They seemed to like us too and treated us as though we were very good, well-mannered and promising children and I felt that they forgave us for being in love and being married - time would fix that - and when my wife invited them to tea, they accepted.

You can do this with a sharp knife, or in the food processor using the steel blade and an on-and-off motion. Mix in the shrimp and check to see how salty the spread is. Add salt if needed. Chill the spread in a covered bowl in the refrigerator for at least 4 hours. You can make it in the morning if you plan to serve it that night. Yield: Makes approximately 3 cups.

Spinach Quiche Preheat oven to 375 degrees F., rack in the middle position This is my recipe. It can be served as an appetizer if you cut it into thin slices and arrange them on a platter. It can also be served as an entrée. One 9-inch unbaked pastry shell 1 beaten egg yolk (reserve the white in a small dish) 10-ounce package frozen chopped spinach ½ teaspoon salt ½ teaspoon pepper (freshly ground is best) 3 Tablespoons horseradish sauce 2 ounces shredded Jarlsberg (or good Swiss cheese) 4 eggs 1½ cups Half & Half (or light cream) 1/8 teaspoon salt 1/8 teaspoon cayenne pepper 1/8 teaspoon nutmeg (freshly ground is best) Beat the egg yolk in a glass with a fork. Brush the inside of the unbaked pastry shell with the yolk. Set the shell aside to dry. Cook and drain the spinach. Squeeze out as much moisture as you can and then blot with a paper towel. In a bowl, combine the spinach with the salt, pepper, and horseradish sauce. Spread it in the bottom of the pastry shell. Sprinkle the top with the grated cheese. Beat the 4 whole eggs with the reserved egg white. Add the Half & Half, salt, and cayenne pepper. Mix well and pour on top of cheese. Sprinkle the top with nutmeg. Bake at 375 degrees F. for 40 minutes, or until a knife inserted one inch from the center comes out clean. Let cool for ten minutes and then cut into wedges and serve. This quiche can be served warm or at room temperature. I’ve even been known to eat it cold, straight out of the refrigerator. It’s perfect for a fancy brunch or a lazy, relaxed breakfast on the weekend. Yield: Serves from 12 to 18 as an appetizer. Serves six as an entrée if they only have one piece.

GUAC AD HOC Hannah’s 1st Note: This is Howie Levine’s guacamole recipe. He’s Lake Eden’s most popular lawyer. 2 ounces cream cheese 4 ripe avocados (I used Haas avocados) 2 Tablespoons lemon juice (freshly squeezed is best) 1 clove garlic, finely minced (you can squeeze it in a garlic press if you have one) cup finely chopped fresh oregano leaves 1 Italian (or plum) tomato, peeled, seeded, and chopped 4 green onions, peeled and thinly sliced (you can use up to 2 inches of the green stem) ½ teaspoon salt 10 grinds of freshly ground pepper (or tea spoon) ½ cup sour cream to spread on top Bacon bits to sprinkle on top of the sour cream Tortilla chips as dippers Howie’s Note: I use chopped oregano because Florence doesn’t always carry cilantro at the Lake Eden Red Owl. This guacamole is equally good with either one. Heat the cream cheese in a medium-sized microwave-safe bowl for 15 seconds on HIGH, or until it’s spreadable. Peel and seed the avocados. Put them in the bowl with the cream cheese and mix everything up with a fork. Mix just slightly short of smooth. You want the mixture to have a few lumps of avocado. Add the lemon juice and mix it in. It’ll keep your Guac Ad Hoc from browning. Add the minced garlic, chopped oregano leaves, tomato, sliced green onion, salt, and pepper. Mix everything together. Put your Guac Ad Hoc in a pretty bowl, and cover it with the sour cream. Sprinkle on the bacon bits. If you’re NOT going to serve it immediately, spread on the sour cream, but don’t use the bacon bits. Cover the bowl with plastic wrap and refrigerate it until time to serve. Then sprinkle on the bacon bits. (My bacon bits got a little tough when I added them to the bowl and refrigerated it. They were best when I sprinkled them on at the last moment.) Hannah’s 2nd Note: Mike and Norman like this best if I serve it with sliced, pickled Jalapenos on top. Mother won’t touch it that way. Yield: This amount of Guac Ad Hoc serves 4 unless you’re making it for a Super Bowl game. Then you’d better double the recipe.

Spinach Rollups This recipe is from my friend Susan Zilber. Susan moved away to New York, but I bet she still makes these. 5 to 8 flour tortillas (the large burrito size) 16-ounce package frozen chopped spinach ¼ cup mayonnaise ½ cup softened cream cheese ¼ cup sour cream 1/8 cup dried chopped onion ¼ cup bacon bits 1 Tablespoon Tabasco sauce Cook the spinach and drain it, squeezing out all the moisture. (Cheesecloth inside a strainer works well for this.) Mix together all ingredients except the tortillas. Spread small amount of spinach mixture out on the face of a tortilla. Roll it up and place it in a plastic freezer bag. Continue spreading and rolling tortillas until the spinach mixture is gone. Fold the plastic bag over when all the rollups are inside to make sure they stay tightly rolled. Refrigerate for at least 4 hours. (Overnight is best.) Slice with a sharp knife, arrange on a platter, and serve as appetizers. Susan says to tell you that once she started to make these and found that she was out of sour cream. She used all cream cheese instead, and they were delicious. Hannah’s Addition to Susan’s Rollups 5 to 8 flour tortillas (the large burrito size) 6 ounces chopped smoked salmon (or lox) 1 cup (8 ounces) softened cream cheese ¼ cup dried chopped onions 1 teaspoon freshly ground black pepper 1 teaspoon dill weed (of course fresh is best) Mix all the ingredients except the tortillas together in a bowl. Spread small amount of the salmon mixture out on the face of a tortilla. Roll it up and place it in a plastic freezer bag. Continue spreading and rolling tortillas until the salmon mixture is gone. Fold the plastic bag over when all the rollups are inside to make sure they stay tightly rolled. Refrigerate for at least 4 hours. (Overnight is best.) Slice with a sharp knife, arrange on a platter, and serve as appetizers. Meanwhile, at a Tokyo 7-Eleven, someone right now is choosing from a variety of bento boxes and rice bowls, delivered that morning and featuring grilled fish, sushi, mapo tofu, tonkatsu, and a dozen other choices. The lunch philosophy at Japanese 7-Eleven? Actual food.
On the day we missed out on fresh soba, Iris had a tonkatsu bento, and I chose a couple
of rice balls (onigiri), one filled with pickled plum and the other with spicy fish roe. For $1.50, convenience store onigiri encapsulate everything that is great about Japanese food and packaging. Let's start in the middle and work outward, like were building an onion. The core of an onigiri features a flavorful and usually salty filling. This could be an umeboshi (pickled apricot, but usually translated as pickled plum), as sour as a Sour Patch Kid; flaked salmon; or cod or mullet roe.
Next is the rice, packed lightly by machine into a perfect triangle. Japanese rice is unusual among staple rices in Asia because it's good at room temperature or a little colder. Sushi or onigiri made with long-grain rice would be a chalky, crumbly disaster. Oishinbo argues that Japan is the only country in Asia that makes rice balls because of the unique properties of Japanese rice. I doubt this. Medium- and short-grain rices are also popular in parts of southern China, and presumably wherever those rices exist, people squish them into a ball to eat later, kind of like I used to do with a fistful of crustless white bread. (Come on, I can't be the only one.)
Next comes a layer of cellophane, followed by a layer of nori and another layer of cellophane. The nori is preserved in a transparent shell for the same reason Han Solo was encased in carbonite: to ensure that he would remain crispy until just before eating. (At least, I assume that's what Jabba the Hutt had in mind.) You pull a red strip on the onigiri packaging, both layers of cellophane part, and a ready-to-eat rice ball tumbles into your hand, encased in crispy seaweed.
Not everybody finds the convenience store onigiri packaging to be a triumph. "The seaweed isn't just supposed to be crunchy," says Futaki in Oishinbo: The Joy of Rice. "It tastes best when the seaweed gets moist and comes together as one with the rice." Yamaoka agrees. Jerk. Luckily, you'll find a few moist-nori rice balls right next to the crispy ones.

Salsa: Peel the orange and remove its white pith. Get rid of the membrane such that only the soft juicy part of the orange is there. Slice the avocado in half and scoop out the soft buttery flesh from the peel. Chop a tomato and remove its seeds. 2. Now mix in the orange, avocado flesh, and tomato in a medium size bowl. To this add the coarsely chopped cilantro. Toss well. Lightly drizzle with oil. Sprinkle a pinch of salt for taste. 3. Cut the chicken into 4 serving-sized pieces. Thinly coat both sides of chicken cutlets with cumin, salt, and pepper. 4. Heat oil in a frying pan and slide in the chicken pieces. Cook until the pieces are lightly golden. Flip the pieces and cook for 3-5 min per side. When the chicken pieces are nicely cooked, remove from heat. Top the chicken pieces with salsa. Best served with naans. Shooting a glance to the man she’d assumed was the gardener—although the quality of his shirt should have been an indication he was nothing of the sort—Lucetta turned back to Abigail. “This is your grandson?” Abigail sent her a less than subtle wink. “Too right he is.” To Lucetta’s absolute relief, the grandson in question stepped forward before Abigail had an opportunity to begin waxing on about what a dish her grandson had turned out to be, a subject that would have embarrassed Lucetta no small amount, and probably the grandson as well. “Grandmother, this is certainly an unexpected surprise,” the man who was apparently Bram Haverstein said. Abigail beamed a smile Bram’s way and held out her hands, her beaming increasing when Bram immediately strode to her side, picked up both of her hands, and kissed them. “I’m sure you are surprised to see me, dear, just as I’m sure you meant to say delightful surprise, not unexpected, but enough about that. Even though you and Lucetta are dripping wet, we mustn’t ignore the expected pleasantries, so do allow me to formally introduce the two of you. Bram, this is my darling friend, Miss Lucetta Plum, and Lucetta, dear, this is my grandson, the one I’ve been telling you so much about, Mr. Bram Haverstein.” Trepidation was immediate when Bram flashed a big smile her way. Why, I’ve come to the conclusion that Mr. Grimstone, the playwright, obviously had you in mind to play the part of Serena Seamore from the moment he began penning the story.” Abigail, apparently realizing that her grandson was not making a favorable impression—which certainly wouldn’t aid her matchmaking attempt—squared her shoulders, looking quite determined. “How lovely to discover you’re already familiar with my dear Lucetta and her work,” Abigail said. “But as both of you are dripping wet and certain to catch a cold if we linger, I’m going to suggest we repair to the castle and leave further talk of, uh, theater behind us.” She

When you live in Jersey a beach isn’t enough. People have energy in Jersey. They need things to do. They need a beach with a boardwalk. The roast beef is Kyoto stock- best enjoyed with a drizzle of the wasabi-infused soy sauce and wrapped in a sheet of toasted nori. As for the teriyaki-style duck meatballs, you can dip those in the accompanying quail egg yolk. Chilled tofu garnished with the minced skin of the hamo eel and, finally, deep-fried Kamo eggplant with a starchy curry sauce. Enjoy!

The Quiche Lorraine Pie Shell: You can mix up your favorite piecrust recipe and line a 10-inch pie plate. Or…you can buy frozen shells at the grocery store. (If you decide to go the grocery store frozen pie shell route, buy 9-inch deep-dish pie shells.) Hannah’s 1stNote: There’s no need to feel guilty if you choose to use the frozen pie shells. They’re good and it’s a real time saver. I happen to know that Edna Ferguson, the head cook at Jordan High, has been known to remove frozen pie shells from their telltale disposable pans and put them in her own pie tins to bake! (Sorry Edna—I just had to tell them.) Stack your pie shells in the refrigerator, or leave them in the freezer until two hours before you’re ready to use them. Prepare your piecrust by separating one egg. Throw away the white and whip up the yolk with a fork. Brush the bottom and inside of your piecrust. Prick it all over with a fork and bake it in a 350 F. degree oven for 5 minutes. Take it out and let it cool on a wire rack or a cold stovetop while you mix up the custard. If “bubbles” have formed in the crust, immediately prick them with a fork to let out the steam. The Quiche Lorraine Custard: 5 eggs 1½ cups heavy whipping cream *** Hannah’s 2ndNote: You can do this by hand with a whisk, or use an electric mixer, your choice. Combine the eggs with the cream and whisk them (or beat them with an electric mixer) until they’re a uniform color. When they’re thoroughly mixed, pour them into a pitcher and set it in the refrigerator until you’re ready to assemble the rest of your quiche. You may notice that you’re not adding any salt, pepper, or other seasoning at this point. You’ll do that when you assemble the quiche. Hannah’s 3rdNote: You can mix up the custard ahead of time and store it in the refrigerator for up to 24 hours. When you’re ready to assemble your quiches, all you have to do is whisk it smooth and pour it out from the pitcher. The Quiche Lorraine Filling: 2 cups grated Gruyere cheese (approximately 7 ounces)*** 1 cup diced, well-cooked and drained bacon ½ teaspoon salt ½ teaspoon freshly ground black pepper ¼ teaspoon ground cayenne pepper (optional—use if you like it a bit spicy) ¼ teaspoon ground nutmeg (freshly grated is best, of course) Sprinkle the grated cheese in the bottom of your cooled pie shell. Spread the cup of diced bacon on top of the cheese. Sprinkle on the salt, and grind the pepper over the top of the bacon. Sprinkle on the cayenne pepper (if you decided to use it). Grate the nutmeg over the top. Put a drip pan under your pie plate. (I line a jellyroll pan with foil and use that.) This will catch any spills that might occur when you fill your quiche with the custard mixture. Take your custard mixture out of the refrigerator and give it a good whisk. Then pour it over the top of your Quiche Lorraine, filling it about half way. Open your oven, pull out the rack, and set your pie plate and drip pan on it. Pour in more custard mixture, stopping a quarter-inch short of the rim. Carefully push in the rack, and shut the oven door. Bake your Quiche Lorraine at 350 degrees F., for 60 minutes, or until the top is nicely browned and a knife inserted one-inch from the center comes out clean. Let your quiche cool for 15 to 30 minutes on a cold stovetop or a wire rack, and then cut and serve to rave reviews. This quiche is good warm, but it’s also good at room temperature. (I’ve even eaten it straight out of the refrigerator for breakfast!)

Something inside Kostya, deep in his gut, lunged. He could take the digs about being unqualified and a liar and even a bad cook--- all those things were true--- but he couldn't let this guy insult his taste buds. His tongue was special. It was maybe the only special thing about him.
"Nevermind. I can see that we're not going to---"
"Duck." Kostya spat it at him like another four-letter word. "Duck ragout. It had this thick sauce, cinnamon cognac. A demi-glace, I think."
Kostya closed his eyes, remembering where the aftertaste had happened, trying to reincarnate it. He'd been on the sidewalk outside his mother's apartment two New Years' ago, pacing around and nursing tea that had gone cold, delaying the inevitable argument about how he was living his life when it had hit him.
"The onions were sliced so thin they fell apart to almost nothing in the stew. And these dried fruits that reconstituted in the duck fat--- peaches and apricots and plums and cherries--- they exploded my teeth like tapioca pearls."
Kostya's eyes were still closed, but the stony silence from Beauchêne invited him to keep going.
"And a couple years ago, there was this coconut curry and Kaffir lime fried chicken."
That one happened to him at a Gristedes. He'd been in the refrigerated section, his fingers closing around the handle of a gallon of milk.
"The skin was so crispy, paper-thin, covered in these tiny, burnt coconut shavings and desiccated slivers of zest, and underneath, the chicken was so moist. The juices dribbled down my chin."
He'd invented that last part for effect, and it seemed to be working. Kostya could feel the air change around him, sizzling. He thought he heard the chef swallow.
"I have to say, I wasn't expecting---"
"I once had young goat," Kostya cut him off, his eyes squeezing tight in focus. "The whole thing was fire-roasted, charred, the meat brined and rubbed with garlic, thyme, rosemary. Hand-crushed juniper."
This one had choked him awake one morning in bed a few months prior, he'd drooled so much he nearly drowned in his own spit.
"It fell apart in my mouth. Every bite, I got a little of the ash from the fire pit, the grit of the sand, the scent of pine from the dried needles on the lumber burned to cook the thing."
"Who are you?" the chef wondered aloud.

Many years ago, around the early 1980's, I penned a story about fruit crumble in a rather delightful, now defunct, magazine called Food Illustrated. The point of the piece was not so much the crust (to which I suggested adding coarse brown sugar or ground almonds or oats) or the luscious fruit (gooseberries, damsons, rhubarb or plums) that lay sleeping beneath.
The point was to identify what I consider to be the best bit, neither crust nor crumble but the layer of fruit-soaked dough that lies just beneath the crust. It is often a rich purple color or, in the case of apple crumble, the hue of heather honey. The hidden dough takes on a consistency that is both dry and wet and for which the most accurate description might be plumptious, if that was actually a word. I referred to it then as the undercrust, a term I have watched slowly spread.
The undercrust of a crumble is only one of several such silken treats that await us. The layer of soggy dough where shortcrust pastry meats gravy in a steak or chicken pie for instance. The point at which custard meets sponge in a trifle or, now I come to think of it, that bit of the suet dumpling that sits in the sauce of the stew, richly sodden with flavor and plump with aromatic liquor.
