On the trees are only a few gnarled apples that the pickers have rejected. They look like the knuckles of Doctor Reefy's hands. One nibbles at them and they are delicious. Into a little round place at the side of the apple has been gathered all of its sweetness. One runs from tree to tree over the frosted ground picking the gnarled, twisted apples and filling his pockets with them. Only the few know the sweetness of the twisted apples.

From a distance, say, the parking lot of the old Caldor’s (which became an Ames that became a Stop ‘N’ Shop) in Huguenot, they’ve always made me think of a herd of giant animals, all standing grazing on the horizon. Up close, when you’re driving among them with the early morning light breaking over their round peaks, they seem incredibly present, more real than real, these huge solid heaps of rock that wear their trees like mile-long scarves. You glance at them, trying to keep your eyes on the road, which is already pretty busy with people driving up for a weekend getaway, and somehow you wouldn’t be surprised if the mountain closest to you were to cast off its trees in one titanic shrug and start to lumber away, a vast, unimaginable beast. A round ring of mushrooms is the obvious example, but one must additionally be on the lookout for large, hoary trees that dwarf their neighbors; for twisted trunks and gaping hollows; for wildflowers out of sync with the forest's floral denizens; for patterns of things; for mounds and depressions and inexplicable clearings. In this country faith is absolute and universal. The choice, if there is a choice, is made at birth. Everyone believes. For these people, God is a near neighbour. I thought of Sundays at home when I was a child, buttoned up in an uncomfortable tweed jacket and forced to go to Sunday communion. I remember mouthing the hymns without really singing, peering between my fingers at the rest of the congregation when I was supposed to be praying, twisting in my seat during the sermon, aching with impatience for the whole boring ritual to be over. I can’t remember when I last went to church. I must have been since Mary and I were married but I can’t remember when. I don’t know anyone who does go to church now. It’s extraordinary, isn’t it? I know I live amongst scientists and civil servants, and Mary’s friends are all bankers or economists, so perhaps we are not typical. You still see people coming out of church on Sunday morning, chatting on the steps, shaking hands with the vicar, as you drive past on your way to get the Sunday papers, relieved you are too old now to be told to go. But no one I know goes any more. We never talk about it. We never think about it. I cannot easily remember the words of the Lord’s Prayer. We have moved on from religion. Instead of going to church, which would never occur to us, Mary and I go to Tesco together on Sundays. At least, that is what we did when she still lived in London. We never have time to shop during the week and Saturdays are too busy. But on Sunday our local Tesco is just quiet enough to get round without being hit in the ankles all the time by other people’s shopping carts. We take our time wheeling the shopping cart around the vast cavern, goggling at the flatscreen TVs we cannot afford, occasionally tossing some minor luxury into the trolley that we can afford but not justify. I suppose shopping in Tesco on Sunday morning is in itself a sort of meditative experience: in some way a shared moment with the hundreds of other shoppers all wheeling their shopping carts, and a shared moment with Mary, come to that. Most of the people I see shopping on Sunday morning have that peaceful, dreamy expression on their faces that I know is on ours. That is our Sunday ritual. Now, I am in a different country, with a different woman by my side. But I feel as if I am in more than just a different country; I am in another world, a world where faith and prayer are instinctive and universal, where not to pray, not to be able to pray, is an affliction worse than blindness, where disconnection from God is worse than losing a limb.

The Two Towers especially, and the first part of The Return of the King, have a structure reminiscent on a large scale of ‘The Council of Elrond’ on a small one. The word that describes the structure is ‘interlace’. Tolkien certainly knew the word, for it has become a commonplace of Beowulf-criticism, but he may not have liked it much: it is associated also with the structure of French prose romance, in which he took little interest. However, Tolkien certainly also knew that the Icelandic word for a short story is a Þáttr, literally a thread. One could say that several Þættir, or threads, twisted round each other, make up a saga; and Gandalf comes close to saying something like that when he says to Théoden, ‘There are children in your land who, out of the twisted threads of story, could pick the answer to your question’ (my emphasis). Tolkien may have felt that there had been all along a native version of the French technique of entrelacement, even if we no longer know the native word for it. But word, or no word, he was going to do it.

"Whatcha doing down there?" Romeo drawled, his hands on his hips as he stared down at me with dancing blue eyes. "Making a snow angel," I quipped. I glanced down at my hands, which were covered with wet snow and bits of salt (to keep the pavement from getting icy). Clearly, ice wasn't required for me to fall. A small group of girls just "happened by", and by that I mean they'd been staring at Romeo with puppy dog eyes and giving me the stink eye. When I fell, they took it as an opportunity to descend like buzzards stalking the dead. Their leader was the girl who approached me the very first day I'd worn Romeo's hoodie around campus and told me he'd get bored. As they stalked closer, looking like clones from the movie Mean Girls, I caught the calculating look in her eyes. This wasn't going to be good. I pushed up off the ground so I wouldn't feel so vulnerable, but the new snow was slick and my hand slid right out from under me and I fell back again. Romeo was there immediately, the teasing light in his eyes gone as he slid his hand around my back and started to pull me up. "Careful, babe." he said gently. The girls were behind him so I knew he hadn't seen them approach. They stopped as one unit, and I braced myself for whatever their leader was about to say. She was wearing painted-on skinny jeans (I mean, really, how did she sit down and still breathe?) and some designer coat with a monogrammed scarf draped fashionably around her neck. Her boots were high-heeled, made of suede and laced up the back with contrasting ribbon. "Wow," she said, opening her perfectly painted pink lips. "I saw that from way over there. That sure looked like it hurt." She said it fairly amicably, but anyone who could see the twist to her mouth as she said it would know better. Romeo paused in lifting me to my feet. I felt his eyes on me. Then his lips thinned as he turned and looked over his shoulder. "Ladies," he said like he was greeting a group of welcomed friends. Annoyance prickled my stomach like tiny needles stabbing me. It's not that I wanted him to be rude, but did he have to sound so welcoming? "Romeo," Cruella DeBarbie (I don't know her real name, but this one fit) purred. "Haven't you grown bored of this clumsy mule yet?" Unable to stop myself, I gasped and jumped up to my feet. If she wanted to call me a mule, I'd show her just how much of an ass I could be. Romeo brought his arm out and stopped me from marching past. I collided into him, and if his fingers hadn't knowingly grabbed hold to steady me, I'd have fallen again. "Actually," Romeo said, his voice calm, "I am pretty bored." Three smirks were sent my way. What a bunch of idiots. "The view from where I'm standing sure leaves a lot to be desired." One by one, their eyes rounded when they realized the view he referenced was them. Several tunnels also had their termini here, and at the farther end of the chamber Arthur could see a large circle of dim irritating light. Fill a large coupe (10 to 12 ounces) with ice and water to chill the glass, then discard them when the glass is sufficiently cold. Using a sponge or paper towel, moisten the rim of the chilled glass with a bit of vanilla syrup. Turn the glass upside down and dip it into the chocolate coconut sugar, without twisting. Make sure the rim is thoroughly coated. Combine the rum, coconut cream, vanilla syrup, and coffee in a cocktail shaker with ice. Shake vigorously. Strain into the sugared-rim coupe. Garnish with the coffee beans to make a triangle shape. Serve and enjoy.

8 ounces (250g) salmon fillet, bones removed 8 ounces (250g) firm white fish fillet, such as lingcod, snapper, tilapia, bones removed 8 ounces (250g) halibut or other delicate white fish, bones removed ¼ cup (about 3g) fresh tarragon leaves, minced Fine sea salt and freshly ground black pepper 2 shallots, sliced paper-thin 2 medium radishes, cut into paper-thin rounds 1 generous tablespoon unsalted butter, cut in 4 equal pieces Fleur de sel, for garnish Rinse the fish and cut each piece on the bias into four even pieces so that they are flat rather than chunky. This will allow them to cook more evenly. Refrigerate. Preheat the oven to 450°F (225°C) and position a rack in the center. Cut four pieces of parchment paper that measure about 12 by 6 inches (30.5 by 15.24cm). Cut four pieces of aluminum foil that measure about 18 by 11½ inches (45.7 by 29cm). Place the parchment in the center of the foil. Arrange one piece of each fish in the center of the parchment paper, arranging them so they are touching but not overlapping, in a sort of flower pattern. Season generously with salt and pepper. Top each with equal amounts of shallots and radishes, then sprinkle with tarragon. Season again with salt and pepper, and set a piece of butter on top. Bring the foil and the parchment together above the fish and gently twist so it makes a closed packet. Repeat with the remaining ingredients. Place the packets on a baking sheet, and bake for 15 to 20 minutes, or until the fish is opaque through. (You may need to check by removing one of the packets from the oven and deftly opening it to see if the fish is cooked. If just about, but not quite, cooked, give the aluminum a twist and let the packets sit while you call everyone to the table for dinner. If not cooked at all—doubtful—return to the oven for 3 to 5 minutes.) Remove the packets from the oven, immediately remove them from the baking sheet, and open them. Assemble your plates, giving the fish a few minutes to sit, then carefully remove the fish and vegetables from the packets with a slotted spatula, and place them in the center of a warmed dinner plate. Drizzle with a bit of cooking juices, season with fleur de sel, and serve. Don’t serve the packets at the table—it ends up being complicated for the diner, because they have to figure out what to do with a pile of paper and aluminum foil on their plates. SERVES 4

Her flowers, so pretty, grew heavy with gold. Though his fingers too sore to take them to hold. So he split them away by the work of his teeth. Bit them from vine and hid them in sheaths. All gathered, so heavy, hundreds of blooms. All golden, these flowers, but he ran out of room. The old miser didn’t dare ever take some to town. If they knew of his treasure, they’d surely come ‘round. So spend them he never, and stayed home forever. Loved ones he severed, (he thought himself clever.) He murmured and pet, each golden rosette. Her vine he let twine, all while whispering, “mine.” But without reparation, she’d quickly go dim, so frantic, he’d cut, blade into limb. When his nails were all gone, from ten fingers and toes, he had to give up his ears and his nose. The blood that he spilt, he staunched with petals of guilt. But the drips of his red made the vine rightly fed. This miser bled freely so his wealth may yet grow. He let veins collapse, let his heartbeat go slow. Her vine slurped his life like nectar to birds, and he lay in the room, his body submerged. While she grew out of the house and over the hill, a contagion that caught every space up to fill. But he wanted still, he had to have more, so out plucked his eyes, sockets empty and sore. He had no room to sleep, and no eyes to weep, but from this golden gold vine, ever more would he seek.
