The first part of the recipe—bacon, leeks, and oatmeal—can be prepared ahead. It is better to add the milk and half-and-half at the last moment, however, for a fresher, cleaner-tasting soup. Finishing the soup with both milk and half-and-half is best, although using milk only is fine. 6 slices bacon (6 to 7 ounces), preferably maple- or honey-cured 2 small leeks, trimmed, with most of the green left on, sliced thin, and washed (2½ cups) 5 cups water 1 cup Irish coarse oatmeal 1½ teaspoons salt (less if bacon is highly salted) 1 cup half-and-half 1 cup milk ½ teaspoon freshly ground black pepper Arrange the bacon on a microwave oven tray, cover with paper towels, and cook on full power for about 4 minutes, or until the slices are crisp and brown. Reserve about 2 tablespoons of the bacon fat, and transfer the bacon to a cutting board. Cut the bacon into ½-inch pieces, and set it aside. Put the reserved bacon fat in a saucepan. Add the sliced leeks, and cook over medium heat for 5 to 6 minutes, until softened. Add the water, and bring to a boil. Add the oatmeal and salt, stir, and bring to a boil. Reduce the heat to very low, cover (with the lid placed slightly ajar, so the oatmeal doesn’t boil over), and cook gently for 25 to 30 minutes, or until the oatmeal is tender. Breakfast of Champions 5 fried egg whites ½ cup cooked old-fashioned oatmeal 5 or 6 strawberries ½ teaspoon brown sugar (optional) Cut up the fried egg whites and mix with the oatmeal in a small bowl. Top with the berries and brown sugar (if using).

Apple Cinnamon Oatmeal Pecan Crunch 1 cup steel-cut oatmeal 2 ½ cups water 1 ½ cups unsweetened vanilla almond milk 1 cup chopped apple 1 tablespoon maple syrup/ desired sweetener 1 ½ teaspoons ground cinnamon ½ teaspoon vanilla extract 1 handful of pecans Spray the inside of a slow cooker with cooking spray and add all of the ingredients except the pecans. Cook on low overnight for about 9 hours (I start it at about 9 p.m. for a 6 a.m. breakfast). Top with pecans before serving. Note: Use your favorite nut as a topper—they’ll all add that crunch factor!
