Farmers were strictly banned from saving their own seeds: this, in a country where, according to the Food and Agriculture Organisation, 97 per cent of Iraqi farmers planted only their own saved seeds. With a single stroke of the pen, Iraq’s agriculture was axed, while Order 81 facilitated the introduction and domination of imported, high-priced corporate seeds, mainly from the US — which neither reproduce, nor give yields without their prescribed chemical fertiliser and pesticide inputs. It meant that the majority of farmers who had never spent money on seed and inputs that came free from nature, would henceforth have to heavily invest in corporate inputs and equipment — or go into debt to obtain them, or accept lowered profits, or give up farming altogether.

If the availability of one species was reduced, they could gather and hunt more of other species. Farming societies have, until very recently, relied for the great bulk of their calorie intake on a small variety of domesticated plants. In many areas, they relied on just a single staple, such as wheat, potatoes or rice. If the rains failed or clouds of locusts arrived or if a fungus infected that staple species, peasants died by the thousands and millions. Nor could wheat offer security against human violence. The early farmers were at least as violent as their forager ancestors, if not more so. Farmers had more possessions and needed land for planting. The loss of pasture land to raiding neighbours could mean the difference between subsistence and starvation, so there was much less room for compromise. When a foraging band was hard-pressed by a stronger rival, it could usually move on. It was difficult and dangerous, but it was feasible. When a strong enemy threatened an agricultural village, retreat meant giving up fields, houses and granaries. In many cases, this doomed the refugees to starvation. Farmers, therefore, tended to stay put and fight to the bitter end.

Late in the nineteenth century came the first signs of a “Politics in a New Key”: the creation of the first popular movements dedicated to reasserting the priority of the nation against all forms of internationalism or cosmopolitanism. The decade of the 1880s—with its simultaneous economic depression and broadened democratic practice—was a crucial threshold. That decade confronted Europe and the world with nothing less than the first globalization crisis. In the 1880s new steamships made it possible to bring cheap wheat and meat to Europe, bankrupting family farms and aristocratic estates and sending a flood of rural refugees into the cities. At the same time, railroads knocked the bottom out of what was left of skilled artisanal labor by delivering cheap manufactured goods to every city. At the same ill-chosen moment, unprecedented numbers of immigrants arrived in western Europe—not only the familiar workers from Spain and Italy, but also culturally exotic Jews fleeing oppression in eastern Europe. These shocks form the backdrop to some developments in the 1880s that we can now perceive as the first gropings toward fascism. The conservative French and German experiments with a manipulated manhood suffrage that I alluded to earlier were extended in the 1880s. The third British Reform Bill of 1884 nearly doubled the electorate to include almost all adult males. In all these countries, political elites found themselves in the 1880s forced to adapt to a shift in political culture that weakened the social deference that had long produced the almost automatic election of upper-class representatives to parliament, thereby opening the way to the entry of more modest social strata into politics: shopkeepers, country doctors and pharmacists, small-town lawyers—the “new layers” (nouvelles couches) famously summoned forth in 1874 by Léon Gambetta, soon to be himself, the son of an immigrant Italian grocer, the first French prime minister of modest origins. Lacking personal fortunes, this new type of elected representative lived on their parliamentarians’ salary and became the first professional politicians. Lacking the hereditary name recognition of the “notables” who had dominated European parliaments up to then, the new politicians had to invent new kinds of support networks and new kinds of appeal. Some of them built political machines based upon middle-class social clubs, such as Freemasonry (as Gambetta’s Radical Party did in France); others, in both Germany and France, discovered the drawing power of anti-Semitism and nationalism. Rising nationalism penetrated at the end of the nineteenth century even into the ranks of organized labor. I referred earlier in this chapter to the hostility between German-speaking and Czech-speaking wage earners in Bohemia, in what was then the Habsburg empire. By 1914 it was going to be possible to use nationalist sentiment to mobilize parts of the working class against other parts of it, and even more so after World War I. For all these reasons, the economic crisis of the 1880s, as the first major depression to occur in the era of mass politics, rewarded demagoguery. Henceforth a decline in the standard of living would translate quickly into electoral defeats for incumbents and victories for political outsiders ready to appeal with summary slogans to angry voters.

A tribute to my mother and her ideals; a community in which she would have flourished, where she would have lived a good long life. Two thousand Jews, for example, lived in and around the small town of Tykocin, northwest of Warsaw on the road to Bialystok in eastern Poland, worshiping in a square, fortified synagogue with a turreted tower and a red mansard roof, built in 1642, more than a century after Jewish settlement began in the region. Lush farm country surrounds Tykocin: wheat fields, prosperous villages, cattle in the fields, black-and-white storks brooding wide, flat nests on the chimneys of lucky houses. Each village maintains a forest, a dense oval stand of perhaps forty acres of red-barked pines harvested for firewood and house and barn construction. Inside the forests, even in the heat of summer, the air is cool and heady with pine; wild strawberries, small and sweet, strew the forest floor. Police Battalions 309 and 316, based in Bialystok, invaded Tykocin on 5 August 1941. They drove Jewish men, women and children screaming from their homes, killed laggards in the streets, loaded the living onto trucks and jarred them down a potholed, winding dirt road past the storks and the cattle to the Lopuchowo village forest two miles southwest. In the center of the Lopuchowo forest, men dug pits, piling up the sandy yellow soil, and then Police Battalions 309 and 316, out for the morning on excursion from Bialystok, murdered the Jews of Tykocin, man, woman and child. For months the forest buzzed and stank of death. (Twenty miles northwest of Tykocin in the village of Jedwabne, Polish villagers themselves, with German encouragement, had murdered their Jewish neighbors on 10 July 1941 by driving them into a barn and burning them alive, a massacre examined in Jan T. Gross’s book Neighbors.)

Partly because it took generations for the small changes to accumulate and transform society and, by then, nobody remembered that they had ever lived differently. And partly because population growth burned humanity’s boats. If the adoption of ploughing increased a village’s population from 100 to 110, which ten people would have volunteered to starve so that the others could go back to the good old times? There was no going back. The trap snapped shut. The pursuit of an easier life resulted in much hardship, and not for the last time. It happens to us today. How many young college graduates have taken demanding jobs in high-powered firms, vowing that they will work hard to earn money that will enable them to retire and pursue their real interests when they are thirty-five? But by the time they reach that age, they have large mortgages, children to school, houses in the suburbs that necessitate at least two cars per family, and a sense that life is not worth living without really good wine and expensive holidays abroad. In fact studies by the Royal Horticultural Society and Which? magazine, which accord with historical records of food production during the world wars, suggest that a competent allotment holder or gardener can get yields between thirty-one and forty tonnes per hectare. To put this into context, a farmer gets about three and a half tonnes of oilseed rape or eight tonnes of wheat per year from every hectare of land, and will apply about twenty different pesticides plus fertilizers to achieve this. Thus an allotment holder or gardener can grow between four and eleven times the weight of produce that one might get from an intensively farmed arable field...Bear in mind also that only one-third of the UK wheat crop is good enough for human consumption, the remainder going for livestock feed. So this is worrisome in that plastics might be accumulating around the roots we eat-carrots, sweet potatoes, radishes but it's good news in that neither a fibrous nor taproot system seemed to uptake plastic into the plant itself, unlike how crops readily soak up nutrients like nitrogen and iron. "The plant has probably an incentive to take up an iron particle, whereas a plastic particle will not be used by the plant," says Flury. This contradicts previous lab studies on wheat and other crops, like beans and onions and lettuce, showing that roots do take up plastics. Over at ETH Zürich, analytical chemist Denise Mitrano took a different tack, tagging nanoplastics not with fluorescence but with the rare metal palladium. And instead of growing wheat in agar, she grew it hydroponically, exposing the growing plants to the "doped" particles. She could then track the nanoplastics as the wheat plants took them up into their roots and shoots. "We didn't let the wheat go to grains, so we don't know if the nanoplastic would eventually get into the food source, but it did go up further into the plant," says Mitrano. However, she didn't see any big changes in the physiology of the plants, like growth rate or chlorophyl production. "But we did see that it changed the root structure a bit and the cellular structure in the root, which would indicate that the plant was still under stress.

If they are to be turned into bread, grains have to be ground. When I was a little girl, my father decided to make some flour from the wheat we had grown on the farm. He tried pounding it with a pestle and mortar but all he got was broken grains, not flour. He put it through the hand mincer screwed to the edge of the table with the same result. Finally, he attacked it with a hammer on the flagstone floor. After he gave up, defeated, my mother cleared up the mess. It was sobering to realize that if the commercial millers had vanished, we could have starved even with barns full of sacks of wheat. To turn wheat into flour, you have to shear, not pound, the hard grains, which requires a grindstone, as the people of Lake Kinneret had discovered. A friend in Mexico, where hand grinding still goes on, showed me how it works. She knelt at the upper end of a grindstone, called a metate—a saddle-shaped platform on three inverted pyramidal legs, hewn from a single piece of volcanic rock (fig. 1.7). She mounded a handful of barley, took the mano, a stone shaped like a squared-off rolling pin, in both hands with her thumbs facing back to nudge the grain into place, and, using the whole weight of her upper body, sheared the mano over the grain. After half a dozen motions, she had broken the grains, which now clustered at the bottom end of the metate. Carefully scraping them up with her fingertips, she moved them back to the top, and started shearing again, this time producing white streaks of flour. By the time she had sheared the grain from top to bottom five or six times, she had produced a handful of flour.

Fishing ports are dotted all around Italy’s long coastline. There are still some small, family-owned fishing boats. But the fishing industry is becoming more mechanized, with fleets of large boats.

Von Thünen’s abstract principles had strikingly concrete geographical consequences. A series of concentric agricultural zones would form around the town, each of which would support radically different farming activities. Nearest the town would be a zone producing crops so heavy, bulky, or perishable that no farmer living farther away could afford to ship them to market. Orchards, vegetable gardens, and dairies would dominate this first zone and raise the price of land—its “rent”—so high that less valuable crops would not be profitable there. Farther out, landowners in the second zone would devote themselves to intensive forestry, supplying the town with lumber and fuel. Beyond the forest, farmers would practice ever more extensive forms of agriculture, raising grain crops on lands where rents fell—along with labor and capital investment—the farther out from town one went. This was the zone of wheat farming. Finally, distance from the city would raise transport costs so high that no grain crop could pay for its movement to market. Beyond that point, landowners would use their property for raising cattle and other livestock, thereby creating a zone of even more extensive land use, with still lower inputs of labor and capital. Land rents would steadily fall as one moved out from the urban market until they theoretically reached zero, where no one would buy land for any price, because nothing it might produce could pay the prohibitive cost of getting to market.

Then it developed its own retail brand of beef called Spring Creek Ranch. Dean Watson oversaw a team that worked to develop a system of “identity preservation” that would allow the company to track each cow during its lifespan, allowing it over time to select which cattle had the best-tasting meat. Koch held blind taste tests of the beef it raised. Watson claimed to win nine out of ten times. Then Koch studied the grain and feed industries that supplied its feedlots. Watson worked with experts to study European farming methods because wheat farmers in Ukraine were far better at raising more grain on each acre of land than American farmers were. The Europeans had less acreage to work with, forcing them to be more efficient, and Koch learned how to replicate their methods. Koch bought a stake in a genetic engineering company to breed superyielding corn. Koch Agriculture extended into the milling and flour businesses as well. It experimented with building “micro” mills that would be nimbler than the giant mills operated by Archer Daniels Midland and Cargill. Koch worked with a start-up company that developed a “pixie dust” spray preservative that could be applied to pizza crusts, making crusts that did not need to be refrigerated. It experimented with making ethanol gasoline and corn oil. There were more abstract initiatives. Koch launched an effort to sell rain insurance to farmers who had no way to offset the risk of heavy rains. To do that, Koch hired a team of PhD statisticians to write formulas that correlated corn harvests with rain events, figuring out what a rain insurance policy should cost. At the same time, Koch’s commodity traders were buying contracts for corn and soybeans, learning more every day about those markets.
