For slave-holders, particularly those at the apex of southern society, the idleness of rural working-class whites justified the “peculiar institution” and made clear the need for a planter-led economic and social hierarchy. Planter D. R. Hundley wrote, for example, that “poor whites” were “the laziest two-legged animals that walk erect on the face of the earth . . . [and exhibited] a natural stupidity or dullness of intellect that almost surpasses belief.” To abolitionists and proslavery ideologues alike, therefore, southern poor whites utterly lacked industry, intelligence, social propriety, and honor, the essential ingredients for political and social equality and thus should not be trusted with political decision-making.7 Northern and southern middle- to upper-class commentators perceived this class of people as so utterly degraded that they challenged their assertion of “whiteness,” the one claim southern working-class whites had to political equality, “normative” status, and social superiority to free and enslaved blacks. Like Byrd and the author of “The Carolina Sand-Hillers,” journalists and travel writers repeatedly compared “poor whites” unfavorably to other supposedly inferior people of color, be they enslaved blacks, Indians, or even Mexican peasants. Through a variety of arguments, including genetic inferiority, excessive interbreeding with “nonwhites,” and environmental factors, such as the destructive influences of the southern climate, rampant disease, and a woefully inadequate diet, these writers asserted that “poor whites” were neither truly “white” nor clearly “nonwhite” but instead, a separate “‘Cracker’ race” in all ways so debased that they had no capacity for social advancement. This attitude is clear in an 1866 article from the Boston Daily Advertiser that proclaimed that this social class had reached depths of “[s]uch filthy poverty, such foul ignorance, such idiotic imbecility” that they could never be truly civilized. “[T]ime and effort will lead the negro up to intelligent manhood,” the author concluded, “but I almost doubt if it will be possible to ever lift this ‘white trash’ into respectability.”8 Contempt for working-class whites was almost as strong among African Americans as among middle-class and elite whites. Enslaved African Americans invented derogatory terms containing explicit versions of “whiteness” such as “(poor) white trash” and “poor buckra” (a derivative form of the West African word for “white man”). Although relations between slaves and non-elite southern whites were complex, many slaves deeply resented the role of poor whites as overseers and patrol riders and adopted their owners’ view that elite southern planters were socially and morally superior. Many also believed that blacks, enslaved and free, formed a middle layer of social respectability between the planter aristocracy at the top of the social system and the “poor whites” at the bottom. The construction of a “poor white” and “white trash” social and cultural category thus allowed black slaves to carve out a space of social superiority, as well as permitted the white planter elite to justify enormous economic and social inequality among whites in a supposedly democratic society.9

Consider, for those you seek to serve, their external status (how they are seen by their chosen community) and their internal status (who they see when they look in the mirror). Next, work through how they maintain or seek to change that status. Do they belittle others? Seek approval? Help in selfless ways? Drive themselves to achieve more? What sort of wins and losses do they track? Consider the following two XY grids. People in the top-right quadrant (a) are rare indeed. This space belongs to people who are seen as powerful and who also see themselves as able to handle it. I’d put Oprah Winfrey in this category. This is the person who is able to choose, not the one who is waiting to be chosen. The top-left quadrant (d) is more common, since people who end up with high status often doubt themselves. Rather than a state of equal brotherhood and sisterhood, Kim had introduced an elaborate social order in which the eleven million ordinary North Korean citizens were classified according to their perceived political reliability. The songbun system, as it was known, ruthlessly reorganized the entire social system of North Korea into a communistic pseudofeudal system, with every individual put through eight separate background checks, their family history taken into account as far back as their grandparents and second cousins. Your final rating, or songbun, put you in one of fifty-one grades, divided into three broad categories, from top to bottom: the core class, the wavering class, and the hostile class. The hostile class included vast swathes of society, from the politically suspect (“people from families of wealthy farmers, merchants, industrialists, landowners; pro-Japan and pro-U.S. people; reactionary bureaucrats; defectors from the South; Buddhists, Catholics, expelled public officials”) to kiaesaeng (the Korean equivalent of geishas) and mudang (rural shamans). Although North Koreans weren’t informed of their new classification, it quickly became clear to most people what class they had been assigned. North Koreans of the hostile class were banned from living in Pyongyang or in the most fertile areas of the countryside, and they were excluded from any good jobs. There was virtually no upward mobility—once hostile, forever hostile—but plenty downward. If you were found to be doing anything that was illegal or frowned upon by the regime, you and your family’s songbun would suffer. Personal files were kept locked away in local offices, and were backed up in the offices of the Ministry for the Protection of State Security and in a blast-resistant vault in the mountains of Yanggang province. There was no way to tamper with your status, and no way to escape it. The most cunning part of it all was that Kim Il-Sung came up with a way for his subjects to enforce their own oppression by organizing the people into inminban (“people’s groups”), cooperatives of twenty or so families per neighborhood whose duty it was to keep tabs on one another and to inform on any potentially criminal or subversive behavior. These were complemented by kyuch’aldae, mobile police units on constant lookout for infringers, who had the authority to burst into your home or office at any time of day or night. Offenses included using more than your allocated quota of electricity, wearing blue jeans, wearing clothes bearing Roman writing (a “capitalist indulgence”) and allowing your hair to grow longer than the authorized length. Worse still, Kim decreed that any one person’s guilt also made that person’s family, three generations of it, guilty of the same crime. Opposing the regime meant risking your grandparents, your wife, your children—no matter how young—being imprisoned and tortured with you. Historically, Koreans had been subject to a caste system similar to India’s and equally as rigid. In the early years of the DPRK, the North Korean people felt this was just a modernized revitalization of that traditional social structure. By the time they realized something was awfully wrong, that a pyramid had been built, and that at the top of it, on the very narrow peak, sat Kim Il-Sung, alone, perched on the people’s broken backs, on their murdered families and friends, on their destroyed lives—by the time they paused and dared to contemplate that their liberator, their savior, was betraying them—in fact, had always betrayed them—it was already much, much too late.

Ask yourself: What are my personality and work preferences? Time, energy, and health? Economic resources? Do I notice that I am having any particular physical responses as I think about the situation? What do I deeply desire? Interpersonal information (through face-to-face relationships). Ask yourself: Who are the people close to me who will be affected by my choice? How will this proposed option be likely to affect my interpersonal relationships, especially with those close to me or with whom I have prior commitments, especially my family? What supporting relationships exist for me personally? Structural information (from pondering those organizations, personal and impersonal, that exist regardless of the individual players). Ask yourself: What structures are in play here? What are their goals, their reasons for existing? What are their dynamics? What would be my role and responsibility in these systems if I were to make the decision I am pondering? How is power exercised? Who or what is marginalized in these structures, and what would they say if they could talk with me? Information from the natural world (from the environment in which we are embedded). Ask yourself: What is the environment—the physical context, both human and natural—like? How does the human-made environment exist within or against the natural world? Is this an environment that invites or repels me? What kind of impact will my actions have on the environment? After you’ve gathered your data, the next step is to interpret it, and it’s helpful to use the same four categories as interpretive lenses: Intrapersonal (your inner response). Ask yourself: Does the data give me energy? excitement? courage? confidence? tranquillity? satisfaction? Or are my reactions to it more like discouragement, anxiety, insecurity, agitation, dissatisfaction? Or, as is often the case, is my response a mixture of the two? Interpersonal (the reactions between you and those persons close to you or who would be affected by your decision). Ask yourself: How do I feel about the possible effects of my proposed decision on those close to me? What do these people say about my proposed option? What values are these systems preserving, and are these values worth it to me? In what way are the systems likely to resist my proposed change? What price could I pay? How does this feel to me? 4. Natural world (from the largest perspective, that of the grand scheme of things). Ask yourself: Does being in nature tell me anything about my proposed decision? Yogurt, seemingly an ideal category for private label to take the lion’s share, has seen private label share decline. The top-five leaders, Danone, Yoplait/Sodiaal, Yakult Honsha, Nestlé and Müller, represent half of all yogurt sales. Their innovation has been developing premium products, like pro-biotic yogurt and yogurt enhanced with fruit, and they launch continually; between 2006 and 2010 Danone introduced nine new products. In 2013, the Journal of the American Medical Association published the results of a study that aimed to find, once and for all, the link between mortality rates and BMI (a.k.a. is our fat really killing us?). The study was led by Katherine Flegal, an epidemiologist at the National Center for Health Statistics, and her colleagues. After analyzing ninety-seven studies of mortality rates and BMI that included almost 3 million people, Flegal found what’s known as a “U-shaped curve.” At the top ends of the curve, where death rates were the highest, are people whose BMIs categorize them as either severely underweight or severely obese. At the lowest point of the curve, where death rates are the lowest, are people whose BMI falls within the “overweight” category. Meaning that statistically, people who are overweight according to BMI had the lowest risk of death. Following the U-shaped curve, people whose BMI fell within the “mildly obese” category had no higher risk of death than people within the “normal” category. The increased mortality rate came at the extremes, either side.

The year that I’m writing this, 2016, is set to be the hottest ever recorded, expected to top the 10 record-breaking years before it. The scale of the problem indicates that humanity and the environment are intrinsically linked. But does that mean we’re making the world more human? Or does it mean that humanity has been part of nature all along? The tiny muscles around your arteries have one unambiguous answer to that question. Despite everything that we try to do to separate ourselves from the world around us, humans are still indisputably part of nature. As byproducts of evolution, the skyscrapers, plastics, and automobiles we manufacture are no less “natural” than a termite mound, a honeycomb, or a beaver dam. Yes, the actions that humans make may be significantly more destructive or ambitious or awe-inspiring or futile, but they are all part of a greater system of causes and effects. We are still animals. Just very smart ones.

If you already hate tofu, the term "tofu skin" is probably an effective emetic. But this stuff is addictive. You start by making fresh soy milk. I'm not going to soft-pedal how much work this is: you have to soak, grind, squeeze, and simmer dried soybeans. The result is a thick milk entirely unlike the soy milk you get in a box at Whole Foods in the same way Parmigiano-Reggiano is unlike Velveeta. Then, to make tofu skins (yuba in Japanese), you simmer the soy milk gently over low heat until a skin forms on the surface, then pluck it off with your fingers and drape it over a chopstick to dry. It is exactly like the skin that forms on top of pudding, the one George Costanza wanted to market as Pudding Skin Singles. Yuba doesn't look like much- like a pile of discarded raw chicken skin, honestly. But the texture is toothsome, and with each bite you're rewarded with the flavor of fresh soy milk. It's best served with just a few drops of soy sauce and maybe some grated ginger or sliced negi. "I'm kind of obsessed with tofu skins right now," said Iris, poking her head into the fridge to grab a round of yuba. Me too. In Seattle, I had to buy, grind, boil, and otherwise toil for a few sheets of yuba. In Tokyo, I found it at Life Supermarket, sold in a single-serving plastic tub with a foil top. The yuba wasn't as snappy or flavorful as homemade, but it had that characteristic fresh-soy aroma, which to me smells like a combination of "healthy forest" and "clean baby." Iris and I ate it greedily. (The yuba, not the baby.) Yuba isn't technically tofu, because the soy milk isn't coagulated. Japanese tofu comes in two basic categories, much like underpants: cotton (momen) and silken (kinugoshi). Cotton tofu is the kind eaten most commonly in the U.S.; if you buy a package of extra-firm tofu and cut it up for stir-frying, that's definitely cotton tofu. Silken tofu is fragile, creamier and more dairy-like than cotton-tofu, and it's the star of my favorite summer tofu dish. Hiya yakko is cubes of tofu, usually silken, drizzled with soy sauce and judiciously topped with savory bits: grated ginger or daikon, bonito flakes, negi. It's popular in Japanese bars and easy to make at home, which I did, with (you will be shocked to hear) tons of fresh negi.

Take every last item out and lay everything in one spot. To demonstrate the steps involved, let’s go back to the example of clothing above. You start by deciding that you are going to organize and put away your clothes. The next step is to search every room of the house. Bring every piece of clothing you find to the same place, and spread them out on the floor. Then pick up each outfit and see if it sparks joy. Those and only those are the ones to keep. Follow this procedure for every category. If you have too many clothes, you can make subcategories such as tops, bottoms, socks, and so on, and examine your clothes, one subcategory at a time. Gathering every item in one place is essential to this process because it gives you an accurate grasp of how much you have.
