But I needed to have both low risk and high returns, and by setting out on a mission to discover how I could, I learned to go slowly when faced with the choice between two things that you need that are seemingly at odds. That way you can figure out how to have as much of both as possible. No, for this to be great, you needed a good, aged, nutty Gruyère from what you couldn't help but imagine as the green grassy Alps of Switzerland, where the cows grazed lazily under a cheerful children's-book blue sky with puffy white clouds. Good Gruyère was blocked into rind-covered rounds and aged in caves before being shipped fresh to the USA with a whisper of fairy-tale clouds still lingering over it. There was a cheese shop downtown that sold the best she'd ever had. She'd tried it one afternoon when she was avoiding returning home. A spunky girl in a visor and an apron had perked up as she walked by the counter, saying, "Cheese can change your life!" The charm of her youthful innocence would have been enough to be cheered by, but the sample she handed out really did it. The taste was beyond delicious. It was good alone, but it cried out for ham or turkey or a rich beefy broth with deep caramelized onions for soup.

DOING SOMETHING It is so much easier to not do something than to do something. Even the smallest task, like filling out a Scholastic Books order form or putting away the butter, requires time, focus, and follow-through. It’s astounding, actually, that anything gets done at all, by anyone. But then, let’s say you finally are prepared and determined to do that thing, whatever it is, but you wake up to find that your basement has flooded and you must spend your day making phone calls to the contractor, plumber, and carpet people. Or not that but something else—perhaps you must stand before a committee for approval, a committee that neither grasps your intent nor appreciates your ingenuity, and anyway, they are in a bit of a hurry to break for lunch. Yet. Still. Somehow. I supposed that since real fairies weren't available, butterflies were the next best option. It was actually the perfect ending to this mythical ceremony, and everyone cheered in delight.

'The line was breaking,' Cassian retorted. 'Your order was bullshit.' Rhys braced his hands on either side of Cassian's legs and snarled in his face, 'I am your High Lord. You don't get to disregard orders you don't like.' Cassian sat up this time, swearing at the pain lingering in his body. 'Don't you pull rank because you're pissed off-' 'You and your damned theatrics on the battlefield nearly got you killed.' And even as Rhys spat the words- that was panic, again, in his eyes. His voice. 'I'm not pissed. I'm furious.' 'So you're allowed to be mad about our choices to protect you- and we're not allowed to be furious with you for your self-sacrificing bullshit?' Sometimes people’s diets take on a religiosity of their own. I remember a man once telling me that he could never “go plant based” because he could never give up his grandma’s chicken soup. Huh? Then don’t! After I asked him to say hello to his bubby for me, I told him that enjoying her soup shouldn’t keep him from making healthier choices the rest of the time. The problem with all-or-nothing thinking is that it keeps people from even taking the first steps. The thought of never having pepperoni pizza again somehow turns into an excuse to keep ordering it every week. Why not scale down to once a month or reserve it for special occasions? We cannot let the “perfect” be the enemy of the good. It’s really the day-to-day stuff that matters most. What you eat on special occasions is insignificant compared to what you eat day in and day out. So don’t beat yourself up if you really want to put edible bacon-flavored candles on your birthday cake. (I’m not making those up!40) Your body has a remarkable ability to recover from sporadic insults as long as you’re not habitually poking it with a fork.

Chicago deep dish takes forever to cook and costs as much as four New York–style pizzas. Chicago deep dish is a commitment. You arrive at Uno’s, Giordano’s, Gino’s East, or Lou Malnati’s and place your order, and then you wait and wait for what seems like a lifetime. At times it feels like they are purposely tormenting you to make the deep-dish pizza seem all the more appealing. I actually make a point of not showing up hungry when I go out for a Chicago deep-dish pizza. It would be torture. To kill time, you eat a salad with provolone, salami, and pepperoncini in it and drink a pitcher of beer like you are preparing yourself for some kind of long, difficult journey of waiting. Finally your pizza arrives in a pan carried by your server with some kind of clamp contraption that I’m pretty sure is the same one they use to shape molten glass. After the first slice you are full, and you should be. You’ve eaten roughly three pounds of food that is baked on top of a crispy, cake-like crust. There is never a reason to eat more than one slice of deep dish, but you forge on. The wait has built an enthusiasm and excitement in you that can’t be quelled by just one slice. Most humans stop after two slices, but I like to think of myself as a superhuman.

You have to pretend, when speaking to the ladies in the cake store, that the cake is for a friend, pretend that you’re giving a big party so you need the cake that serves twenty, and you sit at the kitchen table with this enormous and elaborate cake for twenty with your name written in fondant on the top, and you feel worse about yourself than you ever have in your life, but, after the sushi box has been thrown out and the stray drops of soy sauce have been wiped from the Formica table top and the dishes, what few there are, have been washed and put away because you have to hold on to some kind of order or you are lost altogether, you sit down and put a single candle on the cake you bought for yourself and light it and make a wish before blowing it out, and then you cut a big piece of the immense cake and you eat it and you sob as the too-sweet dessert goes into your mouth.
