Below are the steps you need to consider before moving out. You should start with cleaning. Remove all screws and nails from the walls and the ceilings, fill up all holes and dust all ledges. Large holes should be patched and the entire wall checked the major marks. Remove all the cobwebs from the walls and ceilings, taking care to wash or vacuum the vents. They can get quite dusty. Clean all doors and door knobs, wipe down all the switches, electrical outlets, vacuum/wipe down the drapes, clean the blinds and remove all the light covers from light fixtures and clean them thoroughly as they may contain dead insects. It's best to use and oven cleaner from your supermarket, just take care to use gloves and a mask as they can be quite toxic. Clean the kitchen floor well by giving it a good vacuum and mop . Sometimes the kitchen floor may need to be degreased. Dust the bedrooms and living room, vacuum throughout then mop. If you have a garage give it a good sweep. Also cut the grass, pull out all weeds and remove all items that may be lying or hanging around. Remember to put your garbage bins out for collection even if collection is a week away as in our experience the bins will be full to the brim from all the rubbish during the moving process. Among the guidelines set in February 1977 (remember, Fair Trade on alcohol was not finally ended until 1978): Emphasize edibles vs. non-edibles. I figured that the supermarkets would raise their prices on foods to make up for the newly reduced margins on milk and alcohol. This would give us all the more room to underprice them. During the next five years we got rid of film, hosiery, light bulbs and hardware, greeting cards, batteries, magazines, all health and beauty aids except those with a “health food” twist. We began to cut back sharply on soaps and cleaners and paper goods. The only non-edibles we emphasized were “tabletop” items like wineglasses, cork pullers, and candles. It was quite clear that we should put more emphasis on food and less on alcohol and milk. Within edibles, drop all ordinary branded products like Best Foods, Folgers, or Weber’s bread. I felt that a dichotomy was developing between “groceries” and “food.” By “groceries,” I mean the highly advertised, highly packaged, “value added” products being emphasized by supermarkets, the kinds that brought slotting allowances and co-op advertising allowances. By embracing these “plastic” products, I felt the supermarkets were abandoning “food” and the product knowledge required to buy and sell it. But this position wasn’t entirely altruistic. The plan of February 20, 1977, declared, “Most independent supermarkets have been driven out of business, because they stupidly tried to compete with the big chains in plastic goods, in which the big chains excel.” Focus on discontinuity of supplies. Be willing to discontinue any product if we are unable to offer the right deal to the customer. Instead of national brands, focus on either Trader Joe’s label products or “no label” products like nuts and dried fruits. This was intended to enable the Trader Joe’s label to pick up momentum in the stores. And it worked.

Grocery stores are an exercise in psychological manipulation. It is virtually impossible to enter a supermarket intending to buy a quart of milk and emerge with only the milk. First, consider the entrance. Once you enter the grocery store, you must traverse the entire store in order to reach the checkout line. And where do the entrances to grocery stores usually leave you? In the produce department. You are surrounded by scents, textures, and bright colors that result in a surge of endorphins. The lighting of the store is manipulated to make fruits and vegetables appear at their brightest and best. And of course, the dairy aisle—one of the most popular locations to visit—is always hidden in the back of the store so you are forced to pass through a wealth of tempting products before reaching it. Even the way the shelves are organized is a psychological trap. The most expensive items are always placed conveniently at adult eye level, with the generic brands placed down by your knees. Sugary cereals or other items meant to appeal to children are placed at eye level for children. Even the giant size of the shopping carts is intended to encourage more purchases. “Even the music is meant to manipulate us,” I explain to Luke. “A study of supermarket shoppers found people spend more time shopping when stores play music. Of all the tactics brought to bear upon the growers in the sixties, the most important was the United Farm Workers’ (UFW’s) ever-resourceful grape boycott. Here, ironically, the weakness of the 1935 National Labor Relations Act (NLR A), which had left agricultural workers out of its purview as a sop to southern political interests, proved beneficial. The Taft-Hartley amendments had eliminated the secondary boycott, which otherwise would have allowed unions to boycott firms who did business with an employer that was being struck—that is, boycott the secondary handler of a good. For the farmworkers, not being covered by the act meant that they could take their struggle from the fields to the secondary sight of the supermarkets that sold grapes. Working outside of the New Deal order, in essence, proved to be the workers’ best hope and most successful strategy.

There are those along the Main Line who look upon Will Atherson as a violator of his inheritance, an opinion that is largely accounted for by the building that he had caused to be erected to house the Freeholders Bank & Trust Company of which, by right of primogeniture as well as ability, he was president. On a street where every door looks as if it might open at any moment to disgorge some bewigged and gaitered contemporary of Old Ben himself, the Freeholders Building is indeed incongruous to the scene. Designed by a disciple of Frank Lloyd Wright, it was judged by one of the architectural magazines to be an outstanding example of “the best in unfettered contemporary design, free of any taint of traditionalism, radical in concept, daring in execution.” That, in 1940, it most certainly was. The later influx of countless chain shops and supermarkets, all designed in the apparent belief that glass is the only proper building material, has made the Freeholders Building seem less unfettered, daring and radical, but it still raises doubts in certain quarters about Will Atherson. The more generous Old Philadelphians excuse the building as one of the lapses of which even a gentleman may be guilty—there was a “folly” of one sort or another in most of their families—but the other school of thought holds that a gentleman’s folly must, like an affair with a woman, be carried on in privacy and with discretion. Will Atherson’s folly was unpleasantly public. Although none of his old customers went so far as to stop doing business with the bank, most of them still cringed at the necessity of transacting their financial affairs with no more privacy than a fish in a bowl. That sort of thing was accepted in New York, of course, but this was Philadelphia.

If you already hate tofu, the term "tofu skin" is probably an effective emetic. But this stuff is addictive. You start by making fresh soy milk. I'm not going to soft-pedal how much work this is: you have to soak, grind, squeeze, and simmer dried soybeans. The result is a thick milk entirely unlike the soy milk you get in a box at Whole Foods in the same way Parmigiano-Reggiano is unlike Velveeta. Then, to make tofu skins (yuba in Japanese), you simmer the soy milk gently over low heat until a skin forms on the surface, then pluck it off with your fingers and drape it over a chopstick to dry. It is exactly like the skin that forms on top of pudding, the one George Costanza wanted to market as Pudding Skin Singles. Yuba doesn't look like much- like a pile of discarded raw chicken skin, honestly. But the texture is toothsome, and with each bite you're rewarded with the flavor of fresh soy milk. It's best served with just a few drops of soy sauce and maybe some grated ginger or sliced negi. "I'm kind of obsessed with tofu skins right now," said Iris, poking her head into the fridge to grab a round of yuba. Me too. In Seattle, I had to buy, grind, boil, and otherwise toil for a few sheets of yuba. In Tokyo, I found it at Life Supermarket, sold in a single-serving plastic tub with a foil top. The yuba wasn't as snappy or flavorful as homemade, but it had that characteristic fresh-soy aroma, which to me smells like a combination of "healthy forest" and "clean baby." Iris and I ate it greedily. (The yuba, not the baby.) Yuba isn't technically tofu, because the soy milk isn't coagulated. Japanese tofu comes in two basic categories, much like underpants: cotton (momen) and silken (kinugoshi). Cotton tofu is the kind eaten most commonly in the U.S.; if you buy a package of extra-firm tofu and cut it up for stir-frying, that's definitely cotton tofu. Silken tofu is fragile, creamier and more dairy-like than cotton-tofu, and it's the star of my favorite summer tofu dish. Hiya yakko is cubes of tofu, usually silken, drizzled with soy sauce and judiciously topped with savory bits: grated ginger or daikon, bonito flakes, negi. It's popular in Japanese bars and easy to make at home, which I did, with (you will be shocked to hear) tons of fresh negi.
