A few years ago, Ed and I were exploring the dunes on Cumberland Island, one of the barrier islands between the Atlantic Ocean and the mainland of south Georgia. He was looking for the fossilized teeth of long-dead sharks. I was looking for sand spurs so that I did not step on one. This meant that neither of us was looking very far past our own feet, so the huge loggerhead turtle took us both by surprise. She was still alive but just barely, her shell hot to the touch from the noonday sun. We both knew what had happened. She had come ashore during the night to lay her eggs, and when she had finished, she had looked around for the brightest horizon to lead her back to the sea. Mistaking the distant lights on the mainland for the sky reflected on the ocean, she went the wrong way. Judging by her tracks, she had dragged herself through the sand until her flippers were buried and she could go no farther. We found her where she had given up, half cooked by the sun but still able to turn one eye up to look at us when we bent over her. I buried her in cool sand while Ed ran to the ranger station. An hour later she was on her back with tire chains around her front legs, being dragged behind a park service Jeep back toward the ocean. The dunes were so deep that her mouth filled with sand as she went. Her head bent so far underneath her that I feared her neck would break. Finally the Jeep stopped at the edge of the water. Ed and I helped the ranger unchain her and flip her back over. Then all three of us watched as she lay motionless in the surf. Every wave brought her life back to her, washing the sand from her eyes and making her shell shine again. When a particularly large one broke over her, she lifted her head and tried her back legs. The next wave made her light enough to find a foothold, and she pushed off, back into the water that was her home. Watching her swim slowly away after her nightmare ride through the dunes, I noted that it is sometimes hard to tell whether you are being killed or saved by the hands that turn your life upside down.

We all assume that our craving or disgust is due to something about the food itself - as opposed to being an often arbitrary response preprogrammed by our culture. We understand that Australians prefer cricket to baseball, or that the French somehow find Gerard Depardieu sexy, but how hungry would you have to be before you would consider plucking a moth from the night air and popping it, frantic and dusty, into your mouth? Flap, crunch, ooze. You could wash it down with some saliva beer.How does a plate of sheep brain's sound? Broiled puppy with gravy? May we interest you in pig ears or shrimp heads? Perhaps a deep-fried songbird that you chew up, bones, beak, and all? A game of cricket on a field of grass is one thing, but pan-fried crickets over lemongrass? That's revolting. Or is it? If lamb chops are fine, what makes lamb brains horrible? A pig's shoulder, haunch, and belly are damn fine eatin', but the ears, snout, and feet are gross? How is lobster so different from grasshopper? Who distinguishes delectable from disgusting, and what's their rationale? And what about all the expectations? Grind up those leftover pig parts, stuff 'em in an intestine, and you've got yourself respectable sausage or hot dogs. You may think bacon and eggs just go together, like French fries and ketchup or salt and pepper. But the combination of bacon and eggs for breakfast was dreamed up about a hundred years aqo by an advertising hired to sell more bacon, and the Dutch eat their fries with mayonnaise, not ketchup. Think it's rational to be grossed out by eating bugs? Think again. A hundred grams of dehydrated cricket contains 1,550 milligrams of iron, 340 milligrams of calcium, and 25 milligrams of zinc - three minerals often missing in the diets of the chronic poor. Insects are richer in minerals and healthy fats than beef or pork. Freaked out by the exoskeleton, antennae, and the way too many legs? Then stick to the Turf and forget the Surf because shrimps, crabs, and lobsters are all anthropods, just like grasshoppers. And they eat the nastiest of what sinks to the bottom of the ocean, so don't talk about bugs' disgusting diets. Anyway, you may have bug parts stuck between your teeth right now. The Food and Drug Administration tells its inspectors to ignore insect parts in black pepper unless they find more than 475 of them per 50 grams, on average. A fact sheet from Ohio State University estimates that Americans unknowingly eat an average of between one and two pounds of insects per year. Except in extreme weather the bay beach is entirely domesticated, the backyard of the town, never empty but never crowded, either; there is no surf there, and the water that laps docilely up against the shore is always full of boats. In 1955 flying was much more dangerous than it is now, but there was a party atmosphere aboard long flights and everyone enjoyed the ever-flowing drinks and food. Smoking was the norm and it didn’t take long before the cabin was full of smoke. The stewardesses were friendly and I can remember some that were very friendly. I don’t remember much about my time in Lisbon because, before I knew it, we were in the air again heading south across the ocean to the vastness of the North African desert. The light yellow sand under us in Morocco and the Spanish Sahara was endless. The fine sand went from the barren coastal surf and endless miles of beautiful beaches, inland as far as the eye could see. After a time I saw what I believed, at the time, to be a radio relay station located out on a desolate sand spit near Villa Bens. It was only later that I found out that it was Castelo de Tarfaya, a small fortification on the North African coast. Tarfaya was occupied by the British in 1882, when they established a trading post called Casa del Mar. This forgotten part of the world is now in the southern part of Morocco.

The foamy surge rushes the shore, reaching toward her. Tingling with expectancy, she breathes deep. Turns more and more slowly. With each revolution, just before her face sweeps the sand, she lifts her head gently and takes in the sun-salt smell. I am close, very close. It is coming. When will I feel it? A fever builds. The sand wetter beneath her, the rumble of surf louder. Even slower, by inches she moves, waiting for the touch. Soon, soon. Almost feeling it before it comes. She wants to open her eyes to peek, to see how much longer. But she resists, squinting her lids even tighter, the sky bright behind them, giving no hints. Suddenly she shrieks as the power rushes beneath her, fondles her thighs, between her legs, flows along her back, swirling under her head, pulling her hair in inky strands. She rolls faster into the deepening wave, against streaming shells and ocean bits, the water embracing her. Pushing against the sea’s strong body, she is grasped, held. Not alone. When you live in Jersey a beach isn’t enough. People have energy in Jersey. They need things to do. They need a beach with a boardwalk. And the boardwalk has to be filled with rides and games and crappy food. Add some miniature golf. Throw in a bunch of stores selling T-shirts with offensive pictures. Life doesn’t get much better than this. And the best part is the smell. I’ve been told there are places where the ocean smells wild and briny. In Jersey the ocean smells of coconut-scented suntan lotion and Italian sausage smothered in fried onions and peppers. It smells like deep-fried zeppoles and chili hot dogs. The scent is intoxicating and exotic as it expands in the heat rising from crowds of sun-baked bodies strolling the boardwalk. Surf surges onto the beach and the sound is mingled with the rhythmic tick, tick, tick of the spinning game wheels and the highpitched Eeeeeeee of thrill seekers being hurtled down the log flume. Rock stars, pickpockets, homies, pimps, pushers, pregnant women in bikinis, future astronauts, politicians, geeks, ghouls, and droves of families who buy American and eat Italian all come to the Jersey shore.

Royal Hawaiian on the famed and romantic Waikiki Beach in Honolulu, Hawaii. I am looking into a garden filled with graceful palm trees, swaying in the balmy breeze. Outside my windows are papaya trees laden with ripening fruit. The brilliant color of the royal poinciana, the flame of the forest trees, adds to the glamor of the scene; and the acacia trees are hung heavily with their exquisite white flowers. The incredible blue ocean surrounding these islands stretches away to the horizon. The white waves are surging in, and the Hawaiians and my fellow visitors are riding gracefully on surf-boards and outrigger canoes.

He could see that everybody had gotten a bit stretched on all our various projects. He decided we needed a break. He didn’t lead us into the bush this time. Instead, Steve said a magic word. “Samoa.” “Sea snakes?” I asked. “Surfing,” he said. He planned a ten-day shoot for a surfing documentary. Steve loved surfing almost as much as he loved wildlife. The pounding his body had taken playing rugby, wrestling crocs, and doing heavy construction at the zoo had left him with problem knees and a bad shoulder. He felt his time tackling some of the biggest surf might be nearing an end. In Samoa, Steve didn’t spend just a few hours out in the waves. He would be out there twelve to fourteen hours a day. I didn’t surf, but I was awestruck at Steve’s ability to stare down the face of a wave that was as high as a building. He had endurance beyond any surfer I had ever seen. Steve had a support boat nearby, so he could swim over, get hydrated, or grab a protein bar. But that was it. He didn’t stop for lunch. He would eat breakfast, surf all day, and then eat a big dinner. I knew this was the best therapy for him. Surfing at Boulders was downright dangerous, but Steve reveled in the challenge. He surfed with Wes, his best mate in the world. I sat on a rocky point with my eye glued to the camera so I wouldn’t miss a single wave. While Bindi gathered shells and played on the beach under her nanny’s watchful eye, I admired Steve with his long arms and broad shoulders, powerfully paddling onto wave after wave. Not even the Pacific Ocean with its most powerful sets could slow him down. He caught the most amazing barrels I have ever seen, and carved up the waves with such ferocity that I didn’t want the camera to miss a single moment. On the beach in Samoa, while Bindi helped her dad wax his board, I caught a glimpse of joy in eyes that had been so sad.

No sunlight, no Moon. A storm pounds offshore. I hear nothing but the violence of water. A few waves hiss, most give a deeper complaint as they charge, then punch. Embayments and spits impede and deflect the assault, causing waves to turn on one another, releasing slaps so loud they resonate in my chest. Every few seconds, lightning cracks the dark: surf sliced by a giant oak that lies dead on the beach; spilling breakers overtopping beaten, limp palm crowns; sea spray so dense that the lightning fires the air with silver. Then darkness. At my feet, shudders emerge from what was steady ground. Waves slam into the knee-high escarpment that marks the highest edge of the beach; body-size fragments of soil cleave away; the roots that held the soil are entirely powerless. The moon presses the tide so tight against the land that spent waves have no room to run back before the next breaker arrives. By my clock, the tide is at its highest point, it should ease back soon, but my whole being tells me, you’re next. There is no celestial harmony but atonal panic, sensory tumult that overwashes all else. Not Newtonian elegance but Prospero’s rough magic and roaring war.

A graph of seal levels over the past five million years looks like a cross section through choppy surf. In yet deeper time, more than seventy million years ago, the height of this surf was magnificent. All of Florida and half of Georgia were shallow seas dotted with islands. The sabal palm’s ancestors likely grew on the sand of these beaches and islands with dinosaurs nibbling on their fruits. On the scale of thousands of years, sand behaves like water. A dune is a ripple. An island is a cresting wave. The sand water rolls, churns, and streams under the power of ocean and wind. Sabal palm is a surfer on those waves.

In spite of the obvious, it was unthinkable that the United States had a colony in Africa; well they had one, and that was where I was headed! World War II had been over for ten years and in Europe they were getting on with things and for now all was well in Africa, and with the World! Unless especially fitted out, aircraft didn’t have the range to cross the Atlantic in one jump, so after leaving Idlewild Airport in New York City, we flew halfway across the Atlantic Ocean to the Portuguese island of Santa Maria in the Azores. After refueling and stretching our legs we continued on to Lisbon. Our layovers were only for as long as it took to take care of business. There were no days built in, for me to have a leisurely, gentlemanly, civilized journey to my destination. Instead my seat was beginning to feel as hard as a rock pile. The engines continued to drone on as the Atlantic Ocean eventually gave way to the Iberian Peninsula. My view of Portugal was only what I could see from the air and what was at the airport. Again we landed for fuel in Lisbon, and then without skipping a beat, headed south across the Mediterranean to the North African desert. The beaches under us, in Morocco and the Spanish Sahara, were endless and the sand went from the barren coastal surf inland, to as far as the eye could see. With very few exceptions there was no evidence of civilization.

Peter announced that Paul do Mar was not a surf spot, that it was just a picturesque, kamikaze close-out. I disagreed. I found it a mesmerizing wave. But absurdly dangerous. Besides the raw power, there was the shoreline. The rocks were round, mostly, but the shorebreak borderland you had to cross to enter the water was simply too wide, particularly when the surf was big. Even after timing it carefully, waiting for a lull, letting a shorebreak wave expend itself, then running recklessly with your board over wet boulders, you sometimes didn’t make it to water deep enough to paddle on before the next wave slammed you, banging you backward across the rocks—board, body, dignity all battered, sometimes severely. This was not a normal ocean problem. It felt like bad arithmetic—the time and distance did not, for some Madeira-only reason, compute. I had never seen a surf spot with an entrance so daunting. And the exit, getting back onto dry land, could be even worse. The wave we were there to ride was at most only thirty yards offshore, but I sometimes resorted to a very long paddle, around a seawall at the far east end of the village, rather than face that shorebreak.
