It smelled divine, and the faerie merchant rolled it in crushed nuts before handing it over on a stick, but as soon as it touched my palm, it began to melt. The merchant was watching me, so I put it in my mouth, pantomiming my delight. The cheese tasted like snow and melted within seconds. I stopped next at a stand equipped with a smoking hut. The faerie handed me a delicate fillet of fish, almost perfectly clear despite the smoking. I offered it to Shadow, but he only looked at me with incomprehension in his eyes. And, indeed, when I popped it into my mouth, it too melted flavorlessly against my tongue. I took a wandering course to the lakeshore, conscious of the need to avoid suspicion. I paused at the wine merchant, who had the largest stand. It was brighter than the others, snow piled up behind it in a wall that caught the lantern light and threw it back in a blinding glitter. I had to look down at my feet, blinking back tears, as one of the Folk pressed an ice-glass into my hand. Like the food, the wine smelled lovely, of sugared apples and cloves, but it slid eerily within the ice, more like oil than wine. Shadow kept growling at it, as he had not with the faerie food, and so I tipped it onto the snow. Beside the wine merchant was a stand offering trinkets, frozen wildflowers that many of the Folk threaded through their hair or wove through unused buttonholes on their cloaks, as well as an array of jewels with pins in them. I could not compare them to any jewels I knew; they were mostly in shades of white and winter grey, hundreds of them, each impossibly different from the next. I selected one that I knew, without understanding how, was the precise color of the icicles that hung from the stone ledges of the Cambridge libraries in winter. But moments after I pinned it to my breast, all that remained was a patch of damp.

We've been here three days already, and I've yet to cook a single meal. The night we arrived, my dad ordered Chinese takeout from the old Cantonese restaurant around the corner, where they still serve the best egg foo yung, light and fluffy and swimming in rich, brown gravy. Then there had been Mineo's pizza and corned beef sandwiches from the kosher deli on Murray, all my childhood favorites. But last night I'd fallen asleep reading Arthur Schwartz's Naples at Table and had dreamed of pizza rustica, so when I awoke early on Saturday morning with a powerful craving for Italian peasant food, I decided to go shopping. Besides, I don't ever really feel at home anywhere until I've cooked a meal. The Strip is down by the Allegheny River, a five- or six-block stretch filled with produce markets, old-fashioned butcher shops, fishmongers, cheese shops, flower stalls, and a shop that sells coffee that's been roasted on the premises. It used to be, and perhaps still is, where chefs pick up their produce and order cheeses, meats, and fish. The side streets and alleys are littered with moldering vegetables, fruits, and discarded lettuce leaves, and the smell in places is vaguely unpleasant. There are lots of beautiful, old warehouse buildings, brick with lovely arched windows, some of which are now, to my surprise, being converted into trendy loft apartments. If you're a restaurateur you get here early, four or five in the morning. Around seven or eight o'clock, home cooks, tourists, and various passers-through begin to clog the Strip, aggressively vying for the precious few available parking spaces, not to mention tables at Pamela's, a retro diner that serves the best hotcakes in Pittsburgh. On weekends, street vendors crowd the sidewalks, selling beaded necklaces, used CDs, bandanas in exotic colors, cheap, plastic running shoes, and Steelers paraphernalia by the ton. It's a loud, jostling, carnivalesque experience and one of the best things about Pittsburgh. There's even a bakery called Bruno's that sells only biscotti- at least fifteen different varieties daily. Bruno used to be an accountant until he retired from Mellon Bank at the age of sixty-five to bake biscotti full-time. There's a little hand-scrawled sign in the front of window that says, GET IN HERE! You can't pass it without smiling. It's a little after eight when Chloe and I finish up at the Pennsylvania Macaroni Company where, in addition to the prosciutto, soppressata, both hot and sweet sausages, fresh ricotta, mozzarella, and imported Parmigiano Reggiano, all essential ingredients for pizza rustica, I've also picked up a couple of cans of San Marzano tomatoes, which I happily note are thirty-nine cents cheaper here than in New York.

Though I can't afford anything sold at them, I do love wandering through the fancy gourmet markets, especially the one at Bloomingdale's. That place is so amazing, Meemaw. You have never seen so much good stuff in one place. I looked for Schrafft's when I first got here- wanting to eat a butterscotch sundae like the one you told me about- but I think they've all shut down. Mostly I shop at this really cheap grocery store I found in Spanish Harlem. They sell cheap cuts of meat- oxtail, trotters, and pigs' ears- as well as all varieties of offal. (I always think of you, Meemaw, when eating livers, think of you eating them every Sunday after church at The Colonnade.) I like to poke around the Asian markets, too, bringing home gingerroot, lemongrass, fish sauce, dehydrated shrimp, wonton wrappers, dozens of different chilies, and soft little candies wrapped in rice paper that dissolves in your mouth. As a special treat I go to the green market in Union Square on the weekends- which is a farmer's market smack-dab in the middle of downtown. Even though I really can't afford the produce, I'll often splurge anyway, arriving home with one or two perfect things- carrots the color of rubies with bright springy tops, or a little bag of fingerling potatoes, their skins delicate and golden.

We wandered the entire length of the street market, stopping to buy the provisions I needed for the lunch dish I wanted to prepare to initiate l'Inglese into the real art of Sicilian cuisine. I took l'Inglese around the best stalls, teaching him how to choose produce, livestock, game, fish, and meat of the highest quality for his dishes. Together we circled among the vegetable sellers, who were praising their heaps of artichokes, zucchini still bearing their yellow flowers, spikes of asparagus, purple-tinged cauliflowers, oyster mushrooms, and vine tomatoes with their customary cries: "Carciofi fresci." "Funghi belli." "Tutto economico." I squeezed and pinched, sniffed, and weighed things in my hands, and having agreed on the goods I would then barter on the price. The stallholders were used to me, but they had never known me to be accompanied by a man. Wild strawberries, cherries, oranges and lemons, quinces and melons were all subject to my scrutiny. The olive sellers, standing behind their huge basins containing all varieties of olives in brine, oil, or vinegar, called out to me: "Hey, Rosa, who's your friend?" We made our way to the meat vendors, where rabbits fresh from the fields, huge sides of beef, whole pigs and sheep were hung up on hooks, and offal and tripe were spread out on marble slabs. I selected some chicken livers, which were wrapped in paper and handed to l'Inglese to carry. I had never had a man to carry my shopping before; it made me feel special. We passed the stalls where whole tuna fish, sardines and oysters, whitebait and octopus were spread out, reflecting the abundant sea surrounding our island. Fish was not on the menu today, but nevertheless I wanted to show l'Inglese where to find the finest tuna, the freshest shrimps, and the most succulent swordfish in the whole market.

Inside an H Mart complex, there will be some kind of food court, an appliance shop, and a pharmacy. Usually, there's a beauty counter where you can buy Korean makeup and skin-care products with snail mucin or caviar oil, or a face mask that vaguely boasts "placenta." (Whose placenta? Who knows?) There will usually be a pseudo-French bakery with weak coffee, bubble tea, and an array of glowing pastries that always look much better than they taste. My local H Mart these days is in Elkins Park, a town northeast of Philadelphia. My routine is to drive in for lunch on the weekends, stock up on groceries for the week, and cook something for dinner with whatever fresh bounty inspires me. The H Mart in Elkins Park has two stories; the grocery is on the first floor and the food court is above it. Upstairs, there is an array of stalls serving different kinds of food. One is dedicated to sushi, one is strictly Chinese. Another is for traditional Korean jjigaes, bubbling soups served in traditional earthenware pots called ttukbaegis, which act as mini cauldrons to ensure that your soup is still bubbling a good ten minutes past arrival. There's a stall for Korean street food that serves up Korean ramen (basically just Shin Cup noodles with an egg cracked in); giant steamed dumplings full of pork and glass noodles housed in a thick, cakelike dough; and tteokbokki, chewy, bite-sized cylindrical rice cakes boiled in a stock with fish cakes, red pepper, and gochujang, a sweet-and-spicy paste that's one of the three mother sauces used in pretty much all Korean dishes. Last, there's my personal favorite: Korean-Chinese fusion, which serves tangsuyuk---a glossy, sweet-and-sour orange pork---seafood noodle soup, fried rice, and black bean noodles.

I lifted the top of another crate, and fifty or so lobsters with spiny backs greeted me- beautiful and big, and the top portion freckled by the sea. I loved working with lobster, the way their color changed from mottled brown and orange to a fiery red when cooked. I'd use the tails for le plat principal, flambéed in cognac and simmered in a spicy tomato- my version of my grandmother's recipe for langouste à la armoricaine. The garnish? A sprig of fresh rosemary. The other crates were filled with lovely mussels, scallops, whelks, and smoked salmon filets, along with another surprise- escargots. Save for the snails, this meal would be a true seafood extravaganza.

One day, after you have mastered them all, you will decide on a specialty of your own and conduct your own tests for the worthy. Asaprán witches have too much magic in their blood, and not all their meals are suitable for consumption. Like candy and heartbreak, moderation is key. And after all, recipes are much like spells, aren't they? Instead of eyes of newt and wings of bat they are now a quarter kilo of marrow and a pound of garlic, boiled for hours until the meat melts off their bones. Pots have replaced cauldrons, but the attention to detail remains constant.

It’s worth the money.” His lips smacking, Jonas sipped in the warm cider. “I’m sure it is Sir.” The angelic faced little one smiled up at him. “It’s yummy!” The Cider Vendor smiled down at him and tipped his hat to him “Yes it tis! Yummy!” Then he chuckled cheerfully with another satisfied customer, no matter how small. “Ummm, good!” Jonas agreed with them. The Cider Vendor took a sip of his own brew himself, his mouth puckering. “It’ll put the spirit of life back in you on a cold day like this, that Cider.” Two men in tall top hats and fine suits halted in front of the Cider Vendor. “Sir, we are collecting for the poor and wondered if a fine fellow such as yourself might have something to contribute.” Jonas glanced up at them in a wizened way. “We’ve a couple coins to contribute but it better get to the poor, understand?” “Of course, my fine fellow! “The taller of the two sharply dressed gentlemen spoke. Smiling a satisfied smile, Jonas dropped two silver coins into the gentleman’s hands. The tall gentleman took them and tipped his hat, smiling down at them both. “Very generous!” He glanced stone faced at the vendor, who immediately forked over several dollars. “A very Merry Christmas to you both!” They trod off through the snow in their finery, to the welcome crunch of the snow drifts beneath their feet. Mr. Angel paused at the Cheese vendor next to them, where a raggedy young girl was staring wide eyed at the rows and rows of cheeses above her.

The two young boys raced along the sidewalk, twisting their way between passers-by, their eyes frantically glancing behind them at the large pursuing policeman. Suddenly Mr. Thorn, a large, burley man dressed in black blocked their way and took them both by the collars. “So there you are!” He snatched the apple quickly from James’ hand. “What have we here?” He was about to take a bite of it, when he saw the officer racing towards them. “It’s all right officer. I have the young scoundrels and I’ll make full restitutions for their thievery.” He quickly fished coins from his pocket and with a conning smile, put them in the hand of the frowning Policeman. “And a little extra for your trouble, my good man. It’s such a small crime and the criminals so . . . minor.” The burly policeman rocked back and forth considering and then grunted, after all it was Christmas. “Very well sir. I’ll give these to the Vendor but I catch either of you snatching again, it’s behind bars with you and a good strong workhouse. You got me!” Jonas glanced down at his worn out boots, his face red with shame. “Oh yes sir.” James followed suit and then glanced up into the gruff face of the law. “Sorry, we were just hungry!” Mr. Thorn smiled and tipped his hat to the Policeman, who shaking his head, sauntered away. Immediately Mr. Thorn slapped Jonas hard across the face, drawing blood from his nose and then smacked James on the head, crushing his cap. He snatched the apple from James’ hand and pocketed them both. “So here you two no-accounts are? I’ve been searching high and wide for the lot of you. I left you at this corner and I expected to find you right where I left ya!” He then snatched the cup from Jonas’ hand with a scowl. He poured the coins into his hand and his greedy eyes took in the meager profits. Jonas immediately stammered justification for their absence. “We-we found a better corner to beg at, Mr. Thorn. I think we done all right.” Mr. Thorn cleared his throat considering and then his boisterous laughter echoed. He put his big arms around the two young lads. “Well, you done fine for us boys! We needs the money! We’ll have to have you two young Sirs representing our fine establishment again tomorrow, I do believe.” He chuckled cruelly. “We’ve great charity in our hearts for you kiddies but a soulful heart won’t put bread and molasses on the table.” He greedily poured the coins into his coat pocket. Both lads coughed mischievously at mention of such charitable actions. Thorn eyed them both to see if they are making fun of him, which they were. Jonas cleared his throat. “A bit of a tickle.” Thorn growled and gruffly took hold of the boy’s arm. “I’d tickle you both with a whip if I thought you was funning with me! Now boys, you’ve roughed my gentle nature. You know that I has nothing but love for the lot of you. My big heart swells at the sight of each and every one of you little bastards . . . I mean kiddies. Shall we on home?” “Here Jamey lad, you hold the cup. Give us a song the two of you, to beg alms by. I think I’m in the mood for “Oh Come All Ye Faithful”, but make it sweet or there’s a lashing for the both of ya!” Jonas and James exchanged tortured looks. Together the young Nicholas boys sweetly began to sing the song, as they moved through the crowd. The Tall Toymaker followed them down the sidewalk, trying not to be observed by Thorn. ”And a villain enters the scene, an ugly villain at that!
