tabanan district — grasshoppers, dragonflies, eels and live baby bees — and explains how they are caught and cooked. She does not shy away from controversial subjects, such as eating dog and turtle. Parts of it are not for the faint-hearted, but other parts make you want to go out and join the participants, such as the Nusa Lembongan fishermen, who sail their outriggers at 5.30 a.m. The author quotes Miguel Covarrubias, the great Mexican observer of the 1930s, who wrote “The Island of Bali.” It has inspired all writers since, including myself and my co-author, Ni Wayan Murni, in our book “Secrets of Bali, Fresh Light on the Morning of the World.” There is, however, no bibliography, which I found strange at first. I can only imagine it’s a reflection of how original the subject matter is; there simply are no other sources. Throughout the book Kruger mentions Balinese and Indonesian words and sometimes discusses their derivations. It’s a Herculean task. I was intrigued to read that “satay” comes from the Tamil word for flesh ( sathai ) and that South Indians brought satay to Southeast Asia before Indonesia developed its own tradition. The book is full of interesting tidbits like this. The book contains 47 recipes in all, 11 of which came from Murni’s own restaurant, Murni’s Warung, in Ubud. Mr Dolphin of Warung Dolphin in Lovina also contributed a number of recipes. Kruger adds an introduction to each recipe, with a detailed and usually very personal commentary. I think my favorite, though, is from a village priest (pemangku), I Made Arnila of the Ganesha (Siwa) Temple in Lovina. water. As I was floating on the surface, I realized something: When the turtle was swimming, it linked its movements to the movements of the water. The Deer reveals the ability to sense the presence of hunters before they sense you. The Turtle brightened me to realize that I will get there no matter how long it takes me while having a shell of protection above me. The Rabbit reassured me to allow myself to be playful and silly. The Bat proved to me that I can fly even in darkness. The Alligator/crocodile alerted me that threat exists. The Ant moved me to be organized, active, and social with others. The Bee educated me to be the source of honey and cure for others. The Horse my best intelligent friend with who I bond. Trained me to recover fast from tough conditions. The Whale prompted me to take care of my young ones and show them life abilities. The Crab/Lobster enlightened me not to follow them when they make resolutions depending on previous undesirable events.

The award-winning American TV series Breaking Bad has a scene in its second season set in the murder capital of Ciudad Juárez. In this episode, American and Mexican agents are lured to a patch of desert just south of the border looking for an informant. They discover the informant’s head has been cut off and stuck on the body of a giant turtle. But as they approach, the severed cranium, turned into an IED, explodes, killing agents. The episode was released in 2009. I thought it was unrealistic, a bit fantastic. Until July 15, 2010. In the real Ciudad Juárez on that day, gangsters kidnapped a man, dressed him in a police uniform, shot him, and dumped him bleeding on a downtown street. A cameraman filmed what happened after federal police and paramedics got close. The video shows medics bent over the dumped man, checking for vital signs. Suddenly a bang rings out, and the image shakes vigorously as the cameraman runs for his life. Gangsters had used a cell phone to detonate twenty-two pounds of explosives packed into a nearby car. A minute later, the camera turns back around to reveal the burning car pouring smoke over screaming victims. A medic lies on the ground, covered in blood but still moving, a stunned look on his face. Panicked officers are scared to go near him. The medic dies minutes later along with a federal agent and a civilian. I’m not suggesting that Breaking Bad inspired the murders. TV shows don’t kill people. Car bombs kill people. The point of the story is that the Mexican Drug War is saturated with stranger-than-fiction violence. Mexican writer Alejandro Almazán suffered from a similar dilemma. As he was writing his novel Among Dogs, he envisioned a scene in which thugs decapitate a man and stick a hound’s head on his corpse. It seemed pretty out there. But then in real life some gangsters did exactly that, only with a pig’s head. It is just hard to compete with the sanguine criminal imagination. Cartel thugs have put a severed head in a cooler and delivered it to a newspaper; they have dressed up a murdered policeman in a comedy sombrero and carved a smile on his cheeks; and they have even sewn a human face onto a soccer ball.

Every morning and evening at Lakefield, the fruit bats would come and go from the trees near our campsite. During the day, you could hear them in the distance as they squabbled over territory. Each fruit bat wanted to jockey for the best position on a branch. But when evening came, as if by silent agreement, all the bats knew to fly off at the same time. Steve grabbed me and the kids one evening just at dusk, and we went out into the river to watch the bats. I would rank that night as one of the most incredible experiences of my life, right up there with catching crocs and swimming with manatees. Sitting at dusk with the kids in the boat, all of a sudden the trees came alive. The bats took flight, skimming over the water to delicately dip for a drink, flying directly over our heads. It was as if we had gone back in time and pterodactyls flew once again. It was such an awe-inspiring event that we all fell quiet, the children included. The water was absolutely still, like an inky mirror, almost like oil. Not a single fish jumped, not a croc moved. All we heard were the wings of these ancient mammals in the darkening sky. We lay quietly in the bottom of the boat, floating in the middle of this paradise. We knew that we were completely and totally safe. We were in a small dinghy in the middle of some of the most prolifically populated crocodile water, yet we were absolutely comfortable knowing that Steve was there with us. “One day, babe,” Steve said softly to me, “we’ll look back on wildlife harvesting projects and things like croc farming the same way we look back on slavery and cannibalism. It will be simply an unbelievable part of human history. We’ll get so beyond it that it will be something we will never, ever return to.” “We aren’t there yet,” I said. He sighed. “No, we aren’t.” I thought of the sign Steve had over his desk back home. It bore the word “warrior” and its definition: “One who is engaged in battle.” And it was a battle. It was a battle to protect fragile ecosystems like Lakefield from the wildlife perpetrators, from people who sought to kill anything that could turn a profit.
