You know you've been in France for nearly a decade when the idea of eating congealed blood sounds not only normal, but positively delightful. It's a shame that it's not on the French pregnancy diet--- forbidden along with charcuterie, liver, and steak tartare. It's true that boudin noir is not the sort of thing I'd buy at any old supermarket. Ideally, you want a butcher who prepares his own. I bought mine from the mustached man with the little truck in Apt market, the same one I'd spotted during our first picnic in Provence. Since our first visit, I'd returned many times to buy his delicious, very lean, saucisses fraîches and his handmade andouillettes, which I sauté with onions, Dijon mustard, and a bit of cream. I'm an adventurous eater, but the idea of boiled (or cold) boudin makes me think about moving back to New Jersey. No, not really. I admit, when you first take it out of the oven, there are some visual hurdles. There's always a brief moment--- particularly when I serve the dish to guests--- that I think, But that looks like large Labrador shit on a plate. True enough. But once you get past the aesthetics, you have one of the richest savory tastes I can imagine. Good boudin has a velveteen consistency that marries perfectly with the slight tartness of the roasted apples. Add mashed potatoes (with skin and lumps), a bottle of Châteauneuf-du-Pape, and wake me in the spring.

Ben has been to buy some boxes from the patisserie to stow our treasures. The exotic menu is made up of taramasalata, roulade of tuna and capers, salad of peppers sautéed in garlic, and aubergine caviar. It isn't very exotic for an inhabitant of the Balkans but it probably would be for someone from Vietnam or Brittany. The giant salad really is a giant: there's a whole meal in it, from the first course to the dessert and all that with no rice and no tinned sweet corn. Slivers, slivers of all sorts of different things- vegetables, cheese, fruit- all blended without crushing each other, side by side without working against each other.

Yum.

I wanted to show him how to make a timballo. This baroque dish exemplifies the style of cooking from the island's aristocratic past, known as cucina baronale. Its main ingredient is macaroni, which, until the eighteenth century, was a celebratory food that only the very wealthy could afford to eat. The macaroni is mixed with mushrooms, onions, tomato paste, chicken livers, wine, cheese, and ham and then formed into a pie with a melting pastry crust. It is a complicated dish, so we tend to make it only on special occasions.

Dr. Cabot’s Liver Healing Soup Recipe Serves 6 - 8 8 cups water miso and/or tamari to taste 3 tablespoons of cold pressed olive oil 2 sweet potatoes, chopped 3 tomatoes, chopped 2 carrots, chopped 2 leeks, washed and sliced 1 bunch spinach (fresh or frozen), chopped 2 stalks of celery (including the tops), chopped 2 large brown onions, chopped 1 inch (2.5cm) finely chopped and peeled ginger root 2 cloves garlic, minced (optional) 1 bunch sliced kale or beet greens 1 cup cooked beans or lentils Add small amounts of celery seed, turmeric, pepper and miso (or tamari) to taste optional added extra ingredients: 2 - 3 fresh artichoke hearts 2 cups shiitake mushrooms fresh or reconstituted sliced 1 whole reishi mushroom (remove when cooked) ¼ cup arame or wakame seaweed chopped Although these 4 ingredients are traditionally very good for the liver and the immune system, not everyone likes these things, so if they really do not appeal to you, leave some or all of them out. In a large saucepan add the oil and bring to a moderate to high heat. Add the celery (plus tops), ginger root, turmeric, tomato, potato, carrots, onions, celery seed and garlic and some pepper. Stir continuously so the vegetables do not stick to the bottom. When the vegetables begin to brown, carefully add the water with miso/tamari to taste. Bring to the boil. Reduce the heat to a simmer. Add the lentils/beans and stir. If using these, add the seaweed, mushrooms and artichoke hearts. Simmer for about 2 hours. Add the kale and beet greens 15 minutes before you serve. If present, remove the reishi mushrooms. Stir in the miso/tamari to taste. Serve alone or with a side salad and one slice crusty wholemeal bread.

LlVER LOAF 2 pounds liver 4 slices bacon ¼ cup chopped parsley 1 onion 1 cup milk 2 flaked wheat cereal biscuits, crumbed 3 beaten eggs salt and pepper ½ cup tomato ketchup Method—Let liver slices stand in hot water 10 minutes; drain. Grind with onion, parsley and bacon. Add beaten eggs, crumbs and seasonings and pack firmly into loaf pan. Spread tomato ketchup over top of loaf. Bake one hour at 350 degrees. Garnish with broiled bacon slices.
