Perhaps you instinctively roll your eyes at these advertisements of moral correctness. Perhaps you find the sentiment worthwhile, but you’re not a wear-your-politics-on-your-fender type of person. Or perhaps you actually have ‘Coexist’ bumper stickers affixed to both your Prius and your Beamer. Whatever floats your boat, man; far be it from us to cast stones. But we bring up these particular morality minibillboards to illustrate a bothersome dichotomy. If we were to draw a Venn diagram of (a) the people who flaunt their socially responsible “coexist” values for fellow motorists, and (b) the people who believe that, say, an evangelical Christian who owns a local flower shop ought to be sued and shamed for politely declining to provide floral arrangements for a same-sex wedding, the resulting circles would more or less overlap. The flowers are all soaking in their respective sugar water jugs in her kitchen- out of the direct sunlight, of course- as is the oasis which she'll mold into every bowl and vase in the house with a similar arrangement. She's even going to make an arrangement in a flat sweetgrass basket to hang on the front door and a round little pomander of pale green hydrangea with a sheer white ribbon for Little Hilda to hold as she greets the guests in the foyer. Ray is tempted to snip the last blossoms of gardenias growing secretly behind Cousin Willy's shed. In her estimation they are the quintessential wedding flower, with their intoxicating fragrance and their delicate cream petals surrounded by those dark, waxy leaves. She bought the seedlings when R.L. and the gals weren't looking at the Southern Gardener's Convention in Atlanta four years ago, and no one has any idea she's been growing them. Sometimes she worries that the fragrance will give her away, but they bloom the same time as the confederate jasmine, which grows along the lattice work of the shed, and she can always blame the thick smell on them. It would take a truly trained nose to pick the gardenias out, and Ray possesses the trained nose of the bunch.

I use the following scenario in my classes to illustrate the nature of the moral circle. Imagine, I ask my students, that your best friend just got a job waiting tables at a restaurant. To celebrate with her you arrange with friends to go to the restaurant to eat dinner on her first night. You ask to be seated in her section and look forward to surprising her and, later, leaving her a big tip. Soon your friend arrives at your table, sweating and stressed out. She is having a terrible night. Things are going badly and she is behind getting food and drinks out. So, I ask my students, what do you do? Easily and naturally the students respond, “We’d say, ‘Don’t worry about us. Take care of everyone else first.’” I point out to the students that this response is no great moral struggle. It’s a simple and easy response. Like breathing. It is just natural to extend grace to a suffering friend. Why? Because she is inside our moral circle. But imagine, I continue with the students, that you go out to eat tonight with some friends. And your server, whom you vaguely notice seems stressed out, performs poorly. You don’t get good service. What do you do in that situation? Well, since this stranger is not a part of our moral circle, we get frustrated and angry. The server is a tool and she is not performing properly. She is inconveniencing us. So, we complain to the manager and refuse to tip. In the end, we fail to treat another human being with mercy and dignity. Why? Because in a deep psychological sense, this server wasn’t really “human” to us. She was a part of the “backdrop” of our lives, part of the teeming anonymous masses toward which I feel indifference, fear, or frustration. The server is on the “outside” of my moral circle.

Carefully she took out her newest treasures- pieces of crystal she and Walter hd received as wedding presents, protected by pages and pages of her husband's newspaper. She unwrapped the crystal and two silver candlesticks, then set them on the white-cloaked dining table. She arranged the candlesticks alongside a small silver bowl filled with mint jelly and a basket with sliced whole-meal bread from the bakery. After placing white, tapered candles into the candlesticks, she lit them and stepped back to admire her handiwork. Satisfied, she blew them out. Once she heard Walter at the door, she'd quickly relight the candles. When the timer chimed, she removed the lamb chops and turned off the oven, placing the pan on her stovetop and covering it with foil. She'd learned a lot about housekeeping in the past decade, and now she was determined to learn how to be the best wife to Walter. And a doting mother to their children. If only she could avoid the whispers from her aunt's friends.

Most of the guests preferred her tarts to the elaborate croquembouche wedding cake, a tower of caramel-glazed cream puffs covered with spun sugar. Maman’s method of making dough breaks all the rules that I learned professionally. Using hot milk? Stirring the dough with a spoon? Smearing it into the pie plate? Yet it comes out tender, crumbly, and light in texture, with a delicate taste. DOUGH 1¼ cups all-purpose flour 1 large egg, broken into a small bowl and beaten with a fork 3 tablespoons unsalted butter, softened 3 tablespoons vegetable shortening (such as Crisco) Pinch salt 1 tablespoon sugar 1 teaspoon baking powder 2 tablespoons hot milk FILLING 4 large Golden Delicious apples (about 2 pounds) 3 tablespoons sugar 2 tablespoons cold unsalted butter, broken into pieces FOR THE DOUGH: Preheat the oven to 425 degrees. Put all the dough ingredients except the hot milk into a bowl. Stir well with a wooden spoon until the mixture starts to combine. Add the hot milk, and stir until well mixed. Do not overwork. The dough will be very soft. Place it in a 9-inch pie plate (my mother used a fluted metal quiche pan) and, using your fingers and a little extra flour to keep them from sticking, press the dough into the pan until it covers the bottom and the sides. FOR THE FILLING: Peel, core, and halve the apples. Cut each half into 1½-inch wedges. Arrange the wedges on the dough like the spokes of a wheel. Sprinkle with the sugar, and top with the butter, broken into pieces. Bake the tart for approximately 1 hour, or until the crust is golden. Serve it lukewarm.
