I down a couple of Advil and “open it up” for the first time this trip. In the next hour I cover 3.5 miles. Another 1.5 miles and I am out of water, since I skipped all the side trails leading to streams. Five miles to go, and I’m running out of steam. They are so easy to make, I just take a portion off my pizza dough when I’m getting ready to make pizza and roll out the cracker shapes. The boys love cutting the crackers into fun shapes and munching on them when they’re still warm. serves 4 for lunch ¼ quantity of pizza dough • 100g sesame seeds flour for sprinkling to serve cheese and sliced tomato or hummus or tabbouleh Method Preheat a fan oven to 210°C and line a baking tray with greaseproof paper. Sprinkle a clean, flat surface with flour. Roll out the dough as flat as you can get it. Sprinkle the sesame seeds on top and roll again so that they are embedded into the dough. Cut the dough into shapes and place on the lined baking tray. Bake in the oven until golden brown. The time it takes will depend on how thinly you roll your dough. Make sure your oven light is on and watch the baking tray closely. Mine take about 7 minutes to bake. Cool on a wire rack and then serve with your chosen topping. The crackers will keep in a dry airtight container for up to three days.

Brötchen There’s nothing more German than this recipe. A staple for all true Schmidt bakers. These are best hot out of the oven with butter or cherry jam. That’s the way Mom did it. Here, I’ll give you Oma’s cherry jam recipe too. 2½ to 3 cups all-purpose flour 1 packet active dry yeast (rapid) 1 teaspoon sugar 1 cup warm water 1 tablespoon oil 1 teaspoon salt 1 egg white Put 2½ cups flour into a large bowl and make a well in the middle. Pour yeast, sugar, and two tablespoons of warm water (the water comes from the 1 cup) into the well. Mix yeast, sugar, and water in the well, but don’t mix in the flour yet. Cover the bowl with a cloth and set it in a warm place for 15 minutes until it proofs. Add the rest of the water and oil, and beat in the salt and flour good. Turn out the dough on a floured wooden board, and knead. Add the remaining ½ cup flour as needed to make it smooth. Put dough in a greased bowl, cover, and let it rise until it doubles in size. About an hour in that same warm spot. Punch down, then split it into 12 pieces. Shape into rolls and place 3 inches apart on a greased and floured baking tray. Cover and let rise one more time until they double again. Cut a cross on top of each. Beat egg white and 1 teaspoon water with a fork until frothy and brush the rolls. (Oh, I forgot—should have preheated the oven to 450°F already.) Then you bake for 15 to 20 minutes until the tops are golden.

My coolers have been retrofitted with dowels in the corners so that I can put thin sheets of melamine on them to create a second level of storage; that way items on the bottom don't get crushed. On the top layer of this cooler I placed the tray of stuffed tomatoes, bursting with a filling of tomato pudding, a sweet-and-sour bread pudding made with tomato paste and orange juice and lots of butter and brown sugar, mixed with toasted bread cubes. I add a couple of frozen packs, and close the top. "That is all looking amazing," Shawn says. "Why, thank you. Can you grab me that second cooler over there, please?" He salutes and rolls it over. I pull the creamed spinach out of the fridge, already stored in the slow cooker container, and put it in the bottom of the cooler, and then add three large heads of iceberg lettuce, the tub of homemade ranch dressing and another tub of crispy bacon bits, and a larger tub of popover batter. I made the pie at Lawrence's house yesterday morning before heading to the airport- it was just easier than trying to transport it- and I'll make the whipped cream topping and shower it with shards of shaved chocolate just before serving. I also dropped off three large bags of homemade salt-and-pepper potato chips, figuring that Lawrence can't eat all of them in one day and that there will hopefully be at least two bags still there when we arrive. Gnocchi So, the recipe for gnocchi: A little over 1 pound of potatoes suitable for mashing; red potatoes are an option as well. Don’t peel them, so no excess moisture infiltrates the potatoes. Cook them in water with salt until they’re soft but not too soft. Halve and mash with a potato masher. Remove the peel from the masher after each potato. Add flour to the mashed potatoes. This can’t be quantified; add as much as goes in—it depends on the potato, on the degree to which it was cooked, on the moisture in the potato, and on the flour itself. In any case, the mashed potatoes must be warm. Stir until a warm, pleasant dough forms. Coat your hands with flour and form snakes with a diameter of about 1 centimeter (or nearly ½ an inch)—different from the semolina gnocchi rolls. Cut every roll into little pieces, almost 1 inch long—usually each piece should be closer to ½ an inch, but Aviram was afraid that would be too much work for me. Place the gnocchi on a floured tray, leaving some space around each one. Here, too, he spared me some work; I didn’t transfer each gnocco with a fork in order to create slits that would enhance cooking and soaking in the sauce. Drop the gnocchi in several batches, depending on quantity, into a large pot (I didn’t buy one; Michal loaned me a pot on the day of the dress rehearsal) full of water with salt, as when preparing pasta; use 1 tablespoon of salt per 4 cups of water or so, over a large flame. Add the butter, honey and orange zest and beat some more. Then carefully mix in the sifted flour until the cookie dough comes together, soft enough to be rolled into little balls between your hands. Put the balls of dough on to a buttered tray and brush with the beaten egg yolk. Bake in the oven for 10–15 minutes.

Line a baking tray with wax paper. Cream together butter, sugar and condensed milk until light and fluffy. Combine all of the dry ingredients in a separate bowl, then sift them into the creamed mixture, mixing until combined. Add the chocolate chips. Roll the mixture into balls, place them on the baking tray and then flatten them with a fork. Bake for 15 mins or until golden at the edges but still soft. Leave on the tray for 5 minutes, then transfer to a baking tray to cool (even though they are best eaten warm).

And last but not least, the cleaning kit, which includes a feather duster, lemon furniture polish, lightly scented antiseptic garbage bags, as well as an impressive array of spray bottles of solvents and disinfectants, all lined up and ready to combat any stain, be it coffee rings, vomit—or even blood. A well-stocked housekeeping trolley is a portable sanitation miracle; it is a clean machine on wheels. And as I said, it is beautiful.

I’d a feeling you’d guess what was going on. I didn’t think Ephraim could keep it from you for long.’ ‘He told me about writing to Sukie, that’s all.’ I said, though it wasn’t strictly true. But I was unsure how much to say. ‘You’re learning that some things need to be secret.’ Queenie gave me a wry smile. ‘I trust you can keep this one?’ I hesitated. She hadn’t actually told me what the secret was, but I’d already petty much guessed. You’re expecting some people, from place that’s occupied by the Germans?’ ‘Yes… from France.’ She sat back in her chair, raking her fingers through her hair. ‘We’re bringing them here for a few days, giving them false papers, then helping them on their way again.’ ‘Where will they go?’ ‘To countries that aren’t as strict as ours about Jewish refugees: America, Canada, Australia maybe.’ I thought for a moment. ‘Is what you’re doing against the law?’ ‘Probably. If we keep a low profile, we might just get away with it.’ She sighed heavily. ‘They’ve got to get here first, though. It’s such a risky mission. Day 9. The only part of Sukie’s notes I understood. ‘Do you know why Ephraim and my sister wrote to each other?’ I asked suddenly. ‘What? Oh, Gloria mentioned Sukie was looking for a penpal – it was a new “thing” apparently.’ She rolled her eyes rather dismissively. ‘Ephraim was so lonely, we both thought it might cheer him up. It certainly worked – he’s quite taken with your Sukie.’ ‘There’s more to it than that,’ I ventured. ‘My sister’s involved in this mission, isn’t she?’ Queenie frowned. ‘Your sister? Why would she be?’ ‘You don’t know what she’s like,’ I replied, for it was very clear now that Queenie’d never written to Sukie, nor probably ever met her. If she had she’d realise how much my sister hated the Nazis, how upset the news coming out of Europe made her, how headstrong and brave she was. Doing something to try and help people threatened by Hitler was exactly the sort of thing my sister would want to be part of. I couldn’t understand why Queenie was so certain she wasn’t.
