Many sense this ignorance and die the more easily because of it, the same way that I will die more easily once I have completed this story. I do not consider myself less ignorant than most people. I have been and still am a seeker, but I have ceased to question stars and books; I have begun to listen to the teachings my blood whispers to me. It’s more an affliction than the expression of any high-minded ideals. I watch Mark Bittman enjoy a perfectly and authentically prepared Spanish paella on TV, after which he demonstrates how his viewers can do it at home—in an aluminum saucepot—and I want to shove my head through the glass of my TV screen and take a giant bite out of his skull, scoop the soft, slurry-like material inside into my paw, and then throw it right back into his smug, fireplug face. The notion that anyone would believe Catherine Zeta-Jones as an obsessively perfectionist chef (particularly given the ridiculously clumsy, 1980s-looking food) in the wretched film No Reservations made me want to vomit blood, hunt down the producers, and kick them slowly to death. (Worse was the fact that the damn thing was a remake of the unusually excellent German chef flick Mostly Martha.) On Hell’s Kitchen, when Gordon Ramsay pretends that the criminally inept, desperately unhealthy gland case in front of him could ever stand a chance in hell of surviving even three minutes as “executive chef of the new Gordon Ramsay restaurant” (the putative grand prize for the finalist), I’m inexplicably actually angry on Gordon’s behalf. And he’s the one making a quarter-million dollars an episode—very contentedly, too, from all reports. The eye-searing “Kwanzaa Cake” clip on YouTube, of Sandra Lee doing things with store-bought angel food cake, canned frosting, and corn nuts, instead of being simply the unintentionally hilarious viral video it should be, makes me mad for all humanity. I. Just. Can’t. Help it. I wish, really, that I was so far up my own ass that I could somehow believe myself to be some kind of standard-bearer for good eating—or ombudsman, or even the deliverer of thoughtful critique. But that wouldn’t be true, would it? I’m just a cranky old fuck with what, I guess, could charitably be called “issues.” And I’m still angry. But eat the fucking fish on Monday already. Okay? I wrote those immortal words about not going for the Monday fish, the ones that’ll haunt me long after I’m crumbs in a can, knowing nothing other than New York City. And times, to be fair, have changed. Okay, I still would advise against the fish special at T.G.I. McSweenigan’s, “A Place for Beer,” on a Monday. Fresh fish, I’d guess, is probably not the main thrust of their business. But things are different now for chefs and cooks. The odds are better than ever that the guy slinging fish and chips back there in the kitchen actually gives a shit about what he’s doing. And even if he doesn’t, these days he has to figure that you might actually know the difference. Back when I wrote the book that changed my life, I was angriest—like a lot of chefs and cooks of my middling abilities—at my customers. They’ve changed. I’ve changed. About them, I’m not angry anymore.

Perhaps the many books on pioneer life with the usual successful and happy outcome have helped to give a wrong impression and perpetuate the idea that country people live on wild game and fish and fruits and in general on the free bounty of heaven. Many people have no idea of the cash expense of operating a farm to-day, or the work and planning required to keep the wheels going round, to say nothing of a decent living or suitable education for the children.

The incarnation therefore isn’t about an equation but about remembering what home used to be like and making a plan to get back there. Consider this reboot of the Genesis creation account. It may help you see God’s emotion a little better. First off, nothing … but God. No light, no time, no substance, no matter. Second off, God says the word and WHAP! Stuff everywhere! The cosmos in chaos: no shape, no form, no function—just darkness … total. And floating above it all, God’s Holy Spirit, ready to play. Day one: Then God’s voice booms out, “Lights!” and, from nowhere, light floods the skies and “night” is swept off the scene. God gives it the big thumbs up, calls it “day”. Day two: God says, “I want a dome—call it ‘sky’—right there between the waters above and below.” And it happens. Day three: God says, “Too much water! We need something to walk on, a huge lump of it—call it ‘land’. Let the ‘sea’ lick its edges.” God smiles, says, “Now we’ve got us some definition. But it’s too plain! It needs colour! Vegetation! Loads of it. A million shades. Now!” And the earth goes wild with trees, bushes, plants, flowers and fungi. “Now give it a growth permit.” Seeds appear in every one. “Yesss!” says God. Day four: “We need a schedule: let’s have a ‘sun’ for the day, a ‘moon’ for the night; I want ‘seasons’, ‘years’; and give us ‘stars’, masses of stars—think of a number, add a trillion, then times it by the number of trees and we’re getting there: we’re talking huge! Day five: “OK, animals: amoeba, crustaceans, insects, fish, amphibians, reptiles, birds, mammals … I want the whole caboodle teeming with a million varieties of each—and let’s have some fun with the shapes, sizes, colours, textures!” God tells them all, “You’ve got a growth permit—use it!” He sits back and smiles, says, “Result!” Day six: Then God says, “Let’s make people—like us, but human, with flesh and blood, skin and bone. Give them the job of caretakers of the vegetation, game wardens of all the animals.” So God makes people, like him, but human. He makes male and female.… He smiles at them and gives them their job description: “Make babies! Be parents, grandparents, great-grandparents—fill the earth with your families and run the planet well. You’ve got all the plants to eat from, so have all the animals—plenty for all. Enjoy.” God looks at everything he’s made, and says, “Fantastic. I love it!” Day seven: Job done—the cosmos and the earth complete. God takes a bit of well-earned R&R and just enjoys. He makes an announcement: “Let’s keep this day of the week special, a day off—battery-recharge day: Rest Day.”2 I’m not normally a paraphrase guy, but we always read the creation story like a textbook. I love this rendition because it captures the enthusiastic emotion that God felt about everything He created, especially humans. He loved it all. He loved us. Most of all, He loved the way things were.

I first met this young client when he was eight years old. He was very shy with a calm disposition. He had been diagnosed with a sensory processing disorder and his parents had hired a special tutor. His mother and father were already clients of mine, and his mother was very conscientious with his diet. She was most concerned about his extreme fatigue, how difficult it was to get him up in the morning, and how difficult it was for him to fall asleep. He was also falling asleep at school. In addition, she was concerned he was having difficulty remembering his schoolwork. With sensory processing disorder, children may have difficulty concentrating, planning and organizing, and responding appropriately to external stimuli. It is considered to be a learning disorder that fits into the autism spectrum of disorders. To target his diet and nutritional supplementation, I recommended a comprehensive blood panel, an adrenal profile, a food sensitivity panel, and an organic acids profile to determine vitamin, mineral, and energy deficiency status. His blood panel indicated low thyroid function, iron deficiency, and autoimmune thyroid. His adrenal profile indicated adrenal fatigue. His organic acids test indicated low B vitamins and zinc, low detoxification capacity, and low levels of energy nutrients, particularly magnesium. He was also low in omega-3 fatty acids and sensitive to gluten, dairy, eggs, and corn. Armed with all of that information, he and I worked together to develop a diet based on his test results. I like to involve children in the designing of their diet. That way they get to include the foods they like, learn how to make healthy substitutions for foods they love but can no longer eat, and learn how to improve their overall food choices. He also learned he needed to include protein at all meals, have snacks throughout the day, and what constitutes a healthy snack. I recommended he start with a gut restoration protocol along with iron support; food sensitivities often go hand in hand with leaky gut issues. This would also impact brain function. In the second phase of his program, I added inositol and serotonin support for sleep, thyroid support, DHA, glutathione support (to help regulate autoimmunity), a vitamin and mineral complex, fish oils, B-12, licorice extract for his adrenals, and dopamine and acetylcholine support to improve his concentration, energy, and memory. Within a month, his parents reported that he was falling asleep easily and would wake up with energy in the morning. His concentration improved, as did his ability to remember what he had learned at school. He started to play sports in the afternoon and took the initiative to let his mom know what foods not to include in his diet. He is still on his program three years later, and the improvements

The answer is both. As much as I am a happy-go-lucky person, I also learned many methods and techniques to come out of my shell. I read an excellent answer for what has been called “The Passover problem,” which details the Jewish feasts that coincided with the death of Christ. If Jesus died on Nisan 14, Thursday afternoon, Passover day, he died at the very hour the Passover lambs were being killed at the Temple. The people ate the Passover meal after sundown, on Nisan 15, which was a special Sabbath because it was the Feast of Unleavened Bread. The next day, Nisan 16, was a Saturday, a “regular” Sabbath, and the next day, Nisan 17, was the day after the regular Sabbath during Pesach—the Feast of Firstfruits. If we follow this pattern, Jesus fulfills his own words found in Matthew 12:40: “For just as Jonah was in the belly of the great fish for three days and three nights, so the Son of Man will be in the heart of the earth for three days and three nights.” If Jesus died on a Friday night and rose on Sunday, he was only in the heart of the earth for two nights, not three. This is by no means a new idea; it has been around for years. But people are so accustomed to the traditional Easter story that they are surprised to realize that crucifixion on a Friday doesn’t fulfill Jesus’s prophecy.

The study was done in a relatively small town in Kyoto named Kyotango.  What makes this town special and a very good place to conduct the study was the fact that its population of people above 100 years old was the highest in Japan - 3 times more than the average for any town in the country.  The program - Takeshi no katei no igaku - specifically wanted to find out what these very old - but very joyful - bunch of people in Kyotango had in common when it comes to living their daily lives.  The program followed 7 people who were already in their late 90s and early 100s from sunrise to sunset.  The program also subjected them to health checkups such as blood tests, among others.  One of the interesting findings of the study was that all of the 7 subjects had very high levels of DHEA, which is a steroid hormone produced by the body's adrenal glands.  DHEA has a solid reputation of being a miracle hormone that's highly associated with longevity.  And as the study continued following the 7 super senior citizens, they discovered another commonality:  they all did things that they really enjoyed.  Each of them had different hobbies they passionately practiced every day such as painting, fishing and making traditional Japanese masks, among others. Given these findings, is it possible then that doing something you really love to do, something you're very passionate about, is the key to higher levels of DHEA and, therefore, a much longer life?  The science on this relationship hasn't been established yet, but the program concluded that regularly doing something that you're very interested in, passionate about, and focused on can give you a long-lasting and deep sense of personal satisfaction in life, which in turn can help elevate your DHEA levels.  And when such levels are very high, a long and joyful life isn't far behind.  And guess what, the program repeatedly made mention of Ikigai in discussing this concept of conclusion.

Day 1 I am Slinklebert Petrovius Mordechai Smythe, but everyone calls me Slinky, mainly because nobody can ever figure out how to say my name properly. I live in the jungle with my family and we’re the royal family here. It’s no big deal really. It just means that every now and then, dad puts on a crown and makes people bow to him, just so they know who’s boss. And once a year, we have a special party for all the important Minecraftians in the area so dad can show off how many emeralds we have. It’s very boring if you ask me. Nobody ever does though. I’m just a kitten and nobody thinks that I have anything to say they want to listen to. That’s OK with me. I don’t want to be royal anyway. I’d rather play all day. That’s why I’m glad we live in the jungle. There’s so much cool stuff to do here. I can climb trees, chase sunlight through the leaves, and catch fish in the lake. It’s a busy life being a royal kitten. It’s going to be my birthday soon and dad asked me what I wanted. I told him that I wanted to have a pet creeper. He told me not to be so silly. Everyone knows that creepers don’t exist. They’re a story made up by Minecraftians to scare naughty children. No ocelot has ever seen a creeper, and if nobody has seen one then they can’t be real. It’s a shame they’re not real though. They sound so cool! I mean, tall, green things that blow up when they’re annoyed or frightened or trying to cause trouble? Who wouldn’t want to meet one of those? Since dad said I couldn’t have a pet creeper, I had to think of something else to ask for. I know what he really wanted to give me, a day on the throne leading the jungle. I can’t think of a worse present for my birthday. I’d have to sit around all day while people come to see me and complain about what the other ocelots are doing. I’ve sat with dad in the throne room before and it was hard to stay awake. It was so dull! But I could see how much it meant to dad to have me interested in his work, so I told him that I’d like to spend the day with him. I don’t think I’ve ever seen him smile as much as he did when he heard me say that. I could count all his sharp, pointy teeth. He has a lot of them. Now that I’ve thought a little more about it, I should have asked for a big pile of fish. At least they’d taste good. Instead, I’ve got to spend my birthday hanging around with dad when I could be out in the jungle having fun. Oh well. I suppose it’s just for one day. I can put up with being bored for just one day.
