But when the tide goes out the little water world becomes quiet and lovely. The sea is very clear and the bottom becomes fantastic with hurrying, fighting, feeding, breeding animals. Crabs rush from frond to frond of the waving algae. Starfish squat over mussels and limpets, attach their million little suckers and then slowly lift with incredible power until the prey is broken from the rock. And then the starfish stomach comes out and envelops its food. Orange and speckled and fluted nudibranchs slide gracefully over the rocks, their skirts waving like the dresses of Spanish dancers. And black eels poke their heads out of crevices and wait for prey. The snapping shrimps with their trigger claws pop loudly. The lovely, colored world is glassed over. Hermit crabs like frantic children scamper on the bottom sand. And now one, finding an empty snail shell he likes better than his own, creeps out, exposing his soft body to the enemy for a moment, and then pops into the new shell. A wave breaks over the barrier, and churns the glassy water for a moment and mixes bubbles into the pool, and then it clears and is tranquil and lovely and murderous again. Here a crab tears a leg from his brother. The anemones expand like soft and brilliant flowers, inviting any tired and perplexed animal to lie for a moment in their arms, and when some small crab or little tide-pool Johnnie accepts the green and purple invitation, the petals whip in, the stinging cells shoot tiny narcotic needles into the prey and it grows weak and perhaps sleepy while the searing caustic digestive acids melt its body down.
Then the creeping murderer, the octopus, steals out, slowly, softly, moving like a gray mist, pretending now to be a bit of weed, now a rock, now a lump of decaying meat while its evil goat eyes watch coldly. It oozes and flows toward a feeding crab, and as it comes close its yellow eyes burn and its body turns rosy with the pulsing color of anticipation and rage. Then suddenly it runs lightly on the tips of its arms, as ferociously as a charging cat. It leaps savagely on the crab, there is a puff of black fluid, and the struggling mass is obscured in the sepia cloud while the octopus murders the crab. On the exposed rocks out of water, the barnacles bubble behind their closed doors and the limpets dry out. And down to the rocks come the black flies to eat anything they can find. The sharp smell of iodine from the algae, and the lime smell of calcareous bodies and the smell of powerful protean, smell of sperm and ova fill the air. On the exposed rocks the starfish emit semen and eggs from between their rays. The smells of life and richness, of death and digestion, of decay and birth, burden the air. And salt spray blows in from the barrier where the ocean waits for its rising-tide strength to permit it back into the Great Tide Pool again. And on the reef the whistling buoy bellows like a sad and patient bull.

We found her where she had given up, half cooked by the sun but still able to turn one eye up to look at us when we bent over her. I buried her in cool sand while Ed ran to the ranger station. An hour later she was on her back with tire chains around her front legs, being dragged behind a park service Jeep back toward the ocean. The dunes were so deep that her mouth filled with sand as she went. Her head bent so far underneath her that I feared her neck would break. Finally the Jeep stopped at the edge of the water. Ed and I helped the ranger unchain her and flip her back over. Then all three of us watched as she lay motionless in the surf. Every wave brought her life back to her, washing the sand from her eyes and making her shell shine again. When a particularly large one broke over her, she lifted her head and tried her back legs. The next wave made her light enough to find a foothold, and she pushed off, back into the water that was her home. Watching her swim slowly away after her nightmare ride through the dunes, I noted that it is sometimes hard to tell whether you are being killed or saved by the hands that turn your life upside down.

The core of the seen and unseen
universes smiles, but remember,

As soon as we were all assembled at the table, Mayur put the raw scallops back in their shells, spooned over some custard, and put them ever so briefly under the broiler- no more than a minute or two. The custard formed a very thin skin with one or two peaks of caramel. It was, quite simply, heaven.

One 9-inch unbaked pastry shell 1 beaten egg yolk (reserve the white in a small dish) 10-ounce package frozen chopped spinach ½ teaspoon salt ½ teaspoon pepper (freshly ground is best) 3 Tablespoons horseradish sauce 2 ounces shredded Jarlsberg (or good Swiss cheese) 4 eggs 1½ cups Half & Half (or light cream) 1/8 teaspoon salt 1/8 teaspoon cayenne pepper 1/8 teaspoon nutmeg (freshly ground is best) Beat the egg yolk in a glass with a fork. Brush the inside of the unbaked pastry shell with the yolk. Set the shell aside to dry. Cook and drain the spinach. Squeeze out as much moisture as you can and then blot with a paper towel. In a bowl, combine the spinach with the salt, pepper, and horseradish sauce. Spread it in the bottom of the pastry shell. Sprinkle the top with the grated cheese. Beat the 4 whole eggs with the reserved egg white. Add the Half & Half, salt, and cayenne pepper. Mix well and pour on top of cheese. Sprinkle the top with nutmeg. Bake at 375 degrees F. for 40 minutes, or until a knife inserted one inch from the center comes out clean. Let cool for ten minutes and then cut into wedges and serve. This quiche can be served warm or at room temperature. I’ve even been known to eat it cold, straight out of the refrigerator. It’s perfect for a fancy brunch or a lazy, relaxed breakfast on the weekend. Yield: Serves from 12 to 18 as an appetizer. Serves six as an entrée if they only have one piece.

Indeed, the wolf was approaching formidable size, although she was obviously not yet quite full-grown and still had large puppy paws. She was at least four stone and her coat was thick and fluffy. Yet she pranced back and forth like a child, not circling with the sly lope Wendy imagined adult wolves used.
You're not a stupid little lapdog, are you?" Wendy whispered, nuzzling her face into the wolf's fur. Luna chuffed happily and gave her a big wet sloppy lick across the cheek. "Let's see what's inside the house!"
As the cool interior embraced her, she felt a strange shudder of relief and... welcome was the only way she could describe it. She was home.
The interior was small and cozy; plaited sweet-smelling rush mats softened the floor. The rounded walls made shelves difficult, so macramé ropes hung from the ceiling, cradling halved logs or flat stones that displayed pretty pebbles, several beautiful eggs, and what looked like a teacup made from a coconut. A lantern assembled from translucent pearly shells sat atop a real cherry writing desk, intricately carved and entirely out of place with the rest of the interior.
Wendy picked up one of the pretty pebbles in wonder, turning it this way and that before putting it into her pocket.
"This is... me..." she breathed. She had never been there before, but it felt so secure and so right that it couldn't have been anything but her home. Her real home. Here there was no slight tension on her back as she waited for footsteps to intrude, for reality to wake her from her dreams; there was nothing here to remind her of previous days, sad or happy ones. The son takes a cube of topflight Wagyu off the grill, charred on the outside, rare in the center, and swaddles it with green onions and a scoop of melting sea urchin- a surf-and-turf to end all others.
The father lays down a gorgeous ceramic plate with a poem painted on its surface. "From the sixteenth century," he tells us, then goes about constructing the dish with his son, piece by piece: First, a chunk of tilefish wrapped around a grilled matsutake mushroom stem. Then a thick triangle of grilled mushroom cap, plus another grilled stem the size of a D-sized battery, topped with mushroom miso. A pickled ginger shoot, a few tender soybeans, and the crowning touch, the tilefish skin, separated from its body and fried into a ripple wave of crunch.
The rice course arrives in a small bamboo steamer. The young chef works quickly. He slices curtains of tuna belly from a massive, fat-streaked block, dips it briefly in house-made soy sauce, then lays it on the rice. Over the top he spoons a sauce of seaweed and crushed sesame seeds just as the tuna fat begins to melt into the grains below.
A round of tempura comes next: a harvest moon of creamy pumpkin, a gold nugget of blowfish capped with a translucent daikon sauce, and finally a soft, custardy chunk of salmon liver, intensely fatty with a bitter edge, a flavor that I've never tasted before.
The last savory course comes in a large ice block carved into the shape of a bowl. Inside, a nest of soba noodles tinted green with powdered matcha floating in a dashi charged with citrus and topped with a false quail egg, the white fashioned from grated daikon.

“You have a point.” I wait for spider eggs to fall from the sky. “Then I’ll go with assuming she’s just a really sweet, normal person with whom I do not want to engage in sexual relations.”
“Better,” he concedes. “I’m sure she’ll be nice. This kind of strong liberal arts college attracts quality students. There’re good people here.” He’s trying to reassure me, but it’s not working.
“Totally,” I say. My fingers run across the nubby burned-orange fabric covering the couch, which is clearly composed of rock slabs. “Simon?”
“Yes, Allison?”
I sigh and take a few breaths while I play with the hideous couch threads. “She probably has horns.”
He shrugged. “I think that’s unlikely.” Simon pauses. “Although . . .”
“Although what?” I ask with horror.
There’s a long silence that makes me nervous. Finally, he says very slowly, “She might have one horn.”
I jerk my head and stare at him.
Simon claps his hands together and tries to coax a smile out of me. “Like a unicorn! Ohmigod! Your roommate might be a unicorn!”
“Or a rhinoceros,” I point out. “A beastly, murderous rhino.”
“There is that,” he concedes.
I sigh. “In good news, if I ever need a back scratcher, I have this entire couch.” I slump back against the rough fabric and hold out my hands before he can protest. “I know. I’m a beacon of positivity.”

Lowering his gaze, Eragon saw four more giant snails farther down upon the rise. One of the creatures had retreated within its shell; the others were hurrying away upon their undulating, skirtlike bellies.
“Over there!” shouted Eragon.
Saphira leaped forward. Her entire body left the ground for a moment, and then she landed upon all fours and snapped up first one, then two, then three of the snails. She did not eat the last snail, the one hiding in its shell, but drew back her head and bathed it in a stream of blue and yellow flame that lit up the land for hundreds of feet in every direction.
She maintained the flame for no more than a second or two; then she picked up the smoking, steaming snail between her jaws--as gently as a mother cat picking up a kitten--carried it over to Eragon, and dropped it at his feet. He eyed it with distrust, but it appeared well and truly dead.
Now you can have a proper breakfeast, said Saphira.
He stared at her, then began to laugh--and he kept laughing until he was doubled over, resting his hands on his knees and heaving for breath.
What is so amusing? she asked, and sniffed the soot-blackened shell.

I could put the stalks in a cup, like a bunch of flowers, and they would… He was laughing so hard, he found it impossible to continue, and he dropped to one knee while he gasped for air, tears of mirth streaming from his eyes.
Saphira parted her jaws in a toothy approximation of a smile, and she made a soft choking sound in her throat. You are very odd sometimes, Eragon. He could feel his merriment infecting her. She sniffed the shell again. Some mead would be nice.

Pissenlit (DANDELION SALAD) YIELD: 4 SERVINGS PISSENLIT, as the common dandelion is often called in France, is considered a great early-spring treat in our family. Gloria loves to pick the greens at the end of March and the beginning of April, especially the small white specimens hidden in the fallen leaves behind our guesthouse. This family tradition started for me with my father and my two brothers, and now my wife and daughter, Claudine, are great lovers of pissenlit salad. The leaves should be picked before the flowers start forming, while they are small, white, and tender. There is no comparison between the tender wild dandelion greens you pick yourself and the ones that are found in markets. With a small paring knife, cut about an inch below the ground to get the dandelion plant in one piece. Cut the leaves away from the root, and discard any that are damaged or darkened. Our version always includes pieces of pancetta as well as croutons, boiled eggs with soft yolks, and a dressing made of garlic, anchovies, and olive oil. 4 large eggs 5 ounces pancetta, cut into pieces about 1 inch long, ½ inch wide, and ½ inch thick (about 2 dozen) 2 cups water 6 tablespoons extra-virgin olive oil 2 teaspoons chopped garlic 4 anchovy fillets in oil, finely chopped 1 tablespoon red wine vinegar ½ teaspoon salt ½ teaspoon freshly ground black pepper A piece of baguette (about 3 ounces), cut into sixteen ¼-inch slices About 8 ounces (8 cups packed) dandelion greens, washed two or three times and spun dry Lower the eggs carefully into boiling water, and boil them at a simmer for 7 minutes. Pour out the water, shake the pan to crack the shells, then fill the pan with ice, and let the eggs cool in the pan for at least 15 minutes. Peel the eggs under cold running water, and cut them into quarters. Meanwhile, put the pancetta pieces in a saucepan, and cover them with the water. Bring the water to a boil, and boil gently for 10 minutes. Drain, then put the pancetta in a saucepan with 1 tablespoon of the olive oil. Spread the remaining 1 tablespoon oil on a cookie sheet, press the slices of bread into the oil, and then turn them over, so they are oiled on the second side. Bake for 8 to 10 minutes, until nicely browned. At serving time, add the greens to the salad bowl, and toss them with the dressing. Divide among four plates, and top with the bread and quartered eggs. Serve.

Serve with crusty bread as a first course or as a main course for lunch. 6 jumbo eggs (preferably organic) 1 teaspoon chopped garlic 2 tablespoons chopped fresh parsley 2 to 3 tablespoons whole milk ¼ teaspoon salt ¼ teaspoon freshly ground black pepper 2 tablespoons vegetable oil (preferably peanut oil) DRESSING 2 to 3 tablespoons leftover egg stuffing (from above) 4 tablespoons extra-virgin olive oil 1 tablespoon Dijon-style mustard 2 to 3 tablespoons water Dash of salt and freshly ground black pepper FOR THE HARD-COOKED EGGS: Put the eggs in a small saucepan, and cover with boiling water. Bring to a very gentle boil, and let boil for 9 to 10 minutes. Drain off the water, and shake the eggs in the saucepan to crack the shells. (This will help in their removal later on.) Fill the saucepan with cold water and ice, and let the eggs cool for 15 minutes. Shell the eggs under cold running water, and split them lengthwise. Remove the yolks carefully, put them in a bowl, and add the garlic, parsley, milk, salt, and pepper. Crush with a fork to create a coarse paste. Spoon the mixture back into the hollows of the egg whites, reserving 2 to 3 tablespoons of the filling to use in the dressing. Heat the vegetable oil in a nonstick skillet, and place the eggs, stuffed side down, in the skillet. Cook over medium heat for 2 to 3 minutes, until the eggs are beautifully browned on the stuffed side. Remove and arrange, stuffed side up, on a platter. FOR THE DRESSING: Mix all of the dressing ingredients in a small bowl with a whisk or a spoon until well combined. Coat the warm eggs with the dressing, and serve lukewarm.

Hugo’s Prizewinning Praline Pumpkin Pie What does it take to turn out a prizewinning pie? Lots of “mouth feel,” as the saying goes. When the pie cracked as it baked, we added a last-minute ring of pecan praline and that convenient coverall, a small mountain of brandy whipped cream, for first prize in the St. Michaels contest, restaurant division. 9-inch deep-dish pie shell FOR THE FILLING 1 15-ounce can pumpkin, unsweetened 1 cup brown sugar, loosely packed 2 teaspoons cinnamon* ¼ teaspoon cloves* 2 teaspoons fresh ginger, grated ¼ teaspoon salt 2/3 cup whipping cream 2/3 cup milk 4 eggs FOR THE PRALINE 3 tablespoons flour 3 tablespoons brown sugar 2 tablespoons butter, softened ¾ cup pecan halves FOR THE CREAM ½ pint whipping cream 1 tablespoon sugar 1 tablespoon brandy Heat the oven to 400 degrees. Partly bake the pie shell on the middle oven rack for about 10 minutes until it looks set. In a food processor, blend the pumpkin, sugar, spices, and salt for one minute. In a heavy saucepan, cook this pumpkin mixture at a simmer, stirring constantly, for about 5 minutes. Remove pumpkin from the heat and stir in the cream and milk. Whisk eggs to combine whites and yolks and blend thoroughly into the pumpkin mixture. Pour this into the pie shell, adding any extra filling after the pie has baked for about 5 minutes. Bake the pie on the lower oven rack for about 20 minutes and prepare the praline. In a small bowl, combine the flour, sugar, and butter and stir in the pecans. Remove the pie from the oven and spoon the pecan mixture in a circle around the edge of the pie, inside the crust, and return it to the oven. Continue baking for about 10 minutes more until the filling is puffed and wiggles very slightly when the pie is gently shaken. Cool on a wire rack. Whip the cream and sugar together until stiff, then stir in the brandy. When the pie is completely cool, mound the cream on top, inside the ring of pecans. Serve right away or refrigerate. Serves 6 to 8. *Freshly ground cinnamon and cloves are best, but spice straight from the jar will do.

On his way home, he passed a small cafe and the wonderful aroma of baked beans overwhelmed him. Since he still had several miles to walk he figured he could walk off any ill affects before he got home. So he went in and ordered, and before leaving had three extra-large helpings of baked beans. All the way home he farted. He 'putted' down one hill and 'putt-putted' up the next. By the time he arrived home he felt reasonably safe. His wife met him at the door and seemed somewhat excited. She exclaimed, 'Darling, I have the most wonderful surprise for you for dinner tonight!' She put a blindfold on him, and led him to his chair at the head of the table and made him promise not to peek. At this point he was beginning to feel another one coming on. Just as she was about to remove the blindfold, the telephone rang. She again made him promise not to peek until she returned, and she went to answer the phone. While she was gone, he seized the opportunity. He shifted his weight to one leg and let go. It was not only loud, but *ripe* as a rotten egg. He had a hard time breathing, so he felt for his napkin and fanned the air about him. He had just started to feel better, when another urge came on. He raised his leg and 'rrriiiipppp!' It sounded like a diesel engine revving, and smelled worse. To keep from gagging, he tried fanning his arms a while, hoping the smell would dissipate. Things had just about returned to normal when he felt another urge coming. He shifted his weight to his other leg and let go. This was a real blue ribbon winner; the windows rattled, the dishes on the table shook and a minute later the flowers on the table were dead. While keeping an ear tuned in on the conversation in the hallway, and keeping his promise of staying blindfolded, he carried on like this for the next ten minutes, farting and fanning them each time with his napkin. When he heard the 'phone farewells' (indicating the end of his loneliness and freedom) he neatly laid his napkin on his lap and folded his hands on top of it. Smiling contentedly, he was the picture of innocence when his wife walked in. Apologizing for taking so long, she asked if he had peeked at the dinner. After assuring her he had not, she removed the blindfold and yelled, 'Surprise!' To his shock and horror, there were twelve dinner guests seated around the table for his surprise birthday party.

There's no shrieking or fluttering at all. I approach one and ask if she has an egg or two. Nothing. I ask in Italian. Still nothing. I ask Fernando to pick her up but he's already outside the shed smoking and pacing, telling me he really doesn't like eggs at all and he especially doesn't like frittata. Both bold-faced lies. I start to move the hen and she plumps down from her perch quite voluntarily, uncovering the place where two lovely brown eggs sit. I take them, one at a time, bend down and nestle them in my sack. I want two more. I peruse the room. I choose the hen who sits next to the docile one. I pick her up and she pecks me so hard on my wrist that I drop her. I see there is nothing in her nest and apologise for my insensitivity, thinking her nastiness must have been caused by embarrassment. I move on to another hen and this time find a single, paler brown-shelled beauty, still warm and stuck all over with bits of straw. I take it and leave with an unfamiliar thrill. This is my first full day in Tuscany and I've robbed a henhouse before lunch.
Back home in the kitchen I beat the eggs, the yolks of which are orange as pumpkin, with a few grindings of sea salt, a few more of pepper, adding a tablespoon or so of white wine and a handful of Parmigliano. I dig for my flat broad frying pan, twirl it to coat its floor with a few drops of my tourist oil, and let it warm over a quiet flame. I drop in the rinsed and dried blossoms whole, flatten them a bit so they stay put, and leave them for a minute or so while I tear a few basil leaves, give the eggs another stroke or two. I throw a few fennel seeds into the pan to scent the oil, where the blossoms are now beginning to take colour on their bottom sides. Time to liven up the flame and add the egg batter. I perform the lift-and-tilt motions necessary to cook the frittata without disturbing the blossoms, which are now ensnared in the creamy embrace of the eggs. Next, I run the lush little cake under a hot grill to form a gold blistery skin on top before sliding it onto a plate, strewing it with torn basil. The heat of the eggs warms the herbs so they give up a double-strength perfume. Now I drop a thread of find old balsamico over it. And finally, let it rest.

I watched River as he shopped. Closely. I watched him breathe in deep the gorgeous roasted smell of the espresso beans before he ground them. I watched him open the egg carton and stroke the brown shells before closing it again. I watched him slip his slim fingers into the barrel of bright purple-and-white cranberry beans, unable to resist the urge, just like me. I always had to put my hands in the pretty, speckled beans. Spiders are by no means the only creatures that need to fear the parasitic wasps’ coercive tactics. And drugs are not the wasps’ only weapons for gaining the compliance of their victims. Ampulex compressa, better known as the jewel wasp because of its iridescent blue-green sheen, performs neurosurgery to achieve its aims. Its quarry is the annoyingly familiar American cockroach (Periplaneta americana). Not to be confused with the comparatively diminutive German roach common up north, this species prefers warmer climes and can grow as big as a mouse. Though dwarfed in stature by its prey, a female jewel wasp that has caught the scent of an American roach will aggressively pursue and attack it—even if that means following the fleeing insect into a house. The roach puts up a mighty struggle, flailing its legs and tucking in its head to fend off the attack, but usually to no avail. With lightning speed, the wasp stings the roach’s midsection, injecting an agent that will temporarily paralyze it so that the behemoth will stay still for the delicate procedure to follow. Like an evil doctor wielding a syringe, she again inserts her stinger, this time into the roach’s brain, and gingerly moves it around for half a minute or so until she finds exactly the right spot, whereupon she injects a venom. Shortly thereafter, the paralytic agent delivered by the first sting wears off. In spite of having full use of its limbs and the same ability to sense its surroundings as any normal roach, it’s strangely submissive. The venom, according to Frederic Libersat, a neuroethologist at Ben-Gurion University in Israel, has turned the roach into a “zombie” that will henceforth take its orders from the wasp and willingly tolerate her abuse. Indeed, the roach doesn’t protest in the least when she twists off part of one of its antennae with her powerful mandible and proceeds to suck the liquid oozing from it like soda from a straw. The wasp then does the same thing to its other antenna and, assured that the roach will go nowhere, leaves it alone for about twenty minutes as she searches for a burrow where she’ll lay an egg to be nourished by the roach. Meanwhile, her brainwashed slave busies itself grooming—picking fungal spores, tiny worms, and other parasites off itself—providing a sterile surface for the wasp to glue its egg. When the wasp returns, she seizes the roach by the stump of one of its antennae and “walks it like a dog on a leash to her burrow,” said Libersat. Thanks to its cooperation, she doesn’t have to waste energy dragging the massive roach. Equally important, he said, she doesn’t “need to paralyze all the respiratory system, so the thing will stay alive and fresh. Her larvae need to feed five or six days on this fresh meat, which you don’t want to rot.” The
