Continue to work in flour until the dough no longer sticks to your hands; you may not need to incorporate all of the flour. (I used a bit more than what the recipe called for.) Transfer the dough to a lightly floured surface and knead the dough for 8 to 10 minutes or until it is smooth and pliable. Wrap the dough tightly in plastic wrap and allow to rest for at least 30 minutes. If using a pasta roller: Divide the dough into 4 pieces. Starting with the machine set to the widest setting, pass the dough through the rollers. Fold the dough into thirds and pass it through again 2 more times. Continue passing the pasta through the machine, reducing the setting a few notches each time. You may need to dust a bit with flour if the dough sticks to the rollers at all. Once you reach your desired thickness, use the cutting attachment to cut the pasta sheet into fettuccine. Dust the cut pasta with more flour to prevent sticking and repeat with the remaining dough. If using a rolling pin: Divide the dough in half. Dust your surface with flour and sprinkle generously on your rolling pin. *Roll out the dough as thin and as evenly possible, adding flour as needed to prevent sticking. Use a paring knife (a pizza cutter works great!) to cut your dough into even ribbons, then set aside, dusting the cut pasta with more flour. Repeat with the remaining dough. (At this point, the pasta can be transferred to a sealable plastic bag and frozen for up to 3 months; do not defrost before cooking.) Cook the pasta in a large pot of generously salted boiling water, checking for doneness after just 1 minute; fresh pasta cooks very quickly. As soon as it is al dente, no more than 3 or 4 minutes, drain, reserving some of the cooking water if desired for saucing the pasta. Toss with your sauce, loosen with some of the reserved cooking water as needed and serve immediately. *Note:  You must get the dough as thin as possible and cut them into small strips, otherwise, it will be too thick and end up having the texture of dumplings.

No shame whatsoever. “Here, I’ll…help you clean this up,” Finn said, dropping to the floor and picking up a few tampons. “No!” Megan lurched forward and Finn fell back from his knees to his butt. She grabbed the tampons from his hands. “I’d really rather you didn’t.” “But I can--” “No. Just…I’m fine,” Megan said, awkwardly gathering up the slippery wrappers in her arms. “Thanks.” “Okay,” Finn said. He stood and hovered for a second, prolonging Megan’s mortification. Finally Finn walked into the bathroom and shut the door. Left alone, it was all Megan could do to keep from bursting into tears. They had been in her room. They had gone through her stuff. And Evan had seen her tampons. This was definitely the worst morning of her life. But early that year the English astronomer William Herschel observed some warming that could only have been caused by a form of light invisible to the human eye. Already an accomplished observer, Herschel had discovered the planet Uranus in 1781 and was now exploring the relation between sunlight, color, and heat. He began by placing a prism in the path of a sunbeam. Nothing new there. Sir Isaac Newton had done that back in the 1600s, leading him to name the familiar seven colors of the visible spectrum: red, orange, yellow, green, blue, indigo, and violet. (Yes, the colors do indeed spell Roy G. Biv.) But Herschel was inquisitive enough to wonder what the temperature of each color might be. So he placed thermometers in various regions of the rainbow and showed, as he suspected, that different colors registered different temperatures.† Well-conducted experiments require a “control”—a measurement where you expect no effect at all, and which serves as a kind of idiot-check on what you are measuring. All those smiling heads of state shaking hands, the diplomats hugging on the podium after marathon sessions of all-night negotiating – none of that actually made any identifiable difference to the Keeling Curve, which is the only thing that actually matters to the planet’s temperature. Start checking them for a golden brown tops around 25 minutes to make sure they don't get too brown.               Remove from the parchment and allow them to cool on a wire rack.               Store in an airtight container.

The Aura is a futuristic-looking alarm clock-like device that connects to Wi-Fi and includes a sensitive, wire-connected monitoring pad that goes underneath a user’s mattress. The system keeps track of heart rate, time spent in REM sleep and deep sleep (based, in part, on body motion and breathing cycle), and room temperature (a recent update allows it to connect with Nest smart thermostats to adjust temperature for maximum sleep comfort).

STRAWBERRY RHUBARB JAM Makes 3 pints 4 cups of chopped strawberries (about 2 pounds) 2 cups of chopped rhubarb (about 1 pound) 4 cups sugar 3 tablespoons powdered pectin 1 lemon, zested and juiced Prepare a boiling water bath canner and 3 pint jars. Place the chopped berries and rhubarb in a large, non-reactive pot. Whisk the pectin into the sugar and stir it into the berries. Let it sit for 10-15 minutes, until the sugar has begun to dissolve. Place the pot on the stove and bring to a boil. Cook jam over high heat, stirring regularly for 20-25 minutes, until it takes on a thick, syrup-y consistency. Add the lemon zest and juice and stir well. Check for set by taking the temperature of the cooking jam (it should set around 220F) or by watching how the droplets fall off the spoon. Remember that it will thicken as it cools, so don’t cook it so long that it achieves your desired consistency while still hot. Remove the jam from the heat and ladle it into the prepared jars, leaving 1/2 inch. Wipe the rims, apply the lids and rings and process them in a boiling water bath for 10 minutes. When the time is up, remove the jars and set them on a folded kitchen towel to cool. When the jars have cooled enough that you can comfortably handle them, check the seals. Sealed jars can be stored at room temperature for up to a year. Any unsealed jars should be refrigerated and used promptly.

Braised Striped Bass Pavillon YIELD: 4 SERVINGS I HAD NEVER SEEN or tasted striped bass before I worked at Le Pavilion. It is similar, however, to the loup de mer of the Mediterranean, one of the most prized fish of that region and a standard menu item in restaurants along the Côte d’Azur. With flesh that is slightly softer and moister than its European cousin, striped bass was a specialty of Le Pavilion. The braised wild striped bass would be presented to the patrons whole and carved at tableside. The following is a simple, elegant, and mouth-watering adaptation of the recipe from Le Pavilion. The fish, gutted with head on, is braised with white wine, shallots, and mushrooms in the oven, then coated with the cooking juices enriched with butter. This dish is excellent served with tiny steamed potatoes or sautéed cucumbers. 1 striped bass, gutted, with head on (about 3 pounds) 2 cups thinly sliced mushrooms ¼ cup chopped shallots ½ teaspoon salt, plus more to taste ½ teaspoon freshly ground black pepper, plus more to taste 1 tablespoon good olive oil 1 teaspoon fresh thyme leaves 2 bay leaves 1 cup dry, fruity white wine (Chardonnay or Sauvignon Blanc) 8 tablespoons (1 stick) unsalted butter, at room temperature 1 tablespoon fresh lemon juice 1 tablespoon minced fresh chives Preheat the oven to 400 degrees. Place the fish in a gratin dish or stainless steel baking dish that is narrow enough to prevent the garnishes and the wine from spreading out too much. Sprinkle with the mushrooms, shallots, ½ teaspoon salt, ½ teaspoon pepper, olive oil, thyme, bay leaves, and wine. Cover tightly with a piece of aluminum foil so the fish will cook in its own steam. Bake for 35 to 45 minutes, or until the fish is cooked through. Check by inserting the point of a small knife into the flesh. It should be tender, and the flesh should separate from the central bone when pierced with the knife. Reduce the heat to 150 degrees. Using a large hamburger spatula, transfer the whole fish to an ovenproof serving platter, and set aside in the warm oven while you complete the recipe. Pour the fish’s cooking juices and vegetable solids into a small saucepan, and discard the bay leaves. You should have ¾ to 1 cup of liquid; cook down the liquid or add water to adjust the yield to this amount. Bring to a boil on top of the stove, and add the butter spoonful by spoonful, incorporating each piece into the mixture with a whisk before you add another. Remove the saucepan from the heat, and add the lemon juice, chives, and additional salt and pepper to taste. At serving time, pull or scrape off the skin on top of the fish with a small paring knife. Coat the fish with the sauce, and sprinkle the chives on top. Bring to the table, and carve for the guests.

Don’t drink any alcohol, period—and if you absolutely, positively must, limit yourself to one drink before about 6 p.m. Alcohol probably impairs sleep quality more than any other factor we can control. Don’t confuse the drowsiness it produces with quality sleep. Don’t eat anything less than three hours before bedtime—and ideally longer. It’s best to go to bed with just a little bit of hunger (although being ravenous can be distracting.) Abstain from stimulating electronics, beginning two hours before bed. Try to avoid anything involving a screen if you’re having trouble falling asleep. If you must, use a setting that reduces the blue light from your screen. For at least one hour before bed, if not more, avoid doing anything that is anxiety-producing or stimulating, such as reading work email or, God help you, checking social media. These get the ruminative, worry-prone areas of our brain humming, which is not what you want. For folks who have access, spend time in a sauna or hot tub prior to bed. Once you get into the cool bed, your lowering body temperature will signal to your brain that it’s time to sleep. (A hot bath or shower works too.) The room should be cool, ideally in the midsixties. The bed should be cool too. Use a “cool” mattress or one of the many bed-cooling devices out there. These are also great tools for couples who prefer different temperatures at night, since both sides of the mattress can be controlled individually. Darken the room completely. Make it dark enough that you can’t see your hand in front of your face with your eyes open, if possible. If that is not achievable, use an eye shade. I use a silky one called Alaska Bear that costs about $8 and works better than the fancier versions I’ve tried. Give yourself enough time to sleep—what sleep scientists call a sleep opportunity. This means going to bed at least eight hours before you need to wake up, preferably nine. If you don’t even give yourself a chance to get adequate sleep, then the rest of this chapter is moot. Fix your wake-up time—and don’t deviate from it, even on weekends. If you need flexibility, you can vary your bedtime, but make it a priority to budget for at least eight hours in bed each night. Don’t obsess over your sleep, especially if you’re having problems. If you need an alarm clock, make sure it’s turned away from you so you can’t see the numbers.
