I find that most people serve practical needs. They have an understanding of the difference between meaning and relevance. And at some level my mind is more interested in meaning than in relevance. That is similar to the mind of an artist. The arts are not life. They are not serving life. The arts are the cuckoo child of life. Because the meaning of life is to eat. You know, life is evolution and evolution is about eating. It's pretty gross if you think about it. Evolution is about getting eaten by monsters. Don't go into the desert and perish there, because it's going to be a waste. If you're lucky the monsters that eat you are your own children. And eventually the search for evolution will, if evolution reaches its global optimum, it will be the perfect devourer. The thing that is able to digest anything and turn it into structure to sustain and perpetuate itself, for long as the local puddle of negentropy is available. And in a way we are yeast. Everything we do, all the complexity that we create, all the structures we build, is to erect some surfaces on which to out compete other kinds of yeast. And if you realize this you can try to get behind this and I think the solution to this is fascism. Fascism is a mode of organization of society in which the individual is a cell in the superorganism and the value of the individual is exactly the contribution to the superorganism. And when the contribution is negative then the superorganism kills it in order to be fitter in the competition against other superorganisms. And it's totally brutal. I don't like fascism because it's going to kill a lot of minds I like. And the arts is slightly different. It's a mutation that is arguably not completely adaptive. It's one where people fall in love with the loss function. Where you think that your mental representation is the intrinsically important thing. That you try to capture a conscious state for its own sake, because you think that matters. The true artist in my view is somebody who captures conscious states and that's the only reason why they eat. So you eat to make art. And another person makes art to eat. And these are of course the ends of a spectrum and the truth is often somewhere in the middle, but in a way there is this fundamental distinction. And there are in some sense the true scientists which are trying to figure out something about the universe. They are trying to reflect it. And it's an artistic process in a way. It's an attempt to be a reflection to this universe. You see there is this amazing vast darkness which is the universe. There's all these iterations of patterns, but mostly there is nothing interesting happening in these patterns. It's a giant fractal and most of it is just boring. And at a brief moment in the evolution of the universe there are planetary surfaces and negentropy gradients that allow for the creation of structure and then there are some brief flashes of consciousness in all this vast darkness. And these brief flashes of consciousness can reflect the universe and maybe even figure out what it is. It's the only chance that we have. Right? This is amazing. Why not do this? Life is short. This is the thing we can do.

We’ll see.” “Fine. No skin off my nose. I can’t wait to see what happens when a white tiger runs through this nice establishment creating mayhem and havoc. Perhaps they will lose one of their stars because they put their patrons in danger. Maybe your new waitress girlfriend will run away screaming.” I smiled at the thought. Ren affected shock, “Why, Kelsey! Are you jealous?” I snorted in a very unladylike way. “No! Of course not.” He grinned. Nervously, I played with my cloth napkin. “I can’t believe you convinced Mr. Kadam to play along with you like this. It’s shocking, really.” He opened his napkin and winked at the waitress when she came to bring us a basket of rolls. When she left, I challenged, “Are you winking at her? Unbelievable!” He laughed quietly and pulled out a steaming roll, buttered it, and put it on my plate. “Eat, Kelsey,” he commanded. If you agree to play, you've already lost. It's Charlie Brown and Lucy, with the football. If you keep getting back on the field, they win. There are so many great things to do right now. Write. Sing. Rest. Eat cherries. Register voters. And - oh my God - I nearly forgot the most important thing: refuse to wear uncomfortable pants, even if they make you look really thin. The key is, when I do break down and “cheat” with a piece of fish, it doesn’t rob me of my focus or dedication. I don’t start telling myself, “I’m too weak to do this,” or that now I’m no longer a vegan. While my intention is to live a vegan lifestyle, I’m not perfect. And I accept my imperfection. Which is why when I slip up, I don’t start worrying about what other vegans would “think” if they knew I’d eaten some meat. Because if I allow myself to get caught up in those distractions, then I’ll feel like I’ve “failed” at being a vegan and will find myself back eating meat all the time again. Which of course in my eyes would be the real failure. Instead, I consider what just happened—basically that I became distracted by an urge—and rather than beat myself up over it, I just return to my vegan practice the next time I sit down to a meal. I

The coffee belch and the silencer were also well-known quantities, but the worst were the date farts, a speciality of Bæring of Westfjord. Icelandic men don’t know how to behave: they never have and never will, but they are generally good fun. At least, Icelandic women think so. They seem to come with this inner emergency box, filled with humour and irony, which they always carry around with them and can open for useful items if things get too rough, and it must be a hereditary gift of the generations. Once I’m hungry, I sip my way through a big green alkaline smoothie (a combination of spinach, cucumber, coconut, avocado, lime, and stevia is a favorite) or tuck into a fruit salad or parfait. And tomatoes, cucumbers, and avocados are fruits, too; a morning salad is a good breakfast and keeps the sugar down. But, this kind of morning regime isn’t for everyone. You can get really hungry, particularly when you first start eating this way. And some people need to start the day with foods that deliver more heat and sustenance. If that’s how you roll, try having fruit or a green smoothie and then waiting for 30 minutes (if your breakfast includes bananas, pears, or avocados, make it 45) before eating something more. As a general rule, sour or acidic fruits (grapefruits, kiwis, and strawberries) can be combined with “protein fats” such as avocado, coconut, coconut kefir, and sprouted nuts and seeds. Both acid fruits and sub-acid fruits like apples, grapes, and pears can be eaten with cheeses; and vegetable fruits (avocados, cucumbers, tomatoes, and peppers) can be eaten with fruits, vegetables, starches, and proteins. I’ve also found that apples combine well with raw vegetables. Leafy greens (spinach, kale, collard greens), along with the vegetable fruits noted above, are my go-to staples. They are the magic foods that combine well with every food on the planet. I blend them together in green smoothies, cold soups, and salads.

In fact the only thing better than Oeufs en Cocotte is Ouefs en Cocotte with Sauce au Cari on top when you've woken up with a killer hangover, after one of those nights when somebody decided at midnight to buy a pack of cigarettes after all, and the girls wind up smoking and drinking and dancing around the living room to the music the boy is downloading from iTunes onto his new, ludicrously hip and stylish G3 Powerbook until three in the morning. On mornings like this, Oeufs en Cocotte with Sauce au Cari, a cup of coffee, and an enormous glass of water is like a meal fed to you by the veiled daughters of a wandering Bedouin tribe after one of their number comes upon you splayed out in the sands of the endless deserts of Araby, moments from death- it's that good.

One of the hardest things I’ve ever done is contain my laughter during those classes. Mia was the freakin’ teacher’s pet because she was taking it so seriously. Right around the third class, they showed us a video of a live birth. I had nightmares for a week after that. Tyler and I agreed that we had to find a way to get out of going to the classes. We hadn’t mutually agreed on a plan, so during the fifth class, Tyler took it upon himself and used his own bodily gifts to get us into a heap of trouble. Tyler is lactose intolerant, and he has to take these little white tablets every time he eats cheese. The morning of the class, he stopped by the studio with a half-eaten pizza. I didn’t even think twice about it until that night in class during our visualization exercises when this god-awful, horrendous odor overtook our senses. At first everyone kept quiet and just looked around for the source. There wasn’t a sound to accompany the lethal attack, so everyone went into investigation mode, staring each other down. Mia began to gag. I heard Jenny cry a little behind us. Finally when I turned toward Tyler, I noticed he had the most triumphant glimmer in his eyes. I completely lost my shit. I have to love these tatters. And I must confess that the thought of this old yard breathing alone in the dark turns my mind to something else. I cannot in all honesty call the world old when I’ve seen it new. On the other hand, neither will honesty permit me suddenly to invoke certain experiences of newness and beauty as binding, sweeping away all knowledge. But I am thinking now of the tree with the lights in it, the cedar in the yard by the creek I saw transfigured. That the world is old and frayed is no surprise; that the world could ever become new and whole beyond uncertainty was, and is, such a surprise that I find myself referring all subsequent kinds of knowledge to it. And it suddenly occurs to me to wonder: were the twigs of the cedar I saw really bloated with galls? They probably were; they almost surely were. I have seen these “cedar apples” swell from that cedar’s green before and since: reddish gray, rank, malignant. All right then. But knowledge does not vanquish mystery, or obscure its distant lights. I still now and will tomorrow steer by what happened that day, when some undeniably new spirit roared down the air, bowled me over, and turned on the lights. I stood on grass like air, air like lightning coursed in my blood, floated my bones, swam in my teeth. I’ve been there, seen it, been done by it. I know what happened to the cedar tree, I saw the cells in the cedar tree pulse charged like wings beating praise. Now, it would be too facile to pull everything out of the hat and say that mystery vanquishes knowledge. Although my vision of the world of the spirit would not be altered a jot if the cedar had been purulent with galls, those galls actually do matter to my understanding of this world. Can I say then that corruption is one of beauty’s deep-blue speckles, that the frayed and nibbled fringe of the world is a tallith, a prayer shawl, the intricate garment of beauty? It is very tempting, but I cannot. But I can, however, affirm that corruption is not beauty’s very heart and I can I think call the vision of the cedar and the knowledge of these wormy quarryings twin fjords cutting into the granite cliffs of mystery and say the new is always present simultaneously with the old, however hidden. The tree with the lights in it does not go out; that light still shines on an old world, now feebly, now bright. I am a frayed and nibbled survivor in a fallen world, and I am getting along. I am aging and eaten and have done my share of eating too. I am not washed and beautiful, in control of a shining world in which everything fits, but instead am wandering awed about on a splintered wreck I’ve come to care for, whose gnawed trees breathe a delicate air, whose bloodied and scarred creatures are my dearest companions, and whose beauty beats and shines not in its imperfections but overwhelmingly in spite of them, under the wind-rent clouds, upstream and down.

What troubles me most about my vegetarianism is the subtle way it alienates me from other people and, odd as this might sound, from a whole dimension of human experience. Other people now have to accommodate me, and I find this uncomfortable: My new dietary restrictions throw a big wrench into the basic host-guest relationship. As a guest, if I neglect to tell my host in advance that I don’t eat meat, she feels bad, and if I do tell her, she’ll make something special for me, in which case I’ll feel bad. On this matter I’m inclined to agree with the French, who gaze upon any personal dietary prohibition as bad manners. Even if the vegetarian is a more highly evolved human being, it seems to me he has lost something along the way, something I’m not prepared to dismiss as trivial. Healthy and virtuous as I may feel these days, I also feel alienated from traditions I value: cultural traditions like the Thanksgiving turkey, or even franks at the ballpark, and family traditions like my mother’s beef brisket at Passover. These ritual meals link us to our history along multiple lines—family, religion, landscape, nation, and, if you want to go back much further, biology. For although humans no longer need meat in order to survive (now that we can get our B-12 from fermented foods or supplements), we have been meat eaters for most of our time on earth. This fact of evolutionary history is reflected in the design of our teeth, the structure of our digestion, and, quite possibly, in the way my mouth still waters at the sight of a steak cooked medium rare. Meat eating helped make us what we are in a physical as well as a social sense. Under the pressure of the hunt, anthropologists tell us, the human brain grew in size and complexity, and around the hearth where the spoils of the hunt were cooked and then apportioned, human culture first flourished. This isn’t to say we can’t or shouldn’t transcend our inheritance, only that it is our inheritance; whatever else may be gained by giving up meat, this much at least is lost. The notion of granting rights to animals may lift us up from the brutal, amoral world of eater and eaten—of predation—but along the way it will entail the sacrifice, or sublimation, of part of our identity—of our own animality. (This is one of the odder ironies of animal rights: It asks us to acknowledge all we share with animals, and then to act toward them in a most unanimalistic way.) Not that the sacrifice of our animality is necessarily regrettable; no one regrets our giving up raping and pillaging, also part of our inheritance. But we should at least acknowledge that the human desire to eat meat is not, as the animal rightists would have it, a trivial matter, a mere gastronomic preference. By the same token we might call sex—also now technically unnecessary for reproduction—a mere recreational preference. Rather, our meat eating is something very deep indeed.

PROTEIN SOUP This soup is very easy to digest and can be eaten all year long. You could live on it alone for quite some time if need be. I recommend it especially for anyone with digestive difficulties like gas, malabsorption of food, or chronic fatigue. This soup makes a great medicine to rebuild the body without digestive difficulties, and so is ideal for babies, women after giving birth, the elderly, or anyone in a weakened condition. Spicing beans with onions, hing (asafetida), cumin, fennel, cayenne, salt, pepper, and cardamom helps produce less gas. INGREDIENTS 1 cup split yellow mung beans 2 cups white basmati rice 1 inch fresh gingerroot, chopped 1 small handful fresh cilantro leaves, chopped 2 tbs. ghee (clarified butter) 1 tsp. turmeric 1 tsp. coriander powder 1 tsp. cumin powder 1 tsp. whole cumin seeds 1 tsp. mustard seeds 1 tsp. kosher or rock salt* 1 pinch hing (asafoetida) 7–10 cups water *Bragg Liquid Aminos can be added after cooking for flavor or to replace salt. Wash beans and rice together until water runs clear. In a large pot on medium heat mix ghee, mustard seeds, turmeric, hing, ginger, cumin seeds, cumin powder, and coriander powder, and stir together for a few minutes. Add rice and beans and stir again. Add the water and salt and bring to a boil. Boil for 10 minutes. Turn heat to low, cover pot, and continue to cook until rice and beans become soft (about 30–40 minutes). Add the cilantro leaves just before serving.

I take a bite, and get lost for a moment in its sweet juiciness, get lost in the whole idea of an apple tree, how it makes sweet food out of sunlight and earth. I think about how the tree spreads out above ground to catch air and light and below ground to catch water, minerals, and nourishment; about how at the end of the season it drops its leaves at its feet to reabsorb their nutrients. There is such Knowingness in this bite that I feel I have just eaten from the tree of knowledge. Stewart looks benevolently down at me from Dutch’s back. He is only twenty and has a ruddy face that glows with health and openness. He embodies the very bloom of youth. For instance, that might mean forgoing the watermelon that would take a half dozen servings to eat; not even attempting it will mean getting to everything that follows a lot sooner. We then repeat this pattern, laying out the foods by spoilage date and tossing the largest already scheduled item any time we fall behind. Once everything that remains can be eaten in order of spoilage date without anything spoiling, we’ve got our plan.
