I grabbed a cloud-shaped oven mitt, opened the oven door, and took out the apricot bars. The smell of warm fruit, sugar, and melted butter filled the kitchen, along with a blast of heat. A combination I never grew tired of, especially on a cold, gray night like this one. I grabbed another oven mitt, set it on the table, then put the pan on top of it. After a bit of a search, he found the crème de violette in one of his shopping bags and poured in just a dash. He topped it up with champagne and gave it a swift stir. "To dinner in Paris," he said, glass aloft. 'To the chef," I answered, dodging swiftly out of the way as he poured the reduced champagne over some egg yolks and began whisking like his life depended on it. "Do you have fish stock?" "Nope." "Chicken?" "Just cubes. Are you sure that will work?" "Sure. This is the Mr. Potato Head School of Cooking," he said. "Interchangeable parts. If you don't have something, think of what that ingredient does, and attach another one." I counted, in addition to the champagne, three other bottles of alcohol open in the kitchen. The boar, rubbed lovingly with a paste of cider vinegar, garlic, thyme, and rosemary, was marinating in olive oil and red wine. It was then to be seared, deglazed with hard cider, roasted with whole apples, and finished with Calvados and a bit of cream. Mayur had his nose in a small glass of the apple liqueur, inhaling like a fugitive breathing the air of the open road. As soon as we were all assembled at the table, Mayur put the raw scallops back in their shells, spooned over some custard, and put them ever so briefly under the broiler- no more than a minute or two. The custard formed a very thin skin with one or two peaks of caramel. It was, quite simply, heaven. I begin scooping sweet-potato casserole onto ceramic serving spoons while Richard garnishes them with sugared walnuts and Spanish sausage. Three months ago, most of us had never even tried Spanish cuisine, and today we're hosting a semi-Spanish-themed banquet. We work like machines. I spoon and pass the bite to my left. Richard adds walnuts and sausage, and passes the plate. Amanda adds parsley and cleans the plate. Chili aioli would make this bomb. A sweet and savory bite. I almost walk to the spice cabinet, then stop myself. That's not the recipe. We make trays and trays of food; some are set forward for the students who will begin serving. These are the skewers of winter veggies and single-serve portions of herbed stuffing with jamón ibérico- the less hearty bites. While the first course is being distributed the rest of us begin wiping down our stations. Our mini bites of sweet potato and mac and cheese will be going out next.

Ten dogs under 25 pounds, and one who was probably a little over, played together in the pen. Their owners, in groups of three or four, sat on worn wooden benches and talked about dogs. Snowball ran to join a poodle growling at a puppy. They intimidated it behind its owner's calves. Then the poodle, a miniature gray curly thing with long ears, mounted Snowball. I turned to the river and watched a giant barge inch by.

We can navigate the flock freely, with the ability to protect or disown as we see fit. My dad says that we’re the select few with the power of choice, and when real danger arises, we’ll be the ones who survive—and not just because we own a 357 Magnum, three glock G19’s, and a Mossberg pump-action shotgun, but because we’ve been prepping, in every possible badass way, since as long as I can remember, for the inevitable collapse of society as we know it.

Cake 1½ cups flour 1 cup pecans 2 teaspoons baking powder ½ teaspoon baking soda 1½ teaspoons cinnamon ¾ teaspoon nutmeg ¾ teaspoon cloves ¼ teaspoon salt 2 medium apples, peeled and cored ½ cup sugar + extra 1¼ sticks (10 tablespoons) butter at room temperature + extra for greasing the pan 1 cup packed dark brown sugar 2 large eggs at room temperature 1 cup applesauce Preheat oven to 350ºF. Place the flour, pecans, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a food processor and pulse until the pecans are fine. Transfer the flour mixture to a bowl. Insert the grating disk and grate the apples. Take 1 tablespoon of sugar out of the plain sugar and set it aside. Cream the butter with the sugars. Beat in the eggs. Alternate adding the applesauce and the flour mixture until completely combined. Stir in the grated apples. Grease the Bundt pan liberally. Sprinkle the extra sugar on the butter. You may need another tablespoon of sugar for full coverage. Use a cooking spoon to ladle the batter into the Bundt pan and smooth the top. Bake 40 minutes or until it begins to pull away from the sides and a cake tester comes out clean. Allow to rest on a baking rack about 5 to 10 minutes. Loosen the edges, and flip onto the rack. When cool, top with caramel. Caramel 4 tablespoons unsalted butter 1 cup packed dark brown sugar ¼ cup heavy cream Place the ingredients in a deep microwave-safe dish (I used a 4-cup Pyrex measuring cup). They are not swallowing a vitamin like us; rather they are smoking a cigarette under a half moon, even jumping around on a dance floor, or just now sliding under the covers, pulling down the little chains on their bed lamps. But we are not like these others, for at this very moment on the face of the earth, we are standing under a hot shower, or we are eating our breakfast, considered by people of all zones to be the most important meal of the day. Later, when the time is right, we might sit down with the boss, wash the car, or linger at a candle-lit table, but now is the hour for pouring the juice and flipping the eggs with one eye on the toaster. So let us slice a banana and uncap the jam, lift our brimming spoons of milk, and leave it to the others to lower a flag or spin absurdly in a barber's chair— those antipodal oddballs, always early or late. Let us praise Sir Stanford Fleming the Canadian genius who first scored with these lines the length of the spinning earth. Let us move together through the rest of this day passing in unison from light to shadow, coasting over the crest of noon into the valley of the evening and then, holding hands, slip into the deeper valley of night.

The first thing I see when I get home from the hospital after midnight is the glint of the stainless steel oven in the semidarkness of the kitchen. The air smells sweet and eggy. I walk to the oven and pull open the door. Six white ramekins hold six perfect-looking crème caramels, and I wonder if they're safe to eat. It's been more than three hours since I turned off the oven. I remember a Swedish chef telling me years ago when I worked as a prep cook that unrefrigerated food will keep for four hours, but he also cleaned his fingernails with the tip of his chef's knife, so who knows. I pick up one of the dishes and sniff it. It smells fine. Without taking off my coat, I dig into a drawer for a spoon and eat the crème caramel in five seconds flat. The texture is silky and it tastes sweet and custardy, if not perfect. I pull the rest of the dishes from the oven to put in the fridge, telling myself one was enough. An extra treat at the end of a hard day. I've put three ramekins into the refrigerator when I can't stand it and dig into the second, eating more slowly this time, slipping out of my coat, savoring the custard on my tongue. Smoked Trout Gloria YIELD: 4 SERVINGS GLORIA BECAME PASSIONATE about trout fishing when we lived in Hunter. She would go to the river at an ungodly early morning hour, usually with Pierre Larré, and arrive back home, wet and exhilarated, with a bunch of fresh trout at about 9:00 A.M., when I was getting up. She liked them best smoked and served with creamy scrambled eggs on buttered toast, a dish that is a welcome treat for breakfast, brunch, lunch, or even dinner. You can, of course, buy smoked trout, but we smoke our own. I first soak the trout for 2 hours in a brine made of 1 cup of kosher salt, 2 cups of water, and 2 tablespoons of sugar; then I wash and pat it dry. I spread a handful of hickory chips or sawdust in an old roasting pan and add some crumpled pieces of aluminum foil to the pan to support a wire rack, on which I arrange the trout. I cover the pan tightly with a large piece of foil and place it on a small electric burner over medium heat for 10 to 15 minutes, until the trout is golden. After it rests for an hour or so, I remove the skin and head, and the moist, fragrant flesh slides off the central bone. Smoked trout is best served lukewarm or at room temperature. 8 large eggs ½ teaspoon salt ½ teaspoon freshly ground black pepper 4 large slices country bread 4 tablespoons (½ stick) unsalted butter for cooking the eggs, plus extra for spreading on the toast 2 to 3 tablespoons cream or milk 4 smoked trout, 6 to 10 ounces each, with skin and head removed and the flesh separated from the bones Beat the eggs in a bowl, and add the salt and pepper. Toast the bread, and coat it with butter. Heat the 4 tablespoons of butter in a sturdy saucepan. When it is hot, add the eggs, and mix them gently and continuously with a whisk to create a creamy mixture with small curds. Keep cooking for about 2 minutes, until the eggs are thick and creamy but still slightly runny. Do not overcook. Remove the pan from the heat, and add a few tablespoons of the cream or milk to stop the cooking and keep the mixture from becoming too tight. But, I thought as I cocked my head, it'll speak really well in a photo, where you can see all these different things mashed up against one another. It'll be beautiful, like its taste.

1.    Preheat the oven to 350°F. Combine the endive, parsley, ½ cup of the mint, the greens, bread crumbs, 1 tablespoon of the caraway seeds, 1 tablespoon of the coriander seeds, the citrus peel, nutmeg, dates, ½ cup of the capers, the egg, brown sugar, verjuice, and marrow in a large bowl and season with salt and pepper. Season both sides of the lamb with salt and pepper. Spoon the mixture into the center of the lamb and tie closed with kitchen string. Place in a baking pan and bake for 1¼ hours, or until the internal temperature reaches 160°F for medium. Remove the lamb from the pan and let rest for 10 minutes. Meanwhile, bring the stock to a boil in a small sauce pan, until reduced by half. 2.    Add the orange juice to the baking pan and stir well to loosen the pan drippings. Purée the pan drippings with the Renaissance Stock, the remaining 2 tablespoons of mint, the remaining 2 tablespoons of capers, and the granulated sugar until smooth. Stir in the orange zest and warm in a small saucepan. 3.    Place the leg of lamb in the center of a serving platter and spoon the sauce over the lamb. Sprinkle the remaining ½ tablespoon of caraway and coriander seeds over the lamb and around the platter. Charlotte watched, and she was incredibly impressed as two bats quickly but precisely placed the bowl of orangey red broth down in front of her. On seeing Stef begin to eat and Gerty grab a roll out of the basket in front of them, she also took a roll and then placed her spoon into her broth. Picking up the silver goblet in front of her, she saw that it was now full of cranberry juice, even though she was sure it had been empty when she'd first sat down. The main course was a selection of steamed meats, and freshly cooked vegetables and dessert was an array of fruits and mini cakes that the bats brought in on three-tiered stands. The food was so delicious that even Alice hadn't complained once, although when Charlotte thought about it, she realized that Alice hadn't said anything since she'd sat down. When everyone had finished eating Molly stood up and said 'luculentam' as she waved her wand. All the dirty dishes, goblets and cutlery immediately vanished, and the tables were perfectly tidy. 'I so need to learn that spell,' Stef said, and Charlotte and Gerty nodded in agreement. 'Now that dinner is over it is your free time to do as you wish, may you use it wisely. I request the new students to stay behind, and Molly will give you a tour of the Academy. As for the rest of you, you're now free to leave,' Miss Moffat said. She got onto the broomstick that was floating behind her chair and led the rest of the teachers and older students out of the room. Charlotte watched as the room became quieter. She deftly spread some of the pastry cream on the first layer and sprinkled a tablespoon of the crushed nuts on top of it. She added the second layer of cake, more buttery cream, and a dusting of nuts. Angelina always aimed for an extra shading of flavor when she created a recipe, something to complement and embrace the most prominent flavor in a dish, something that tickled the palate and the imagination. Here, she had chosen aromatic, earthy hazelnuts to add an extra dimension of texture and taste. She'd heard someplace that some musical composers said that it was the spaces between the notes that made all the difference; when you were cooking, it was the little details, too. Each layer of the dense cake covered the one beneath it as she laid them on, like dark disks of chocolate eclipsing moons made of creme anglaise instead of green cheese. In short order, the sixth and final layer had efficiently been fixed into place. She took a half step back to check for symmetry and balance, then moved on to the frosting. She poured the mixture of butter, milk, and chocolate that had been resting on the stove top into a mixing bowl, added a pinch of salt, a dash of real vanilla extract, and began whisking it all together with powdered sugar, which she shifted in stages to make sure that it combined thoroughly.

Outside the building he'd seen a garden with a sign that read "Please do not pick." But it was, after all, for a beautiful woman. Who would deny him? And so Escoffier cut a bouquet of white flowers: roses, peonies and a spray of lilies, with rosemary stalks to provide the greenery. He placed them in a tall water glass and then opened the basket of food he'd brought. He laid out the china plates so that they rested between the cranes, and then the silver knives, forks and spoons, and a single crystal glass for her champagne. Even though it was early afternoon, he'd brought two dozen candles. The food had to be served 'à la française'; there were no waiters to bring course after course. So he kept it simple. Tartlets filled with sweet oysters from Arcachon and Persian caviar, chicken roasted with truffles, a warm baguette, 'pâté de foie gras,' and small sweet strawberries served on a bed of sugared rose petals and candied violets.

But not strawberries and whipped cream. Not anything so predictable. Ashna raced to the pantry, picked up a mango, and tossed it at Rico. Then without waiting to see if he would catch it, she turned to grab some saffron and ran back to their station. "Can you dice the mango?" Before the question was even out of her mouth, he was slicing. DJ called out the one-minute warning. Ashna pinched out a fat clump of saffron into a metal spoon, mixed in a few drops of milk, and held it over the fire. The saffron dissolved into the milk, turning it orange, and despite the smells from all the workstations, the aroma of saffron permeated the air. DJ started to count down the last ten seconds. Ashna drizzled the saffron milk onto the four spoons of doce de leite just as Rico arranged the mango at the center of each plate.

When they were younger, they would play flashlight tag, light a bonfire, and sing Beatles songs, with Mr. Randolph playing the guitar and Penny’s voice floating above everyone else’s. But at some point Demeter had stopped feeling comfortable in a bathing suit. She wore shorts and oversized T-shirts to the beach, and she wouldn’t go in the water, wouldn’t walk with Penny to look for shells, wouldn’t throw the Frisbee with Hobby and Jake. The other three kids always tried to include Demeter, which was more humiliating, somehow, than if they’d just ignored her. They were earnest in their pursuit of her attention, but Demeter suspected this was their parents’ doing. Mr. Randolph might have offered Jake a twenty-dollar bribe to be nice to Demeter because Al Castle was an old friend. Hobby and Penny were nice to her because they felt sorry for her. Or maybe Hobby and Penny and Jake all had a bet going about who would be the one to break through Demeter’s Teflon shield. She was a game to them. In the fall there were football parties at the Alistairs’ house, during which the adults and Hobby and Jake watched the Patriots, Penny listened to music on her headphones, and Demeter dug into Zoe Alistair’s white chicken chili and topped it with a double spoonful of sour cream. In the winter there were weekends at Stowe. Al and Lynne Castle owned a condo near the mountain, and Demeter had learned to ski as a child. According to her parents, she used to careen down the black-diamond trails without a moment’s hesitation. But by the time they went to Vermont with the Alistairs and the Randolphs, Demeter refused to get on skis at all. She sat in the lodge and drank hot chocolate until the rest of the gang came clomping in after their runs, rosy-cheeked and winded. And then the ski weekends, at least, had stopped happening, because Hobby had basketball and Penny and Jake were in the school musical, which meant rehearsals night and day. Demeter thought back to all those springs, summers, falls, and winters with Hobby and Penny and Jake, and she wondered how her parents could have put her through such exquisite torture. 1 can of whole kernel corn, drained 1 sweet onion, diced 3 tablespoons butter 3 tablespoons all-purpose flour 2 1/2 cups chicken broth salt to taste 1/2 cup cream hot sauce to taste paprika or chili powder for garnish Directions Sauté the onion dices in the butter until they are tender and translucent but not browned.  Add the flour and stir and cook until a soft paste has formed but not browned. While still cooking, pour in 1/2 cup of the broth while stirring with a whisk.  Gradually add the rest of the broth, stirring to make the mixture smooth and not lumpy as if you were making gravy.  Continue cooking until the mixture is bubbly and has thickened.  Pour two to three cups of the liquid into your blender.  Puree the mixture until it is smooth.  Continue in batches until the entire soup is puréed.  Pour the soup through a strainer into a clean pan.  Press any pieces through the sieve with the back of a spoon.  Add the corn and cook for five minutes.  Salt the soup to taste.  Add the cream.  If the soup needs further thinning, add water.  Reheat, add hot sauce to taste, garnish with paprika or chili powder and serve. A smile played around the corners of Easy’s lips, and it filled her chest with a warm pressure. He ate it just before it dripped, humor creeping into his dark eyes. “See? It’s working. I knew it.” This time he stole the spoon right out of her fingers. “Problem is, you aren’t administering this medicine the proper way,” he said as he filled the spoon himself. Jenna grinned again, happy to see lightness returning to his expression. “I’m not?” “Nope,” he said, shaking his head. “This is what will really help.” He held the spoon up to her lips. “How will me taking it—” “No questioning. Just obeying.” There was that cocked eyebrow again. “Oh, is that how it is?” she asked, smirking. When he just stared at her, she gave in and ate the ice cream. Next thing she knew, his lips were on hers. Avoiding the cut on her lip, Easy’s cool tongue slowly snaked over her lips and stroked at her tongue. He grasped the back of her head as he kissed and nibbled at her. The rich flavor of the chocolate combined with another taste that was all Easy and made her moan in appreciation. His grip tightened, his tongue stroked deeper, and a throaty groan spilled from his lips. One more soft press of his lips against hers, and he pulled away. Jenna was nearly panting, and very definitely wanting more. “You’re right,” she said, “that is much more effective.” He gave a rare, open smile, and it made her happy to see it after how sad he’d seemed a few minutes before. “Told ya,” he said with a wink. She nodded. “But, you know, that could’ve been a fluke. Just to be sure it really worked, maybe you should, um, give me another dose?” Easy looked at her a long moment, then leaned in and scooped another spoonful from her nearly empty glass. He held it out to her, making her heart flutter in anticipation. When she tilted her head toward the spoon, he yanked it away and ate the ice cream himself. “No fair,” Jenna sputtered, reaching for the spoon. “That is not what the doctor prescribed.” Holding the spoon above his head put it out of Jenna’s reach, even with them sitting on the bed. She pushed to her knees, grabbed hold of his shoulder, and lunged for it. Laughing, he banded an arm around her lower back and held her in place, easily avoiding her grabs. Jenna couldn’t stop laughing as they wrestled for the spoon. It was stupid and silly and childish . . . and exactly what she needed. And it seemed he did, too. It was perfect.

Mash up her food carefully, she had instructed him, explaining the procedure with as much care as if she'd been advising an overeager two-year-old, going on and on while he'd stood there and nodded and nodded and nodded. In constraint-induced movement therapy, stroke patients wear a sling on their good arm for approximately 90 percent of waking hours for fourteen straight days. On ten of those days, they receive six hours of therapy, using their seemingly useless arm: they eat lunch, throw a ball, play dominoes or cards or Chinese checkers, write, push a broom, and use standard rehab equipment called dexterity boards. “It is fairly contrary to what is typically done with stroke patients,” says Taub, “which is to do some rehabilitation with the affected arm and then, after three or four months, train the unaffected arm to do the work of both arms.” Instead, for an intense six hours daily, the patient works closely with therapists to master basic but crucial movements with the affected arm. Sitting across a pegboard from the rehab specialist, for instance, the patient grasps a peg and labors to put it into a hole. It is excruciating to watch, the patient struggling with an arm that seems deaf to the brain’s commands to extend far enough to pick up the peg; to hold it tightly enough to keep it from falling back; to retract toward the target hole; and to aim precisely enough to get the peg in. The therapist offers encouragement at every step, tailoring the task to make it more attainable if a patient is failing, then more challenging once the patient makes progress. The reward for inserting a peg is, of course, doing it again—and again and again. If the patient cannot perform a movement at first, the therapist literally takes him by the hand, guiding the arm to the peg, to the hole—and always offering verbal kudos and encouragement for the slightest achievement. Taub explicitly told the patients, all of whose strokes were a year or more in the past, that they had the capacity for much greater use of their arm than they thought. He moved it for them and told them over and over that they would soon do the same. In just two weeks of constraint-induced movement therapy with training of the affected arm, Taub reported in 1993, patients regained significant use of a limb they thought would forever hang uselessly at their side. The patients outperformed control patients on such motor tasks as donning a sweater, unscrewing a jar cap, and picking up a bean on a spoon and lifting it to the mouth. The number of daily-living activities they could carry out one month after the start of therapy soared 97 percent. That was encouraging enough. Even more tantalizing was that these were patients who had long passed the period when the conventional rehab wisdom held that maximal recovery takes place. That, in fact, was why Taub chose to work with chronic stroke patients in the first place. According to the textbooks, whatever function a patient has regained one year after stroke is all he ever will: his range of motion will not improve for the rest of his life.
