The first thing you notice about New Orleans are the burying grounds - the cemeteries - and they're a cold proposition, one of the best things there are here. Going by, you try to be as quiet as possible, better to let them sleep. There are a lot of places I like, but I like New Orleans better. There's a thousand different angles at any moment. At any time you could run into a ritual honoring some vaguely known queen. Bluebloods, titled persons like crazy drunks, lean weakly against the walls and drag themselves through the gutter. Even they seem to have insights you might want to listen to. No action seems inappropriate here. The city is one very long poem. Gardens full of pansies, pink petunias, opiates. Flower-bedecked shrines, white myrtles, bougainvillea and purple oleander stimulate your senses, make you feel cool and clear inside. Everything in New Orleans is a good idea. Bijou temple-type cottages and lyric cathedrals side by side. Houses and mansions, structures of wild grace. Italianate, Gothic, Romanesque, Greek Revival standing in a long line in the rain. Roman Catholic art. Sweeping front porches, turrets, cast-iron balconies, colonnades- 30-foot columns, gloriously beautiful- double pitched roofs, all the architecture of the whole wide world and it doesn't move. All that and a town square where public executions took place. In New Orleans you could almost see other dimensions. There's only one day at a time here, then it's tonight and then tomorrow will be today again. Chronic melancholia hanging from the trees. You never get tired of it. After a while you start to feel like a ghost from one of the tombs, like you're in a wax museum below crimson clouds. Spirit empire. Wealthy empire. One of Napoleon's generals, Lallemaud, was said to have come here to check it out, looking for a place for his commander to seek refuge after Waterloo. He scouted around and left, said that here the devil is damned, just like everybody else, only worse. The devil comes here and sighs. New Orleans. Exquisite, old-fashioned. A great place to live vicariously. Nothing makes any difference and you never feel hurt, a great place to really hit on things. THE DIET-GO-ROUND LOW-CALORIE DIETS Diets began by limiting the number of calories consumed in a day. But restricting calories depleted energy, so people craved high-calorie fat and sugar as energizing emergency fuel. LOW-FAT DIETS High-calorie fats were targeted. Restricting fat left people hungry, however, and they again craved more fats and sugars. FAKE FAT Synthetic low-cal fats were invented. People could now replace butter with margarine, but without calories it didn’t deliver the energy and satisfaction people needed. They still craved real fat and sugar. THE DIET GO-ROUND GRAPEFRUIT DIETS Banking on the antioxidant and fat-emulsifying properties of grapefruit, dieters could eat real fat again, as long as they ate a grapefruit first. But even grapefruits were no match for the high-fat American diet. SUGAR BLUES The more America restricted fat in any way to lose weight, the more the body rebounded by storing fat, and craving and bingeing on fats and sugars. Sugar was now to blame! SUGAR FREE High-calorie sugars were replaced with no-calorie synthetic sweeteners. The mind was happy but the body was starving as diet drinks replaced meals. People eventually binged on excess calories from other sources, such as protein. HIGH-PROTEIN DIETS The new diet let people eat all the protein they wanted without noticing the restriction of carbs and sugar. Energy came from fat stores and dieters lost weight. But without carbs, they soon experienced low energy and craved and binged on carbs. HIGH-CARB DIETS Carb-craving America was ripe for high-carb diets. You could now lose weight and eat up to 80 percent carbs—but they had to be slow-burning, complex carbs. Fast-paced America was addicted to fast energy, however, and high-carb diets soon became high-sugar diets. LOW CHOLESTEROL The combination of sugar, fat, and stress raised cholesterol to dangerous levels. The solution: Reemphasize complex carbs and reduce all animal fats. Once again, dieters felt restricted and began craving and bingeing on fats and sugars. EXERCISE Diets weren’t working, so exercise became the cholesterol cure-all. It worked for a time, but people didn’t like to “work out.” Within 25 years, no more than 20 percent of Americans would do it regularly. VEGETARIANISM With heart disease and cancers on the rise, red meat was targeted. Vegetarianism came into fashion but was rarely followed correctly. People lived on pasta and bread, and blood sugars and energy levels went out of control. GRAZING High-carb diets were causing energy and blood sugar problems. If you ate every 2 hours, energy was propped up and fast-paced America could keep speeding. Fatigue became chronic fatigue, however, with depression and anxiety to follow. FOOD COMBINING By eating fats, proteins, and carbs separately, digestion improved and a host of digestive, energy, and weight problems were helped temporarily. But the rules for what you could eat together led to more frequent small meals. People eventually slipped back to their old ways and old problems. THE ZONE Aimed at fixing blood sugar levels, this diet balanced intake of proteins, fats, and carbs. It worked, but again restricted certain kinds of carbs, so it didn’t last, and America was again craving emergency fuel. COFFEE TO THE RESCUE Exhausted and with a million things to do, America turned to legal stimulants like coffee for energy. But borrowed energy must be paid back, and many are still living in debt. FULL CIRCLE Frustrated, America is turning to new crash diets and a wave of high-protein diets. It is time to break this man-made cycle with the simplicity of nature’s own 3-Season Diet. If you let nature feed you, you will not starve or crave anything.

He kept talking and all the people arose and commingled their voices in a mighty chorus, while the melodious strains floated on the zephyr breeze and reached my ears and seemed as a balm to the aching pains of my breaking heart. Then shouts of laughter, shrill screams, merry faces, sad-eyed spectators, some shouted, others rushed to the center and began dancing, shaking hands and general confusion reigned supreme. It was a sure-enough old fashion Methodist shouting meeting, but of course I did not know this. I thought it must be a new kind of a war dance, rain dance or some kind of a religious ceremony, so I rushed in, gave the Comanche yell, cleared several benches and landed in the midst of the revival. My manner of worship did not suit those white people and they stampeded, leaving me “monarch of all I surveyed.” I gave a few more whoops and a little dance anyway, and looked around to see what had become of all the council, and I saw the big medicine man tearing along with his coat tails flapping as he headed for my mother’s home. My people never permitted me to go to another Methodist revival until I could understand English and knew how to behave myself. True, I broke up the meeting that day, but I was just as earnest, just as fervent, just as candid and sincere as the most sanctified among them, only my mode did not conform to their theories. I have seen just as much earnestness and less hypocrisy among the Indians in their worship as I ever have seen since I came among the whites.

This point was driven home for me for the first time when I was traveling in Asia in 1978 on a trip to a forest monastery in northeastern Thailand, Wat Ba Pong, on the Thai-Lao border. I was taken there by my meditation teacher, Jack Kornfield, who was escorting a group of us to meet the monk under whom he had studied at that forest hermitage. This man, Achaan Chaa, described himself as a “simple forest monk,” and he ran a hundred-acre forest monastery that was simple and old-fashioned, with one notable exception. Unlike most contemporary Buddhist monasteries in Thailand, where the practice of meditation as the Buddha had taught had all but died out, Achaan Chaa’s demanded intensive meditation practice and a slow, deliberate, mindful attention to the mundane details of everyday life. He had developed a reputation as a meditation master of the first order. My own first impressions of this serene environment were redolent of the newly extinguished Vietnam War, scenes of which were imprinted in my memory from years of media attention. The whole place looked extraordinarily fragile to me. On my first day, I was awakened before dawn to accompany the monks on their early morning alms rounds through the countryside. Clad in saffron robes, clutching black begging bowls, they wove single file through the green and brown rice paddies, mist rising, birds singing, as women and children knelt with heads bowed along the paths and held out offerings of sticky rice or fruits. The houses along the way were wooden structures, often perched on stilts, with thatched roofs. Despite the children running back and forth laughing at the odd collection of Westerners trailing the monks, the whole early morning seemed caught in a hush. After breakfasting on the collected food, we were ushered into an audience with Achaan Chaa. A severe-looking man with a kindly twinkle in his eyes, he sat patiently waiting for us to articulate the question that had brought us to him from such a distance. Finally, we made an attempt: “What are you really talking about? What do you mean by ‘eradicating craving’?” Achaan Chaa looked down and smiled faintly. He picked up the glass of drinking water to his left. Holding it up to us, he spoke in the chirpy Lao dialect that was his native tongue: “You see this goblet? For me, this glass is already broken. I enjoy it; I drink out of it. It holds my water admirably, sometimes even reflecting the sun in beautiful patterns. If I should tap it, it has a lovely ring to it. But when I put this glass on a shelf and the wind knocks it over or my elbow brushes it off the table and it falls to the ground and shatters, I say, ‘Of course.’ But when I understand that this glass is already broken, every moment with it is precious.”5 Achaan Chaa was not just talking about the glass, of course, nor was he speaking merely of the phenomenal world, the forest monastery, the body, or the inevitability of death. He was also speaking to each of us about the self. This self that you take to be so real, he was saying, is already broken.

Recipe for March Wassail Drinking wassail is an ancient tradition. Dating back to Saxon times, the word itself comes from the greeting “wæs hæl”, roughly translated as “be you healthy”. In the counties of southern England renowned for cider production, drinking wassail originated as a bit of sympathetic magic to protect and encourage the apple trees to bear fruit. While wassail and other punches were very popular during Regency times, by the later part of the 19th-century, they had been largely supplanted by wines and other spirits. The Marches, however, care much more for their own pleasure than for what is fashionable. They serve their wassail the old-fashioned way, out of an enormous wooden bowl mounted in silver with a roasted apple garnish. Their wassail is, as tradition dictates, served quite hot and is deceptively alcoholic. Proceed with caution. Preheat oven to 350 degrees. Core a dozen small apples. (You will only need ten for the wassail, but leftover roasted apples are delicious with cream, yogurt, or ice cream.) Loosely spoon brown sugar into each apple place in a casserole dish with a small amount of water. Bake until tender, approximately 45 minutes. Meanwhile, gently warm 2 pints hard cider. (This is not available in the juice aisle of the grocery store. It is wonderfully alcoholic and tastes deeply of apples. You can find bottled varieties at wine and liquor stores, but the very best is fermented by apple farmers for their own use. Find one and befriend him. The Marches get their cider at the source from the Home Farm at Bellmont Abbey.) To the warming cider, add four cinnamon sticks, crushed with a mortar and pestle, and four pinches ground cloves. (In a bind, ½ teaspoon ground cinnamon may be substituted for the sticks.) Grate in fresh ginger and fresh nutmeg to taste. Lord March’s secret ingredient is a cup of his very best port, added just in time to heat through. When the apples are plump and bursting from their skins, remove them from the oven. Put one into a heatproof punch glass and ladle the wassail over. The March family recipe calls for a garnish of a fresh cinnamon stick for each glass. This recipe will serve six Marches or ten ordinary folk.

On our trip from Atlanta to San Diego we had a stopover in Dallas at Love Field. There’s a huge statue of a Texas Ranger in the terminal and it’s inscribed: “One Riot, One Ranger.” It reminded me of an incident when I was playing baseball in Amarillo. There were about five or six players having a drink at a table in the middle of this large, well-lit bar, all of us over twenty-one. Suddenly, through the swinging doors—Old West fashion—come these four big Texans, ten-gallon hats, boots, spurs, six-shooters holstered at their sides, the works. They stopped and looked around and all of a sudden everybody in the place stopped talking. I wouldn’t have been surprised if one of them said, “All right, draw!” They spotted us ballplayers and sauntered over, all four of them, spurs jangling, boots creaking, all eyes on them. “Let me see your IDs, boys,” one of them says. I don’t know what got into me, but I had to say—I had to after that entrance—to these obvious Texas Rangers, “First I’d like to see your identification.” I said it loud. He rolled his eyes up into his head in exasperation and very slowly and reluctantly he reached for his wallet, opened it and showed me his badge and identification card. I gave them a good going over. I mean a 20-second check, looking at the photo and then up at him. Then I said, “He’s okay, men.” Then, of course, we all whipped out our IDs, which showed we were all over twenty-one, and the Texas Rangers turned around and walked out, creaking and jangling. We laughed about that for weeks. I find it curious that of all the things Dallas could have chosen to glorify in the airport, it chose law enforcement. The only thing I know about Dallas law enforcement is that its police department allowed a lynching to occur on national television. Maybe the statue should have been of a group of policemen at headquarters, with an inscription that read: “One Police Department, One Lynching.

Embury was the first true cocktailian of the modern age, and he took time to analyze the components of a cocktail, breaking them down into a base (usually a spirit, it must be at least 50 percent of the drink); a modifying, smoothing, or aromatizing agent, such as vermouth, bitters, fruit juice, sugar, cream, or eggs; and “additional special flavoring and coloring ingredients,” which he defined as liqueurs and nonalcoholic fruit syrups. Embury taught us that the Ramos Gin Fizz must be shaken for at least five minutes in order to achieve the proper silky consistency, suggested that Peychaud’s bitters be used in the Rob Roy, and noted that “for cocktails, such as the Side Car, a three-star cognac is entirely adequate, although a ten-year-old cognac will produce a better drink.” In the second edition of his book, Embury mentioned that he had been criticized for omitting two drinks from his original work: the Bloody Mary, which he described as “strictly vile,” and the Moscow Mule, as “merely mediocre.” On the subject of Martinis, he explained that although most cocktail books call for the drink to be made with one-third to one-half vermouth, “quite recently, in violent protest of this wishy-washy type of cocktail, there has sprung up the vermouth-rinse method of making Martinis.” He describes a drink made from chilled gin in a cocktail glass coated in vermouth. Embury didn’t approve of either version, and went on to say that a ratio of seven parts gin to one part vermouth was his personal favorite. While Embury was taking his drinking seriously, many Americans were quaffing Martinis by the pitcher, and Playboy magazine commissioned cocktail maven Thomas Mario and, later, Emanuel Greenberg to deliver cocktail news to a nation of people who drank for fun, and did it on a regular basis. Esquire magazine issued its Handbook for Hosts as early as 1949, detailing drinks such as the Sloe Gin Fizz, the Pan American, the “I Died Game, Boys” Mixture, and the Ginsicle—gin with fruit juice or simple syrup poured over chipped ice in a champagne glass. A cartoon in the book depicts a frustrated bartender mopping his fevered brow and exclaiming, “She ordered it because it had a cute name.” The world of cocktails was tilting slightly on its axis, and liquor companies lobbied long and hard to get into the act. In the fifties, Southern Comfort convinced us to make Comfort Manhattans and Comfort Old-Fashioneds by issuing a booklet: How to Make the 32 Most Popular Drinks. It is a stately plant when in tall flower in June; my sister had great clumps of bloom like the ones shown above, but alas! the cats caught them before the photographer did. The cats did not have to watch the wind and sun and rain, to pick out plates and pack plate-holders, and gather ray-fillers and cloth and lens, and adjust the tripod, and fix the camera and focus, and think, and focus, and think, and then wait—till the wind ceased blowing. So when they found it, they broke down every slender stalk and rolled in it till the ground was tamped down as hard as if one of our lazy road-menders had been at it. Like its creator, this work is not perfect, but it is full of joy, gratitude, and love, because of you. Ladies and gentlemen, I dedicate this work to the woman who showed me what it means to be loved and love in return: Ellen, Baroness Roxbury, whom I hope soon to convince to be my lady wife. These modest tunes and all I have of value, Ellen, are dedicated to you.” He turned in the ensuing beats of silence, raised his baton, and let the music begin. Ellen was in tears before the first movement concluded. The piece began modestly, like an old-fashioned sonata di chiesa, the long slow introduction standing alone as its own movement. Two flutes began it, playing about each other like two butterflies on a sunbeam, but then broadening, the melody shifting from sweet to tender to sorrowful. She heard in it grief and such unbearable, unresolved longing, she wanted to grab Val’s arm to make the notes stop bombarding her aching heart. But the second movement marched up right behind that opening, full of lovely, laughing melodies, like flowers bobbing in a summer breeze. This movement was full of song and sunshine; it got the toes tapping and left all manner of pretty themes humming around in the memory. My gardens, Ellen thought. My beautiful sunny gardens, and Marmalade and birds singing and the Belmont brothers laughing and racing around. The third movement was tranquil, like the sunshine on the still surface of the pond, like the peace after lovemaking. The third movement was napping entwined in the hammock, and strolling home hand in hand in the moonlight. She loved the third movement the best so far, until it romped into a little drinking song, that soon got away from itself and became a fourth movement full of the ebullient joy of creation at its most abundant and beautiful. The joy of falling in love, Ellen thought, clutching her handkerchief hard. The joy of being in love and being loved the way you need to be. Ah, it was too much, and it was just perfect as the music came to a stunning, joyous conclusion.

Piña Colada Cheesecake This tropical twist on my mother’s old-fashioned cheesecake was a hit at cruiser gatherings. For the crust 1 cup graham cracker crumbs 1⁄2 cup sweetened shredded coconut 1⁄3 cup melted butter For the filling 11⁄2 pounds cream cheese, softened 2⁄3 cup sugar 4 eggs 3 tablespoons dark rum 1 cup sour cream 3⁄4 cup cream of coconut (see Tips, below) 2⁄3 cup well-drained crushed pineapple (about 1 19-oz can) 1. Preheat oven to 350°F. 2. To make the crust, combine graham cracker crumbs and coconut with melted butter. Press into the bottom of a 10-inch springform pan. Bake for 10 minutes until lightly browned. Set aside to cool while you make the filling. 3. To make the filling, beat cream cheese and sugar until smooth. Add eggs one at a time, beating until blended. Mix in rum, sour cream, cream of coconut, and well-drained pineapple. 4. Spread evenly on prepared crust and bake about 50–60 minutes on middle rack of preheated oven, until edges are set and center moves just slightly when you shake the pan. 5. Run a knife around the inside of pan to loosen cheesecake. Allow cake to cool completely on a wire rack. Cover and refrigerate until well chilled or overnight. Remove from springform pan before serving. Serves 16 Tips • Garnish the cheesecake with slices of tropical fruit, such as fresh pineapple or mango. • Don’t confuse cream of coconut with coconut milk or coconut cream. TIME: 5 MINUTES SERVES: 1 1 sprig rosemary, plus a short sprig for garnish 1½ ounces gin ½ ounce Cocchi Americano 1 ounce fresh lemon juice ¾ ounce Simple Syrup 1 ounce soda water 4 shakes cardamom bitters Strip of lemon peel, for garnish Fill an old-fashioned glass with ice and set aside. Combine the rosemary sprig, gin, Cocchi Americano, lemon juice, and simple syrup with ice in a cocktail shaker. Shake vigorously. Strain into the ice-filled glass. Top with the soda water and add the bitters. Position the rosemary sprig and lemon peel vertically in the glass. Serve and enjoy.

Iris's favorite cat cafe is Nekorobi, in the Ikebukuro neighborhood. When I first heard about cat cafes, I imagined something like Starbucks with a cat on your lap. Wrong. Nekorobi is what you'd get if you asked a cat-obsessed kid to draw a floorplan of her dream apartment: a bathroom, a drink vending machine(free with admission), a snack table, video games, and about ten cats and their attendant toys, scratching posts, beds, and climbing structures. Oh, and the furniture is in the beanbag chic style. Considering all the attention they get, the cats were amazingly friendly, and I'd never seen such a variety of cat breeds up close. (Nor have I ever spent more than ten seconds thinking about cat breeds.) My favorite was a light gray cat with soft fur, which curled up and slept near me while I sat on a beanbag and read a book. Iris made the rounds, drinking a bottomless cup of the vitamin-fortified soda C.C. Lemon and making sure to give equal time to each cat, including the flat-faced feline that looked like it had beaned with a skillet in old-timey cartoon fashion.
