She claimed to have gained so much weight from eating the butter, even though it was labeled as being 'LITE'. In court, the lawyer representing the butter company simply held up the container of butter and said to the judge, "My client did not lie. The container is indeed 'light in weight'. The woman lost the case. In a marketing class in college, we were assigned this case study to show us that 'puffery' is legal. This means that you can deceptively use words with double meanings to sell a product, even though they could mislead customers into thinking your words mean something different. I am using this example to touch upon the myth of organic foods. If I was a lawyer representing a company that had labeled its oranges as being organic, and a man was suing my client because he found out that the oranges were being sprayed with toxins, my defense opening statement would be very simple: "If it's not plastic or metallic, it's organic." Most products labeled as being organic are not really organic. This is the truth. You pay premium prices for products you think are grown without chemicals, but most products are. If an apple is labeled as being organic, it could mean two things. Either the apple tree itself is free from chemicals, or just the soil. One or the other, but rarely both. The truth is, the word 'organic' can mean many things, and taking a farmer to court would be difficult if you found out his fruits were indeed sprayed with pesticides. After all, all organisms on earth are scientifically labeled as being organic, unless they are made of plastic or metal. The word 'organic' comes from the word 'organism', meaning something that is, or once was, living and breathing air, water and sunlight. So, the next time you stroll through your local supermarket and see brown pears that are labeled as being organic, know that they could have been third-rate fare sourced from the last day of a weekend market, and have been re-labeled to be sold to a gullible crowd for a premium price. I have a friend who thinks that organic foods have to look beat up and deformed because the use of chemicals is what makes them look perfect and flawless. This is not true. Chemical-free foods can look perfect if grown in your backyard. If you go to jungles or forests untouched by man, you will see fruit and vegetables that look like they sprouted from trees from Heaven. The first talk I ever gave as a part of my new professional trajectory was on August 12, 2010. I told the story about how we solved the problem of integrating UX into Agile at TheLadders. And then the timeline started to accelerate from there. A month later, on September 24, I gave my first talk about Lean UX and it was in Paris. I was communicating about this topic publicly, and people were saying, “Hey, come give us a talk about it.” And I was writing about the topic in any publication that would actually listen to this kind of thing. The Cheskin company demonstrated a particularly elegant example of sensation transference a few years ago, when they studied two competing brands of inexpensive brandy, Christian Brothers and E & J (the latter of which, to give some idea of the market segment to which the two belong, is known to its clientele as Easy Jesus). Their client, Christian Brothers, wanted to know why, after years of being the dominant brand in the category, it was losing market share to E & J. Their brandy wasn’t more expensive. It wasn’t harder to find in the store. And they weren’t being out-advertised (since there is very little advertising at this end of the brandy segment). So, why were they losing ground? Cheskin set up a blind taste test with two hundred brandy drinkers. The two brandies came out roughly the same. Cheskin then decided to go a few steps further. “We went out and did another test with two hundred different people,” explains Darrel Rhea, another principal in the firm. “This time we told people which glass was Christian Brothers and which glass was E & J. Now you are having sensation transference from the name, and this time Christian Brothers’ numbers are up.” Clearly people had more positive associations with the name Christian Brothers than with E & J. That only deepened the mystery, because if Christian Brothers had a stronger brand, why were they losing market share? “So, now we do another two hundred people. This time the actual bottles of each brand are in the background. We don’t ask about the packages, but they are there. And what happens? Now we get a statistical preference for E & J. So we’ve been able to isolate what Christian Brothers’ problem is. The problem is not the product and it’s not the branding. It’s the package.” Rhea pulled out a picture of the two brandy bottles as they appeared in those days. Christian Brothers looked like a bottle of wine: it had a long, slender spout and a simple off-white label. E & J, by contrast, had a far more ornate bottle: more squat, like a decanter, with smoked glass, foil wrapping around the spout, and a dark, richly textured label. To prove their point, Rhea and his colleagues did one more test. They served two hundred people Christian Brothers Brandy out of an E & J bottle, and E & J Brandy out of a Christian Brothers bottle. Which brandy won? Christian Brothers, hands-down, by the biggest margin of all. Now they had the right taste, the right brand, and the right bottle. The company redesigned their bottle to be a lot more like E & J’s, and, sure enough, their problem was solved.

That is because they have another source of carbohydrates, our intestinal mucus. During times of low fiber consumption, gut bacteria can sustain themselves on the carbohydrates that our intestinal cells continually secrete into the gut environment, which serves as a barrier to protect our own human cells from direct contact with the microbiota. But by feasting on mucus carbohydrates, our microbes deplete the protective gut mucus layer, compromising barrier function and increasing inflammation. While the long-term effects of less gut mucus on human health are still unknown, preliminary experiments suggest that loss of intestinal mucus can lead to colitis. But the microbiota is very adaptable: provide sustenance in the form of dietary fiber and many microbes will switch their focus from eating your mucus to eating your most recent meal.

Americans spend less on food because food in the US is cheaper, but it is alsoof poorer quality. The origin of this is the 1970s, when food costs were rising at the same time breakthrough technologies in the food industry were happening. President Nixon’s Secretary of Agriculture, Earl Butz,hijacked the country’s agricultural subsidy program (government money given to farmers during the Great Depression) and funneled it into the industrial production of corn and soy, which in turn promoted the rise of big agribusinesses and put smaller farmers out of business. The amount of corn produced has tripled, from 4 billion bushels in the1970s to 12 billion bushelstoday. When this much cheap corn is floating around, something has to be done with it—i.e., put it into every possible food product we can find, which is why corn syrup is in an innumerable amount of products.

The humble egg, in particular, was singled out in a 1968 proclamation by the American Heart Association, accused of causing heart disease because of its high cholesterol content. It has remained in nutritional purgatory for decades, even after reams of research papers showing that dietary cholesterol (and particularly egg consumption) may not have much to do with heart disease at all. Eating lots of saturated fat can increase levels of atherosclerosis-causing lipoproteins in blood, but most of the actual cholesterol that we consume in our food ends up being excreted out our backsides. The vast majority of the cholesterol in our circulation is actually produced by our own cells. Nevertheless, US dietary guidelines warned Americans away from consuming foods high in cholesterol for decades, and nutrition labels still inform American consumers about how much cholesterol is contained in each serving of packaged foods.
