We both peer out into the dark, looking for thees scary things. We watch a long while. The night does nothing. ‘We could let them in if they want in,’ he says, but seems uncertain still. ‘Really?’ He draws the door open wider and we leave it that way, looking out at what we can’t see. Unguarded, unafraid, love and loved. We keep the door open as if there are no doors, no walls, no skin, no houses, no difference between us and all the things we think of as the night.

From beneath the sheets, Chris heard his small voice singing, "Twinkle Twinkle Little Star." Nudging his boy, Chris waited for him to resurface and put a finger to his lips again. They couldn't afford for the looters to hear them no matter how much it took his son away from their dark reality. The sound of a beeping horn was accompanied by Dean howling and laughing, the vehicle's engine releasing a war cry under the weight of his heavy foot. The cacophony of chaos outside got louder. Frank wailed, Marie let out louder screams, the engine roared, the horn beeped, Dean laughed, and Tommy shrieked. Looking outside again, Chris kept his eyes away from Tommy. Instead, he watched George. If there was anyone who would save them, it was him.  Crunch! Crash!  The truck dropped by six inches. Tommy stopped screaming.  When Dean cut the engine, silence settled over the cul-de-sac, spreading outwards like the thick pool of blood from Tommy's crushed head. Marie's face was locked in a silent scream. Frank slumped further and shook with inaudible sobs. The men, even the weasel with the tennis racket, stood frozen. Spaghetti alla puttanesca is typically made with tomatoes, olives, anchovies, capers, and garlic. It means, literally, "spaghetti in the style of a prostitute." It is a sloppy dish, the tomatoes and oil making the spaghetti lubricated and slippery. It is the sort of sauce that demands you slurp the noodles Goodfellas style, staining your cheeks with flecks of orange and red. It is very salty and very tangy and altogether very strong; after a small plate, you feel like you've had a visceral and significant experience. There are varying accounts as to when and how the dish originated- but the most likely explanation is that it became popular in the mid-twentieth century. The first documented mention of it is in Raffaele La Capria's 1961 novel, Ferito a Morte. According to the Italian Pasta Makers Union, spaghetti alla puttanesca was a very popular dish throughout the sixties, but its exact genesis is not quite known. Sandro Petti, a famous Napoli chef and co-owner of Ischian restaurant Rangio Fellone, claims to be its creator. Near closing time one evening, a group of customers sat at one of his tables and demanded to be served a meal. Running low on ingredients, Petti told them he didn't have enough to make anything, but they insisted. They were tired, and they were hungry, and they wanted pasta. "Facci una puttanata qualsiasi!" they cried. "Make any kind of garbage!" The late-night eater is not usually the most discerning. Petti raided the kitchen, finding four tomatoes, two olives, and a jar of capers, the base of the now-famous spaghetti dish; he included it on his menu the next day under the name spaghetti alla puttanesca. Others have their own origin myths. But the most common theory is that it was a quick, satisfying dish that the working girls of Naples could knock up with just a few key ingredients found at the back of the fridge- after a long and unforgiving night. As with all dishes containing tomatoes, there are lots of variations in technique. Some use a combination of tinned and fresh tomatoes, while others opt for a squirt of puree. Some require specifically cherry or plum tomatoes, while others go for a smooth, premade pasta. Many suggest that a teaspoon of sugar will "open up the flavor," though that has never really worked for me. I prefer fresh, chopped, and very ripe, cooked for a really long time. Tomatoes always take longer to cook than you think they will- I rarely go for anything less than an hour. This will make the sauce stronger, thicker, and less watery. Most recipes include onions, but I prefer to infuse the oil with onions, frying them until brown, then chucking them out. I like a little kick in most things, but especially in pasta, so I usually go for a generous dousing of chili flakes. I crush three or four cloves of garlic into the oil, then add any extras. The classic is olives, anchovies, and capers, though sometimes I add a handful of fresh spinach, which nicely soaks up any excess water- and the strange, metallic taste of cooked spinach adds an interesting extra dimension. The sauce is naturally quite salty, but I like to add a pinch of sea or Himalayan salt, too, which gives it a slightly more buttery taste, as opposed to the sharp, acrid salt of olives and anchovies. I once made this for a vegetarian friend, substituting braised tofu for anchovies. Usually a solid fish replacement, braised tofu is more like tuna than anchovy, so it was a mistake for puttanesca. It gave the dish an unpleasant solidity and heft. You want a fish that slips and melts into the pasta, not one that dominates it. In terms of garnishing, I go for dried oregano or fresh basil (never fresh oregano or dried basil) and a modest sprinkle of cheese. Oh, and I always use spaghetti. Not fettuccine. Not penne. Not farfalle. Not rigatoni. Not even linguine. Always spaghetti.

I cupped her face in my hands and stared into those eyes, dancing eyes, warm and smiling, filled with tears and love, a combination I couldn’t lose, couldn’t walk away from again. She pulled me inside and closed the door behind me, locking it. I tried to speak, but words wouldn’t come, and she put her finger to my lips to calm me. She turned with her shoulder blades against my chest and drew my arms around her, holding the backs of my hands in her palms. Placing my palms just under her collarbone, she ran my hands down her body. As they passed over her breasts, I could tell they were larger, full and tight, swollen with fluid, and she gasped slightly as I touched her nipples. I closed my eyes, resting my chin on her shoulder, and she continued downward. They moved under her breasts, and I lifted up slightly, feeling their weight, the heaviness, wondering how tired her shoulders were at the end of the day, reminding myself to give her a good backrub. She turned my wrists and drew my hands downward. They immediately began to move forward, over the place where her slim waist used to be, out farther and farther, until they stopped even with her navel. Her skin under the cotton dress was tight, and I spread my fingers wide, taking in the size of her tummy, the width, the depth, moving around it like gripping a basketball. And then it happened. It kicked, a good, hard kick. I could feel it rolling around inside her, stretching and moving, moving deep in her as I had just a few months before on that first night, asking her how it felt to carry a child inside her. I remembered, and she was right. It did feel the very same. In Chapter 7, we will discuss in greater detail some of the distorted thoughts and strategies for modifying them, particularly with regard to the emotions they trigger, including pure and simple discomfort about a task (i.e., “Ugh”). When dealing with procrastination, however, the most common distortion we encounter is magnification/minimization. That is, you pull out and embellish all the negative elements about performing a task and you overlook or play down the positive elements and your ability to handle the task in question.

The short answer is: Eat a boatload of fat (~1.5 to 2.5 g per kilogram of body weight), next-to-no carbs, and moderate protein (1 to 1.5 g per kilogram of body weight) each day. We’ll look at Dom’s typical meals and day in a minute, but a few critical notes first: High protein and low fat doesn’t work. Your liver will convert excess amino acids into glucose and shut down ketogenesis. Fat as 70 to 85% of calories is required. This doesn’t mean you always have to eat rib eye steaks. A chicken breast by itself will kick you out of ketosis, but a chicken breast cut up into a green leafy salad with a lot of olive oil, feta cheese, and some Bulletproof Coffee (for example) can keep you in ketosis.
