Chocolate Cola Cupcakes with Fizzy Cola Frosting Makes approx. 12 large cupcakes 200g flour, sifted 250g superfine sugar 1/2 tsp. baking powder pinch salt 1 large free-range egg 125ml buttermilk 1 tsp. vanilla extract 125g unsalted butter 2 tbsp. cocoa powder 175ml Coca-Cola For the frosting 125g unsalted butter, softened 400g confectioners’ sugar 11/2 tbsp. cola syrup (I used Soda Stream) 40ml whole milk Pop Rocks, to taste fizzy cola bottles, candied lemon slices, striped straws or candy canes to decorate Preheat the oven to 350°F. Line two 6-cup muffin pans with paper liners. In a large bowl, combine the flour, sugar, baking powder and salt. In a separate bowl, beat together the egg, buttermilk and vanilla. Melt the butter, cocoa and Coca-Cola in a saucepan over low heat. Pour this mixture into the dry ingredients, stir well with a wooden spoon, and then add the buttermilk mixture, beating until the batter is well blended. Pour into your prepared pans and bake for 15 minutes, or until risen and a skewer comes out clean. Set aside to cool. To make the frosting, beat together the butter and confectioners’ sugar until no lumps are left—I use a free-standing mixer with the paddle attachment, but you could use a hand-held mixer instead. Stir the cola syrup and milk together in a pitcher, then pour into the butter and sugar mixture while beating slowly. Once incorporated, increase the speed to high and beat until light and fluffy. Carefully stir in your Pop Rocks to taste. It does lose its pop after a while, so the icing is best done just a few hours before eating. Spoon your icing into a piping bag and pipe over your cooled cupcakes. Decorate with fizzy cola bottles or a slice of candied lemon, a stripy straw or candy cane and an extra sprinkling of popping candy.

You knew that I didn’t make words out of my alphabetti spaghetti but I gave you my vowels so you could make more words out of yours. I knew that your favourite colour used to be purple but then became bright yellow; (‘Ochre’s the arty word, Bee’) and you knew mine was orange, until I discovered that taupe was more sophisticated and you teased me for that. You knew that my first whimsy china animal was a cat (you lent me 50p of your pocket money to buy it) and that I once took all my clothes out of my school trunk and hurled them around the room and that was the only time I had something close to a tantrum. I knew that when you were five you climbed into bed with me every night for a year. I threw everything we had together - the strong roots and stems and leaves and beautiful soft blossoms of sisterhood - into the earth with you. And I was left standing on the edge, so diminished by the loss, that I thought I could no longer be there. All I was allowed to keep for myself was missing you. Which is what? The tears that pricked the inside of my face, the emotion catching at the top of my throat, the cavity in my chest that was larger than I am. Was that all I had now? Nothing else from twenty-one years of loving you. Was the feeling that all is right with the world, my world, because you were its foundations, formed in childhood and with me grown into adulthood - was that to be replaced by nothing? The ghastliness of nothing. Because I was nobody’s sister now. I saw Dad had been given a handful of earth. But as he held out his hand above your coffin he couldn’t unprise his fingers. Instead, he put his hand into his pocket, letting the earth fall there and not onto you. He watched as Father Peter threw the first clod of earth instead and broke apart, splintering with the pain of it. I went to him and took his earth-stained hand in mine, the earth gritty between our soft palms. He looked at me with love. A selfish person can still love someone else, can’t they? Even when they’ve hurt them and let them down. I, of all people, should understand that. Mum was silent as they put earth over your coffin. An explosion in space makes no sound at all.

We need to reclaim the word 'feminism'. We need the word 'feminism' back real bad. When statistics come in saying that only 29% of American women would describe themselves as feminist - and only 42% of British women - I used to think, What do you think feminism IS, ladies? What part of 'liberation for women' is not for you? Is it freedom to vote? The right not to be owned by the man you marry? The campaign for equal pay? 'Vogue' by Madonna? Jeans? Did all that good shit GET ON YOUR NERVES? Or were you just DRUNK AT THE TIME OF THE SURVEY? These days, however, I am much calmer-since I realized that it's technically impossible for a woman to argue against feminism. Without feminism, you wouldn't be allowed to have a debate on a woman's place in society. You'd be too busy giving birth on the kitchen floor-biting down on a wooden spoon so as not to disturb the men's card game-before going back to hoeing the rutabaga field. This is why those female columnists in the Daily Mail-giving daily wail against feminism-amuse me. They paid you 1,600 pounds for that, dear, I think. And I bet it' going into your bank account and not your husband's. The more women argue, loudly, against feminism, the more they both prove it exists and that they enjoy its hard-won privileges. Because for all that people have tried to abuse it and disown it, "feminism" is still the word we need...We need the only word we have ever had to describe "making the world equal for men and women". Women's reluctance to use it sends out a really bad signal. Imagine if, in the 1960's, it had become fashionable for black people to say they "weren't into" civil rights. "No, I'm not into Civil Rights! That Martin Luther King is too shouty. He just needs to chill out, to be honest." But then, I do understand why women started to reject the word feminism. It ended up being invoked in so many baffling inappropriate contexts that you'd presume it was some spectacularly unappealing combination of misandry, misery, and hypocrisy, which stood for ugly clothes, constant anger, and, let's face it, no fucking...Feminism has had exactly the same problem that "political correctness" has had: people keep using the phrase without really knowing what it means.

Flour on the floor makes my sandals slip and I tumble into your arms. Too hot to bake this morning but blueberries begged me to fold them into moist muffins. Sticks of rhubarb plotted a whole pie. The windows are blown open and a thickfruit tang sneaks through the wire screen and into the home of the scowly lady who lives next door. Yesterday, a man in the city was rescued from his apartment which was filled with a thousand rats. Something about being angry because his pet python refused to eat. He let the bloom of fur rise, rise over the little gnarly blue rug, over the coffee table, the kitchen countertops and pip through each cabinet, snip at the stumpy bags of sugar, the cylinders of salt. Our kitchen is a riot of pots, wooden spoons, melted butter. So be it. Maybe all this baking will quiet the angry voices next door, if only for a brief whiff. I want our summers to always be like this—a kitchen wrecked with love, a table overflowing with baked goods warming the already warm air. After all the pots are stacked, the goodies cooled, and all the counters wiped clean—let us never be rescued from this mess.

Sometimes Grand-mère Odette would blindfold me, and it wasn't long before I could pick out every ingredient by smell. All the other senses came to me, too- sight (glorious plating), taste (the delight of the unknown), touch (the way a cherry felt in my hand), and hearing (the way garlic sizzled in the pan).

Those also came from paddling the bread into and out of the oven. Her parents said she was the best at knowing when the temperature of the stove was just right for baking the softest bread. Maybe she was a little messy when she baked, but it didn't bother her.

Add onions and 1 teaspoon salt, toss to coat, and cook until they begin to soften and release liquid, about 6 minutes. Reduce heat to medium-low and continue cooking, stirring and scraping the bottom of the skillet every 10 minutes (and adjusting the heat if the onions begin to scorch or are not browning), until the onions are sticky and caramelized, about 1 hour longer (you will have about 1 cup). Add the sage, vinegar, and 1½ tablespoons water, and with a wooden spoon, scrape bottom of pan to dissolve the fond, about 30 seconds; set aside to cool briefly. With the rack in middle position, heat the oven to 375 degrees. In a medium bowl, whisk the eggs, half-and-half, cayenne, 1¾ cups cheese, and ¾ teaspoon each salt and black pepper to combine thoroughly. Spread caramelized onions in an even layer in the warm, pre-baked pie shell. Sprinkle bacon evenly over the onions, place pie shell on the oven rack, and pour in the custard mixture (it should reach to about ½ inch beneath the rim of the pie shell). Sprinkle the remaining ¼ cup cheese over custard mixture and bake until custard is set, light golden brown, center wiggles slightly when you jiggle the quiche, and the tip of a knife inserted about 1½ inches from the edge comes out clean, 35 to 40 minutes. Butter and flour a 6-cup Bundt pan. Grind your peppercorns, cloves, and cardamom and measure out ¼ teaspoon of each. (You can use pre-ground spices, but the cake won’t taste as good.) Grind your cinnamon stick and measure out 1 teaspoon. (Again, you can use ground cinnamon if you must.) Whisk the flour with the baking powder, baking soda, spices, and salt in a small bowl. In another small bowl, whisk the eggs and egg yolk into the sour cream. Set aside. Cream the butter and sugar in a stand mixer until the mixture is light, fluffy, and almost white. This should take about 3 minutes. Grate the ginger root—this is a lot of ginger—and the orange zest. Add them to the butter/sugar mixture. Beat the flour mixture and the egg mixture, alternating between the two, into the butter until each addition is incorporated. The batter should be as luxurious as mousse. Spoon batter into the prepared pan and bake for about 40 minutes, until cake is golden and a wooden skewer comes out clean. Remove to a rack and cool in the pan for 10 minutes. SOAK ½ cup bourbon 1½ tablespoons sugar While the cake cools in its pan, simmer the bourbon and the sugar in a small pot for about 4 minutes. It should reduce to about ⅓ cup. While the cake is still in the pan, brush half the bourbon mixture onto its exposed surface (the bottom of the cake) with a pastry brush. Let the syrup soak in for a few minutes, then turn the cake out onto a rack. Gently brush the remaining mixture all over the cake.

Coarsely chop the white parts and set aside. Finely chop the green parts and set them aside separately. • Heat the oil in a medium pot over medium heat. Add the yellow onion and chopped white parts of the spring onions and cook, stirring often with a wooden spoon, until soft, 8 to 10 minutes. Line a baking sheet with parchment paper. Place the water, butter and salt in a saucepan and bring to a boil, then reduce heat to moderate. Add flour all at once and beat with a wooden spoon until the mixture pulls away from side of pan. Transfer mixture—known as pâte à choux—to a bowl and use an electric mixer to beat in the eggs, one at a time. If the batter is too stiff, add another egg. Stir the Gruyère into the pâte à choux and drop by tablespoons, about one inch apart, on the baking sheet. Bake for about twenty-five minutes, or until golden brown. Serve warm.
