I never leave home without my cayenne pepper. I either stash a bottle of the liquid extract in my pocket book or I stick it in the shopping cart I pull around with me all over Manhattan. When it comes to staying right side up in this world, a black woman needs at least three things. The first is a quiet spot of her own, a place away from the nonsense. First thing I do every morning is drink four glasses of water. People think this water business is a joke. But I’m here to tell you that it’s not. I’ve known two elderly people who died of dehydration, one of whom fell from his bed in the middle of the night and couldn’t stand up because he was so parched. Following my water, I drink 8 ounces of fresh celery blended in my Vita-mix. The juice cleanses the system and reduces inflammation. My biggest meal is my first one: oatmeal. I soak my oats overnight so that when I get up all I have to do is turn on the burner. Sometimes I enjoy them with warm almond milk, other times I add grated almonds and berries, put the mixture in my tumbler and shake it until it’s so smooth I can drink it. In any form, oats do the heart good. Throughout the day I eat sweet potatoes, which are filled with fiber, beets sprinkled with a little olive oil, and vegetables of every variety. I also still enjoy plenty of salad, though I stopped adding so many carrots – too much sugar. But I will do celery, cucumbers, seaweed grass and other greens. Almost everyone loves them, including Baby Bethie, and they’re not even chocolate! 3 cups all purpose flour (pack it down in the cup when you measure it) ¾ cup powdered (confectioner’s) sugar (don’t sift un- less it’s got big lumps) 1 and ½ cups salted butter, softened (3 sticks, 12 ounces, ¾ pound) 1 can (21 ounces) strawberry pie filling (I used Comstock)*** *** - If you can’t find strawberry pie filling, you can use another berry filling, like raspberry, or blueberry. You can also use pie fillings of larger fruits like peach, apple, or whatever. If you do that, cut the fruit pieces into smaller pieces so that each bar cookie will have some. I just put my apple or peach pie filling in the food processor with the steel blade and zoop it up just short of being pureed. I’m not sure about using lemon pie filling. I haven’t tried that yet. FIRST STEP: Mix the flour and the powdered sugar together in a medium-sized bowl. Cut in the softened butter with a two knives or a pastry cutter until the resulting mixture resembles bread crumbs or coarse corn meal. (You can also do this in a food processor using cold butter cut into chunks that you layer between the powdered sugar and flour mixture and process with the steel blade, using an on-and-off pulsing motion.) Spread HALF of this mixture (approximately 3 cups will be fine) into a greased (or sprayed with Pam or another nonstick cooking spray) 9-inch by 13-inch pan. (That’s a standard size rectangular cake pan.) Bake at 350 degrees F. for 12 to 15 minutes, or until the edges are just beginning to turn golden brown. Remove the pan to a wire rack or a cold burner on the stove, but DON’T TURN OFF THE OVEN! Let the crust cool for 5 minutes. SECOND STEP: Spread the pie filling over the top of the crust you just baked. Sprinkle the crust with the other half of the crust mixture you saved. Try to do this as evenly as possible. Don’t worry about little gaps in the topping. It will spread out and fill in a bit as it bakes. Gently press the top crust down with the flat blade of a metal spatula. Bake the cookie bars at 350 degrees F. for another 30 to 35 minutes, or until the top is lightly golden. Turn off the oven and remove the pan to a wire rack or a cold burner to cool completely. When the bars are completely cool, cover the pan with foil and refrigerate them until you’re ready to cut them. (Chilling them makes them easier to cut.) When you’re ready to serve them, cut the Strawberry Shortbread Bar Cookies into brownie-sized pieces, arrange them on a pretty platter, and if you like, sprinkle the top with extra powdered sugar.

That’s okay. Gently fold the berries and chips into your dough. Do not overmix. The more you handle the dough, the tougher your scones. Form dough into a ball. If you have time, chill dough in bowl for 15 minutes before continuing. When ready to bake, turn dough out of bowl onto lightly floured surface. Using your floured hands or lightly floured rolling pin, shape dough into 8-inch circle and use a pizza cutter to form 8 equal-sized wedges. Using a floured spatula, transfer wedges to baking sheet. Scones should be at least 2 inches apart. Brush egg wash over scones and sprinkle with sugar. Bake for 20-25 minutes. Scones should be a light golden brown when properly baked. Let cool. STRAWBERRY FLIP COOKIES Preheat oven to 375 degrees F., rack in the middle position. 1 cup melted butter (2 sticks) 1 cup white (granulated) sugar 2 beaten eggs (just whip them up with a fork) 1/3 cup seedless strawberry jam 1 teaspoon strawberry extract (or vanilla, if you can’t find it) 1 teaspoon baking powder ½ teaspoon soda ½ teaspoon salt 1½ cups chopped walnuts (or pecans) 3 cups flour (not sifted) small bowl of powdered (confectioner’s) sugar 1 bag frozen strawberries for garnish*** Melt the butter and add the white sugar. Then add the eggs and the strawberry jam. When the jam is fully incorporated, add the strawberry extract, baking powder, soda, and salt. Then add the chopped walnuts and the flour, and mix well. Roll dough balls with your hands about the size of unshelled walnuts. (If the dough is too sticky, chill it for a half hour or so and then try it again.) Roll the dough balls in the powdered sugar and place them on a greased cookie sheet, 12 to a standard sheet. Make a deep thumbprint in the center of each cookie. While the strawberries are still partially frozen, cut them in half lengthwise. (If your berries are too large to fit on your cookie balls, cut them in quarters instead of halves.) Flip the cut piece over and place it skin side up in the thumbprint you’ve made on top of each cookie. Bake at 375 degrees F. for 10 to 12 minutes. Cool on the cookie sheet for 2 minutes, then transfer to a wire rack to finish cooling. Dust the cookies with powdered sugar and place them on a pretty plate before serving. Yield: 7 to 8 dozen cookies. The tart strawberry pieces are wonderful with the sweet cookie. Carrie Rhodes just adores these. blood orange crêpes with vanilla mascarpone crepes d’arancio sanguigno crêpes 1 cup all-purpose flour ¾ teaspoon sugar About 1 teaspoon kosher salt 3 large eggs ¾ cup milk 4 teaspoons unsalted butter to serve 32 sections blood oranges (about 6) 4 tablespoons Vanilla Mascarpone (Chapter 1) 1 cup Blood Orange Sauce (Chapter 1) 1 To prepare the crêpe batter, mix the flour, sugar, and salt in a large bowl. 2 In a separate bowl, whisk the eggs and milk. Pour into the bowl with the flour and whisk just until combined. Do not overmix the batter. Set aside for at least 1 hour at room temperature and up to 48 hours in the refrigerator. Let the batter return to room temperature before cooking the crêpes. 3 To prepare the crêpes, heat an 8-inch nonstick skillet or crêpe pan over medium heat and melt ½ teaspoon of butter in it. When it melts, ladle 6 tablespoons (about 2/3 cup) of the batter into the pan. Swirl and tip the pan so that the batter spreads in a thin layer over the bottom of the pan and about half an inch up the sides. If there seems to be an excess of batter, pour it back into the bowl. As it cooks, the crêpe will form bubbles and start to set around the edges. 4 Use a thin spatula to loosen the crêpe and when the bubbles pop, lift the crêpe at the edges to see if the underside is nicely browned. If so, flip the crêpe and cook for about 30 seconds longer, or just until set but before it crisps too much around the edges. Adjust the heat as necessary. 5 Remove the crêpe from the pan and set aside on a plate covered with a clean, dry kitchen towel. Repeat until you have 8 crêpes. 6 To serve, spread about 1 teaspoon of the Vanilla Mascarpone over each crêpe. Fold 2 crepes in half and then in half again to form triangles. Put them on a serving plate. Garnish each plate with 8 orange segments, 1 tablespoon of the Vanilla Mascarpone, and ¼ cup or less, depending on your taste, of the Blood Orange Sauce. Repeat for a total of 4 servings. I am intensely fond of the combination of mascarpone, vanilla, and oranges and go a little crazy when I can make this with blood oranges. braised pork shanks with borlotti beans stinco di maiale brasato con fagioli borlotti beans ½ pound dried borlotti (cranberry) beans 1 whole garlic head, cloves separated 1 cup extra virgin olive oil 1 Onion Brûlée (recipe follows) 1 carrot, peeled and diced 1 celery rib, diced 4 ounces bacon, cut into large dice 5 fresh flat-leaf parsley stems 3 sprigs fresh thyme 2 sprigs fresh rosemary Pinch of crushed red pepper flakes 1½ quarts chicken stock 1 tablespoon kosher salt 2 tablespoons sherry vinegar brine 1 pound kosher salt 1 cup honey 1 sprig fresh rosemary 5 juniper berries pork Four 1-pound pork hindshanks ½ cup vegetable oil 1 carrot, peeled and cut into large dice 1 celery rib, cut into large dice 2 cups dry white wine ½ cup Stewed Tomatoes (Chapter 3) 1 quart veal stock or chicken stock to serve 1 tablespoon unsalted butter 2 tablespoons chopped fresh flat-leaf parsley 1 To prepare the beans, in a large pot, soak the beans in enough cold water to cover by 2 or 3 inches for 6 to 12 hours. Change the water two or three times during soaking, if possible. Drain and set aside. 2 Use a broad knife to crush the garlic cloves, still in their skins. 3 Heat a saucepan over medium heat. Add the olive oil, onion, carrot, celery, bacon, parsley, thyme, rosemary, red pepper, and half of the garlic cloves to the pan and cook, stirring, for about 7 minutes, or until the vegetables soften. 4 Add the drained beans and the stock and bring to a boil over high heat. Reduce the heat and simmer for about 40 minutes, until the beans are tender but not so soft that they lose their shape. 5 Add the salt and vinegar. Stir to mix, remove the beans from the heat. Taste the cooking liquid and season to taste with salt. Let the beans cool in the cooking liquid and then refrigerate until ready to use. 6 To prepare the brine, in a large pot, mix 1 gallon of water with the salt, honey, rosemary, and juniper berries. Bring to a boil over high heat and cook until the salt and honey dissolve. Remove from the heat and let the brine cool to room temperature. 7 To prepare the pork, submerge the pork shanks in the cool brine, cover, and refrigerate for 3 hours. 8 Preheat the oven to 300°F. 9 Lift the shanks from the brine and pat dry. 10 Heat a large ovenproof casserole or braising pan over medium-high heat. When the pan is hot, put the vegetable oil in the pan and sear the pork shanks for 6 to 8 minutes on each side, or until golden brown. 11 Add the carrot, celery, and wine and the remaining garlic cloves and bring to a boil. Cook over medium-high heat for 8 to 10 minutes, or until reduced by half. Add the tomatoes and stock and bring to a boil.

Makes a generous 1 quart (1L) BLACK RASPBERRY SAUCE 2 cups (300g) raspberries, black raspberries, and/or blackberries 1 cup (200g) sugar SWEET CORN ICE CREAM 1 ear sweet corn, husked 2 cups (475ml) whole milk 1 tablespoon plus 1 teaspoon cornstarch 1½ ounces (45g/3 tablespoons) cream cheese, softened ¼ teaspoon fine sea salt 1¼ cups (300ml) heavy cream ⅔ cup (135g) sugar 2 tablespoons light corn syrup 1 To make the sauce, combine the berries and sugar in a small saucepan and bring to a boil over medium-high heat. Continue boiling, stirring occasionally, until it reaches 220°F/105°C (5 to 8 minutes). Let cool slightly, then force through a sieve to remove the seeds. (Or leave a few seeds in there just to prove you made it.) Refrigerate until cold before using. Makes about 1¼ cups (300ml). 2 To make the ice cream, slice the kernels from the corn cob, then “milk” the cob by scraping it with the back of your knife to extract the liquid; reserve the kernels and liquid. Mix about 2 tablespoons of the milk with the cornstarch in a small bowl to make a smooth slurry. Whisk the cream cheese and salt in a medium bowl until smooth. Fill a large bowl with ice and water. 3 Combine the remaining milk, the cream, sugar, corn and juices, and corn syrup in a 4-quart (3.8L) saucepan, bring to a rolling boil over medium-high heat, and boil for 4 minutes. Remove from the heat and force the mixture through a sieve into a bowl, keeping the corn “cases” behind. Return the mixture to the saucepan and gradually whisk in the cornstarch slurry. Bring back to a boil over medium-high heat and cook, stirring with a heatproof spatula, until slightly thickened, about 1 minute. Remove from the heat. 4 Gradually whisk the hot milk mixture into the cream cheese until smooth. Pour the mixture into a 1-gallon (3.8L) Ziploc freezer bag and submerge the sealed bag in the ice bath. Let stand, adding more ice as necessary, until cold, about 30 minutes. 5 Pour the ice cream base into your ice cream maker and spin until thick and creamy. Pack the ice cream into a storage container, alternating it with layers of the black raspberry sauce and ending with a spoonful of sauce; do not mix. Press a sheet of parchment directly against the surface, and seal with an airtight lid. Freeze in the coldest part of your freezer until firm, at least 4 hours.

The benefits of a diet anchored in an abundance of plants is clear to see. The healthiest and longest-lived societies are scattered across the globe, whether it be the mountain villages of Sardinia, the forests of Costa Rica or the Japanese island of Okinawa, but they have one thing in common: a diversity of plants in their diet. The Hadza people of Tanzania are among the last hunter-gatherers on Earth, and they probably consume a diet closest to that which humans have adapted to eat. They forage wild berries, honey and fibre-rich tubers, and eat lean, wild meat. This consumption of between 100g and 150g of varied fibre a day results in a beautifully diverse and robust gut microbiome.4 This could not be more different from the industrialized West. Americans, on average, eat around 15g of fibre a day – half of the recommended amount and ten times less than the Hadza – resulting in poor microbial diversity.5 The so-called Standard American Diet (with the apt acronym SAD) has replaced fibre-filled plants with refined grains (plants stripped of their fibre), processed meats, sugar-sweetened drinks and deep-fried food. We all know that the modern Western diet is not good for physical and mental health, but the reason is that it’s essentially an anti-biotic diet. Without providing the food for healthy microbes, we end up overfed yet undernourished. Add to this mix an overuse of pharmaceutical antibiotics and a lack of exposure to a variety of environmental microbes due to home-cleaning products and urban living, and no wonder the industrialized world is a desert for microbes. A diet low in plant-based fibre results in a vulnerable microbiome.6 This increases the likelihood that the defence system loses balance, resulting in chronic inflammation and, eventually, a host of physical and mental health conditions.7 If it’s clear that a variety of plant fibre is the key to a microbiome-friendly diet, how do we practically implement this? The American Gut Project is a large citizen science project in which individuals across the world volunteer to send stool samples for analysis by a team at University of California San Diego School of Medicine. Most of us in the West manage only around ten plants a week. While not a necessary requirement for good health, thirty a week is a sensible, evidence-based target. It’s important to remember that plant foods aren’t restricted to fruit and vegetables; nuts, seeds, herbs, spices, grains and legumes also count. While you can add as many layers of complexity as you wish, getting a diverse, healthy microbiome is really as simple as aiming for thirty types of plant a week.
