A scowling Vanian showed them how to make the airy-light manchet bread that the upper servants ate, then the pastes for meat-coffins and pie crusts. They baked flaking florentine rounds and set them with peaches in snow-cream or neats' tongues in jelly. They stood over the ovens to watch cat's tongue biscuits, waiting for the moment before they browned. John mixed the paste for dariole-cases, working the mixture with his fingertips, then filled them with sack creams and studded them with roasted pistachio nuts. In the fish house across the servants' yard, the two boys scaled and cleaned the yellow-green carp from the Heron Boy's ponds, unpacked barrels of herrings and hauled sides of yellow salt-fish onto the benches and beat them with the knotted end of a rope.

Now alongside Scovell, John eased preserved peaches out of galliot pots of syrup and picked husked walnuts from puncheons of salt. He clarified butter and poured it into rye-paste coffins. From the Master Cook, John learned to set creams with calves' feet, then isinglass, then hartshorn, pouring decoctions into egg-molds to set and be placed in nests of shredded lemon peel. To make cabbage cream he let the thick liquid clot, lifted off the top layer, folded it then repeated the process until the cabbage was sprinkled with rose water and dusted with sugar, ginger and nutmeg. He carved apples into animals and birds. The birds themselves he roasted, minced and folded into beaten egg whites in a foaming forcemeat of fowls. John boiled, coddled, simmered and warmed. He roasted, seared, fried and braised. He poached stock-fish and minced the meats of smoked herrings while Scovell's pans steamed with ancient sauces: black chawdron and bukkenade, sweet and sour egredouce, camelade and peppery gauncil. For the feasts above he cut castellations into pie-coffins and filled them with meats dyed in the colors of Sir William's titled guests. He fashioned palaces from wafers of spiced batter and paste royale, glazing their walls with panes of sugar. For the Bishop of Carrboro they concocted a cathedral. 'Sprinkle salt on the syrup,' Scovell told him, bent over the chafing dish in his chamber. A golden liquor swirled in the pan. 'Very slowly.' 'It will taint the sugar,' John objected. But Scovell shook his head. A day later they lifted off the cold clear crust and John split off a sharp-edged shard. 'Salt,' he said as it slid over his tongue. But little by little the crisp flake sweetened on his tongue. Sugary juices trickled down his throat. He turned to the Master Cook with a puzzled look. 'Brine floats,' Scovell said. 'Syrup sinks.' The whiff of Ben's parcel hovered under the delicious aroma of fish. Suddenly John felt hungry. The men, he saw, were sipping from a ladle which they passed between them. The tallest of the three slurped and smiled. 'Whether or not Miss Lucretia consumes it, the kitchen has discharged its duty,' he declared cheerfully. He towered a whole head over the others. 'A simple broth is most apt for a young stomach, especially a stomach which chooses privation over nourishment. Lampreys. Crab shells ground fine. Stockfish and...' He sniffed then frowned. 'Simple, Mister Underley?' jibed Vanian in a nasal voice. 'If it is simple, then how is it spiced?' 'Came in a parcel this morning,' Henry Palewick offered. 'Down from Soughton. Master Scovell had it out in a moment. Smelled like flowers to me. Whatever it was.' 'Which flowers?' demanded the fourth man of the quartet, in a foreign accent. He pointed a large-nostrilled nose at Henry. 'Saffron, agrimony and comfrey bound the cool-humored plants; meadowsweet, celandine and wormwood the hot.

Barrels of oysters wrapped in seaweed came by boat from Stollport. Fat beam and trout were carried in dripping wooden boxes lined with wet straw. A great conger eel arrived in a crate large enough to hold a cannon and appeared so fearsome Mister Bunce quelled the kitchen boys' mock-screams only by bringing out Mister Stone to take his pick among the screechers. Sacks of raisins, currants, dried prunes and figs piled up in the dry larder. In the wet room, soused brawn, salted ling and gallipots of anchovies crowded the shelves and floor. In the butchery, Colin and Luke marshalled four undercooks, six men from the Estate armed with saws, a grumbling Barney Curle and his barrow to skin, draw and joint the hogs. Simeon, Tam Yallop and the other bakers lugged in sacks of meal from the Callock Marwood mill while a dray from the ale-house made journeys over the hill, past the gatehouse and into the yard until the buttery and cellar were filled with kegs and barrels. Rhenish wine arrived in a covered wagon, the dark oak tuns resting on a thick bed of bracken. Scents of cinnamon and saffron drifted out of the spice room.

Clearings opened on either side. Familiar smells drifted in the air: fennel, skirrets and alexanders, then wild garlic, radishes and broom. John looked about while his mother tramped ahead. Then a new scent rose from the wild harvest, strong in John's nostrils. He had smelt it the night the villagers had driven them up the slope. Now, as his mother pushed through a screen of undergrowth, he saw its origin. Ranks of fruit trees rose before him, their trunks shaggy with lichen, their branches decked with pink and white blossom. John and his mother walked forward into an orchard. Soon apple trees surrounded them, the sweet scent heavy in the air. Pears succeeded them, then cherries, then apples again. But surely the blossom was too late, John thought. Only the trees' arrangement was familiar for the trunks were planted in diamonds, five to a side. He knew it from the book. The heavy volume bumped against his mother's leg. He gave her a curious look but she seemed unsurprised by the orchards. As the scent of blossom faded, another teased his nostrils, remembered from the same night. Lilies and pitch. Looking ahead, John saw only a stand of chestnuts overwhelmed by ivy, the glossy leaves blurring the trunks and boughs into a screen.
