Thousands of trains had Dog Monday met and never had the boy he waited and watched for returned. Yet still Dog Monday watched on with eyes that never quite lost hope. Perhaps his dog-heart failed him at times; he was growing old and rheumatic; when he walked back to his kennel after each train had gone his gait was very sober now—he never trotted but went slowly with a drooping head and a depressed tail that had quite lost its old saucy uplift. One passenger stepped off the train—a tall fellow in a faded lieutenant’s uniform, who walked with a barely perceptible limp. He had a bronzed face and there were some grey hairs in the ruddy curls that clustered around his forehead. The new station agent looked at him anxiously. He was used to seeing the khaki-clad figures come off the train, some met by a tumultuous crowd, others, who had sent no word of their coming, stepping off quietly like this one. But there was a certain distinction of bearing and features in this soldier that caught his attention and made him wonder a little more interestedly who he was. A black-and-yellow streak shot past the station agent. Dog Monday stiff? Dog Monday rheumatic? Dog Monday old? Never believe it. Dog Monday was a young pup, gone clean mad with rejuvenating joy. And you local fellows better wait outside, we’re so crowded in here we’ll destroy the evidence.” “Ed and I won’t move,” Grave Digger said. Coffin Ed grunted. Taking no further notice of them, the sergeant pushed open the door. It was black and dark inside. First he shone his light over the wall alongside the door and all over the corridor looking for electric light switches. One was located to the right of each door. Taking care to avoid stepping in any of the blood splotches, the sergeant moved from one switch to another, but none worked. “Blown fuse,” he muttered, picking his way back to the open room. Without having to move, Grave Digger and Coffin Ed could see all they wanted through the open door. Originally made to accommodate a part-time janitor or any type of laborer who would fire the boiler for a place to sleep, the room had been converted into a pad. All that remained of the original was a partitioned-off toilet in one corner and a washbasin in the other. An opening enclosed by heavy wire mesh opened into the boiler room, serving for both ventilation and heat. Otherwise the room was furnished like a boudoir. There was a dressing-table with a triple mirror, three-quarter bed with chenille spread, numerous foam-rubber pillows in a variety of shapes, three round yellow scatter rugs. On the whitewashed walls an obscene mural had been painted in watercolors depicting black and white silhouettes in a variety of perverted sex acts, some of which could only be performed by male contortionists. And everything was splattered with blood, the walls, the bed, the rugs. The furnishings were not so much disarrayed, as though a violent struggle had taken place, but just bloodied. “Mother-raper stood still and let his throat be cut,” Grave Digger observed. “Wasn’t that,” Coffin Ed corrected. “He just didn’t believe it is all.

We are accustomed to thinking of Ernest Hemingway as a boozy, undisciplined genius who got through a quart of whiskey a day for the last twenty years of his life but nevertheless had the muse upon him. He was indeed an alcoholic driven by complex passions.2 But when it came to writing, he was the quintessence of discipline! His early writing was characterized by obsessive literary perfectionism as he labored to develop his economy of style, spending hours polishing a sentence, or searching for the mot juste—the right word. It is a well-known fact that he rewrote the conclusion to his novel A Farewell to Arms seventeen times in an effort to get it right. This is characteristic of great writers. Dylan Thomas made over two hundred handwritten(!) manuscript versions of his poem “Fern Hill.”3 Even toward the end, when Hemingway was reaping the ravages of his lifestyle, while writing at his Finca Vigia in Cuba he daily stood before an improvised desk in oversized loafers on yellow tiles from 6:30 A.M. until noon every day, carefully marking his production for the day on a chart. His average was only two pages — five hundred words.4 It was discipline, Ernest Hemingway’s massive literary discipline, which transformed the way his fellow Americans, and people throughout the English-speaking world, expressed themselves.

But then a peculiar thing happened. I became extraordinarily affected by the summer afternoons in the laboratory. The August sunlight came streaming in the great dusty fanlights and lay in yellow bars across the room. The old building ticked and creaked in the heat. Outside we could hear the cries of summer students playing touch football. In the course of an afternoon the yellow sunlight moved across old group pictures of the biology faculty. For he is no more aware of the mystery which surrounds him than a fish is aware of the water it swims in. He could do research for a thousand years and never have an inkling of it.

Mario'd fallen in love with the first Madame Psychosis programs because he felt like he was listening to someone sad read out loud from yellow letters she'd taken out of a shoebox on a rainy p.m., stuff about heartbreak and people you loved dying and U.S. woe, stuff that was real. It is increasingly hard to find valid art that is about stuff that is real in this way. The older Mario gets, the more confused he gets about the fact that everyone at E.T.A. over the age of about Kent Blott finds stuff that's really real uncomfortable and they get embarrassed. It's like there's some rule that real stuff can only get mentioned if everybody rolls their eyes or laughs in a way that isn't happy. The worstfeeling thing that happened today was at lunch when Michael Pemulis told Mario he had an idea for setting up a Dial-a-Prayer telephone service for atheists in which the atheist dials the number and the line just rings and rings and no one answers. It was a joke and a good one, and Mario got it; what was unpleasant was that Mario was the only one at the big table whose laugh was a happy laugh; everybody else sort of looked down like they were laughing at somebody with a disability. The whole issue was far above Mario's head, and he was unable to understand Lyle's replies when he tried to bring the confusion up. And Hal was for once no help, because Hal seemed even more uncomfortable and embarrassed than the fellows at lunch, and when Mario brought up real stuff Hal called him Booboo and acted like he'd wet himself and Hal was going to be very patient about helping him change.

"And for the final phase, you have a sea-bass-and-cod fritter with fresh coriander leaves, serrano chilies, and a pineapple, chili, and lime foam." The queen and the princess nodded and started to eat the ceviche. "Will you explain what you've done with the samphire?" Lady Rutland asked, pointing to the green seaweed that resembled very thin asparagus spears. "The samphire is meant to symbolize the sea, just as the pineapple foam is meant to suggest sea foam. I sautéed the samphire in a spiced butter," Elijah replied. Penelope grinned from her seat behind the Minstrels' Gallery's open door. He'd almost made it look like the fish (especially the potato-scaled fillet in the center) was still swimming in the sea. From what she could see, he'd dotted the foam in strategic places on the plate, including near the ceviche, so one could take a bite with a plantain crisp and the foam, or try it plain.

I have been all over the world cooking and eating and training under extraordinary chefs. And the two food guys I would most like to go on a road trip with are Anthony Bourdain and Michael Ruhlmann, both of whom I have met, and who are genuinely awesome guys, hysterically funny and easy to be with. But as much as I want to be the Batgirl in that trio, I fear that I would be woefully unprepared. Because an essential part of the food experience that those two enjoy the most is stuff that, quite frankly, would make me ralph. I don't feel overly bad about the offal thing. After all, variety meats seem to be the one area that people can get a pass on. With the possible exception of foie gras, which I wish like heckfire I liked, but I simply cannot get behind it, and nothing is worse than the look on a fellow foodie's face when you pass on the pate. I do love tongue, and off cuts like oxtails and cheeks, but please, no innards. Blue or overly stinky cheeses, cannot do it. Not a fan of raw tomatoes or tomato juice- again I can eat them, but choose not to if I can help it. Ditto, raw onions of every variety (pickled is fine, and I cannot get enough of them cooked), but I bonded with Scott Conant at the James Beard Awards dinner, when we both went on a rant about the evils of raw onion. I know he is often sort of douchey on television, but he was nice to me, very funny, and the man makes the best freaking spaghetti in tomato sauce on the planet. I have issues with bell peppers. Green, red, yellow, white, purple, orange. Roasted or raw. Idk. If I eat them raw I burp them up for days, and cooked they smell to me like old armpit. I have an appreciation for many of the other pepper varieties, and cook with them, but the bell pepper? Not my friend. Spicy isn't so much a preference as a physical necessity. In addition to my chronic and severe gastric reflux, I also have no gallbladder. When my gallbladder and I divorced several years ago, it got custody of anything spicier than my own fairly mild chili, Emily's sesame noodles, and that plastic Velveeta-Ro-Tel dip that I probably shouldn't admit to liking. I'm allowed very occasional visitation rights, but only at my own risk. I like a gentle back-of-the-throat heat to things, but I'm never going to meet you for all-you-can-eat buffalo wings. Mayonnaise squicks me out, except as an ingredient in other things. Avocado's bland oiliness, okra's slickery slime, and don't even get me started on runny eggs. I know. It's mortifying.

In 1931, amid that incredible transformation, a brilliant young Russian psychologist named Alexander Luria recognized a fleeting “natural experiment,” unique in the history of the world. He wondered if changing citizens’ work might also change their minds. When Luria arrived, the most remote villages had not yet been touched by the warp-speed restructuring of traditional society. Those villages gave him a control group. He learned the local language and brought fellow psychologists to engage villagers in relaxed social situations—teahouses or pastures—and discuss questions or tasks designed to discern their habits of mind. Some were very simple: present skeins of wool or silk in an array of hues and ask participants to describe them. The collective farmers and farm leaders, as well as the female students, easily picked out blue, red, and yellow, sometimes with variations, like dark blue or light yellow. The most remote villagers, who were still “premodern,” gave more diversified descriptions: cotton in bloom, decayed teeth, a lot of water, sky, pistachio. Then they were asked to sort the skeins into groups. The collective farmers, and young people with even a little formal education, did so easily, naturally forming color groups. Even when they did not know the name of a particular color, they had little trouble putting together darker and lighter shades of the same one. The remote villagers, on the other hand, refused, even those whose work was embroidery. “It can’t be done,” they said, or, “None of them are the same, you can’t put them together.” When prodded vigorously, and only if they were allowed to make many small groups, some relented and created sets that were apparently random. A few others appeared to sort the skeins according to color saturation, without regard to the color. Geometric shapes followed suit. The greater the dose of modernity, the more likely an individual grasped the abstract concept of “shapes” and made groups of triangles, rectangles, and circles, even if they had no formal education and did not know the shapes’ names. The remote villagers, meanwhile, saw nothing alike in a square drawn with solid lines and the same exact square drawn with dotted lines. To Alieva, a twenty-six-year-old remote villager, the solid-line square was obviously a map, and the dotted-line square was a watch. “How can a map and a watch be put together?” she asked, incredulous. Khamid, a twenty-four-year-old remote villager, insisted that filled and unfilled circles could not go together because one was a coin and the other a moon.

I have been told about other young African women who are taking the literary world by storm such as Zimbabwean NoViolet Bulawayo, who was long-listed for Britain’s Man Booker Prize, and her countrywoman, international trade lawyer Petina Gappah, a finalist for the United Kingdom’s prestigious Orwell Prize in 2010. These talented women are part of a confident, new, global Africa.

Thence, some [adhere to] four Vedas, others to three Vedas, or two Vedas, or a single Veda, while yet others have no hymns [at all]. Thus, owing to the broken traditions, rites become manifold and creatures, fond of austerities and almsgiving, become rajas-motivated2. Due to ignorance about the single Veda, the Vedas become multiple and because of the collapse of truth, few adhere to truthfulness. Many diseases appear for those who have fallen from truth, and there are desires and disasters caused by fate. Afflicted by these, [some] men perform very severe austerities; others, filled with [worldly] desires or desiring heaven, conduct sacrifices. Thus with the onset of the dvāpara, creatures perish through their lawlessness. In the kali-yuga, O Kaunteya, the moral order (dharma) exists by one quarter only. With the onset of this tamas-motivated3 age, O Keshava [i.e., God Vishnu] becomes black (krishna). The Vedic ways of life end, and so do the moral order, sacrifice, and rites. Plagues, disease, sloth, blemishes such as anger, as well as calamities, sickness, and afflictions prevail. In the course of the yugas, the moral order diminishes increasingly. With the diminution of the moral order, the people (loka) diminish. This description of the kali-yuga is not as daunting as it is in some other scriptures. But the message is clear enough: Ours is a sinister age. What thinking person would not agree? Can we not, by now, fill a whole library with tales of human foolishness, of humanity’s thoughtless interference with the life-world and its almost unbelievable lack of concern for fellow beings, both human and nonhuman? Is there no hope, then, for humankind? Is historian Oswald Spengler’s dark prophecy of the decline of the West (and with it, also of the East) coming true?4 Or are there, today, forces at work that countermand the Zeitgeist, the spirit of the age? This latter appears to be the case. It could not be otherwise. Or else our species would have perished long ago, right at the outset of the kali-yuga. The kali-yuga, then, does not signal total spiritual darkness or inevitable doom. Inverting a popular maxim, one can perhaps say that where there is shadow there is also light. Here and there, the present dark age is pierced by shafts of light. It is not without its benign counterbalancing influences.

He was used to seeing the khaki-clad figures come off the train, some met by a tumultuous crowd, others, who had sent no word of their coming, stepping off quietly like this one. But there was a certain distinction of bearing and features in this soldier that caught his attention and made him wonder a little more interestedly who he was. A black and yellow streak shot past the station agent. Dog Monday stiff? Dog Monday rheumatic? Dog Monday old? Never believe it. Dog Monday was a young pup, gone clean mad with rejuvenating joy. He flung himself against the tall soldier, with a bark that choked in his throat from sheer rapture. He flung himself on the ground and writhed in a frenzy of welcome. He tried to climb the soldier’s khaki legs and slipped down and grovelled in an ecstasy that seemed as if it must tear his little body in pieces. He licked his boots and when the lieutenant had, with laughter on his lips and tears in his eyes, succeeded in gathering the little creature up in his arms Dog Monday laid his head on the khaki shoulder and licked the sunburned neck, making queer sounds between barks and sobs. The station agent had heard the story of Dog Monday. He knew now who the returned soldier was. Dog Monday’s long vigil was ended. Jem Blythe had come home.

The Comanche rode in a wide circle around the frightened, riderless horses and tossed Amy into the arms of a fellow Indian who waited in the ranks. The little girl’s indignant screeching filled the air. Loretta lifted the Spencer carbine to her shoulder, leveling the sights on the Comanche as he circled back to her. The alembic was filled with Greco wine tinted with the milk of almonds, and I calculated that the wine would boil more or less when the dish was set on the table, and jet from the proud cock, showering the skewered partridges in aromatic white sauce. There were the ripest figs, all splitting, of course, served with boiled crayfish- as eager, these bright red fellows, to explore the figs as the eels had been curious about the tench- and torte of rucola and pine nuts, liberally spiced with garlic and cloves.
