For years, exercise scientists have been convinced that the only way to increase mitochondrial density is with aerobic endurance training, but recent studies have proved otherwise. Not only is an increase in the size and number of mitochondria a proven adaptation to HIIT, but the mitochondrial benefit of HIIT goes way beyond size and number. For example, all your mitochondria contain oxidative enzymes, such as citrate synthase, malate dehydrogenase, and succinate dehydrogenase. These oxidative enzymes lead to improved metabolic function of your skeletal muscles—particularly by causing more effective fat and carbohydrate breakdown for fuel and also by accelerating energy formation from ATP. So more oxidative enzymes means that you have a higher capacity for going longer and harder. And it turns out that, according to an initial study on the effect of HIIT on oxidative enzymes, there were enormous increases in skeletal muscle oxidative enzymes in seven weeks in subjects who did four to ten thirty-second maximal cycling sprints followed by four minutes of recovery just three days a week. But what about HIIT as opposed to aerobic cardio? Another six-week training study compared the increase in oxidative enzymes that resulted from either: 1. Four to six thirty-second maximal-effort cycling sprints, each followed by four-and-a-half minutes of recovery, performed three days a week (classic HIIT training) or 2. Forty to sixty minutes of steady cycling at 65 percent VO2 max (an easy aerobic intensity) five days a week The levels of oxidative enzymes in the mitochondria in subjects who performed the HIIT program were significantly higher—even though they were training at a fraction of the volume of the aerobic group. How could this favorable endurance adaptation happen with such short periods of exercise? It turns out that the increased mitochondrial density and oxidative-enzyme activity from HIIT are caused by completely different message-signaling pathways than those created by traditional endurance training.

She tried mouth taping instead. “The first night, I lasted five minutes before I ripped it off,” she told me. On the second night, she was able to tolerate the tape for ten minutes. A couple of days later, she slept through the night. Within six weeks, her nose opened up. “It’s a classic example of use it or lose it,” Kearney said. To prove her claim, she examined the noses of 50 patients who had undergone laryngectomies, a procedure in which a breathing hole is cut into the throat. Within two months to two years, every patient was suffering from complete nasal obstruction. Like other parts of the body, the nasal cavity responds to whatever inputs it receives. When the nose is denied regular use, it will atrophy. This is what happened to Kearney and many of her patients, and to so much of the general population. Snoring and sleep apnea often follow.

The world’s most celebrated religions teach people that the world around us, our environment, is sacred. A diet rooted in anymal products is exponentially more harmful to the earth than is a plant-based diet. Seventy percent more land must be cultivated in order to raise anymals for food than would be necessary for a vegan diet. This means that 70 percent more land is taken away from natural ecosystems to produce flesh, nursing milk, and bird’s reproductive eggs for consumption, and this land that is necessary for a diet rich in anymal products will be sprayed with pesticides and earth-damaging fertilizers. These additional crops—70 percent more—also need to be irrigated, using exponentially more water. Anymals exploited by food industries also drink millions of gallons of water and drop millions of tons of manure. Finally, raising animals for flesh contributes significantly to carbon dioxide, nitrous oxides, chlorofluorocarbons, and methane—global climate change.

CARAMELIZATION Sugars oxidize when heated, giving them a golden brown color and a nutty flavor. Any food that contains sugar can be caramelized, making caramelization an important technique in everything from French cooking to dessert making. "I started out by heating the honey until it was good and caramelized. Then I added some balsamic vinegar to stretch it and give it a little thickness. Once that was done, I poured it over some diced onions and garlic that I'd sautéed in another pan, added some schisandra berries and then let it simmer. After it had reduced, I poured bear stock over it and seasoned it with a little salt... The result was a deep, rich sauce perfect for emphasizing the natural punch of my Bear-Meat Menchi Katsu!" What a splendid idea pairing honey with bear meat, each accentuating the other... ... then using caramelization and balsamic vinegar to mellow it to just the right level. It's a masterful example of using both flavor subtraction and enhancement in the same dish!

The beauty of Mars exists in the human mind. without the human presence it is just a concatenation of atoms, no different than any other random speck of matter in the universe. It's we who understand it, and we who give it meaning. All our centuries of looking up at the night sky and watching it wander through the stars. All those nights of watching it through the telescopes, looking at a tiny disk trying to see canals in the albedo changes. All those dumb sci-fi novels with their monsters and maidens and dying civilizations. And all the scientists who studied the data, or got us here. That's what makes Mars Beautiful. Not the basalt and the oxides. Now that we are here, it isn't enough to just hide under ten meters of soil and study the rock. That's science, yes, and needed science too. But science is more than that. Science is part of a larger human enterprise, and that enterprise includes going to the stars, adapting to other planets, adapting them to us. Science is creation. The lack of life here, and the lack of any finding in fifty years of the SETI program, indicates that life is rare, and intelligent life even rarer. And yet the whole meaning of the universe, its beauty, is contained in the consciousness of intelligent life. We are the consciousness of the universe, and our job is to spread that around, to go look at things, to live everywhere we can. It's too dangerous to keep the consciousness of the universe on only one planet, it could be wiped out. And so now we're on two, three if you count the moon. And we can change this one to make it safer to live on. Changing it won't destroy it. Reading its past might get harder, but the beauty of it won't go away. If there are lakes, or forests, or glaciers, how does that diminish Mars beauty? I don't think it does. I think it only enhances it. It adds life, the most beautiful system of all. But nothing life can do will bring Tharsis down, or fill Marineris. Mars will always remain Mars, different from Earth, colder and wilder. But it can be Mars and ours at the same time. And it will be. There is this about the human mind; if it can be done, it will be done. We can transform Mars and build it like you would build a cathedral, as a monument to humanity and the universe both. We can do it, so we will do it. So, we might as well start.

claque, aka canned laughter It’s becoming increasingly clear that there’s nothing new under the sun (a heavenly body, by the way, that some Indian ascetics stare at till they go blind). I knew that some things had a history—the Constitution, rhythm and blues, Canada—but it’s the odd little things that surprise me with their storied past. This first struck me when I was reading about anesthetics and I learned that, in the early 1840s, it became fashionable to hold parties where guests would inhale nitrous oxide out of bladders. In other words, Whip-it parties! We held the exact same kind of parties in high school. We’d buy fourteen cans of Reddi-Wip and suck on them till we had successfully obliterated a couple of million neurons and face-planted on my friend Andy’s couch. And we thought we were so cutting edge. And now, I learn about claque, which is essentially a highbrow French word for canned laughter. Canned laughter was invented long before Lucille Ball stuffed chocolates in her face or Ralph Kramden threatened his wife with extreme violence. It goes back to the 4th century B.C., when Greek playwrights hired bands of helpers to laugh at their comedies in order to influence the judges. The Romans also stacked the audience, but they were apparently more interested in applause than chuckles: Nero—emperor and wannabe musician—employed a group of five thousand knights and soldiers to accompany him on his concert tours. But the golden age of canned laughter came in 19th-century France. Almost every theater in France was forced to hire a band called a claque—from claquer, “to clap.” The influential claque leaders, called the chefs de claque, got a monthly payment from the actors. And the brilliant innovation they came up with was specialization. Each claque member had his or her own important job to perform: There were the rieurs, who laughed loudly during comedies. There were the bisseurs, who shouted for encores. There were the commissaires, who would elbow their neighbors and say, “This is the good part.” And my favorite of all, the pleureuses, women who were paid good francs to weep at the sad parts of tragedies. I love this idea. I’m not sure why the networks never thought of canned crying. You’d be watching an ER episode, and a softball player would come in with a bat splinter through his forehead, and you’d hear a little whimper in the background, turning into a wave of sobs. Julie already has trouble keeping her cheeks dry, seeing as she cried during the Joe Millionaire finale. If they added canned crying, she’d be a mess.

You've had hot coffee before, and in the hands of a skilled maker, coffee can be amazing. But the fact is that coffee is one of the hardest things to get right in the world. Even with great beans and a great roast and great equipment, a little too much heat, the wrong grind, or letting things go on too long will produce a cup of bitterness. Coffee's full of different acids, and depending on the grind, temperature, roast, and method, you can "overextract" the acids from the beans, or overheat them and oxidize them, producing that awful taste you get at donut shops and Starbucks. But there is Another Way. If you make coffee in cold water, you only extract the sweetest acids, the highly volatile flavors that hint at chocolate and caramel, the ones that boil away or turn to sourness under imperfect circumstances. Brewing coffee in cold water sounds weird, but in fact, it's just about the easiest way to make a cup (or a jar) of coffee. Just grind coffee -- keep it coarse, with grains about the size of sea salt -- and combine it with twice as much water in an airtight jar. Give it a hard shake and stick it somewhere cool overnight (I used a cooler bag loaded with ice from ice camp and wrapped the whole thing in bubble wrap for insulation). In the morning, strain it through a colander and a paper coffee filter. What you've got now is coffee concentrate, which you can dilute with cold water to taste -- I go about half and half. If you're feeling fancy, serve it over ice.

The neighborhood of Indian Village lay just twelve blocks west of Hurlbut, but it was a different world altogether. The four grand streets of Burns, Iroquois, Seminole, and Adams (even in Indian Village the White Man had taken half the names) were lined with stately houses built in eclectic styles. Red-brick Georgian rose next to English Tudor, which gave onto French Provincial. The houses in Indian Village had big yards, important walkways, picturesquely oxidizing cupolas, lawn jockeys (whose days were numbered), and burglar alarms (whose popularity was only just beginning). My grandfather remained silent, however, as he toured his son’s impressive new home. “How do you like the size of this living room?” Milton was asking him. “Here, sit down. Make yourself comfortable. Tessie and I want you and Ma to feel like this is your house, too. Now that you’re retired—” “What do you mean retired?” “Okay, semiretired. Now that you can take it a little bit easy, you’ll be able to do all the things you always wanted to do. Look, in here’s the library. You want to come over and work on your translations, you can do it right here. How about that table? Big enough for you? And the shelves are built right into the wall.” Pushed out of the daily operations at the Zebra Room, my grandfather began to spend his days driving around the city. He drove downtown to the Public Library to read the foreign newspapers. Afterward, he stopped to play backgammon at a coffee house in Greektown. NATO paper: Modification of Tropospheric Propagation Conditions, detailed how the atmosphere could be modified to absorb electromagnetic radiation by spraying polymers behind high flying aircraft.  Absorbing microwaves transmitted by HAARP and other atmospheric heaters linked from Puerto Rico, Germany and Russia, these artificial mirrors could heat the air, inducing changes in the weather.  U.S. Patent # 4253190 describes how a mirror made of “polyester resin” could be held aloft by the pressure exerted by electromagnetic radiation from a transmitter like HAARP.   A PhD polymer researcher who wishes to remain anonymous told researcher William Thomas that if HAARP’s frequency output is matched to Earth’s magnetic field, its tightly beamed energy could be imparted to molecules “artificially introduced into this region.” This highly reactive state could then “promote polymerization and the formation of   new compounds,” he explained. Adding magnetic iron oxide powder to polymers exuded by many high flying aircraft can foster the heat generation needed to modify the weather.  Radio frequency absorbing polymers such as Phillips Ryton F 5 PPS are sensitive in the 1 50 MHz regime, HAARP transmits between two and 10 MHz.                  HAARP's U.S. Air Force and Navy sponsors claim that their transmitter will eventually be able to produce 3.6 million watts of radio frequency power. But on page 185 of an October 1991 “Technical Memorandum 195” outlining projected HAARP tests, there is a call by the ionospheric effects division of the U.S. Air Force Phillips Laboratory for HAARP to reach a peak power output of 100 billion watts. Dr. Lydia Ciarallo in the Department of Pediatrics, Brown University School of Medicine, treated thirty-one asthma patients ages six to eighteen who were deteriorating on conventional treatments. One group was given magnesium sulfate and another group was given saline solution, both intravenously. At fifty minutes the magnesium group had a significantly greater percentage of improvement in lung function, and more magnesium patients than placebo patients were discharged from the emergency department and did not need hospitalization.4 Another study showed a correlation between intracellular magnesium levels and airway spasm. The investigators found that patients who had low cellular magnesium levels had increased bronchial spasm. This finding confirmed not only that magnesium was useful in the treatment of asthma by dilating the bronchial tubes but that lack of magnesium was probably a cause of this condition.5 A team of researchers identified magnesium deficiency as surprisingly common, finding it in 65 percent of an intensive-care population of asthmatics and in 11 percent of an outpatient asthma population. They supported the use of magnesium to help prevent asthma attacks. Magnesium has several antiasthmatic actions. As a calcium antagonist, it relaxes airways and smooth muscles and dilates the lungs. It also reduces airway inflammation, inhibits chemicals that cause spasm, and increases anti-inflammatory substances such as nitric oxide.6 The same study established that a lower dietary magnesium intake was associated with impaired lung function, bronchial hyperreactivity, and an increased risk of wheezing. The study included 2,633 randomly selected adults ages eighteen to seventy. Dietary magnesium intake was calculated by a food frequency questionnaire, and lung function and allergic tendency were evaluated. The investigators concluded that low magnesium intake may be involved in the development of both asthma and chronic obstructive airway disease.
