Lemon Barley Chicken Soup: The first thing you have to do is make chicken broth. Over here in France, I can’t seem to find acceptable packaged chicken broth, so I make it from scratch; it’s really not tricky. Remove the skin from four or five chicken thighs. Put them in a big pot, along with a cut-up onion, a carrot or two, some celery, salt and pepper, and lots of water. Cook this mélange very, very slowly (bubbles just rising) for a few hours (at least three). When you’ve got the broth under way, cook the barley: take 1 cup of barley and simmer it slowly in 4 to 5 cups of water. When it’s soft, drain the barley, but reserve any remaining barley water so you can add it to the broth. When the broth is ready, skim off the froth. Then remove the chicken thighs and when they’re cool enough, strip the meat off the bones, saving it for the soup. Strain the broth and put it to the side. Now that you’ve got chicken broth, it’s time for the soup itself—the rest is even easier. Cut up some leeks, if you have them, though an onion works just fine, too. If you’ve got leeks, put some butter in your (now emptied) stockpot over low heat; use olive oil instead if you have onions. While the leeks/onions are softening, finely mince a knob of ginger and 2 or 3 garlic cloves. If you can get some, you can also crush some lemongrass and put it in at this point. I never seem to cook it right (it always stays tough), but it adds great flavor. Dump all that in with the softened leeks/onions. Cook until you can smell it, but take care to avoid browning. Then add the cut-up chicken and the barley, and pour in the broth. Simmer it over low heat for about half an hour. Add salt to taste. To get a great lemon kick, squeeze 2 lemons and beat the juice well with 2 egg yolks. With the pot removed from the heat source, briskly whisk this mixture into the soup, being careful that the eggs don’t separate and curdle. Then return the pot to the heat and stir vigorously for a bit, until the eggs are cooked. This soup is excellent for sick people (ginger, hot lemon, and chicken; need I say more?) and a tonic for sad people (total comfort). And it’s even better the next day.

I remember what the city has to offer; human companionship, major league baseball, and a clatter of quickening stimulus like a rush from strong drugs that leaves you drained. I remember how you bide your time in the city, and think, if you stop to think, “next year, I’ll start living…next year I’ll start my life.” Innocence is a better world. Innocence sees that this is it, and finds it world enough, and time. Innocence is not the prerogative of infants and puppies, and far less of mountains and fixed stars, which have no prerogatives at all. It is not lost to us; the world is a better place than that. Like any other of the spirit’s good gifts, it is there if you want it, free for the asking, as has been stressed by stronger words than mine. It is possible to pursue innocence as hounds pursue hares; singlemindledly, driven by a kind of love, crashing over creeks, keening and lost in fields and forests, circling, vaulting over hedges and hills wide-eyed, giving loud tongue all unawares to the deepest, most incomprehensible longing, a root-flame in the heart, and that warbling chorus resounding back from the mountains, hurling itself from ridge to ridge over the valley, now faint, now clear ringing the air through which the hounds tear, open-mouthed, the echoes of their own wails dimly knocking in their lungs. What I call innocence is the spirit’s unselfconscious state at any moment of pure devotion to any object. It is at once a receptiveness and total concentration. I’m thinking their lovey-dovey mood evaporated when they surfaced, though. Because dead rats. Hundreds of them. Floating in the pool. Blocking the hot-springs water supply. Clogging the drains. Even hanging from the basket for used towels. I can’t imagine anything more totally, completely, scream-inducingly disgusting. And mysterious, too, because no one can explain how so many rats got in there so quickly. The filtration system is shut off when the baths close, so they weren’t pumped in with the water. And the lifeguard swears the place was clean when he locked up at eleven. The couple sneaked in around eleven fifteen. Transfer it immediately to ice cold water. Drain, squeeze the water out gently, and wipe it dry with paper towels. Chop the bok choy finely and place it in a large bowl. Add the ground pork, rice wine, vegetable oil, sesame oil, salt, soy sauce, white pepper, and water, and mix thoroughly. Line a baking sheet with parchment paper, and set it aside. Place a wrapper on a clean surface and spoon about a tablespoon of filling into the center. Moisten the edges with water and fold the circle over, in half. Press the edges together to seal. Fold the edges to get a fan-like shape (about 4 folds). Arrange the dumplings on the baking sheet, not too close so they don’t stick to each other. To store, cover with cling wrap and freeze overnight. Transfer the frozen dumplings to another container or to Ziploc bags and replace in the freezer. The dumplings may be boiled or fried. When boiled, cooked dumplings float to the top when ready. To fry, deep fry until golden brown or pan fry Serve with a dipping sauce made of ½ cup of soy sauce, ½ tablespoon if rice vinegar, and a dash of chili sauce. Add green onions and mix well

For some politics has become a battle ground that allows them to vent their frustrations, while at the same time hide behind the anonymity of the social media. For others it has become a weapon to overwhelm their opponents by the weight of the number of comments sent to the originator of the blog or article. Fair or not, this method of cyber warfare works and could possibly change the course of history. A continuance of this cyber activity is still not totally understood by most bloggers, but certainly can be threatening and intimidating. Recently we have witnessed where foreign countries become involved in the attempt to rig elections by altering the mind set of those receiving overwhelming amounts of mostly altered news. This is certainly presently true in France. In Pakistan a student was murdered by his fellow students, simply because he had a difference of opinion. Art has become a victim of this form of attack, being accused of being a financial drain on the country’s economy whereas it, in all of its forms, is a stabilizer of civilization. Helping and feeding those less fortunate then ourselves also stabilizes a good society. On the opposite side of this topic a destabilizing activity is war, which cost us much more, however it does get us to alter our focus. It is the threat of nuclear annihilation that really gets our attention and may even eventually offer job opportunities to the survivors. I feel certain that the opposing sides of these issues are already marshaling their forces and stand fast to their beliefs. You would think that funding for the arts should be non-political, however I have found it to be a hot button issue, whereas going to war is accepted by an overwhelming majority of people, even before we attempt peaceful diplomatic negotiations. Building a wall separating us from Mexico is a great idea that is embraced by many who still believe that Mexico will eventually pay for it, but our “Affordable Health Care” must be thrown out! What will give our people more bang for the buck? An improved health care Bill or a Beautiful Wall? I’ve heard that Medicare and Social Security are things we can no longer afford, but it’s the same people who still believe that we can afford a nuclear war. These are issues that we can and should address, however I’ll just get back to my books and deal with the pro or anti Castro activists, or neo-Nazis, or whoever else wants to make a political statement. My next book “Seawater One….” will have some sex in it…. Perhaps we can all agree that, that’s a good thing or perhaps not.

Bok Choy Seitan Pho (Vietnamese Noodle Soup) After sampling pho at a Vietnamese noodle shop in Los Angeles, I was on a mission to create a simple plant-based version of this aromatic, festive noodle dish in my own kitchen. My recipe features seitan, a wonderful plant-based protein found in many natural food stores. My whole family loves the interactive style in which this soup is served. In fact, you can plan a dinner party around this traditional meal. Simply dish up the noodles and bubbling broth into large soup bowls, set out a variety of vegetable toppings, and let your guests serve it up their way. MAKES 4 SERVINGS BROTH 4 cups reduced-sodium vegetable broth ½ medium yellow onion, chopped ½ cup sliced shiitake mushrooms 1 medium carrot, sliced 4 garlic cloves, minced 8 thin slices peeled fresh ginger root 1 tablespoon reduced-sodium soy sauce 1 tablespoon rice wine vinegar 1 tablespoon agave syrup ¼ teaspoon ground black pepper 2 cinnamon sticks 2 star anise pods ½ teaspoon whole coriander 6 sprigs of fresh basil 6 sprigs of fresh cilantro NOODLES One 8-ounce package flat rice noodles TOPPINGS One 8-ounce package seitan (wheat gluten) strips, thinly sliced 2 small bunches of fresh bok choy, sliced thinly 1 cup fresh bean sprouts ½ cup coarsely chopped cilantro ½ cup coarsely chopped basil 1 small lime, cut into wedges 1 small jalapeño pepper, seeded and diced 4 green onions, sliced TO PREPARE THE BROTH: 1. Combine all the broth ingredients in a large pot, cover, and bring to a low boil. Reduce the heat and simmer for 30 minutes. Strain the broth, discarding the vegetables and seasonings. Return the strained broth to the pot, cover, and keep warm (broth should be bubbling right before serving time). While broth is cooking, prepare noodles and toppings. TO PREPARE THE NOODLES: 1. Bring a medium pot of water to a boil. Add the rice noodles, cover, and cook until just tender, about 5 minutes, or according to package directions. Drain the noodles immediately and rinse with cold water. Return the drained noodles to the pot and cover. TO PREPARE THE TOPPINGS: 1. Arrange the toppings on a large platter. 2. To serve the soup, divide the noodles among four very large soup bowls. Either garnish the noodles with desired toppings or let your guests do their own. Ladle boiling broth over the noodles and toppings, and serve immediately. Allow hot broth to wilt vegetables and cool slightly before eating it. Rinse quinoa and drain in a fine-mesh sieve. In a large saucepan, bring quinoa and water to a boil. (Matthew 14:23) Christ Jesus, in His humanity, felt the need of complete solitude—to be entirely by Himself, alone with Himself. Each of us knows how draining constant interchange with others can be and how it exhausts our energy. As part of humankind, Jesus knew this and felt the need to be by Himself in order to regain His strength. Solitude was also important to Him in order to fully realize His high calling, His human weakness, and His total dependence on His Father. As a child of God, how much more do we need times of complete solitude—times to deal with the spiritual realities of life and to be alone with God the Father. If there was ever anyone who could dispense with special times of solitude and fellowship, it was our Lord. Yet even He could not maintain His full strength and power for His work and His fellowship with the Father without His quiet time. God desires that every servant of His would understand and perform this blessed practice, that His church would know how to train its children to recognize this high and holy privilege, and that every believer would realize the importance of making time for God alone. Oh, the thought of having God all alone to myself and knowing that God has me all alone to Himself! Andrew Murray Lamartine, the first of the French Romantic poets and a writer of the nineteenth century, in one of his books wrote of how his mother had a secluded spot in the garden where she spent the same hour of each day. He related that nobody ever dreamed of intruding upon her for even a moment of that hour. It was the holy garden of the Lord to her. Pity those people who have no such Beulah land! (See Isa. 62:4.) IS FATIGUE ALL IN YOUR HEAD? In the early 1990s, in a physiology lab at the University of Cape Town in South Africa, an exercise scientist named Tim Noakes, MD, unveiled a radical new way to think about fatigue. Until then, prevailing wisdom held that fatigue occurred in the body. At a certain intensity or duration of physical effort, the demands we put on our muscles become too great and, eventually, our muscles fail. Ask any athlete, from a marathon runner to a powerlifter, and they will be familiar with the feeling. It’s not a particularly comfortable one. What at first is a manageable burn becomes worse and worse until they can no longer bear it. The runner’s pace slows to a mere shuffle; the powerlifter can’t manage to hoist the barbell up for one last rep. Try as they might, they simply run out of gas and their muscles cease to contract. Noakes, however, wasn’t convinced that fatigue occurred in the body or that muscles actually ran out of gas. He questioned why so many athletes, seemingly overwhelmed by fatigue, were suddenly able to speed up during the final stretch of a race when the end was in sight. If the muscles were truly dead, Noakes hypothesized, these finish-line spurts would be impossible. To prove his point, Noakes attached electrical sensors to athletes and then instructed them to lift weights with their legs until they simply couldn’t lift any longer. (In exercise science, this is called “inducing muscle failure.”) When the weights slammed down and each participant tapped out, reporting they could no longer contract their muscles, Noakes ran an electrical current through the sensor. Much to the surprise of everyone—especially to the participants whose legs were dead—their muscles contracted. Although the participants could not contract their muscles on their own, Noakes proved that their muscles actually had more to give. The participants felt drained, but empirically, their muscles were not. Noakes repeated similar versions of this experiment and observed the same result. Although participants reported being totally depleted and unable to contract their muscles after exercising to what they thought was failure, when electrical stimulation was applied, without fail, their muscles produced additional force. This led Noakes to conclude that contrary to popular belief, physical fatigue occurs not in the body, but in the brain. It’s not that our muscles wear out; rather, it is our brain that shuts them down when they still have a few more percentage points to give. Noakes speculates this is an innately programmed way of protecting ourselves. Physiologically, we could push our bodies to true failure (i.e., injury and organ failure), but the brain comes in and creates a perception of failure before we actually harm ourselves. The brain, Noakes remarked, is our “central governor” of fatigue. It’s our “ego” shutting us down when confronted by fear and threat. In other words, we are hardwired to retreat when the going gets tough. But like Boyle and Strecher demonstrated, it is possible to override the central governor.

It takes a lot of energy to even prep photoreceptors and their associated neurons for the arrival of light, so that they can react when needed. Even when animals aren’t seeing anything, the mere possibility of sight drains their resources. This drain is significant enough that if eyes stop being useful or effective, they tend to diminish or disappear. Sometimes animals invest in other senses that aren’t yoked to light. That evolution should select for larger brains may seem to us like, well, a no-brainer. We are so enamoured of our high intelligence that we assume that when it comes to cerebral power, more must be better. But if that were the case, the feline family would also have produced cats who could do calculus, and frogs would by now have launched their own space programme. Why are giant brains so rare in the animal kingdom? The fact is that a jumbo brain is a jumbo drain on the body. It’s not easy to carry around, especially when encased inside a massive skull. It’s even harder to fuel. In Homo sapiens, the brain accounts for about 2–3 per cent of total body weight, but it consumes 25 per cent of the body’s energy when the body is at rest. By comparison, the brains of other apes require only 8 per cent of rest-time energy. Archaic humans paid for their large brains in two ways. Firstly, they spent more time in search of food. Secondly, their muscles atrophied. Like a government diverting money from defence to education, humans diverted energy from biceps to neurons. It’s hardly a foregone conclusion that this is a good strategy for survival on the savannah. A chimpanzee can’t win an argument with a Homo sapiens, but the ape can rip the man apart like a rag doll.

Far below the waterline in the very lowest compartment of a ship you will find a deck covering the bottom of the vessel from the centerline, most frequently the keel, to the sides creating a space called the inner bottom. The purpose of this space is to protect the ship from flooding if the hull were to become compromised or breached by a grounding. This deck, known as the bilge is also the collecting place for water and oil that flows from spills, rough seas, rain, leaks in the hull, engine oil and lubricant. The bilge being a vast expanse would be difficult to pump dry if it wasn’t for collection wells that are designed to pump the contents into holding tanks. These wells were and are still known as a stuffing box or a rose box. In years past these wells were pumped directly into the sea without considering the adverse consequences to the ecology. The discharge of bilge sludge is now normally restricted and for commercial vessels discharging this toxic waste is totally outlawed and regulated under Marpol Annex I. On larger ships waste water can be passively treated by methods such as bioremediation, which uses bacteria or archaea to break down the hydrocarbons in the waste and bilge water. Once treated the water could be safely returned to the sea. Pumping the bilges was a constant undertaking by the ship’s engineers and was necessary to keep the ship afloat. There were times however when the drain in the rose box would become clogged, and that was when the lowest ranking member of the engine department was called upon to clear the blockage. On most ships this task would fall to the “Wiper” or on a training ship a “Mug or Plebe.” Never knowing what had clogged the drain in the rose box we were ready for anything. When, as a midshipman, my turn came to reach into the rose box I came up with rags, paper and thick gunk. Disgusting as it was it could have been worse! I have heard tales of dead rats and once the ship’s pet cat clogging the drain, but it was all in a day’s work. Coming back up on deck the sun shone brighter and the flying fish were a welcome sight!

The primary fear is that they will bring back money earned overseas and will be in a position to recapture economic power and eventually the government.
