Add the orange peel and blackberry leaf, divide the mixture among three large tea baskets or tea bags, and put a few pie weights in each. Bring the water to a boil in a large stainless-steel saucepan. Add the tea baskets, citric acid, and salt. Let simmer for 5 minutes. Add the lemongrass, cover partially, and let simmer 15 minutes longer. Add the lime and lemon zests and juices and let simmer, uncovered, until the liquid is reduced by a little less than half, making about 3 cups. Remove from the heat and remove the tea balls. Pour the agave syrup into a bowl. Set a fine-mesh strainer over the bowl and strain the tonic into the syrup. You will need to work in batches and to dump out the strainer after each pour. If the tonic is cloudy, strain again. Pour into a clean bottle and seal. Store in the refrigerator for up to 1 year.

Coffee, colas, certain teas, and chocolate contain the stimulant caffeine, and its effects can take as long as eight hours to wear off fully. Therefore, a cup of coffee in the late afternoon can make it hard for you to fall asleep at night. Nicotine is also a stimulant, often causing smokers to sleep only very lightly. Strain well using cheesecloth or an unbleached coffee filter, store in a sterile glass jar (just dip in the boiling water before adding the herbs and let stand, open side up), cool, lid tightly and place in refrigerator for up to a week. When you wash your face in the morning or evening, use a sterile eyecup or other small sterile container to ‘wash’ your eyes with this herbal extract. If you are experiencing a painful eye condition, it is better to warm the eye bath liquid slightly before use. You can also dip cotton balls in the solution and press one on each eye (with lid closed) as a compress. Eyebright Tea: Using the same method for making an eye bath, simply drink the tea for relief of eye symptoms due to eyestrain, colds and allergies.

I'm planting sage for wisdom, lavender for tenderness (and, according to French folklore, your forty-sixth wedding anniversary), rosemary for remembrance. Thyme is for courage, but there is also the Greek legend that when Paris kidnapped Helen of Troy, each tear that fell to the ground sprouted a tuft of thyme. All things being equal, I prefer courage to tears in my pot roast.
