Absinthe found a dedicated following among artists, writers and poets (including Charles Baudelaire), for whom the liquor became the entrancing ‘green fairy’. Its popularity in these circles was due primarily to its intoxicating effect, but also because its consumption was accompanied by a curious ritual which appealed to quirky individuals with a taste for the extraordinary. If we want nothing to do with light, love, hope, grace, and peace God respects that desire on our part and we are given a life free from any of those realities. The more we want nothing to do with what God is, the more distance and space is created. If we want nothing to do with love, we are given a reality free from love. If, however, we crave light, we’re drawn to truth, we’re desperate for grace, we’ve come to the end of our plots and schemes and we want someone else’s path, God gives us what we want. If we have this sense that we have wandered far from home and we want to return, God is there standing in the driveway arms open, ready to invite us in. If we thirst for Shalom and we long for the peace that transcends all understanding, God doesn’t just give, they are poured out on us lavishly, heaped until we are overwhelmed. It’s like a feast where the food and wine do not run out. These desires can start with the planting of an infinitesimally small seed in our heart, or a yearning for life to be better, or a gnawing sense that we are missing out, or an awareness that beyond the routine and grind of life there is something more, or the quiet hunch that this isn’t all there is. A board of inquiry completed a full report soon afterward, but, on the eve of publication, the British prime minister ordered all but two or three existing copies recalled and had the metal type prepared to print it broken up. He then released his own bowdlerized version to the public, edited to place the blame for the fire on the plant operators. The British government would not fully acknowledge the scale of the accident for another thirty years.

But it can also be as transcendent as the Requiem—or as picking potato beetles when you are in the right frame of mind for it. Knowing other people are engaged in the same underappreciated labor and squeezing a perverse kind of joy out of it is what keeps me writing, especially if it’s my field of potatoes they are picking over. Sometimes I like to picture each of my collaborators working their way down a row, their backs aching, hands filthy with beetle juice, fingernails broken, eyes going cross-eyed in the faltering light. It’s inspirational. Thirty years ago, I would have written (and did) a dull-as-dirt acknowledgment to thank each of my collaborators. It would have had all the excitement of a divorce decree. Back then I had no idea how difficult and precarious a job it is to turn out a novel every couple of years. It gets more difficult and precarious every year. So does living. I keep a begonia plant in my office, on my desk by the window. It’s thriving in that spot, right beside the bright light that filters in through the blue curtain in the afternoon. I have learned to care for begonias because I have killed a few in my time, and every time it is painful to admit that I could not keep them alive and well. When this begonia plant flourishes, I am full of hope. But still, sometimes I notice that they are thirsty. I pour water from my own drinking glass into the plastic container beneath the pot, so their roots can drink first. Within seconds, the water disappears, and I say to myself, “Oh, you were so thirsty.” They keep drinking and blooming and asking for more care in that most gentle way plants do, and I say that I am sorry when they are too thirsty or too drenched in sunlight. And I wonder how thirsty we are, or if we notice, if that mindfulness and way of keeping watch happens in our own souls. I wonder if we let others know when we need a drink or a break from the heat, or that we might need a little deadheading here or there. And when we get closer to the water, we drink it up within seconds, begging for more, while nearby someone says, “Oh, Love, you were so thirsty.” I wonder if we even notice that we’re thirsty.

TIME: 3 MINUTES SERVES: 1 1 tablespoon sugar ½ teaspoon matcha powder ¼ teaspoon matcha powder ½ ounce hot water 1½ ounces Simple Syrup 1½ ounces fresh lemon juice Prosecco (roughly 2 ounces) Lemon wheel, for garnish Mix the sugar and ¼ teaspoon of the matcha powder in a small bowl with a dry barspoon until you’ve made a pale green sugar. Pour the matcha sugar onto a small plate and set aside. Combine the remaining ¼ teaspoon matcha powder and hot water directly in a highball glass. Use an electric frother to whisk the matcha until a smooth, creamy texture is achieved. Add ice to the matcha mixture, filling the glass to the rim. Add the simple syrup and lemon juice. Top off the glass with prosecco. Stir the cocktail with a barspoon, briefly and lightly. Cut a small notch in the lemon wheel. Following the line of the notch, coat half the wheel in matcha sugar by carefully and evenly pressing that half into the matcha sugar. Position the coated lemon wheel on the edge of the glass. Pissenlit (DANDELION SALAD) YIELD: 4 SERVINGS PISSENLIT, as the common dandelion is often called in France, is considered a great early-spring treat in our family. Gloria loves to pick the greens at the end of March and the beginning of April, especially the small white specimens hidden in the fallen leaves behind our guesthouse. This family tradition started for me with my father and my two brothers, and now my wife and daughter, Claudine, are great lovers of pissenlit salad. The leaves should be picked before the flowers start forming, while they are small, white, and tender. There is no comparison between the tender wild dandelion greens you pick yourself and the ones that are found in markets. With a small paring knife, cut about an inch below the ground to get the dandelion plant in one piece. Cut the leaves away from the root, and discard any that are damaged or darkened. Our version always includes pieces of pancetta as well as croutons, boiled eggs with soft yolks, and a dressing made of garlic, anchovies, and olive oil. 4 large eggs 5 ounces pancetta, cut into pieces about 1 inch long, ½ inch wide, and ½ inch thick (about 2 dozen) 2 cups water 6 tablespoons extra-virgin olive oil 2 teaspoons chopped garlic 4 anchovy fillets in oil, finely chopped 1 tablespoon red wine vinegar ½ teaspoon salt ½ teaspoon freshly ground black pepper A piece of baguette (about 3 ounces), cut into sixteen ¼-inch slices About 8 ounces (8 cups packed) dandelion greens, washed two or three times and spun dry Lower the eggs carefully into boiling water, and boil them at a simmer for 7 minutes. Pour out the water, shake the pan to crack the shells, then fill the pan with ice, and let the eggs cool in the pan for at least 15 minutes. Peel the eggs under cold running water, and cut them into quarters. Meanwhile, put the pancetta pieces in a saucepan, and cover them with the water. Bring the water to a boil, and boil gently for 10 minutes. Drain, then put the pancetta in a saucepan with 1 tablespoon of the olive oil. Cook gently for 5 minutes, or until crisp and lightly browned. Transfer the pancetta along with the rendered fat to a salad bowl, and add the garlic, anchovies, vinegar, salt, pepper, and 4 tablespoons of the olive oil. Mix well. Preheat the oven to 400 degrees. Spread the remaining 1 tablespoon oil on a cookie sheet, press the slices of bread into the oil, and then turn them over, so they are oiled on the second side. Bake for 8 to 10 minutes, until nicely browned. At serving time, add the greens to the salad bowl, and toss them with the dressing. Divide among four plates, and top with the bread and quartered eggs. Serve.

The things that we describe so carefully are called phenomena — the second element in the definition. The word phenomenon has a special meaning to phenomenologists: it denotes any ordinary thing or object or event as it presents itself to my experience, rather than as it may or may not be in reality. As an example, take a cup of coffee. (Husserl liked coffee: long before Aron talked about the phenomenology of apricot cocktails, Husserl told students in his seminars, ‘Give me my coffee so that I can make phenomenology out of it.’) What, then, is a cup of coffee? I might define it in terms of its chemistry and the botany of the coffee plant, and add a summary of how its beans are grown and exported, how they are ground, how hot water is pressed through the powder and then poured into a shaped receptacle to be presented to a member of the human species who orally ingests it. I could analyse the effect of caffeine on the body, or discuss the international coffee trade. I could fill an encyclopaedia with these facts, and I would still get no closer to saying what this particular cup of coffee in front of me is. On the other hand, if I went the other way and conjured up a set of purely personal, sentimental associations — as Marcel Proust does when he dunks his madeleine in his tea and goes on to write seven volumes about it — that would not allow me to understand this cup of coffee as an immediately given phenomenon either. Instead, this cup of coffee is a rich aroma, at once earthy and perfumed; it is the lazy movement of a curlicue of steam rising from its surface. As I lift it to my lips, it is a placidly shifting liquid and a weight in my hand inside its thick-rimmed cup. It is an approaching warmth, then an intense dark flavour on my tongue, starting with a slightly austere jolt and then relaxing into a comforting warmth, which spreads from the cup into my body, bringing the promise of lasting alertness and refreshment. The promise, the anticipated sensations, the smell, the colour and the flavour are all part of the coffee as phenomenon. They all emerge by being experienced. If I treated all these as purely ‘subjective’ elements to be stripped away in order to be ‘objective’ about my coffee, I would find there was nothing left of my cup of coffee as a phenomenon — that is, as it appears in the experience of me, the coffee-drinker. This experiential cup of coffee is the one I can speak about with certainty, while everything else to do with the bean-growing and the chemistry is hearsay. It may all be interesting hearsay, but it’s irrelevant to a phenomenologist.

Aerate your soil. Before watering, gently poke a few aeration holes into the soil surface with a chop-stick. Now, when water is poured across the surface, it can more evenly penetrate and moisten the soil. It’s important to ensure that water is distributed as evenly as possible, since dry pockets of soil can cause roots in those areas to die even when you think you’ve “watered” the plant.

This is typically done over the sink. The method involves continually pouring water onto the top of the soil until water runs out through the drainage hole. This method is useful to wash salts that can be harmful out of the soil, but it also leeches away water-soluble nutrients. Every now and then, a plant enjoys a good soaking, and the plant parent can enjoy it too.

Don’t pour old coffee or tea down the drain. Water your plants with it. Coffee is a good source of nitrogen – this is good for green, lush growth. You can water acid-loving plants occasionally with coffee. With other plants, it’s best to use it only a few times a month. You can also water your houseplants, occasionally, with leftover beer. It’s fine. They won’t even drunk text you.

Chapter 5 Eyebright For Eye Strain The other night, I took a break from writing and went for a walk. It was dark, but the moon was bright giving me the light I needed to see my way up the road and back. When I returned I could see a few lights on in the house, but what really stood out was my laptop that I had left open; it’s bright white light standing out. I thought, “man, I stare at that light for hours at a time!” No wonder my eyes feel tired so often. Many people do this for eight or more hours every day. When we are viewing the screens of our devices, we blink less than normal which can cause dryness and soreness. The intense focus can also be the root of headaches and other eye related symptoms. Relief can be achieved by taking frequent ‘eye breaks’ which involve looking at something in the distance every twenty minutes or so (there are even apps to remind you!), and making sure your screen is just below eye level. But the reality is many of us are spending a lot of time focusing intently on electronic devices and straining our eyes. Symptoms of eye strain range from dry, sore, or itchy eyes, to headaches, light sensitivity and blurred vision. Mother Nature in her infinite wisdom has provided us with a wild herb that works directly to reduce the discomforts of eye strain and many other eye issues. Eyebright, a tiny flowered, weedy looking herb found wild in Europe, Asia and North America can be used to treat all eye disorders. Eyebright’s tannin content, which acts as an astringent, and its anti-inflammatory and antibacterial properties, combine to make the perfect eye wash. Its 3 major antioxidant vitamins bring in eye-specific support as well:  Vitamin C, in conjunction with Eyebright’s high content of Quercetin, assists in reducing swelled and runny eyes; Vitamin E has been shown to help improve visual sharpness; and Vitamin A protects the cornea and prevents dry eyes. Eyebright is the perfect solution for eyestrain symptoms, but it can also be used for many other eye disorders including conjunctivitis and itchy or runny eyes caused by allergies. Traditionally it has been used to improve memory and treat vertigo and epilepsy. Harvesting and drying Eyebright is easy. The high tannin content makes it a fast-drying herb. Simply cut the flowering tops of the plant and dry for a day or two in an oven with just the pilot light on, or in an airy spot out of the sun for several days. The dried herb will have retained its colors, though the flowers will have diminished considerably in size. How To Use Eyebright How to make an eye bath:   Boil 2 cups of water and pour over 1 cup of dried or fresh herb and let sit for 20 minutes or more. Strain well using cheesecloth or an unbleached coffee filter, store in a sterile glass jar (just dip in the boiling water before adding the herbs and let stand, open side up), cool, lid tightly and place in refrigerator for up to a week. When you wash your face in the morning or evening, use a sterile eyecup or other small sterile container to ‘wash’ your eyes with this herbal extract. If you are experiencing a painful eye condition, it is better to warm the eye bath liquid slightly before use. You can also dip cotton balls in the solution and press one on each eye (with lid closed) as a compress. Eyebright Tea: Using the same method for making an eye bath, simply drink the tea for relief of eye symptoms due to eyestrain, colds and allergies.

Here’s how to press it like a pro: slice open the package of tofu with a knife, pour out the water, slice the tofu, and wrap each slice in a clean kitchen towel while pressing the excess water out, which is absorbed by the kitchen towel. That’s all. Just get the excess water out. People also use paper towels to do it, but it’s wasteful and costs more money, so I stick to clean kitchen towels. You can also wrap the tofu in a towel and put something heavy on it like a book to press it for a few minutes while you prep other things.
