In Ramallah I spent the day with the beguiling Raimonda Tawil, confined to her home for committing no known crime save that of expressing her opinions. (For some reason, what I most remember is a sudden exclamation from her very restrained and respectable husband, a manager of the local bank: 'I would prefer living under a Bedouin muktar to another day of Israeli rule!' He had obviously spent some time thinking about the most revolting possible Arab alternative.) In Jerusalem I visited the Tutungi family, who could produce title deeds going back generations but who were being evicted from their apartment in the old city to make way for an expansion of the Jewish quarter. Jerusalem: that place of blood since remote antiquity. Jerusalem, over which the British and French and Russians had fought a foul war in the Crimea, and in the mid-nineteenth century, on the matter of which Christian Church could command the keys to some 'holy sepulcher.' Jerusalem, where the anti-Semite Balfour had tried to bribe the Jews with the territory of another people in order to seduce them from Bolshevism and continue the diplomacy of the Great War. Jerusalem: that pest-house in whose environs all zealots hope that an even greater and final war can be provoked. It certainly made a warped appeal to my sense of history.

Miraculously, thirty minutes later I found Marlboro Man’s brother’s house. As I pulled up, I saw Marlboro Man’s familiar white pickup parked next to a very large, imposing semi. He and his brother were sitting inside the cab.
Looking up and smiling, Marlboro Man motioned for me to join them. I waved, getting out of my car and obnoxiously taking my purse with me. To add insult to injury, I pressed the button on my keyless entry to lock my doors and turn on my car alarm, not realizing how out of place the dreadful chirp! chirp! must have sounded amidst all the bucolic silence. As I made my way toward the monster truck to meet my new love’s only brother, I reflected that not only had I never in my life been inside the cab of a semi, but also I wasn’t sure I’d ever been within a hundred feet of one. My armpits were suddenly clammy and moist, my body trembling nervously at the prospect of not only meeting Tim but also climbing into a vehicle nine times the size of my Toyota Camry, which, at the time, was the largest car I’d ever owned. I was nervous. What would I do in there?
Marlboro Man opened the passenger door, and I grabbed the large handlebar on the side of the cab, hoisting myself up onto the spiked metal steps of the semi. “Come on in,” he said as he ushered me into the cab. Tim was in the driver’s seat. “Ree, this is my brother, Tim.”
Tim was handsome. Rugged. Slightly dusty, as if he’d just finished working. I could see a slight resemblance to Marlboro Man, a familiar twinkle in his eye. Tim extended his hand, leaving the other on the steering wheel of what I would learn was a brand-spanking-new cattle truck, just hours old. “So, how do you like this vehicle?” Tim asked, smiling widely. He looked like a kid in a candy shop.
“It’s nice,” I replied, looking around the cab. There were lots of gauges. Lots of controls. I wanted to crawl into the back and see what the sleeping quarters were like, and whether there was a TV. Or a Jacuzzi.
“Want to take it for a spin?” Tim asked.
I wanted to appear capable, strong, prepared for anything. “Sure!” I responded, shrugging my shoulders. I got ready to take the wheel.
Marlboro Man chuckled, and Tim remained in his seat, saying, “Oh, maybe you’d better not. You might break a fingernail.” I looked down at my fresh manicure. It was nice of him to notice. “Plus,” he continued, “I don’t think you’d be able to shift gears.” Was he making fun of me? My armpits were drenched. Thank God I’d work black that night.
After ten more minutes of slightly uncomfortable small talk, Marlboro Man saved my by announcing, “Well, I think we’ll head out, Slim.”
“Okay, Slim,” Tim replied. “Nice meeting you, Ree.” He flashed his nice, familiar smile. He was definitely cute. He was definitely Marlboro Man’s brother.

Now what kinds of philosophy do you find actually offered to meet your need? You find an empirical philosophy that is not religious enough, and a religious philosophy that is not empirical enough. If you look to the quarter where facts are most considered you find the whole tough-minded program in operation, and the 'conflict between science and religion' in full blast.
The romantic spontaneity and courage are gone, the vision is materialistic and depressing. Ideals appear as inert by-products of physiology; what is higher is explained by what is lower and treated forever as a case of 'nothing but'—nothing but something else of a quite inferior sort. You get, in short, a materialistic universe, in which only the tough-minded find themselves congenially at home.If now, on the other hand, you turn to the religious quarter for consolation, and take counsel of the tender-minded philosophies, what do you find?
Religious philosophy in our day and generation is, among us English-reading people, of two main types. One of these is more radical and aggressive, the other has more the air of fighting a slow retreat. By the more radical wing of religious philosophy I mean the so-called transcendental idealism of the Anglo-Hegelian school, the philosophy of such men as Green, the Cairds, Bosanquet, and Royce. This philosophy has greatly influenced the more studious members of our protestant ministry. It is pantheistic, and undoubtedly it has already blunted the edge of the traditional theism in protestantism at large.
That theism remains, however. It is the lineal descendant, through one stage of concession after another, of the dogmatic scholastic theism still taught rigorously in the seminaries of the catholic church. For a long time it used to be called among us the philosophy of the Scottish school. It is what I meant by the philosophy that has the air of fighting a slow retreat. Between the encroachments of the hegelians and other philosophers of the 'Absolute,' on the one hand, and those of the scientific evolutionists and agnostics, on the other, the men that give us this kind of a philosophy, James Martineau, Professor Bowne, Professor Ladd and others, must feel themselves rather tightly squeezed. Fair-minded and candid as you like, this philosophy is not radical in temper. It is eclectic, a thing of compromises, that seeks a modus vivendi above all things. It accepts the facts of darwinism, the facts of cerebral physiology, but it does nothing active or enthusiastic with them. It lacks the victorious and aggressive note. It lacks prestige in consequence; whereas absolutism has a certain prestige due to the more radical style of it.

Things came to a head over a top-priority marketing OKR for personalized emails with targeted content. The objective was well constructed: We wanted to drive a certain minimum number of monthly active users to our blog. One important key result was to increase our click-through rate from emails. The catch was that no one in marketing had thought to inform engineering, which had already set its own priorities that quarter. Without buy-in from the engineers, the OKR was doomed before it started. Even worse, Albert and I didn’t find out it was doomed until our quarterly postmortem. (The project got done a quarter late.) That was our wake-up call, when we saw the need for more alignment between teams. Our OKRs were well crafted, but implementation fell short. When departments counted on one another for crucial support, we failed to make the dependency explicit. Coordination was hit-and-miss, with deadlines blown on a regular basis. We had no shortage of objectives, but our teams kept wandering away from one another. The following year, we tried to fix the problem with periodic integration meetings for the executive team. Each quarter our department heads presented their goals and identified dependencies. No one left the room until we’d answered some basic questions: Are we meeting everyone’s needs for buy-in? Much to the slaveholders' delight, the degradation of slave life increased the social distance between plantation slaves and urban free people of color. As free people of color strove to establish themselves in the urban marketplace and master the etiquette of a multilingual society, they drew back from the horrors of plantation life and from the men and women forced to live that nightmare.
The repulsion may have been mutual. Plantation slaves, many of them newly arrived Africans, little appreciated the intricacies of urban life and had neither the desire nor the ability to meet its complex conventions. Rather than embrace European-American standards, planation slaves sought to escape them. Their cultural practices pointed toward Africa - as did their filed teeth and tribal markings. While free people of color embraced Christianity and identified with the Catholic Church, the trappings of the white man's religions were not to be found in the quarter.
Planters, ever eager to divide the black majority, labored to enlarge differences between city-bound free people of color and plantation slaves. Rewarding with freedom those men and women who displayed the physical and cultural attributes of European Americans fit their purpose exactly, as did employing free colored militiamen against maroons or feting white gentlemen and colored ladies at quadroon balls. It was no accident that the privileges afforded to free people of color expanded when the danger of slave rebellion was greatest. Nor was it mysterious that the free colored population grew physically lighter as the slave population - much of it just arrived from Africa - grew darker. But somatic coding was just one means of dividing slave and free blacks. Every time black militiamen took to the field against the maroons or a young white gentlemen took a colored mistress, the distance between slaves and free people of color widened.

This simple fact is often forgotten as one rushes to the Sabbath or occupies oneself with formalities of ritual. The cross marks the four quarters, the four elements, the path of Sun, Moon and Stars. The cross was fused or confused with the Greek staurus, meaning ‘rod’, ‘rood’ or ‘pole’. Various forms of phallic worship are simply, veneration for the cosmic point of possibility and becoming. It is at the crossroads we will gain all or lose all and it is natural that it is at the crossroads we gain perspective. The crossroad is a place of choice, the spirit-denizens of the crossroads are said to be tricky and unreliable and it is of course where we find the Devil. One of the most famous legends of recent times concerns the blues-man Robert Johnson (1911– 1938). He claimed that, one night, just before midnight he had gone to the crossroads. He took out his guitar and played, whereupon a big black guy appeared, tuned his guitar, played a song backwards and handed it back.2 This incident altered Johnson’s playing and his finest and most everlasting compositions were the fruit of the few years of life left to him. This legend tells us how he needed to bury himself at the crossroads, offering himself to the powers dwelling there. Business done with the Devil is said to give him the upper hand. The ill omens and malefica associated with such deals is present in Johnson’s story. He got fame and women, but he died less than three years later before he reached thirty. His body was found poisoned at a crossroads, the murderer’s identity a mystery. Around the Mississippi no less than three tombs carry the name of Robert Leroy Johnson. The image of the Devil remains one of threat, blessing, beauty and opportunity. Where we find the Devil we find danger, unpredictability and chaos. If he offers a deal we know we are in for a complicated bargain. The Devil says that change is good, that we need movement in order to progress. His world is about cunning and ordeal entwined like the serpents of past and future on the pole of ascent. It is to the crossroads we go to make decisions. It is at the crossroads we set the course for the journey. It is at the crossroads we confront ourselves and realize our

Perhaps the most common device for giving people focus and direction is goal setting, but goals, as often as they are used, have their pros and cons. Sure, if you can convince everybody that profits must increase 20% next quarter or we’re going out of business, people will hurry around looking for ways to hype profits by 20%. When discussing “mission” I assigned Susan a goal of 25% improvement in sales, based on what I calculated was needed to avoid closing the factory and on what I felt her district could reasonably provide. It was not a number pulled from the ether, and I went to some length to explain this to her. Short of any such basis in reality, people will often do the easiest things, such as firing 20% of the workforce, canceling vital R&D programs, or simply not making any payments to suppliers. In other words, they will take achieving the goal as seriously as they feel you were in setting it; they will sense whether you have positioned yourself at the Schwerpunkt. Goals, as we all know, can be motivators. Cypress Semiconductor, a communications-oriented company founded in 1982, used to have a computer that tracked the thousands of self-imposed goals that its people fed into the system. Cypress founder T. J. Rodgers identified this automated goal tending system as the heart of his management style and a big factor in the company’s early success.136 Frankly, I find this philosophy depressing, not to mention a temptation to focus inward: If the boss places great importance on entering and tracking goals, as he obviously does, then that is what the other employees are going to consider important.137 In any case, what’s the big deal about meeting or missing a goal? A goal is an intention at a point in time. It is, to a large extent, an arbitrary target, whether you set it or someone above you assigns it. And we all know that numerical goals can be gamed, like banking (delaying) sales that we could have made this quarter to help us make quota next quarter. Unlike a Schwerpunkt, which gives focus and direction for chaotic and uncertain situations, what does a goal tell you? Just keep your head down and continue plugging away?

In August 2007, the analogies that came to mind—both inside and outside the Fed—were October 1987, when the Dow Jones industrial average had plummeted nearly 23 percent in a single day, and August 1998, when the Dow had fallen 11.5 percent over three days after Russia defaulted on its foreign debts. With help from the Fed, markets had rebounded each time with little evident damage to the economy. Not everyone viewed these interventions as successful, though. In fact, some viewed the Fed’s actions in the fall of 1998—three quarter-point reductions in the federal funds rate—as an overreaction that helped fuel the growing dot-com bubble. Others derided what they perceived to be a tendency of the Fed to respond too strongly to price declines in stocks and other financial assets, which they dubbed the “Greenspan put.” (A put is an options contract that protects the buyer against loss if the price of a stock or other security declines.) Newspaper opinion columns in August 2007 were rife with speculation that Helicopter Ben would provide a similar put soon. In arguing against Fed intervention, many commentators asserted that investors had grown complacent and needed to be taught a lesson. The cure to the current mess, this line of thinking went, was a repricing of risk, meaning a painful reduction in asset prices—from stocks to bonds to mortgage-linked securities. “Credit panics are never pretty, but their virtue is that they restore some fear and humility to the marketplace,” the Wall Street Journal had editorialized, in arguing for no rate cut at the August 7 FOMC meeting.

Passage Four: From Functional Manager to Business Manager This leadership passage is often the most satisfying as well as the most challenging of a manager’s career, and it’s mission-critical in organizations. Business mangers usually receive significant autonomy, which people with leadership instincts find liberating. They also are able to see a clear link between their efforts and marketplace results. At the same time, this is a sharp turn; it requires a major shift in skills, time applications, and work values. It’s not simply a matter of people becoming more strategic and cross-functional in their thinking (though it’s important to continue developing the abilities rooted in the previous level). Now they are in charge of integrating functions, whereas before they simply had to understand and work with other functions. But the biggest shift is from looking at plans and proposals functionally (Can we do it technically, professionally, or physically?) to a profit perspective (Will we make any money if we do this?) and to a long-term view (Is the profitability result sustainable?). New business managers must change the way they think in order to be successful. There are probably more new and unfamiliar responsibilities here than at other levels. For people who have been in only one function for their entire career, a business manager position represents unexplored territory; they must suddenly become responsible for many unfamiliar functions and outcomes. Not only do they have to learn to manage different functions, but they also need to become skilled at working with a wider variety of people than ever before; they need to become more sensitive to functional diversity issues and communicating clearly and effectively. Even more difficult is the balancing act between future goals and present needs and making trade-offs between the two. Business managers must meet quarterly profit, market share, product, and people targets, and at the same time plan for goals three to five years into the future. The paradox of balancing short-term and long-term thinking is one that bedevils many managers at this turn—and why one of the requirements here is for thinking time. At this level, managers need to stop doing every second of the day and reserve time for reflection and analysis. When business managers don’t make this turn fully, the leadership pipeline quickly becomes clogged. For example, a common failure at this level is not valuing (or not effectively using) staff functions. Directing and energizing finance, human resources, legal, and other support groups are crucial business manager responsibilities. When managers don’t understand or appreciate the contribution of support staff, these staff people don’t deliver full performance. When the leader of the business demeans or diminishes their roles, staff people deliver halfhearted efforts; they can easily become energy-drainers. Business managers must learn to trust, accept advice, and receive feedback from all functional managers, even though they may never have experienced these functions personally.

Why people churn Most churn occurs at the time of the sale. In 2017, my churn was over 60%. I signed up customers who were a poor fit for my solution. Many customers thought Connex was an inventory management tool and others thought we built custom software. We had no onboarding process and we expected users to figure out Connex on their own. Many users failed to choose the right settings, since they are small business owners and not accountants. Since the software failed to work as expected, they quickly cancelled. From experience, most users churn in the first 30 days. It is critical that you reach out to them and ensure the software works correctly. My staff performs an onboarding and ensures Connex works to the customer’s satisfaction. Users churned because my software lacked features that it has today. We noticed a dramatic shift in churn, after implementing a sales and marketing process. In the first quarter of 2021, we had only a handful of refunds out of 100 purchases. People churn because they fail to achieve their desired result or experience. People buy Connex because they want accurate financial information, better order fulfillment, or protection from overselling. If the sync were inaccurate and unreliable then we would lose customers. In other cases, your software may become superfluous. For example, I used the excellent meeting automation tool Calendly. When I migrated to HubSpot, however, I no longer needed Calendly because HubSpot offered meeting automation as part of its suite of offerings. Even if your tool works, your customer’s desired situation or desired outcomes may change. I churned from my ticketing system because I was unhappy with the customer service and experienced technical issues with their chat and phone system. Companies often tack on features that are nowhere near as usable as their core offering.

Even the producers had resigned themselves to the fact that we wouldn’t be shipping in the first quarter of 2004. They were seeing stability problems, and we were having a hard time getting a playable build. This made things especially hard for the game designers, who needed to test their data, but no one was really coming down on the programmers, as they were already haggard. Despite the fact that it had been drawn into his mythology, Tolkien did not allow it to become overwhelmingly serious or even adult in tone, but stuck to his original intention of amusing his own and perhaps other people’s children. Indeed he did this too consciously and deliberately at times in the first draft, which contains a large number of ‘asides’ to juvenile readers, remarks such as ‘Now you know quite enough to go on with’ and ‘As we shall see in the end’. He later removed many of these, but some remain in the published text – to his regret, for he came to dislike them, and even to believe that any deliberate talking down to children is a great mistake in a story.

Mendieta describes their crossing as formada a manera de una aspa de san Andrés (“shaped like a Saint Andrew’s cross”).162 Hernando Alvarado Tezozomoc likewise describes a spot defined by two springs intersecting one another. Van Zantwjik, Berdan and Anawalt, and Heyden read Tezozomoc as claiming the two springs are Tleatl-Atlatlayan (“Fire Water, Place of Burning Water”) and Matlalatl-Toxpalatl (“Dark Blue Water, Yellow Water”). The former ran from east to west, the latter, from north to south, and so they crossed one another.163 López Austin and López Lujan, however, read Tezozomoc as identifying the two intersecting springs as Matlalatl (“Dark Blue Water) and Toxpalatl (“Yellow Water”).164 Either way, their intersecting divides the island into four quadrants and forms the St. Andrew’s cross depicted in Codex Mendoza, fol. 2r. Dúran says the Aztecs found the sight of yellow and blue streams “espanto” (“frightening, terrifying, astonishing, awesome”).165 Next to this spot was where an eagle perched upon a prickly pear cactus. Lastly, here, too, the Aztecs constructed their Huey Tocalli. After building their first temple at the site, the Aztecs ordered the surrounding area divided into four quarters, with the Huey Teocalli at their intersection. The roads of Tepeyac, Itztapalapa, and Tlacopan, which arranged the city into four quadrants and served as communication routes between the island and the surrounding lake shores, intersected at the Huey Teocalli, forming a grand human-constructed crossroads with the Huey Tecocalli at its center.166 All of these crossings and intersectings coincided with one another as well as with the center of the earth, the navel of the earth, and the axis mundi. Leaving my mother behind, I walked through the antechamber and across the Hearing Hall to reach Narian’s headquarters, which was situated in the former strategy room between Cannan’s office and mine. As always, there was much activity in the partitioned room; I also could not simply knock on the door to his private office, for a Cokyrian sentry prevented access to him without an appointment. In the end, I directed one of Narian’s officers to inform him that I wished to speak with him about an “urgent provincial matter.”
“Shall we go to your study?” Narian asked when he emerged from his office, knowing full well I had no political matters to address.
“Yes, I think that would be best.” I couldn’t repress a smile, for his eyes sparkled with curiosity.
As soon as we had closed the door to my study, and before I could speak, Narian kissed me, catching me by surprise.
“I’ve wanted to do that all afternoon, Alera. I’m not particularly fond of the gowns Hytanican women wear, but I’m willing to make an exception for this one.”
I laughed, my head spinning, and he took hold of my hands.
“Now, what’s this about?”
“My mother has invited me to tea, and we would be pleased to have you join us.”
Despite how casual I was trying to sound, Narian stiffened, and I could feel him pulling away. This wasn’t going to be easy.
“You both would like me to join you?”
“Yes, she suggested it.” I took a deep breath and made my confession. “She knows that we’re betrothed, that we’re in love.”
I couldn’t gauge his reaction from his face, but the fact that he released my hands suggested he was disturbed, piqued--not an encouraging sign. I waited, giving him a chance to straighten out his thoughts, then tried again.
“I know we agreed not to tell anyone--”
“Yes, we did,” he snapped, walking over to my desk, not meeting my eyes. This was so uncharacteristic of him that I knew I had to proceed very carefully.

The news was that if things got worse, the German Army would be pushed over the Vosges Mountains and back into Alsace-Lorraine. We were issued instructions from the local Nazi administration to be prepared to help these retreating soldiers and were expected to billet, feed and, if necessary, nurse those wounded back to health. “Oh my,” I thought. We had so little but it was still more than we had in Mannheim. One village woman told us, “They are our soldiers and we can jolly well care for them.” Adolph agreed with this and told me that it would be my duty to look after any German soldier that was quartered under his roof. I thought that I fully understood what he meant by this! Since I was using the entire upstairs portion of the house, I would have to make room. Looking forward to helping them, I told the girls that we were to be kind to whoever came to us. “Imagine if it was your father.” It seemed the least we could do, and I hoped that I wasn’t expected to go beyond this.
Instead of improving, things just got worse. To everyone’s astonishment the school was ordered closed and we were told to attend a meeting in the Village Center. Outside of the center, amidst much commotion, a uniformed Gestapo officer standing on the back of an open truck announced that German troops would be entering our village. Soon Military vehicles and German troops seemed to be everywhere. The Allied invasion of Normandy on June 6, 1944, marked a critical turning point in the European theater of World War II and we were beginning to feel the effects.

Rodolphe Salis was a tall, red-headed bohemian with a coppery beard and boundless charisma. He had tried and failed to make a success of several different careers, including painting decorations for a building in Calcutta. But by 1881 he was listless and creatively frustrated, uncertain where his niche might lie. More pressingly, he was desperate to secure a steady income. But then he had the ingenious idea to turn the studio which he rented, a disused post office on the resolutely working-class Boulevard de Rochechouart, into a cabaret with a quirky, artistic bent. He was not the first to attempt such a venture: La Grande Pinte on the Avenue Trudaine had been uniting artists and writers to discuss and give spontaneous performances for several years. But Salis was determined that his initiative would be different – and better. A fortuitous meeting ensured that it was.
Poet Émile Goudeau was the founder of the alternative literary group the Hydropathes (‘water-haters’ – meaning that they preferred wine or beer). After meeting Goudeau in the Latin Quarter and attending a few of the group’s gatherings, Salis became convinced that a more deliberate form of entertainment than had been offered at La Grande Pinte would create a venue that was truly innovative – and profitable. The Hydropathe members needed a new meeting place, and so Salis persuaded Goudeau to rally his comrades and convince them to relocate from the Latin Quarter to his new cabaret artistique. They would be able to drink, smoke, talk and showcase their talents and their wit. Targeting an established group like the Hydropathes was a stroke of genius on Salis’s part. Baptising his cabaret Le Chat Noir after the eponymous feline of Edgar Allan Poe’s story, he made certain that his ready-made clientele were not disappointed.
Everything about the ambience and the decor reflected Salis’s unconventional, anti-establishment approach, an ethos which the Hydropathes shared. A seemingly elongated room with low ceilings was divided in two by a curtain. The front section was larger and housed a bar for standard customers. But the back part of the room (referred to as ‘L’Institut’) was reserved exclusively for artists. Fiercely proud of his locality, Salis was adamant that he could make Montmartre glorious. ‘What is Montmartre?’ Salis famously asked. ‘Nothing. What should it be? Everything!’ Accordingly, Salis invited artists from the area to decorate the venue. Adolphe Léon Willette painted stained-glass panels for the windows, while Théophile-Alexandre Steinlen created posters. And all around, a disorientating mishmash of antiques and bric-a-brac gave the place a higgledy-piggledy feel. There was Louis XIII furniture, tapestries and armour alongside rusty swords; there were stags’ heads and wooden statues nestled beside coats of arms. It was weird, it was wonderful and it was utterly bizarre – the customers loved it.

There is a scene in the movie The Assassination of Jesse James by the Coward Robert Ford. At the beginning, in the woods, Robert Ford, played by Casey Affleck, illustrates this phenomenon. He thinks the outlaw Jesse James is a great man. He thinks that he, himself, is a great man, too. He wants someone to recognize that in him. He wants someone to give him an opportunity—a project through which he can prove his worth. It just happens that Frank James would size the delusional, awkward boy up in the woods outside Blue Cut, Missouri: “You don’t have the ingredients, son.” In contrast, Mr. A is ambitious, but it’s paired with self-confidence, social adeptness, and a clear sense of what Thiel wanted. Even so, the prospect of meeting with Thiel is intimidating: his stomach churning, every nerve and synapse alive and flowing. He’s twenty-six years old. Cut each orange (unpeeled) into 8 sections. 3 In a mixing bowl, toss the fennel and orange with the olive oil and red pepper and season to taste with salt and pepper. 4 Spread the fennel in a shallow baking pan and roast for 20 minutes. Remove the pan from the oven and add the orange. Roast for about 5 minutes longer. Test the fennel for doneness by poking it with a small, sharp knife. When the fennel is done, the knife will meet with no resistance. Set aside the fennel and orange. 5 Season the tuna with fennel seeds, salt, and pepper. 6 Heat a sauté pan over high heat. When the pan is hot, put the clarified butter or oil in the pan. When the butter foams or the oil is smoking hot, sear the tuna on all sides or until rare. This should take 30 seconds on each side for perfectly rare tuna. Remove the tuna from the pan and slice each piece into quarters. 7 Put 4 pieces of roasted fennel and 4 pieces of roasted orange on each of 4 serving plates. Put 4 tuna slices in the center of each plate and season with sea salt. Drizzle the vinegar around the edge of each plate, followed by the Basil Oil. On a trip to Palermo, Sicily, I tasted a lot of fish dishes flavored with some of the traditional flavors of the island: fennel, orange, chiles, basil, and sea salt. When you make this dish, buy high-quality tuna, which can be bluefin, yellowfin, or bigeye tuna as long as it’s as fresh as can be. Cook it only long enough so that the center is still red or cooked to medium rare.

One was that we have an auto email that is one sentence long that tells customers they are late—but it doesn’t tell them what to do!
