We dwell within a system so large and widespread, so disorganized and unconcerned for anyone but its most privileged and luxurious members, that our powerlessness, when we can summon up the courage to actually face it, is staggering. So we do not face it. We tell ourselves we are Achilles when we have much more in common with the cathedral-worker, laboring anonymously so that the next generation can see some incremental progress. We lack, of course, a Great Work to point to and say: my grandmother made that window; I worked upon the door. Though, I would submit that perhaps the Internet, as an object, as an aggregate entity, is the cathedral we build word by word and image by image, window by window and portal by portal, to stand taller for our children, if only by a little, than it does for us. Passengers from the north who need to get to Heathrow will have to change trains at Old Oak Common, with all their luggage, and travel the last twelve miles on another service. Getting to Gatwick will be even harder. If they want to catch a train to Europe, they will have to get off at Euston station and make their way half a mile along the Euston Road to St Pancras. It has actually been suggested that travelators could be installed for that journey. Can you imagine travelling half a mile on travelators? Somebody find me the person who came up with that notion. I’ll get the horsewhip. Now here’s my idea. Why not keep the journey times the same but make the trains so comfortable and relaxing that people won’t want the trip to end? Instead, they could pass the time staring out the window at all the gleaming hospitals, schools, playing fields and gorgeously maintained countryside that the billions of saved pounds had paid for. Alternatively, you could just put a steam locomotive in front of the train, make all the seats inside wooden and have it run entirely by volunteers. People would come from all over the country to ride on it. In either case, if any money was left over, perhaps a little of it could be used to fit trains with toilets that don’t flush directly on to the tracks, so that when I sit on a platform at a place like Cambridge or Oxford glumly eating a WH Smith sandwich I don’t have to watch blackbirds fighting over tattered fragments of human waste and toilet paper. It is, let’s face it, hard enough to eat a WH Smith sandwich as it is.

Larry’s acquaintances didn’t fear the consequences of his failure; they feared his failure to conform. I’m no maverick. Upon leaving college I dove into the workforce, eager to have my own stuff and a job to pay for it. Parents approved, bosses gave raises, and my friends could relate. The approval, the comforts, the commitments wound themselves around me like invisible threads. When my life stayed the course, I wouldn’t even feel them binding. Then I would waiver enough to sense the growing entrapment, the taming of my life in which I had been complicit. Working a nine-to-five job took more energy than I had expected, leaving less time to pursue diverse interests. I grew to detest the statement “I am a…” with the sentence completed by an occupational title. Self-help books emphasize “defining priorities” and “staying focused,” euphemisms for specialization and stifling spontaneity. Our vision becomes so narrow that risk is trying a new brand of cereal, and adventure is watching a new sitcom. Over time I have elevated my opinion of nonconformity nearly to the level of an obligation. We should have a bias toward doing activities that we don’t normally do to keep loose the moorings of society. Hiking the AT is “pointless.” What life is not “pointless”? Is it not pointless to work paycheck to paycheck just to conform? Hiking the AT before joining the workforce was an opportunity not taken. Doing it in retirement would be sensible; doing it at this time in my life is abnormal, and therein lay the appeal. I want to make my life less ordinary.

In theory, toppings can include almost anything, but 95 percent of the ramen you consume in Japan will be topped with chashu, Chinese-style roasted pork. In a perfect world, that means luscious slices of marinated belly or shoulder, carefully basted over a low temperature until the fat has rendered and the meat collapses with a hard stare. Beyond the pork, the only other sure bet in a bowl of ramen is negi, thinly sliced green onion, little islands of allium sting in a sea of richness. Pickled bamboo shoots (menma), sheets of nori, bean sprouts, fish cake, raw garlic, and soy-soaked eggs are common constituents, but of course there is a whole world of outlier ingredients that make it into more esoteric bowls, which we'll get into later.
While shape and size will vary depending on region and style, ramen noodles all share one thing in common: alkaline salts. Called kansui in Japanese, alkaline salts are what give the noodles a yellow tint and allow them to stand up to the blistering heat of the soup without degrading into a gummy mass. In fact, in the sprawling ecosystem of noodle soups, it may be the alkaline noodle alone that unites the ramen universe: "If it doesn't have kansui, it's not ramen," Kamimura says.
Noodles and toppings are paramount in the ramen formula, but the broth is undoubtedly the soul of the bowl, there to unite the disparate tastes and textures at work in the dish. This is where a ramen chef makes his name. Broth can be made from an encyclopedia of flora and fauna: chicken, pork, fish, mushrooms, root vegetables, herbs, spices. Ramen broth isn't about nuance; it's about impact, which is why making most soup involves high heat, long cooking times, and giant heaps of chicken bones, pork bones, or both.
Tare is the flavor base that anchors each bowl, that special potion- usually just an ounce or two of concentrated liquid- that bends ramen into one camp or another. In Sapporo, tare is made with miso. In Tokyo, soy sauce takes the lead. At enterprising ramen joints, you'll find tare made with up to two dozen ingredients, an apothecary's stash of dried fish and fungus and esoteric add-ons. The objective of tare is essentially the core objective of Japanese food itself: to pack as much umami as possible into every bite.

For at least two centuries before the beginning of the Viking Age, Irish monks had been setting out in their curachs in search of remote islands where they could contemplate the divine in perfect solitude, disturbed only by the cries of seabirds and the crashing of the waves on the shore. The monks developed a tradition of writing imrama, travel tales, the most famous of which is the Navigatio sancti Brendani abbatis (The Voyage of St Brendan the Abbot). The Navigatio recounts a voyage purported to have been made by St Brendan (d. c. 577) in search of the mythical Isles of the Blessed, which were believed to lie somewhere in the western ocean. The imrama certainly show a familiarity with the North Atlantic–the Navigatio, for example, describes what are probably icebergs, volcanoes and whales–but they also include so many fantastical and mythological elements that it is impossible to disentangle truth from invention. There is no evidence to support claims that are often made that St Brendan discovered America before the Vikings, but Irish monks certainly did reach the Faeroe Islands and Iceland before them. Ash from peat fires containing charred barley grains found in windblown sand deposits at Á Sondum on Sandoy in the southern Faeroes has been radiocarbon-dated to between the fourth and sixth centuries AD. Although no trace of buildings has yet been found, the ash probably came from domestic hearths and had been thrown out onto the sand to help control erosion, which was a common practice at the time. As peat was not used as a fuel in Scandinavia at this time but was widely used in Britain and Ireland, this evidence suggests that seafaring Irish monks had discovered the Faeroes not long after Ireland’s conversion to Christianity. No physical traces of an Irish presence in Iceland have been found in modern times, but early Viking settlers claimed that they found croziers and other ecclesiastical artefacts there. There are also two papar place-names (see here) associated with Irish monks, Papos and Papey, in the east of Iceland. The monks, all being celibate males, did not found any permanent self-sustaining communities in either place: they were always visitors rather than settlers.

My question is, are the people they observed really happy? I've asked several hundred of these volunteers, “What makes you think they're happy?” They most often respond, “Because they were always smiling and laughing. And they were so generous to us. They fed us better than they eat themselves.” Part of becoming more aware of others requires we slow down to ask what familiar behaviors might mean in a different culture. The observation made by these American travelers is usually accurate—the locals they're meeting are in fact smiling and generous. But the question is whether the North Americans are accurately interpreting what those behaviors mean. First, if you don't speak the language and you're just meeting someone for the first time, what do you do? After some feeble attempts at saying things like “Hola!” “Gross Got!” or “Nee how!” there's often some nervous laughter that ensues. It's really awkward. So the locals might be expressing happiness or their smiles might just be a nervous response. Then add that in places like Thailand, where there are twenty-three different smiles, each smile communicates something different. And in one small, extremely polite community in New Zealand, smiling reactions are a way of expressing that they feel deeply offended.4 As I've consistently said, the point isn't to learn every nuanced meaning. But with heightened awareness of others, an individual will realize that while smiles might reflect genuine happiness, they just as well might be a nervous cross-cultural response that indicates little about one's level of contentment.

I had almost automatically assumed that freeways would prove to be the deadliest place to drive because of the high speeds involved. But decades’ worth of auto accident data reveal that, in fact, a very high proportion of fatalities occur at intersections. The most common way to be killed, as a driver, is by another car that hits yours from the left, on the driver’s side, having run a red light or traveling at high speed. It’s typically a T-bone or broadside crash, and often the driver who dies is not the one at fault. The good news is that at intersections we have choices. We have agency. But traveling faster than light would require infinite energy; it is possible on paper, not in practice. More recently, physicists have theorized other ways that physical travel into the past could be achieved, but they are still exotic and expensive. A technological civilization thousands or more years in advance of our own, one able to harness the energy of its whole galaxy, could create a wormhole linking different points in the fabric of spacetime and send a spaceship through it.8 It is an idea explored widely in science fiction and depicted vividly in Christopher Nolan’s 2014 film Interstellar. But all this is academic for our purposes. For Gleick, what we are really talking about with time travel is a thought experiment about the experiencer—the passenger—in a novel, disjointed relationship to the external world. We can readily perform feats of “mental time travel,” or at least simulate such feats, as well as experience a dissociation between our internal subjective sense of time and the flux of things around us and even our own bodies.9 According to Gleick, part of what suddenly facilitated four-dimensional thinking in both popular writing and the sciences was the changing experience of time in an accelerating society. The Victorian age, with its steam engines and bewildering pace of urban living, increased these experiences of dissociation, and they have only intensified since then. Time travel, Gleick argues, is basically just a metaphor for modernity, and a nifty premise upon which to base literary and cinematic fantasies that repair modernity’s traumas. It also shines a light on how confused we all are about time. The most commonly voiced objection to time travel—and with it, precognition—is that any interaction between the future and past would change the past, and thus create a different future. The familiar term is the grandfather paradox: You can’t go back in time and kill your grandfather because then you wouldn’t have been born to go back in time and kill your grandfather (leaving aside for the moment the assumed inevitability of wanting to kill your grandfather, which is an odd assumption). The technical term for meddling in the past this way is “bilking,” on the analogy of failing to pay a promised debt.10 Whatever you call it, it is the kind of thing that, in Star Trek, would make the Enterprise’s computer start to stutter and smoke and go haywire—the same reaction, in fact, that greets scientific claims of precognition. (As Dean Radin puts it, laboratory precognition results like those cited in the past two chapters “cause faces to turn red and sputtering noises to be issued from upset lips.”11) Information somehow sent backward in time from an event cannot lead to a future that no longer includes that event—and we naturally intuit that it would be very hard not to have such an effect if we meddled in the timeline. Our very presence in the past would change things.

Focus on enjoying yourself, the company you’re with, and the party or restaurant—not on dieting or gorging yourself. You order less, save more money, and tend to really enjoy what you eat because you’re eating to satisfy your taste buds, not your empty stomach. So don’t sweat it if you go out a couple of times a week to eat. Just try to eat as balanced of a meal as you can comfortably, and don’t stuff yourself. All it takes is a small meal beforehand. Just remember, between traveling to the restaurant, being seated, getting menus, ordering and having your food cooked, chances are you’re not going to actually be served food for another hour at the very earliest. So think ahead. Don’t ever leave your house hungry. Eat a little beforehand, order less, and have more fun.

DENGUE FEVER (BREAKBONE FEVER) Dengue fever is a viral infection found throughout Central America. In Costa Rica outbreaks involving thousands of people occur every year. Dengue is transmitted by aedes mosquitoes, which often bite during the daytime and are usually found close to human habitations, often indoors. They breed primarily in artificial water containers such as jars, barrels, cans, plastic containers and discarded tires. Dengue is especially common in densely populated, urban environments. Dengue usually causes flulike symptoms including fever, muscle aches, joint pains, headaches, nausea and vomiting, often followed by a rash. Most cases resolve uneventfully in a few days. Severe cases usually occur in children under the age of 15 who are experiencing their second dengue infection. There is no treatment for dengue fever except taking analgesics such as acetaminophen/paracetamol (Tylenol) and drinking plenty of fluids. Severe cases may require hospitalization for intravenous fluids and supportive care. There is no vaccine. The key to prevention is taking insect-protection measures. HEPATITIS A Hepatitis A is the second-most-common travel-related infection (after traveler’s diarrhea). It’s a viral infection of the liver that is usually acquired by ingestion of contaminated water, food or ice, though it may also be acquired by direct contact with infected persons. Symptoms may include fever, malaise, jaundice, nausea, vomiting and abdominal pain. Most cases resolve without complications, though hepatitis A occasionally causes severe liver damage. There is no treatment. The vaccine for hepatitis A is extremely safe and highly effective. You should get vaccinated before you go to Costa Rica. Because the safety of hepatitis A vaccine has not been established for pregnant women or children under the age of two, they should instead be given a gammaglobulin injection. LEISHMANIASIS Leishmaniasis occurs in the mountains and jungles of all Central American countries. The infection is transmitted by sand flies, which are about one-third the size of mosquitoes. Most cases occur in newly cleared forest or areas of secondary growth. The highest incidence is in Puerto Viejo de Talamanca. It causes slow-growing ulcers over exposed parts of the body There is no vaccine. RABIES Rabies is a viral infection of the brain and spinal cord that is almost always fatal. The rabies virus is carried in the saliva of infected animals and is typically transmitted through an animal bite, though contamination of any break in the skin with infected saliva may result in rabies. Rabies occurs in all Central American countries. However, in Costa Rica only two cases have been reported over the last 30 years. TYPHOID Typhoid fever is caused by ingestion of food or water contaminated by a species of salmonella known as Salmonella typhi . Fever occurs in virtually all cases. Other symptoms may include headache, malaise, muscle aches, dizziness, loss of appetite, nausea and abdominal pain. A pretrip vaccination for typoid is recommended, but not required. It’s usually given orally, and is also available as an injection. TRAVELER’S DIARRHEA Tap water is safe and of a high quality in Costa Rica, but when you’re far off the beaten path it’s best to avoid tap water unless it has been boiled, filtered or chemically disinfected (iodine tablets). To prevent diarrhea, be wary of dairy products that might contain unpasteurized milk; and be highly selective when eating food from street vendors.

Route qualifies as a splendid example of such unremitting travel, for the hiker must toil up 6,000 feet to the first major pass, a disheartening prospect.

Optimistic hikers who seek the brighter side of unpleasant situations, however, will quickly discover mitigating factors on this interminable slope. The well-manicured trail zigzags up the north wall of Kings Canyon with such a gentle gradient that the traveler can slip into a rhythmic pace where the miles pass far more quickly than would be possible on a steeper, rockier path. Thus freed from scrutinizing the terrain immediately ahead, the hiker can better appreciate the two striking formations on the opposite side of the canyon. Directly across the way towers the enormous facade of Grand Sentinel, rising 3,500 feet above the meadows lining the valley floor. Several miles to the east lies the sculpted oddity known as the Sphinx, a delicate pinnacle capping a sweeping apron of granite. These two landmarks, visible for much of the ascent to the Monarch Divide, offer travelers a convenient means of gauging their progress; for instance, when one is finally level with the top of the Sphinx, the upward journey is two-thirds complete.

Around nine months of age, the frontal areas (behind the forehead) become more interconnected, and that’s when most children develop object permanence: knowing that objects continue to exist even when they are out of sight. Before object permanence develops, when Mom is out of sight she’s no longer in the baby’s universe. This is why young babies are inconsolable when Mom leaves. Once they start to develop object permanence, babies can hold on to an internal image of Mom. This is about the age that babies play peek-a-boo. Mom disappears when she puts the blanket over her head, but the nine-month-old knows Mom’s still there even if he can’t see her. The infant tests his “knowledge” when he pulls the blanket off and sees — sure enough! —Mom really is there! What is the use of so many brain connections in the first three years of life? These connections are ready-made highways for information to travel along. The toddlers’ ability to quickly adapt and learn is possible because they have a vast number of brain connections available for making sense of the world. Thanks to neural exuberance, the child does not need to create connections on the spur of the moment to make meaning of each new experience; myriad connections are already there. Pruning of connections The number of connections remains high from age 3 until age 10, when the process of neural pruning begins. Connections that are being used remain; others get absorbed back into the neuron. It’s similar to pruning a bush. After pruning, individual branches get thicker, fruit is more abundant, and the whole bush gets fuller. This seems a little counter-intuitive, but pruning works because it allows the plant’s limited resources to go to its strongest parts; water and nutrients are no longer wasted on spindly branches and dried-out roots. Similarly, when unused brain connections are pruned, neural resources are more available for brain areas that are being used. This results in a more useful and efficient brain that’s tailor-made to meet each individual’s needs. This process of pruning occurs in all brain areas. Figure 2.2 presents findings published by Sowell and associates. They measured Magnetic Resonance Imaging in 176 normal subjects from age 7 to 87 years. The x-axes in these graphs present years from 10 to 90 years. Notice there is a common pattern of decreasing connections in all brain areas. In some brain areas this change is steeper, such as in frontal areas, but is flatter in other areas such as temporal areas in the left hemisphere.

Mitchell said of his experience of viewing Earth from the moon: “You develop an instant global consciousness, a people orientation, an intense dissatisfaction with the state of the world, and a compulsion to do something about it. You want to grab a politician by the scruff of the neck and drag him a quarter of a million miles and say, ‘Look at that, you son of a bitch.’ ” I love this quote for many reasons. One, because it illustrates that all the well-meaning talk of oneness, such as you have found in this book, is built upon an empirical reality. We’re all one, the human family; when you pull back to outer space or dive within to inner space, that becomes clear. I like that traveling to the moon was such an emotional and spiritual experience for Edgar, as I have always thought that astronauts would be tough military types that wouldn’t be given to such profound pronouncements. Mostly, though, I love his violent conclusion that he’d like to grab a politician by the scruff of the neck and take him to the moon. Firstly because to grab anyone by the scruff of the neck is an animal and implausible thing to do. I just felt the back of my neck and there’s barely any scruff to grab. Unless this politician had a particularly fat neck, Edgar would have to be content with an inch of skin between his thumb and forefinger, like he was holding a teacup; he might as well have his pinkie finger extended. Then he’d have to kidnap the bloke, presumably from Washington, drag him all the way to Cape Canaveral, Florida, into the NASA HQ, presumably give him some basic space training, put him in a suit, a rocket, strap him in, spend a few days getting to the moon, then finally march him out and admonish him for his lack of perspective. I don’t think he could sustain his indignation for that long. I reckon he’d start to feel a connection to the terrified politician at some point during that journey, possibly in the training section, where they’d have to acclimatize to zero gravity in a swimming pool. Also, surely once Edgar got back to the moon and he looked back to Earth, his love of all the members of the human family would kick back in and he might feel too guilty to lay into the sobbing and vertiginous, undisclosed politician. Among the small number of people who have seen our planet from space this sense of enlightenment is seemingly common. There are loads of comparable quotes that illustrate this strong sense of connection and fraternity. I chose Edgar D. Mitchell’s one because he’s the only astronaut who saw his epiphany as an impetus to snatch a senator and beat him up on the moon like an intergalactic Vito Corleone.

Shiva’s world-destroying dance is another potent symbol that can be understood both cosmologically and psychologically. From a yogic perspective, the dance disentangles all the mental webs by which we have imprisoned ourselves through our incessant karmic activities or volitions. He is an inner force that undermines our laboriously created conceptualizations of the world, so that we may see reality “as it is” (yathā-bhūta). The Goddess Mohinī (“She who deludes”) is thought to tempt us with misconceptions and delusional fantasies, so that only serious spiritual seekers can find their way to Reality. The elephant-headed, pot-bellied God Ganesha, again, is traditionally called upon to remove all such obstacles. Each deity represents a particular symbolic function whose depth we can plumb only when we delve into our own psyche by means of Yoga. The artistic representations of the numerous deities of Hinduism, Buddhism, and Jainism all are full of yogic symbolism. That symbolism is most prominent in the profound teachings of Tantra. To appreciate this fact, we just need to look at the esoteric meaning of hatha—as in Hatha-Yoga, a branch of Tantra. The dictionary meaning of the term hatha is simply “force” or “power,” and the commonly used ablative hathāt means “by force of.” Esoterically, however, the syllables ha and tha—quite meaningless in themselves—are said to symbolize “Sun” and “Moon” respectively. Specifically, they refer to the inner luminaries: the “sun” or solar energy coursing through the right energetic pathway (i.e., the pingalānādī) and the “moon” or lunar energy traveling through the left pathway (i.e., the idā-nādī). Hatha-Yoga utilizes these two currents—corresponding to the sympathetic and parasympathetic nervous systems respectively—in order to achieve a psychoenergetic balance and mental tranquillity. When this energetic harmony is achieved, the central channel (i.e., the sushumnā-nādī) is activated. As soon as the life force (prāna) flows into and up the central channel, it awakens the serpent power (kundalinī-shakti) and pulls it into the central channel as well. Thereafter the kundalinī rises to the crown of the head, leading to a sublime state of mind-transcending unified consciousness (or nirvikalpa-samādhi, “formless ecstasy”).
