Ask a butcher what’s for dinner, and the answer is always “Meat!” But a dietitian, on the other hand, will advise you to eat what’s best for your health. She has no interest in selling you meat if fish is better for you. Brokers are butchers, while fiduciaries are dietitians. They have no “dog in the race” to sell you a specific product or fund. On the side. There is a perfect ratio of sour cream, guac, and salsa on a shredded chicken tostada. No one can make it happen for you. Many restaurants have tried. All have failed. Only the mouth knows its own pleasure, and calibration like Taco Heaven cannot be mass produced. It simply cannot. Taco Heaven is a sensory explosion of flavor that defies logic. First, you have to eye the amount of spiced meat, shredded lettuce, chopped tomatoes, and tomatillos. You must consider the size and crispiness of the shells. Some people–I call them blasphemers–like soft tacos. I am sitting across from Exhibit A. We won’t talk about soft tacos. They don’t make it to Taco Heaven. People who eat soft tacos live in Taco Purgatory, never fully understanding their moral failings, repeating the same mistakes again and again for all eternity. Like Perky and dating. Once you inventory your meat, lettuce, tomato, and shell quality, the real construction begins. Making your way to Taco Heaven is like a mechanical engineer building a bridge in your mouth. Measurements must be exact. Payloads are all about formulas and precision. One miscalculation and it all fails. Taco Death is worse than Taco Purgatory, because the only reason for Taco Death is miscalculation. And that’s all on you. “Oh, God,” Fiona groans through a mouthful of abomination. “You’re doing it, aren’t you?” “Doing what?” I ask primly, knowing damn well what she’s talking about. “You treat eating tacos like you’re the star of some Mythbusters show.” “Do not.” “Do too.” “Even if I do–and I am notconceding the point–it would be a worthwhile venture.” “You are as weird about your tacos as Perky is about her coffee.” “Take it back! That’s mine!’ but you’re more offended that I’ve desecrated my inferior taco wrapping with the wrong amount of guac.” “Because it’s wrong.” “You should have gone to MIT, Mal. You need a job that involves nothing but pure math for the sake of calculating stupid shit no one else cares about.” “So glad to know that a preschool teacher holds such high regard for math,” I snark back. And MIT didn’t give me the kind of merit aid package I got from Brown, I don’t add. “Was that supposed to sting?” She takes the rest of my guacamole, grabs a spoon, and starts eating it straight out of the little white paper scoop container thing. “How can you do that? It’s like people who dip their french fries in mayonnaise.” I shudder, standing to get in line to buy more guac. “I dip my french fries in mayo!” “More evidence of your madness, Fi. Get help now. It may not be too late.” I stick my finger in her face. “And by the way, you and Perky talk about my taco habits behind my back? Some friends!” I hmph and turn toward the counter.

Even though they’d had the party catered, apparently Grant had insisted on grilling some things himself. “I wouldn’t have recommended you apply for it otherwise.” Athena ducked behind the bar and grinned at the array of bottles and other garnishes. She’d been friends with Lizzy the past couple months and knew her friend’s tastes by now. As she started mixing up their drinks she said, “If I fail, hopefully they won’t blame you.” Lizzy just snorted but eyed the drink mix curiously. “Purple?” “Just wait. You’ll like it.” She rolled the rims of the martini glasses in sugar as she spoke. “Where’d you learn to do this?” “I bartended a little in college and there were a few occasions on the job where I had to assist because staff called out sick for an event.” There’d been a huge festival in Madrid she’d helped out with a year ago where three of the staff had gotten food poisoning, so in addition to everything else she’d been in charge of, she’d had to help with drinks on and off. That had been such a chaotic, ridiculous job. “At least you’ll have something to fall back on if you do fail,” Lizzy teased. “I seriously hope not.” She set the two glasses on the bar and strained the purple concoction into them. With the twinkle lights strung up around the lanai and the ones glittering in the pool, the sugar seemed to sparkle around the rim. “This is called a wildcat.” “You have to make me one of those too!” The unfamiliar female voice made Athena look up. Her eyes widened as her gaze locked with Quinn freaking Brody, the too-sexy-man with an aversion to virgins. He was with the tall woman who’d just asked Athena to make a drink. But she had eyes only for Quinn. Her heart about jumped out of her chest. What was he doing here of all places? At least he looked just as surprised to see her. "Funghi belli." "Tutto economico." I squeezed and pinched, sniffed, and weighed things in my hands, and having agreed on the goods I would then barter on the price. The stallholders were used to me, but they had never known me to be accompanied by a man. Wild strawberries, cherries, oranges and lemons, quinces and melons were all subject to my scrutiny. The olive sellers, standing behind their huge basins containing all varieties of olives in brine, oil, or vinegar, called out to me: "Hey, Rosa, who's your friend?" We made our way to the meat vendors, where rabbits fresh from the fields, huge sides of beef, whole pigs and sheep were hung up on hooks, and offal and tripe were spread out on marble slabs. I selected some chicken livers, which were wrapped in paper and handed to l'Inglese to carry. I had never had a man to carry my shopping before; it made me feel special. We passed the stalls where whole tuna fish, sardines and oysters, whitebait and octopus were spread out, reflecting the abundant sea surrounding our island. Fish was not on the menu today, but nevertheless I wanted to show l'Inglese where to find the finest tuna, the freshest shrimps, and the most succulent swordfish in the whole market.

But Han just seems excited- his skin slightly damp and pink from the kitchen heat- and intrigued by the new kind of cooking, a shift of ingredients like a move from native tongue into a foreign language: butter instead of olive oil; potatoes instead of rice; beef instead of lamb. He seats her on a pillow on the blue cloth and then sets the dishes before her on the cloth. He sits across from her, one knee skimming hers. They touch and she makes herself lean forward to reach the bowl of potatoes. Their knees graze again. Han tastes each dish while looking at Sirine, so the meal seems like a question. She nods and praises him lavishly. "Mm, the rich texture of this meat loaf- the egg and breadcrumbs- and these bits of onion are so good, and there's a little chili powder and dry mustard, isn't there? It's lovely. And there's something in the sauce... something..." "You mean ketchup?" Han asks. "Oh yes, I suppose that's it." She smiles. "That's remarkable." Sirine smiles vaguely, tips her head, not sure of what he means. "What?" "The way you taste things...." He gestures over the food, picks up a bite of meat loaf in his fingers as if it were an olive. "You know what everything here is- I mean exactly." "Oh no." She laughs. "It's so basic, anyone can do that. It's like you just taste the starting places- where it all came from. Unless of course it's ketchup." He gazes at her, then carefully takes her hand and kisses her fingers. "Then I think you must be of this place." Sirine laughs again, disconcerted by his intensity. "Well, I don't know about that, but I think food should taste like where it came from. I mean good food especially. You can sort of trace it back. Ah, I felt my whole spirit sink into the ground. I was devastated. But I didn’t want to show that to Steve. I stood up straight and tall, smiled, and said, “Yes, I’d love to.” “Sue,” he called out. “Hey, Sue.” Bounding around the corner came this little brindle girl, Sui, his dog. “Here’s my girlfriend,” he said with a smile. This is it, I thought. There’s no turning back. We spent a wonderful weekend together. I worked alongside him at the zoo from sunup to sunset. During the day it was raking the entire zoo, gathering up the leaves, cleaning up every last bit of kangaroo poo, washing out lizard enclosures, keeping the snakes clean. But it was the croc work that was most exciting. The first afternoon of that visit, Steve took me in with the alligators. They came out of their ponds like sweet little puppies--puppies with big, sharp teeth and frog eyes. I didn’t know what to expect, but with Steve there, I felt a sense of confidence and security. The next thing I knew, I was feeding the alligators big pieces of meat, as if I’d done it all my life.

The Wolf and the Good Shepherd (tale) It is said that a long time ago, a wolf stalked the sheep of shepherds on the outskirts of London. He was a strong wolf, with beautiful fur and soft, seductive speech. He had eaten many sheep from many shepherds and boasted about it. However, he had never managed to eat any of Pastor Jack's sheep, who was old and very careful, always keeping an eye on his flock, which was also not very large. Still, it was the best cared for herd in the Kingdom. He was always well fed, cared for, groomed and disease-free. The wolf was very angry with Pastor Jack, because he had once tried to eat a small sheep from the flock and the shepherd hit him hard on the head with his staff. On the wolf's face, a large scar reminded him of that incident. One day, seeing that some sheep had strayed away from the flock, the wolf thought: “well, I'm not going to attack them, since killing or two wouldn't satisfy me. I want the pastor.” His sheep approached and the wolf bent down and pretended to be afraid, and the sheep said to him: “what animal are you and why are you afraid, we are just sheep”. The wolf then said: “I'm afraid of sheep, once your shepherd, a very cruel man attacked me and hurt me and since then, even though I'm a wolf, I've only eaten grass”. The sheep looked at him, with an expression of doubt, but kindness being the essential nature of sheep, they believed him and said: “it can't be Pastor Jack, he is very kind, he always takes care of us, he is always attentive to us” . The wolf then got up and looking at them said: “you are wrong, he just wants you to take your wool, don't you see that he is a tyrant who rules you, who takes you here and there, and you don't they can have a little fun, be free like me, walk through the forest, go wherever I want – he’s always with that cruel stick pulling them and taking them wherever he wants.” The sheep then listened carefully and returned to the flock. When they returned to the herd, the others said that they had spoken to a wolf, that it had not attacked them and that it had told them the story about the shepherd. The next day, more sheep went to the boundary between the field and the forest and there they met the wolf, who told the same story, but this time sadder. They all raged against the shepherd and said: “Friend wolf, you have been so kind to us and told us the truth, we had never thought about how the shepherd oppresses us, tomorrow we will tell all the sheep what happened and we will run away from Pastor Jack ”. And so it was, the next day, all the sheep went to the edge of the forest, something that the shepherd found strange, having followed them. The wolf then said to them: “come with me into the forest, dear friends, I will show you how good it is to be free”. And so, they all went into the forest, with the shepherd following them, watching them from afar. At one point, the sheep got lost and the shepherd shouted loudly and called them. The wolf, then, taking advantage of the mess, attacked the shepherd first, like a jugular bite in the throat. Afterwards, he had fun running after each of the sheep and killing them, without even eating the meat. The last sheep, before being killed, said to the wolf: “you were so kind to us, why are you doing this? It is said that a long time ago, a wolf stalked the sheep of shepherds on the outskirts of London. He was a strong wolf, with beautiful fur and soft, seductive speech. He had eaten many sheep from many sheepherders and boasted about it. However, he had never managed to eat any of Shepherd Jack's sheep, who was old and very careful, always keeping an eye on his flock, which was also not very large. Still, it was the best cared for herd in the Kingdom. He was always well fed, cared for, groomed and disease-free. The wolf was very angry with the shepherd Jack, because he had once tried to eat a small sheep from the flock and the shepherd hit him hard on the head with his staff. On the wolf's face, a large scar reminded him of that incident. One day, seeing that some sheep had strayed away from the flock, the wolf thought: “well, I'm not going to attack them, since killing or two wouldn't satisfy me. I want the sheepherder.” His sheep approached and the wolf bent down and pretended to be afraid, and the sheep said to him: “what animal are you and why are you afraid, we are just sheep”. The wolf then said: “I'm afraid of sheep, once your shepherd, a very cruel man attacked me and hurt me and since then, even though I'm a wolf, I've only eaten grass”. The sheep looked at him, with an expression of doubt, but kindness being the essential nature of the sheep, they believed him and said: “he can't be our Shepherd, he is very kind, he always takes care of us, he is always attentive to our us". The wolf then got up and looking at them said: “you are wrong, he just wants you to take your wool, don't you see that he is a tyrant who rules you, who takes you here and there, and you don't they can have a little fun, be free like me, walk through the forest, go wherever I want – he’s always with that cruel stick pulling them and taking them wherever he wants.” The sheep then listened carefully and returned to the flock. When they returned to the herd, the others said that they had spoken to a wolf, that it had not attacked them and that it had told them the story about the shepherd. The next day, more sheep went to the boundary between the field and the forest and there they met the wolf, who told the same story, but this time sadder. They all raged against the sheepherder and said: “Friend wolf, you have been so kind to us and told us the truth, we had never thought about how the sheepherder oppresses us, tomorrow we will tell all the sheep what happened and we will run away from him.” And so it was, the next day, all the sheep went to the edge of the forest, something that the sheep shepherd found strange, having followed them. The wolf then said to them: “come with me into the forest, dear friends, I will show you how good it is to be free”. And so, they all went into the forest, with the shepherd following them, watching them from afar. At one point, the sheep got lost and the shepherd shouted loudly and called them. They, however, hid from the sheep shepherd. The wolf, then, taking advantage of the mess, attacked the sheepherder first, like a bite in the jugular, killing him instantly. Afterwards, he had fun running after each of the sheep and killing them, without even eating the meat, for pure fun. The last sheep, before being killed, said to the wolf: “you were so kind to us, why are you doing this? We never saw a smile from the sheepherder and you were so nice to us, we thought you were a friend.” The wolf then said to her: “sympathy is not synonymous with care or devotion. In his book How to Blow Up a Pipeline, Andreas Malm argues convincingly that, such is the scale of the climate crisis, sabotage and property damage are absolutely justified in the battle against fossil fuel companies and others working against the public good. I understand that this is not to everyone’s taste, but there is plenty more you can do. Drive an electric car or, even better, use public transport, walk or cycle; stop flying; switch to a green energy tariff; eat less meat; spread the word about the predicament we find ourselves in among your friends and family; lobby your elected representatives at both local and national level; and use your vote wisely to put in power a government that walks the talk on the climate emergency.

Evidence for climate change has been available for some time, so why has this 'urgent global response' (in Stern's words) not occurred? The IPCC (2015) have argued that we could limit the effects of climate change by changing our individual and collective behaviour. We could fly less, eat less meat, use public transport, cycle or walk, recycle, choose more low carbon products, have shorter showers, waste less food or reduce home energy use. There has been some significant change but nothing like the 'global response' required to ameliorate the further deleterious effects of climate change. We are reminded here of a somewhat depressing statistic reported by a leading multinational, Unilever, in their 'sustainable Living Plan.' In 2013, they outlined how they were going to halve the greenhouse gas impact of their products across the life cycle by 2020. To achieve this goal, they reduced greenhouse gas emissions from their manufacturing chain. They opted for more environmentally friendly sourcing of raw materials, doubled their use of renewable energy and produced concentrated liquids and powders. They reduced greenhouse gas emissions from transport and greenhouse gas emissions from refrigeration. They also restricted employee travel. The result of all these initiatives was that their 'greenhouse gas footprint impact per consumer... increased by around 5% since 2010.' They concluded, 'We have made good progress in those areas under our control but ... the big challenges are those areas not under direct control like... consumer behaviour ' (2013:16; emphasis added). It seems that consumers are not 'getting the message.' They are not opting for the low carbon alternatives in the way envisaged; they are not changing the length of their showers (to reduce energy and water consumption); they are not breaking their high-carbon habits. The question is why?

But the boy with the buzzed hair asks really good questions. I may have met my match. I ask Mom if I can go out tonight. It’s Friday. We’re standing in the kitchen making dinner. Tom is still at the bank. Mom fills up my “Esther” water bottle and sets it down next to me. “With who?” I keep my head down as I chop onions for the spaghetti sauce. They sting my eyes. “Color. The girl who cleans our house,” I say. “You said we need to make friends.” “Color,” Mom says. “Interesting name.” She doesn’t answer my question right away, but takes some of the chopped onions and adds them to the cooking meat. I keep dicing as tears begin to form in my eyes and fall down my cheeks. “You know, I wanted to name you Violet, but your dad didn’t like names that were colors, like Ruby and Hazel.” Mom tucks loose auburn hair behind her ear. Hannah does the same motion with her hair, too. “Amber . . . Jade . . . Goldie?” I say. “How about Olive?” “Raven?” “Scarlet.” I gag. “I still love the name Violet, though,” Mom says. “It’s nice for a girl.” “I like it, too.” I keep chopping. Mom keeps cooking. I add more onions to the pot. She turns to me then, with tears running down her face, just like mine. We stare at each other. It’s the wettest thing to happen in the desert since we arrived. I ask Mom in my head, Why did you let this happen? It’s the most selfish thing I’ve ever asked because I made this happen. I wrote the equation and asked Mom and Tom to answer it. And they did. “From the onions,” Mom says, with a sniffle that knows it’s a lie. I hand her a napkin. She points at the “Esther” water bottle as she pats her face dry. “Drink that.” I follow her orders.

Queenie stopped. ‘You’ve heard of the Kindertransport, have you?’ ‘Some Jewish kids joined our school from Europe,’ I said. ‘But I don’t see what –’ ‘Esther was one of them,’ Queenie interrupted. ‘Not at your school but another one in London. She’s a Jewish refugee.’ ‘Well, she as good as called Sukie a spy!’ I pointed out. Queenie ignored my comment. ‘Esther’s had a terrible time of it. Everyone she loves has either died or disappeared, or failing that, lives in another country. Imagine what that feels like, can you?’ I swallowed miserably. The thing was I could imagine it – bits of it, anyway – and I felt ashamed, which didn’t improve my temper. ‘That doesn’t excuse what she did to Cliff’s lip,’ I mumbled, though really I was cross with myself. After what I’d overheard about kosher meat, I should have realised she was a Kindertransport child. But I didn’t think, did I? Instead, I’d grabbed her by the hair. What sort of person was I turning into to be so bitter? So angry? Queenie set off walking again. ‘That lip’ll heal in no time. Now hurry up and stop dawdling.’ Glancing sideways at Cliff, I felt a funny sensation in my chest. His lip looked horrid now but he would recover – Queenie was right. At least he was here, my living, breathing, sticky-handed brother. I was pretty lucky, all things considered.
