When the forests are cleared so the cattle can graze, billions of tons of carbon dioxide are released into the atmosphere. Finally, the world's cattle are thought to produce about 20 percent of the methane released into the atmosphere, and methane traps twenty-five times as much heat from the sun as carbon dioxide. Factory farm manure also produces methane because, unlike manured dropped naturally in the fields, it dies not decompose in the presence of oxygen. All of this amounts to a compelling reason...for a plant based diet.

In 2018, a team led by Chunwu Zhu looked at the protein content of eighteen different strains of rice, the staple crop for more than 2 billion people, and found that more carbon dioxide in the air produced nutritional declines across the board—drops in protein content, as well as in iron, zinc, and vitamins B1, B2, B5, and B9. Really everything but vitamin E. Overall, the researchers found that, acting just through that single crop, rice, carbon emissions could imperil the health of 600 million people. In previous centuries, empires were built on that crop. Climate change promises another, an empire of hunger, erected among the world’s poor.

She was dark-skinned and thin, not veiled but dressed in a sitara, a brightly coloured robe of greens and pinks, and she wore a headscarf of a deep rose colour. In that barren place the vividness of her dress was all the more striking. On her head she balanced a pitcher and in her hand she carried something. As we watched her approach, I saw that she had come from a small house, not much more than a cave, which had been built into the side of the mountain wall that formed the far boundary of the gravel plateau we were standing on. I now saw that the side of the mountain had been terraced in places and that there were a few rows of crops growing on the terraces. Small black and brown goats stepped up and down amongst the rocks with acrobatic grace, chewing the tops of the thorn bushes.
As the girl approached she gave a shy smile and said, ‘Salaam alaikum, ’ and we replied, ‘Wa alaikum as salaam, ’ as the sheikh had taught us. She took the pitcher from where it was balanced on her head, kneeled on the ground, and gestured to us to sit. She poured water from the pitcher into two small tin cups, and handed them to us. Then she reached into her robe and drew out a flat package of greaseproof paper from which she withdrew a thin, round piece of bread, almost like a large flat biscuit. She broke off two pieces, and handed one to each of us, and gestured to us to eat and drink. The water and the bread were both delicious. We smiled and mimed our thanks until I remembered the Arabic word, ‘Shukran.’
So we sat together for a while, strangers who could speak no word of each other’s languages, and I marvelled at her simple act. She had seen two people walking in the heat, and so she laid down whatever she had been doing and came to render us a service. Because it was the custom, because her faith told her it was right to do so, because her action was as natural to her as the water that she poured for us. When we declined any further refreshment after a second cup of water she rose to her feet, murmured some word of farewell, and turned and went back to the house she had come from.
Harriet and I looked at each other as the girl walked back to her house. ‘That was so…biblical,’ said Harriet.
‘Can you imagine that ever happening at home?’ I asked. She shook her head. ‘That was charity. Giving water to strangers in the desert, where water is so scarce. That was true charity, the charity of poor people giving to the rich.’
In Britain a stranger offering a drink to a thirsty man in a lonely place would be regarded with suspicion. If someone had approached us like that at home, we would probably have assumed they were a little touched or we were going to be asked for money. One of the big problems in North Korea was a fertilizer shortage. When the economy collapsed in the 1990s, the Soviet Union stopped sending fertilizer to us and our own factories stopped producing it. Whatever was donated from other countries couldn’t get to the farms because the transportation system had also broken down. This led to crop failures that made the famine even worse. So the government came up with a campaign to fill the fertilizer gap with a local and renewable source: human and animal waste. Every worker and schoolchild had a quota to fill. You can imagine what kind of problems this created for our families. Every member of the household had a daily assignment, so when we got up in the morning, it was like a war. My aunts were the most competitive. “Remember not to poop in school!” my aunt in Kowon told me every day. “Wait to do it here!” Whenever my aunt in Songnam-ri traveled away from home and had to poop somewhere else, she loudly complained that she didn’t have a plastic bag with her to save it. “Next time I’ll remember!” she would say. Thankfully, she never actually did this. The big effort to collect waste peaked in January, so it could be ready for growing season. Our bathrooms in North Korea were usually far away from the house, so you had to be careful that the neighbors didn’t steal from you at night. Some people would lock up their outhouses to keep the poop thieves away. At school the teachers would send us out into the streets to find poop and carry it back to class. So if we saw a dog pooping in the street, it was like gold. My uncle in Kowon had a big dog who made a big poop—and everyone in the family would fight over it. This is not something you see every day in the West.

Organic farming is environmentally friendlier to every acre of land. But it requires _more_ acres. The trade-off is a harsh one. Would we rather have pesticides on farmland and nitrogen runoffs from them? Or would we rather chop down more forest?
How much more forest would we have to chop down? If we wanted to reduce pesticide use and nitrogen runoff by turning all of the world’s farmland to organic farming, we’d need about 50 percent more farmland than we have today. Nobel Prize winner Norman Borlaug, whose work helped triple crop yields over the last fifty years and arguably saved billions from starvation, estimates that the world would need an _additional_ 5 to 6 billion head of cattle to produce enough manure to fertilize that farmland. There are only an estimated 1.3 billion cattle on the planet today.
Combined, we’d need to chop down roughly half of the world’s remaining forest to grow crops and to graze cattle that produce enough manure to fertilize those crops. Clearing that much land would produce around 500 billion tons of CO2, or almost as much as the total cumulative CO2 emissions of the world thus far. And the cattle needed to fertilize that land would produce far _more_ greenhouse gases, in the form of methane, than all of agriculture does today, possibly enough to equal all human greenhouse gases emitted from all sources today.

There are hundreds of examples of highly functioning commons around the world today. Some have been around for centuries, others have risen in response to economic and environmental crises, and still others have been inspired by the distributive bias of digital networks. From the seed-sharing commons of India to the Potato Park of Peru, indigenous populations have been maintaining their lands and managing biodiversity through a highly articulated set of rules about sharing and preservation. From informal rationing of parking spaces in Boston to Richard Stallman’s General Public License (GPL) for software, new commons are serving to reinstate the value of land and labor, as well as the ability of people to manage them better than markets can. In the 1990s, Elinor Ostrom, the American political scientist most responsible for reviving serious thought about commoning, studied what specifically makes a commons successful. She concluded that a commons must have an evolving set of rules about access and usage and that it must have a way of punishing transgressions. It must also respect the particular character of the resource being managed and the people who have worked with that resource the longest. Managing a fixed supply of minerals is different from managing a replenishing supply of timber. Finally, size and place matter. It’s easier for a town to manage its water supply than for the planet to establish water-sharing rules.78 In short, a commons must be bound by people, place, and rules. Contrary to prevailing wisdom, it’s not an anything-goes race to the bottom. It is simply a recognition of boundaries and limits. It’s pooled, multifaceted investment in pursuit of sustainable production. It is also an affront to the limitless expansion sought by pure capital. If anything, the notion of a commons’ becoming “enclosed” by privatization is a misnomer: privatizing a commons breaks the boundaries that protected its land and labor from pure market forces. For instance, the open-source seed-sharing networks of India promote biodiversity and fertilizer-free practices among farmers who can’t afford Western pesticides.79 They have sustained themselves over many generations by developing and adhering to a complex set of rules about how seed species are preserved, as well as how to mix crops on soil to recycle its nutrients over centuries of growing. Today, they are in battle with corporations claiming patents on these heirloom seeds and indigenous plants. So it’s not the seed commons that have been enclosed by the market at all; rather, the many-generations-old boundaries have been penetrated and dissolved by disingenuously argued free-market principles.

Indian farmers grow maize in what is called a milpa. The term means “maize field,” but refers to something considerably more complex. A milpa is a field, usually but not always recently cleared, in which farmers plant a dozen crops at once, including maize, avocados, multiple varieties of squash and bean, melon, tomatoes, chilis, sweet potato, jicama (a tuber), amaranth (a grain-like plant), and mucuna (a tropical legume). In nature, wild beans and squash often grow in the same field as teosinte, the beans using the tall teosinte as a ladder to climb toward the sun; below ground, the beans’ nitrogen-fixing roots provide nutrients needed by teosinte. The milpa is an elaboration of this natural situation, unlike ordinary farms, which involve single-crop expanses of a sort rarely observed in unplowed landscapes. Milpa crops are nutritionally and environmentally complementary. Maize lacks digestible niacin, the amino acids lysine and tryptophan, necessary to make proteins and diets with too much maize can lead to protein deficiency and pellagra, a disease caused by lack of niacin. Beans have both lysine and tryptophan, but not the amino acids cysteine and methionine, which are provided by maize. As a result, beans and maize make a nutritionally complete meal. Squashes, for their part, provide an array of vitamins; avocados, fats. The milpa, in the estimation of H. Garrison Wilkes, a maize researcher at the University of Massachusetts in Boston, “is one of the most successful human inventions ever created.

ethanol may actually make some kinds of air pollution worse. It evaporates faster than pure gasoline, contributing to ozone problems in hot temperatures. A 2006 study published in the Proceedings of the National Academy of Sciences concluded that ethanol does reduce greenhouse gas emissions by 12 percent relative to gasoline, but it calculated that devoting the entire U.S. corn crop to make ethanol would replace only a small fraction of American gasoline consumption. Corn farming also contributes to environmental degradation due to runoff from fertilizer and pesticides.
But to dwell on the science is to miss the point. As the New York Times noted in the throes of the 2000 presidential race, ―Regardless of whether ethanol is a great fuel for cars, it certainly works wonders in Iowa campaigns. The ethanol tax subsidy increases the demand for corn, which puts money in farmers‘ pockets. Just before the Iowa caucuses, corn farmer Marvin Flier told the Times, ―Sometimes I think [the candidates] just come out and pander to us, he said. Then he added, ―Of course, that may not be the worst thing. The National Corn Growers Association figures that the ethanol program increases the demand for corn, which adds 30 cents to the price of every bushel sold.
Bill Bradley opposed the ethanol subsidy during his three terms as a senator from New Jersey (not a big corn-growing state). Indeed, some of his most important accomplishments as a senator involved purging the tax code of subsidies and loopholes that collectively do more harm than good. But when Bill Bradley arrived in Iowa as a Democratic presidential candidate back in 1992, he ―spoke to some farmers‖ and suddenly found it in his heart to support tax breaks for ethanol. In short, he realized that ethanol is crucial to Iowa voters, and Iowa is crucial to the presidential race.

Then, Africa will be there to offer to new races the treasures that for centuries have been accumulating in her breast. Those climates now so fatal to strangers will be purified by cultivation and by drainage of the soil, and those scattered water supplies will be gathered into one common bed to form an artery of navigation. Then this country over which we are now passing, more fertile, richer, and fuller of vitality than the rest, will become some grand realm where more astonishing discoveries than steam and electricity will be brought to light.

He recognized her deft hand and eye for detail immediately. He flipped through the pages, past vignettes of the dairymaid and her vague-featured gentleman engaged in a courtship of sorts: a kiss on the hand, a whisper in the ear. By the book’s midpoint, the chit’s voluminous petticoats were up around her ears, and the illustrations comprised a sequence of quite similar poses in varying locales. Not just the dairy, but a carriage, the larder, in a hayloft lit with candles and strewn with…were those rose petals?
I’ll be damned.
Gray was fast divining the true source of the French painting master’s mythic exploits. More unsettling by far, however, as he perused the book, he noted a subtle alteration in the gentleman lover’s features. With each successive illustration, the hero appeared taller, broader in the shoulders, and his hair went from a cropped style to collar length in the space of two pages.
The more pages Gray turned, the more he recognized himself.
It was unmistakable. She’d used him as the model for these bawdy illustrations. She’d sketched him in secret; not once, but many times. And here he’d nearly gone mad with envy over each scrap of foolscap she’d inked for once crewman or another. His emotions underwent a dizzying progression-from surprised, to flattered, to (with the benefit of one especially inventive situation in an orchard) undeniably aroused.
But as he lingered over a nude study of this amalgam of the real him and some picaresque fantasy, he began to feel something else entirely. He felt used.
She’d rendered his form with astonishing accuracy, given that it must have been drawn before she’d any opportunity to actually see him unclothed. Not that she’d achieved an exact likeness. Her virgin’s imagination was rather generous in certain aspects and somewhat stinting in others, he noted with a bitter sort of amusement. But she’d laid him bare in these pages, without his knowledge or consent. God, she’d even drawn his scars. All in service of some adolescent erotic fantasy.
And now he began to grow angry.
He had been handling the leaves of the book with his fingertips only, anxious he might smudge or rip the pages. Now he abandoned all caution and flipped roughly through the remainder of the volume. Until he came to the end, and his hand froze.
There they were, the two of them. He and she fully clothed and unengaged in any physical intimacies-yet intimate, in a way he had never known. Never dreamed. Sitting beneath a willow tree, his head in her lap. One of her hands lay twined with his, atop his chest. The other rested on his brow. The sky soared vast and expansive above, gauzy clouds spinning into forever.
The hot fist of desire that had gripped his loins loosened, moved upward through his torso, churning the contents of his gut along the way. Then it clutched at his heart and squeezed until it hurt. Somehow, this illustration was the most dismaying of all. So naïve, so ridiculous. at least the bawdy situations were plausible, if sometimes physically improbable. This was utterly impossible. To her, he'd never been more than a fantasy.
It occurred to Gray that more secrets might be packed within these trunks. If he sorted through her belongings, he might find the answers to all his questions. Perhaps answers to questions he'd never thought to ask. In spite of this, he let the lid of the trunk clap shut and fastened the strap with shaking fingers. He'd suffered as many of her fantasies as he could bear for one day.
It was time to acquaint her with reality.
