A few decades ago, a woman tried to sue a butter company that had printed the word 'LITE' on its product's packaging. She claimed to have gained so much weight from eating the butter, even though it was labeled as being 'LITE'. In court, the lawyer representing the butter company simply held up the container of butter and said to the judge, "My client did not lie. The container is indeed 'light in weight'. The woman lost the case.
In a marketing class in college, we were assigned this case study to show us that 'puffery' is legal. This means that you can deceptively use words with double meanings to sell a product, even though they could mislead customers into thinking your words mean something different. I am using this example to touch upon the myth of organic foods. If I was a lawyer representing a company that had labeled its oranges as being organic, and a man was suing my client because he found out that the oranges were being sprayed with toxins, my defense opening statement would be very simple: "If it's not plastic or metallic, it's organic."
Most products labeled as being organic are not really organic. This is the truth. You pay premium prices for products you think are grown without chemicals, but most products are. If an apple is labeled as being organic, it could mean two things. Either the apple tree itself is free from chemicals, or just the soil. One or the other, but rarely both. The truth is, the word 'organic' can mean many things, and taking a farmer to court would be difficult if you found out his fruits were indeed sprayed with pesticides. After all, all organisms on earth are scientifically labeled as being organic, unless they are made of plastic or metal. The word 'organic' comes from the word 'organism', meaning something that is, or once was, living and breathing air, water and sunlight.
So, the next time you stroll through your local supermarket and see brown pears that are labeled as being organic, know that they could have been third-rate fare sourced from the last day of a weekend market, and have been re-labeled to be sold to a gullible crowd for a premium price. I have a friend who thinks that organic foods have to look beat up and deformed because the use of chemicals is what makes them look perfect and flawless. This is not true. Chemical-free foods can look perfect if grown in your backyard. If you go to jungles or forests untouched by man, you will see fruit and vegetables that look like they sprouted from trees from Heaven. So be cautious the next time you buy anything labeled as 'organic'. Unless you personally know the farmer or the company selling the products, don't trust what you read. You, me, and everything on land and sea are organic.

He was delicious, the taste of his mouth clean and sweet, the feel of his lean, solid body immeasurably exciting. Her lungs expanded with shaky-hot breaths, restrained by the clench of her corset stays, and she broke the kiss with a gasp.
“I can’t breathe.”
Wordlessly Marcus turned her around and unfastened the gown. Reaching her corset, he untied the laces and loosened them with a series of expert tugs, until the stays expanded and Lillian gulped in relief. “Why did you lace so tightly?” she heard him ask.
“Because the dress wouldn’t fasten otherwise. And because, according to my mother, Englishmen prefer their women to be narrow-waisted.”
Marcus snorted as he eased her back to face him. “Englishmen prefer women to have larger waists in lieu of fainting from lack of oxygen. We’re rather practical that way.” Noticing that the sleeve of her unfastened gown had slipped over her white shoulder, he lowered his mouth to the smooth curve.

And the trees all had names.

Turning and climbing, the double helix evolved to an operation which had always existed as a possibility for mankind, the eating of light. The appetite for light was ancient. Light had been eaten metaphorically in ritual transubstantiations. Poets had declared that to be is to be a variable of light, that this peach, and even this persimmon, is light. But the peach which mediated between light and the appetite for light interfered with the taste of light, and obscured the appetite it aroused.
The appetite for actual light was at first appeased by symbols. But the simple instruction, promulgated during the Primordification, to taste the source of the food in the food, led to the ability to eat light. Out of the attempt to taste sources came the ability to detect unpleasant chemicals. These had to be omitted. Eaters learned to taste the animal in the meat, and the animal's food and drink, and to taste the waters and sugars in the melon. The discriminations grew finer - children learned to eat the qualities of the pear as they ate its flesh, and to taste its slow ripening in autumn sunlight. In the ripeness of the orange they recapitulated the history of the orange. Two results occurred. First, the children were quick to surpass the adults, and with their unspoiled tastes, and their desire for light, they learned the flavor of the soil in which the blueberry grew, and the salty sweetness of the plankton in the sea trout, but they also became attentive to the taste of sunlight. Soon there were attempts to keep fruit of certain vintages: the pears of a superbly comfortable autumn in Anjou, or the oranges of Seville from a year so seasonless that their modulations of bouquet were unsurpassed for decades. Fruit was eaten as a retrospective of light. Second, children of each new generation grew more clearly, until children were shaped as correctly as crystals. On account of their puny size and disappointing taste, in France wild pears are known as "poires d'angoisse" or pears of anguish. In Versailles, though, in the kitchen garden, pears are bred for pleasure. Of the five hundred pear trees, the best usually fruit in January--- the royal favorite, a type called "Bon Chrétien d'Hiver," or "Good Christian of Winter." Each pear is very large--- the blossom end engorged, the eye deeply sunk--- whilst the skin is a finely grained pale yellow, with a red blush on the side that has been touched by the sunlight. It is known for its brittle, lightly scented, almost translucent flesh that drips with a sugary juice; that soaks your mouth when your teeth sink into it. The gardener here, Jean-Baptiste de La Quintinie, says that when a pear is ripe its neck yields to the touch and smells slightly of wet roses.
This winter they have not ripened, though, but have frozen to solid gold. Murders of crows sit on the branches of the pear trees, pecking at the rime of them. They have become fairy fruit; those dangling impossibilities. What would you give to taste one?
Spring always comes, though. Is it not magic? The world's deep magic.
March brings the vast respite of thaw, that huge unburdening, that gentling--- all winter's knives and jaws turning soft and blunt; little chunks of ice riding off on their own giddy melt; everything dripping and plipping and making little streams and rivulets; tender pellucid fingers feeling their way towards the sea; all the tiny busywork.
And with the returning sun, too, sex. Tulips, first found as wild flowers in Central Asia--- named for the Persian word "tulipan," for turban--- thrust and bow in the warm soil of Versailles, their variegated "broken" petals licked with carmine flames. The early worm-catchers begin their chorus, skylarks and song thrushes courting at dawn. Catkins dangle like soft, tiny pairs of elven stockings. Fairy-sized wigs appear on the pussy willows. Hawthorn and sloe put on their powder and patches, to catch a bee's eye.

That night, Marjan dreamt of Mehregan.
The original day of thanksgiving, the holiday is celebrated during the autumn equinox in Iran.
A fabulous excuse for a dinner party, something that Persians the world over have a penchant for, Mehregan is also a challenge to the forces of darkness, which if left unheeded will encroach even on the brightest of flames.
Bonfires and sparklers glitter in the evening skies on this night, and in homes across the country, everyone is reminded of their blessings by the smell of roasting 'ajil', a mixture of dried fruit, salty pumpkin seeds, and roasted nuts. Handfuls are showered on the poor and needy on Mehregan, with a prayer that the coming year will find them fed and showered with the love of friends and family.
In Iran, it was Marjan's favorite holiday. She even preferred it to the bigger and brasher New Year's celebrations in March, anticipating the festivities months in advance. The preparations would begin as early as July, when she and the family gardener, Baba Pirooz, gathered fruit from the plum, apricot, and pear trees behind their house. Along with the green pomegranate bush, the fruit trees ran the length of the half-acre garden.
Four trees deep and rustling with green and burgundy canopies, the fattened orchard always reminded Marjan of the bejeweled bushes in the story of Aladdin, the boy with the magic lamp. It was sometimes hard to believe that their home was in the middle of a teeming city and not closer to the Alborz mountains, which looked down on Tehran from loftier heights.
After the fruit had been plucked and washed, it would be laid out to dry in the sun. Over the years, Marjan had paid close attention to her mother's drying technique, noting how the fruit was sliced in perfect halves and dipped in a light sugar water to help speed up the wrinkling. Once dried, it would be stored in terra-cotta canisters so vast that they could easily have hidden both both young Marjan and Bahar. And indeed, when empty the canisters had served this purpose during their hide-and-seek games.

Lillian seemed rather too impressed by the information. “They do? That is the cleverest,
cleverest… a pear in its own little… oh no.”
“What?” Marcus asked through clenched teeth.
“My finger’s stuck.”
Marcus’s eyes flew open. Dumbfounded, he looked down at the sight of Lillian tugging on her imprisoned finger.
“I can’t get it out,” she said.
“Just pull at it.”
“It hurts. It’s throbbing.”

When her appetite was sated, Lillian set aside the empty plate and spoon, and turned to snuggle against him. He rose on one elbow and looked down at her, his fingers playing idly in her hair.

She gave him a puzzled smile. “Why would you ask such a thing? Surely you’re not having pangs of conscience.”
Marcus shook his head. “I am merely wondering if you had any regrets.”
Surprised and touched by his need for reassurance, Lillian toyed with the dark curls on his chest. “No,” she said frankly. “He is attractive, and I do like him… but I didn’t want him.”
“You did consider marrying him, however.”
“Well,” she admitted, “it did cross my mind that I would like to be a duchess— but only to spite you.”
A smile flashed across his face. He retaliated with a punishing nip at her breast, causing her to yelp. “I couldn’t have borne it,” he admitted, “seeing you married to anyone but me.”

Smiling at the compliment, Lillian crawled halfway over him and hitched one leg over his. “Tell me more. I want to hear you wax lyrical about my charms.”
Levering himself to a sitting position, Marcus lifted her with an ease that made her gasp, and settled her until she straddled his hips. He stroked a fingertip along the pale skin that was exposed at the open vee of the shirt. “I never wax lyrical,” he said. “Marsdens are not a poetic sort. However…” He paused to admire the sight of the long-limbed young woman who sat astride him while her hair trailed to her waist in tangled streamers. “I could at least tell you that you look like a pagan princess, with your tangled black hair and your bright, dark eyes.”

There was a bustle of people in the street as I made my way to La Bonbonnière, which is, quite simply, the most beautiful candy store in the world.

Back to my assignment: I needed two kinds of nougat: white soft nougat made with honey, almonds, and fluffy egg whites (the angel's part) and hard dark nougat--- more like honey almond brittle--- for the devil.
Where are the calissons d'Aix? There they are, hiding behind the cash register, small ovals of almond paste covered with fondant icing. Traditional calissons are flavored with essence of bitter almond, but I couldn't resist some of the more exotic variations: rose, lemon verbena, and génépi, an astringent mountain herb.
Though I love the tender chew of nougat and the pliant sweetness of marzipan, my favorite of the Provençal Christmas treats is the mendiant--- a small disk of dark or milk chocolate topped with dried fruit and nuts representing four religious orders: raisins for the Dominicans, hazelnuts for the Augustinians, dried figs for the Franciscans, and almonds for the Carmelites. When Alexandre is a bit older, I think we'll make these together. They seem like an ideal family project--- essentially puddles of melted chocolate with fruit and nut toppings. See, as soon as you say "puddles of melted chocolate," everyone's on board.
Though fruits confits--- candied fruit--- are not, strictly speaking, part of les trieze desserts, I can't resist. I think of them as the crown jewels of French confiserie, and Apt is the world capital of production. Dipped in sugar syrup, the fruits become almost translucent; whole pears, apricots, and strawberries glow from within like the gems in a pirate's treasure chest. Slices of kiwi, melon, and angelica catch the light like the panes of a stained-glass window. All the dazzling tastes of a Provençal summer, frozen in time.

I gazed up at her comforting presence. "I'll take the crumble, please."
After my laborious decision, I was relieved to discover I had been right to stick with my original intentions. Five minutes later, a generous slice of rhubarb-apple crumble arrived, warmed in the small kitchen and served with a side of fresh cream, whipped staunchly into a thick, puffy cloud. I sat for a minute, contemplating the crumble's imperfect bumps and dull brown color. The pale pink and sometimes green slices of rhubarb poked out of the sides and lumps of rouge topping decorated my plate. Where the crumble had baked against the dish, a sticky crust of caramelized fruit juice and sugar had formed. It looked like a tarte that had done a somersault in its pastry box and arrived bruised and battered. There was nothing perfect about it. Except its bright flavors. Except its comforting warmth. Except that it was exactly what I wanted and needed. I savored each juicy-crunchy bite. It was wonderful.

“Yes, you do. At the very least, you go out of your way to avoid enjoying something.”
By now Marcus was becoming accustomed to the unique mixture of lust and amusement that she always managed to arouse in him. “There’s nothing wrong with keeping one’s enjoyments private.”
Dropping the book in her hands, Lillian turned to face him. The abruptness of the movement resulted in a sharp wobble, and she swayed back against the shelves even as he moved to steady her with his hands at her waist. Her tip-tilted eyes sparkled like an array of diamonds scattered over brown velvet. “It has nothing to do with privacy,” she informed him. “The truth is that you don’t want to be happy, bec—” She hiccupped gently. “Because it would undermine your dignity. Poor Wes’cliff.”
She regarded him compassionately. At the moment, preserving his dignity was the last thing on Marcus’s mind. He grasped the frame of the bookcase on either side of her, encompassing her in the half circle of his arms. As he caught a whiff of her breath, he shook his head and murmured, “Little one…what have you been drinking?”
“Oh…” She ducked beneath his arm and careened to the sideboard a few feet away. “I’ll show you…wonderful, wonderful stuff…this.” Triumphantly she plucked a nearly empty brandy bottle from the edge of the sideboard and held it by the neck. “Look what someone did…a pear, right inside! Isn’ that clever?” Bringing the bottle close to her face, she squinted at the imprisoned fruit. “It wasn’ very good at first. But it improved after a while. I suppose it’s an ac”—another delicate hiccup— “acquired taste.”
“It appears you’ve succeeded in acquiring it,” Marcus remarked, following her.
“You won’ tell anyone, will you?”
“No,” he promised gravely. “But I’m afraid they’re going to know regardless. Unless we can sober you in the next two or three hours before they return. Lillian, my angel…how much was in the bottle when you started?”
Showing him the bottle, she put her finger a third of the way from the bottom. “It was there when I started. I think. Or maybe there.” She frowned sadly at the bottle. “Now all that’s left is the pear.” She swirled the bottle, making the plump fruit slosh juicily at the bottom. “I want to eat it,” she announced.

We all know that all these things are covered in germs and can cause gum infections, stomach bug, and allergies. Keep a close eye on your baby and disinfect their toys by boiling them in hot water every night. If you are putting the baby down for a nap or for some alone time, clean their hands and feet with wipes, so there are no germs on them.

Taking his knife, Karim carved a sickle moon from the seaweed-green melon, exposing, almost indecently, the melon's flesh, creamy as magnolia. In the middle, a tightly packed jelly-ball of seeds-- unlike watermelons, which have their seeds scattered throughout-- managed to hold its form despite the cut. From this strange melon came a uniquely robust fruitiness, mixing overripe pear with Bourbon vanilla. He held up the melon proudly, an example of the fruit in its prime, the cross-section of its seed house, glistening in the sunshine. In Uzbekistan it is the trader who decides when a melon is ready. There are no stickers ordering the buyer to 'ripen at home'.
He handed me the slithery wedge and I tried to unpick the flavors as grievous wasps landed drunkenly on the scattered rinds. First, sherbet. Then a little honey mixed with almond extract and, finally, pineapple and the smoothness of rum.
