Lara had spent weeks getting the lighting right. There were a few soft spotlights above the flower displays, and an antique crystal chandelier hung low above the counter. There were strings of fairy lights and dozens of jewel-colored tea lights and tall, slender lanterns dotted between the buckets. When they were lit, they cast star and crescent moon shapes along the walls and the shop resembled the courtyard of a Moroccan riad- a tiny walled garden right in the middle of the city.

And, as Aristotle said, “beauty is a greater recommendation than any letter of introduction.” So, YAVIS clients are well received nearly everywhere they go, and many therapists light up when one comes walking in the door. Still, there are two paths to being smart and charming when you are young: Life has been good or life has been bad. When life has been good, maybe someone goes to see a therapist for a while because some isolated thing is not currently going well. Most likely, the difficulty will be resolved quickly and the client will be on his way. When life has been bad, someone goes to see a therapist because even though things look pretty on the outside the person feels horrible on the inside, and this is a discrepancy that even many therapists cannot hold. She knew that she was the one at risk, knew that he wasn’t looking for anything permanent. But the temptation was too great. Being around Duncan was the best part of her day.

Chapter 5 Eyebright For Eye Strain The other night, I took a break from writing and went for a walk. It was dark, but the moon was bright giving me the light I needed to see my way up the road and back. When I returned I could see a few lights on in the house, but what really stood out was my laptop that I had left open; it’s bright white light standing out. I thought, “man, I stare at that light for hours at a time!” No wonder my eyes feel tired so often. Many people do this for eight or more hours every day. When we are viewing the screens of our devices, we blink less than normal which can cause dryness and soreness. The intense focus can also be the root of headaches and other eye related symptoms. Relief can be achieved by taking frequent ‘eye breaks’ which involve looking at something in the distance every twenty minutes or so (there are even apps to remind you!), and making sure your screen is just below eye level. But the reality is many of us are spending a lot of time focusing intently on electronic devices and straining our eyes. Symptoms of eye strain range from dry, sore, or itchy eyes, to headaches, light sensitivity and blurred vision. Mother Nature in her infinite wisdom has provided us with a wild herb that works directly to reduce the discomforts of eye strain and many other eye issues. Eyebright, a tiny flowered, weedy looking herb found wild in Europe, Asia and North America can be used to treat all eye disorders. Eyebright’s tannin content, which acts as an astringent, and its anti-inflammatory and antibacterial properties, combine to make the perfect eye wash. Its 3 major antioxidant vitamins bring in eye-specific support as well:  Vitamin C, in conjunction with Eyebright’s high content of Quercetin, assists in reducing swelled and runny eyes; Vitamin E has been shown to help improve visual sharpness; and Vitamin A protects the cornea and prevents dry eyes. Strain well using cheesecloth or an unbleached coffee filter, store in a sterile glass jar (just dip in the boiling water before adding the herbs and let stand, open side up), cool, lid tightly and place in refrigerator for up to a week. When you wash your face in the morning or evening, use a sterile eyecup or other small sterile container to ‘wash’ your eyes with this herbal extract. If you are experiencing a painful eye condition, it is better to warm the eye bath liquid slightly before use. You can also dip cotton balls in the solution and press one on each eye (with lid closed) as a compress. Eyebright Tea: Using the same method for making an eye bath, simply drink the tea for relief of eye symptoms due to eyestrain, colds and allergies.

People have often asked me how we girls managed any privacy in a house with so many boys and no private rooms. It was difficult. We used to bathe with a washcloth from a pan of water. We would first start with our necks and faces and wash down as far as possible. Then we would wash the road dust from our feet and wash up as far as possible. Later, when the boys were out of the room, we would wash “possible.” It was these circumstances that led to a very embarrassing mishap that I have told very few people and would not relate here if it were not so funny. We had an outdoor bathroom, and there were times in the middle of the night when it was very inconvenient to dress and go out into the cold just to take a leak. For these times there was a little room, actually a closet, that had in it what was called a “slop jar” or “slop bucket.” It was actually an enameled pot with flared sides that was made to accommodate a woman squatting over it to do her business. The closet had no door as such, just a sort of curtain hung on a tight piece of wire. After dark when the fire had died down, it could afford some kind of privacy at least. One night when I was about sixteen or seventeen, I had been out on a date and got home fairly late. Everybody was already in bed, and I didn’t want to wake them and alert Mama and Daddy to the hour of my homecoming. I was absolutely bustin’ to pee, so I fumbled my way through the dark until I found the curtain to the closet and stepped inside. I dropped my panties and hiked up my skirt and assumed the position over the slop jar. I was feeling relieved in a physical sense and quite grown-up and somewhat smug that I “pulled it off,” so to speak. But suddenly, here in the middle of my little triumph, or more accurately here in the middle of my rump, came the cold nose of an unexpected intruder. A raccoon had gotten into the house, and unbeknownst to me, we were sharing the closet as well as a very intimate moment. When I felt that cold nose on my butt, I screamed bloody murder and literally peed all over myself. Of course I woke the whole house with my unscheduled concert. Daddy grabbed the poker to fend off an intruder. Mama started praying. The little kids cried, and the big kids just ran around confused. When everybody found out what had happened, they all had a good laugh at my expense. Except, of course, the raccoon. Once the lights were turned on, he acted like any man caught in a compromising position with a lady and bolted for the door. I often think of that moment at times when I’m feeling “too big for my britches,” and it tends to have a humbling effect.

At the artisanal bakery, Eric Kayser, we took our time selecting three different cakes from the rows of lemon tarts, chocolate éclairs, and what I was beginning to recognize as the French classics: dazzling gâteaux with names like the Saint-Honoré, Paris-Brest, and Opéra. Voila, just like that, we had dinner and dessert. We headed back to the tree house- those pesky six flights were still there- and prepared for our modest dinner chez-moi. Mom set the table with the chipped white dinner plates and pressed linen napkins. I set out the condiments- Maille Dijon mustard, tart and grainy with multicolored seeds; organic mayo from my local "bio" market; and Nicolas Alziari olive oil in a beautiful blue and yellow tin- and watched them get to it. They sliced open the baguette, the intersection of crisp and chewy, and dressed it with slivers of ham and dollops of mustard. I made a fresh mozzarella sandwich, drizzling it with olive oil and dusting it with salt and pepper.

How are you meant to hold them up, arm-high, for nearly an hour in battlefield conditions? It’s practically impossible. And how many bottles can you carry? We captured Italian-made polyethylene packages containing one litre each, so strong you could jump on them with your army boots and they wouldn’t burst. Our ordinary Soviet-made sterile dressings were also bad. The packaging was as heavy as oak and weighed more than the dressing itself. Foreign equivalents, from Thailand or Australia, for example, were lighter, even whiter somehow … We had absolutely no elastic dressings, except what we captured — French and German products. And as for our splints! They were more like skis than medical equipment! How many can you carry with you? I carried English splints of different lengths for specific limbs, upper arm, calf, thigh, etc. They were inflatable, with zips. You inserted the arm or whatever, zipped up and the bone was protected from movement or jarring during transportation to hospital. In the last nine years our country has made no progress and produced nothing new…

Emilia scooped the risotto, Elliott placed the salmon on top, Sophia added the three tiny sides shaped with a round cookie cutter. Elliott drizzled his sauce onto the final product. He brushed his shoulder against Sophia each time, needing that physical connection. The plates looked exquisite, artistic. Perfect. She tried to ignore the overwhelming stress of the moment and focus on the food. Cady and Emilia added garnishes- fresh herbs and flowers. And Cady had a whole sheet of candied violets ready to sprinkle on their dessert. It made Elliott laugh and tease them all about being a family of garden sprites. When they finally got to the head of the table and faced a sea of critics, Sophia felt confident about their choices. They'd prepared a beautiful meal that successfully showcased Elliott's love for Scottish tradition, local Vermont products, and the Brown family's love of fresh vegetables and herbs. All the components meshed together into one cohesive meal.

Jean’s Cherry Marmalade Marmelade de Cerises A decadent, old-school cherry sauce. Serve over hazelnut or vanilla ice cream, with whipped cream and a fresh cherry on top! 2¼ pounds fresh cherries 1 pound, 10 ounces sugar (I use half white, half raw cane or light brown      sugar) ½ cup of kirsch (cherry liqueur) Pit the cherries and cover with the sugar and the alcohol. Stir to combine; let the mixture sit for 12 hours or overnight. In a heavy-bottomed saucepan, bring the mixture to a boil, lower the heat, and simmer for 20 minutes. Fish out the cherries, set aside. Continue to simmer the syrup for 1 hour—a bit longer won’t hurt—until reduced by half. Distribute the cherries between 3 or 4 sterilized jars. Pour the boiling-hot cherry syrup over them, leaving ¼ inch of space at the top. Tightly close the jars and sterilize in a hot-water bath according to the manufacturer’s directions. If, like me, you haven’t mastered the intricacies of proper canning, the syrup keeps in the fridge for a week or two, or you can freeze it for up to 6 months. Makes 3 to 4 12-ounce jars

She smiled as she approached Union Square Park and stopped to touch an iridescent green leaf, still wet and dripping rain, her heart leaping at its incredible tenderness in the midst of the city. She leaned in and lifted the leaf to her nose, inhaling, the scents of summer and smells of her past- fresh fruit, fragrant pine, baking pies, lake water- flooding her mind.

But, if I released them from the jar, their brilliance would light up the world, which now included the hands of everyone around me. AUNT CAROL’S CRUNCHY SALAD Salad         2 tablespoons butter         1 package ramen noodles (like the $.13 package)         ½ cup or so of chopped almonds         Handful of sunflower seeds         4 to 6 cups sturdy lettuce (I like romaine)         2 cups or so of chopped broccoli         Some chopped green onions         You can add any crunchy thing: carrots, radishes, snap peas, cabbage Melt the butter in a skillet over medium-high heat. Add the uncooked ramen noodles (break them all up), almonds, and sunflower seeds, and saute until toasted light brown. Maybe 3 to 4 minutes. Let cool. Pour the dressing (recipe below) into the bottom of your salad bowl. Add the lettuce, broccoli, green onions, and toasted crunch mix. Toss when ready to serve. Vinaigrette         4 tablespoons brown sugar         1 teaspoon salt         6 tablespoons rice wine vinegar         2 to 3 drops Tabasco         ½ cup oil (olive, sunflower, walnut, whatever oil you like. Aunt Carol uses canola oil, so no need to get trendy) Mix all the vinaigrette ingredients with a whisk (or just shake this all together in a mason jar if you want to control the quantity or make extra). Olive oil cooking spray 1½ cups panko breadcrumbs 2 teaspoons garlic powder 2 teaspoons dried oregano 2 tablespoons sweet or smoked paprika 1 teaspoon kosher salt ½ cup all-purpose flour ½ teaspoon freshly ground black pepper 2 large eggs 4 to 6 boneless, skinless chicken breasts or cutlets, each about ½ inch thick (about 1½ pounds total) 1 jar (24 ounces) good-quality marinara sauce (I love Rao’s) 6 to 8 slices provolone cheese ¼ cup shredded Parmesan cheese Let’s cook: 1. Preheat oven to 400°F with a rack in the upper third. Generously mist a sheet pan with cooking spray. 2. Stir together the panko, garlic powder, oregano, paprika, and ½ teaspoon of the salt in a large bowl to combine. In another large bowl, whisk together the flour, the remaining ½ teaspoon salt, and the pepper. In a third shallow bowl, whisk together the eggs. 3. Dip each chicken cutlet first in the flour mixture, shaking off any excess, then in the eggs, and finally in the panko mixture, patting to coat thoroughly on both sides. Place the breaded chicken cutlets on the prepared pan. Mist the chicken with cooking spray to lightly coat. 4. Bake the chicken until the panko has browned and the cutlets are almost entirely cooked through (they’ll no longer feel squishy when you poke them), about 15 minutes. 5. Remove the pan from the oven. Top each chicken cutlet with about ½ cup marinara sauce (use up the jar) and the provolone and Parmesan, and return to the oven. Bake until the cheese is melted and bubbly, an additional 10 minutes. 6. Serve hot. Chicken Legs with Fennel & Orange Serves 4 I love the classic pairing of fennel and citrus.
