When people dis fantasy—mainstream readers and SF readers alike—they are almost always talking about one sub-genre of fantastic literature. They are talking about Tolkien, and Tolkien's innumerable heirs. Call it 'epic', or 'high', or 'genre' fantasy, this is what fantasy has come to mean. Which is misleading as well as unfortunate. Tolkien is the wen on the arse of fantasy literature. His oeuvre is massive and contagious—you can't ignore it, so don't even try. The best you can do is consciously try to lance the boil. And there's a lot to dislike—his cod-Wagnerian pomposity, his boys-own-adventure glorying in war, his small-minded and reactionary love for hierarchical status-quos, his belief in absolute morality that blurs moral and political complexity. Tolkien's clichés—elves 'n' dwarfs 'n' magic rings—have spread like viruses. He wrote that the function of fantasy was 'consolation', thereby making it an article of policy that a fantasy writer should mollycoddle the reader. That is a revolting idea, and one, thankfully, that plenty of fantasists have ignored. From the Surrealists through the pulps—via Mervyn Peake and Mikhael Bulgakov and Stefan Grabiński and Bruno Schulz and Michael Moorcock and M. John Harrison and I could go on—the best writers have used the fantastic aesthetic precisely to challenge, to alienate, to subvert and undermine expectations. Of course I'm not saying that any fan of Tolkien is no friend of mine—that would cut my social circle considerably. Nor would I claim that it's impossible to write a good fantasy book with elves and dwarfs in it—Michael Swanwick's superb Iron Dragon's Daughter gives the lie to that. But given that the pleasure of fantasy is supposed to be in its limitless creativity, why not try to come up with some different themes, as well as unconventional monsters? Why not use fantasy to challenge social and aesthetic lies? Thankfully, the alternative tradition of fantasy has never died. And it's getting stronger. Chris Wooding, Michael Swanwick, Mary Gentle, Paul di Filippo, Jeff VanderMeer, and many others, are all producing works based on fantasy's radicalism. Where traditional fantasy has been rural and bucolic, this is often urban, and frequently brutal. Characters are more than cardboard cutouts, and they're not defined by race or sex. Things are gritty and tricky, just as in real life. This is fantasy not as comfort-food, but as challenge. The critic Gabe Chouinard has said that we're entering a new period, a renaissance in the creative radicalism of fantasy that hasn't been seen since the New Wave of the sixties and seventies, and in echo of which he has christened the Next Wave. I don't know if he's right, but I'm excited. This is a radical literature. It's the literature we most deserve.

It's story that counts. No use telling me this isn't a story, or not the same story. I know you've fulfilled everything you promised, you love me, we sleep till noon and we spend the rest of the day eating, the food is superb, I don't deny that. But I worry about the future.... Don't evade, don't pretend you won't leave after all: you leave in the story and the story is ruthless.

And yet the king and his people did not love McAllister. In truth, they hated him horribly, and, to my knowledge, the whole population, with the priests at the head, tried vainly for three months to pray him to death. The devil-devils they sent after him were awe-inspiring, but since McAllister did not believe in devil-devils, they were without power over him. With drunken Scotchmen all signs fail. They gathered up scraps of food which had touched his lips, an empty whiskey bottle, a cocoanut from which he had drunk, and even his spittle, and performed all kinds of deviltries over them. But McAllister lived on. His health was superb. He never caught fever; nor coughs nor colds; dysentery passed him by; and the malignant ulcers and vile skin diseases that attack blacks and whites alike in that climate never fastened upon him. He must have been so saturated with alcohol as to defy the lodgment of germs. I used to imagine them falling to the ground in showers of microscopic cinders as fast as they entered his whiskey-sodden aura. No one loved him, not even germs, while he loved only whiskey, and still he lived.

Dining in restaurants is disappointing more often than not, I have learned. Even in the most celebrated restaurants---especially in the most celebrated restaurants. It's impossible for anything to live up to expectations set so high. There's chemistry involved in making a magical night out. Where you are sitting, your mood and that of your date, your rapport with the server, all these elements are as important as the food, and rarely do they all combine in harmony. Still when you hit it, it's so superb that it's worth taking the chance and going out every so often.

NORMAN’S EGG SALAD 4 cups peeled and chopped hard-boiled eggs.*** (That’s about a dozen extra large eggs—measure after chopping) 1/2 cup crumbled cooked bacon (make your own or use real crumbled bacon from a can—I used Hormel Premium Real Crumbled Bacon) 1 Tablespoon chopped parsley (it’s better if it’s fresh, but you can use dried parsley flakes if you don’t have fresh on hand) 1/4 cup grated carrots (for color and a bit of sweetness) 4 ounces cream cheese 1/4 cup sour cream 1/2 cup mayonnaise (I used Best Foods, which is Hellmann’s in some states) 1/2 teaspoon garlic powder (or 1/2 teaspoon freshly minced garlic) 1/2 teaspoon onion powder (or 1 teaspoon freshly minced onion) salt to taste freshly ground black pepper to taste   Peel and chop the hard-boiled eggs. Add the crumbled bacon, the parsley, and the grated carrots. Mix well.   Put the cream cheese in a small bowl and microwave for 30 seconds on HIGH to soften it. If it can be easily stirred with a fork, add the sour cream and mayonnaise, and mix well. If the cream cheese is still too solid, give it another 10 seconds or so before you add the other ingredients.   Stir in the garlic powder and onion powder.   Add the cream cheese mixture to the bowl with the eggs and stir it all up. Add salt and freshly ground pepper to taste, and chill until ready to serve.   Serve by itself on a lettuce leaf, as filling in a sandwich, or stuffed in Hannah’s Very Best Cream Puffs for a fancy luncheon.   Yield: Makes approximately a dozen superb egg salad sandwiches.

Each bite is a tidal wave of savory, fatty eel juices... ... made fresh and tangy by the complementary flavors of olive oil and tomato! ...! It's perfect! This dish has beautifully encapsulated the superbness of Capitone Eel!" "Capitone specifically means 'Large Female Eel'! It's exactly this kind of eel that is served during Natale season from Christmas to New Year's. Compared to normal eels, the Capitone is large, thick and juicy! In fact, it's considered a delicacy!" "Yes, I've heard of them! The Capitone is supposed to be significantly meatier than the standard Anguilla." *Anguilla is the Italian word for regular eels.* "Okay. So the Capitone is special. But is it special enough to make a dish so delicious the judges swoon?" "No. The secret to the Capitone's refined deliciousness in this dish lies with the tomatoes. You used San Marzanos, correct?" "Ha Ragione! (Exactly!) I specifically chose San Marzano tomatoes as the core of my dish!" Of the hundreds of varieties of tomato, the San Marzano Plum Tomato is one of the least juicy. Less juice means it makes a less watery and runny sauce when stewed! "Thanks to the San Marzano tomatoes, this dish's sauce remained thick and rich with a marvelously full-bodied taste. The blend of spices he used to season the sauce has done a splendid job of highlighting the eel's natural flavors as well." "You can't forget the wondrous polenta either. Crispy on the outside and creamy in the middle. There's no greater garnish for this dish." *Polenta is boiled cornmeal that is typically served as porridge or baked into cakes.* "Ah. I see. Every ingredient of his dish is intimately connected to the eel. Garlic to increase the fragrance, onion for condensed sweetness... ... and low-juice tomatoes. Those are the key ingredients.

The salmon is perfectly cooked. The trace amounts of sugar contained in the wheat flour have combined with the butter in a chemical reaction that's creating a wonderful fragrance. It was all fried together for precisely the right amount of time to create a superb Meunière." "The squid liver was quickly sautéed in a dollop of butter as well, taking a bite of that with the Meunière is sublime! The butter's flavor gently wraps around the salty and pleasantly bitter taste of the liver, giving it a beautifully mellow body." "He added pomegranate seeds and tonburi to the soy sauce marinated roe! Those three completely disparate flavors meld into a seamless whole thanks to butter! Not only does it have an amusing texture, the roe doesn't have its typical greasiness either!" *Tonburi, also called land caviar, is the seeds of the summer cypress plant. It's texture is similar to caviar.* He's used mounds of butter in so many different facets of the dish, but it somehow hasn't made the flavor heavy at all. The secret to that lies in the bed of special sushi rice hidden underneath the seafood! "This sushi rice was made not with vinegar but with orange juice and lemon juice!" "So that's why he was squeezing that mountain of oranges!"

The Peruvian Indians, in the highlands and in the eastern watershed of the Andes, and also in the Amazon Basin, have built superb bodies with high immunity to dental caries and with splendidly developed facial and dental arch forms while living on the native foods in accordance with their accumulated wisdom. Whenever they have adopted the foods of modern civilization and have displaced their own nutrition, dental caries has been found to be wide-spread; and in the succeeding generations following the adoption of modern foods, a change in facial and dental arch forms has developed. The modernized foods which displaced their native foods were the typical white man's dietary of refined-flour products, sugar, sweetened foods, canned goods, and polished rice

Wheat is the only grain with a significant amount of gluten, so we have our first clue to the origins of pastry. Superb pastry could only have developed where wheat was grown: rye, barley and oats do not make good pastry, nor do rice or maize or potato starch.
Janet Clarkson (Pie: A Global History (The Edible Series))
Wheat from northern Italy is 'soft' - that is, it is already low in gluten so is ideal for pastry-making. Butter was the fat of choice for cooking in northern Italy (and a sign of wealth), compared with the oil of the south of the country, and there is no doubt that butter makes the finest pastry for sweet pies and tarts. (...) The situation in Britain was different. In Britain, butter was food for the poor. The wealthy in Britain preferred lard, maybe because the animal had to be killed to obtain the fat, thus its perceived value was higher. Lard makes superb huge 'raised' or 'standing' pies full of meat, which flourished to become one of the jewels in England's culinary crown.

The reporting machine purred intimately, 'Who do you feel is responsible for the passage of the McPhearson Act and der Alte's willingness to sign it into law?' 'You know who,' Dr Superb said, 'and so do I. Not the army and not Nicole and not even the NP. It's the great ethical pharmaceutical house, the cartel A.G. Chemie, in Berlin.' The kind of man who marveled at why others couldn’t just keep their heads above water like he did, who didn’t understand that if you don’t have any boots, you can’t pull yourself up by your bootstraps.

It’s a once-in-a-lifetime table, and I was too stunned to speak. But the ice was broken immediately as Daniel’s voice boomed over the intercom into the booth: “Willieeee!” The kitchen proceeded to send us a series of exquisite courses, which Daniel personally spieled over the intercom as each plate arrived. As we tasted the delicious food, drank the superb wines, and experienced the warmth of Daniel’s hospitality, I watched years of exhaustion and pain lift from my dad’s face.
