Porridge is our soup, our grits, our sustenance, so it's pretty much the go-to for breakfast. For the first time, I ate with a bunch of other Taiwanese-Chinese kids my age who knew what the hell they were doing. Even at Chinese school, there were always kids that brought hamburgers, shunned chopsticks, or didn't get down with the funky shit. They were like faux-bootleg-Canal Street Chinamen.
That was one of the things that really annoyed me about growing up Chinese in the States. Even if you wanted to roll with Chinese/Taiwanese kids, there were barely any around and the ones that were around had lost their culture and identity. They barely spoke Chinese, resented Chinese food, and if we got picked on by white people on the basketball court, everyone just looked out for themselves. It wasn't that I wanted people to carry around little red books to affirm their "Chinese-ness," but I just wanted to know there were other people that wanted this community to live on in America. There was on kid who wouldn't eat the thousand-year-old eggs at breakfast and all the other kids started roasting him.

I was down with the mob, but something left me unsettled. One thing ABCs love to do is compete on "Chinese-ness," i.e., who will eat the most chicken feet, pig intestines, and have the highest SAT scores. I scored high in chick feet, sneaker game, and pirated good, but relatively low on the SAT. I had made National Guild Honorable Mention for piano when I was around twelve and promptly quit. My parents had me play tennis and take karate, but ironically, I quit tennis two tournaments short of being ranked in the state of Florida and left karate after getting my brown belt. The family never understood it, but I knew what I was doing. I didn't want to play their stupid Asian Olympics, but I wanted to prove to myself that if I did want to be the stereotypical Chinaman they wanted, I could. (189)

The whole problem is further complicated by the fact that there were two distinct musical units on the Titanic, not just a single eight-piece orchestra, as is generally assumed. What I was experiencing at that moment wasn't an out-of-body experience. It was an in-another-body experience. Everything but this man and me had faded into darkness. He and I were at the two ends of a brightly lit tunnel. We were point A and point B. The tunnel was the most direct, straight-line route between the two points. I had never experienced recognition in this pure, undiluted form. It was a mirroring. It was a fact. It was a cord pulled taut between us. Most of all, it was no longer a secret.
I don't remember getting up, but I must have. I do remember kneeling in front of the TV. I touched the image of Mr. Roland's face as his words jumped, swerved, coalesced, attacked, and revealed. As the interview continued, he became more comfortable with the interviewer, and his facial tics and rapid blinking lessened. He masked what he couldn't control by taking long sips from a glass of water (or perhaps the clear liquid was gin). He also turned his head slightly and coughed into his left hand, which provided him with a second or two of privacy. It soon became clear to Mr. Roland and to me that the interviewer wanted him to perform for the camera. After each question-and-answer exchange, the interviewer would ask him for the tastes of her words and then his. Mr. Roland was oddly obliging, much more so than I would have been in his position. I soon realized that his pool of experiential flavors, in other words his actual food intake, was very British and that he didn't venture far from home for his gastronomical needs. "Curry fries" was the most unusual taste that this piano tuner from Manchester listed. The word "employment" triggered it, he told the interviewer. I said "employment" aloud and tasted olives from a can, which meant I tasted more can than olives. I felt more than a tinge of envy.

Huyck proved to be an outstanding administrator and, despite his lack of experience, quickly achieved one of the board’s top priorities. By ensuring that the teachers, curriculum, and classroom offerings met the necessary educational standards, he earned official accreditation for the school, a certification that made it eligible for federal and state financial aid.9 Along with his academic duties, he made time to coach the school’s poultry-judging team, which—as the local press proudly noted—“won over six other teams from high schools in larger towns in a recent contest.”10 At the annual meeting of the Michigan State Teachers’ Association in November 1923, Emory was chosen as a delegate to the general assembly and helped draft a resolution calling for the strict enforcement of the Volstead Act—formally known as the National Prohibition Act—“not only to prevent production and consumption of alcoholic liquors, but also to teach the children respect for the law.”11 He was also a member of both the Masons, “the most prestigious fraternal organization in Bath’s highly Protestant community,”12 and the Stockman Grange, at whose annual meeting in January 1924 he served as toastmaster and delivered a well-received talk on “The Bean Plant and Its Relation to Life.”13 Perhaps unsurprisingly for a man with his military training, Huyck was something of a disciplinarian, demanding strict standards of conduct from both the pupils and staff. “At day’s end,” writes one historian, “students were required to march from the building to the tune of martial music played on the piano. During the day, students tiptoed in the halls.” When a pair of high-spirited teenaged girls “greeted their barely older teachers with a jaunty ‘Well, hello gals,’” they were immediately sent to the superintendent, who imposed a “penalty [of] individual conferences with those teachers and apologies to them.”14
