Jonas took off racing through the snow, the cup in his hand. “Come on James!” James scrambled after him, the snow crunching pleasantly beneath his tiny feet. “Jonas wait for me!” The taller Nicholas stopped before a Cinder Vendor. “Two warm Ciders please, with extra spices.” The Cider Vendor raised an eyebrow as he took in the smudged face of the boy and his shabby clothes. “Very well, young Sir. Have you money? I’m not a charity you know!” Jonas quickly fished out coins and showed him the silver. “Oh yes Sir. I know of charities Sir and you’re better off not being one. They’re a cheat!” The Cider Vendor began filling two cups with steaming apple cider. The sweet smell of it made the boy’s mouth water. The burly Cider Vendor handed him the first cup of sweet, steaming, mouth puckering cider. “Many are, young master!” He replied. “I grew up in the system meself and it was a poor boy’s torment. That’ll be 2 cents!” The littlest Nicholas raced up and slid to a halt in the snow beside him. Jonas handed James the cup of cider. Then he paid the vendor with coins from the tin cup. “That’s highway robbery . . . but very well!” The Cider Vendor squinted through one eye, his thick eyebrow nearly obscuring it. “It’s very good cider, with extra spices.” James face lit up with joy as he took a sip. “M-mmm! It’s worth the money.” His lips smacking, Jonas sipped in the warm cider. “I’m sure it is Sir.” The angelic faced little one smiled up at him. “It’s yummy!” The Cider Vendor smiled down at him and tipped his hat to him “Yes it tis! Yummy!” Then he chuckled cheerfully with another satisfied customer, no matter how small. “Ummm, good!” Jonas agreed with them. The Cider Vendor took a sip of his own brew himself, his mouth puckering. “It’ll put the spirit of life back in you on a cold day like this, that Cider.” Two men in tall top hats and fine suits halted in front of the Cider Vendor. “Sir, we are collecting for the poor and wondered if a fine fellow such as yourself might have something to contribute.” Jonas glanced up at them in a wizened way. “We’ve a couple coins to contribute but it better get to the poor, understand?” “Of course, my fine fellow! “The taller of the two sharply dressed gentlemen spoke. Smiling a satisfied smile, Jonas dropped two silver coins into the gentleman’s hands. The tall gentleman took them and tipped his hat, smiling down at them both. “Very generous!” He glanced stone faced at the vendor, who immediately forked over several dollars. “A very Merry Christmas to you both!” They trod off through the snow in their finery, to the welcome crunch of the snow drifts beneath their feet. Mr. Angel paused at the Cheese vendor next to them, where a raggedy young girl was staring wide eyed at the rows and rows of cheeses above her.

Chicken Cacciatore I am a lover of braised meats, whether it’s pot roast or short ribs or beef brisket…or this beautiful stewed chicken dish. Just give me some meat, a pot with a lid, and some combination of liquid ingredients, and I’ll be eating out of your hand…as long as your hand is holding braised meat. That might have been the weirdest introductory sentence of any recipe I’ve ever written. Chicken cacciatore generally involves browning chicken pieces in a pot over high heat, then sautéing a mix of vegetables--onions, peppers, mushrooms, tomatoes--in the same pot. Spices are added, followed by a little wine and broth, and the chicken and veggies are allowed to cook together in the oven long enough for magic to happen… And magic does happen. I use chicken thighs for this recipe because I happen to love chicken thighs. But you can use a cut-up whole chicken or a mix of your favorite pieces. Just be sure to leave the skin on or you’ll regret it the rest of your life. Not that I’m dramatic or anything.

In fact, I don’t even own a dish rack. I put all the dishes I wash into a large bowl or colander and place this on the veranda to dry. I can wash them in the morning and just leave them outside. This is an excellent solution for people living on their own or for those who don’t use many dishes. Where do you store your oil, salt, pepper, soy sauce, and other seasonings? Many people keep them right beside the stove because they want them close at hand for the sake of convenience. If you are one of these people, I hope you will rescue them right now. For one thing, a counter is for preparing food, not for storing things. Counter space beside the stove, in particular, is exposed to splatters of food and oil, and the seasonings kept here are usually sticky with grease. Rows of bottles in this area also make it much harder to keep clean, and the kitchen area will always be covered in a film of oil. Kitchen shelves and cupboards are usually designed to store seasonings and spices, so put them away where they belong. Quite often, a long, narrow drawer is located next to the oven that can be used for this purpose.

Pantry Staples Our pantry is organized to stock a limited and set amount of jars, which contain either a permanent staple or rotational staple. Permanent staples will vary from family to family. Ours include: • Flour, sugar, salt, baking soda, cornstarch, baking powder, yeast, oatmeal, coffee, dry corn, powdered sugar • Jam, butter, peanut butter, honey, mustard, canned tomatoes, pickles, olives, capers • Olive oil, vegetable oil, apple cider vinegar, wine vinegar, tamari, vanilla extract • A selection of spices and herbs Rotational staples represent groups of foods that we used to buy in many different forms. In the past, our legume collection consisted of chickpeas, lentils, peas, red beans, fava beans, pinto beans, etc. Even though stocking many types of food appears to stimulate variety, the contrary is often the case. Similar to wardrobe items, pantry favorites get picked first while nonfavorites get pushed back and forgotten, take up space, and ultimately go bad (i.e., become rancid or bug infested). Today, instead of storing many versions of a staple, we have dedicated one specific jar and adopted a system of rotation. For example, our rotating jar of grain might be filled with rice one week, couscous another. Our rotating collection includes: • Grain • Pasta • Legume • Cereal • Cookie • Nut • Sweet snack • Savory snack • Tea This system has proved not only to maintain variety in our diet and free up storage space; it has also been efficient at keeping foods from going bad.
