If necessary, add a dash of cream to achieve a smooth, porridge-like consistency. Add the ground beef, pork, lamb, allspice, garlic powder, nutmeg, thyme, and salt to the bowl with bread/milk mixture and stir to combine. Add the onion, egg, egg yolk, and pepper, and sprinkle on 1 tablespoon of the flour. Beat together until the texture is smooth and you can form meatballs with your hands without the mixture falling apart. Add a little more flour to bind if necessary, then refrigerate the meat mixture for 20 minutes. While the meat chills, melt 3 tablespoons of the butter in a large skillet over medium-low heat. Reduce heat to low to prevent burning. Remove the meat mixture from the refrigerator and form it into 1- to 11/2-inch meatballs, using a large baking sheet as a landing zone. Place about 10 meatballs into the skillet and cook on medium-low, rotating meatballs in the butter to ensure browning on all sides. Once meatballs are browned and retaining their shape, cover the skillet with a lid and cook for an additional 20 minutes—uncovering every 5 minutes to stir briefly and add a splash of white wine if the skillet is looking dry, then re-cover. This will help the meatballs to steam and cook all the way through. Slice a meatball in half to test for doneness. If it’s firm to the touch and lightly pink inside, remove the rest from the skillet to a serving bowl and repeat steps 4 and 5 with the remaining meatballs. Meatballs will continue cooking after being removed from the heat. Once all the meatballs are cooked and transferred to the serving bowl, reduce the heat under the skillet to low. Scrape the bottom to remove browned bits, then add the remaining white wine, remaining butter, remaining flour, the heavy cream, and the soy sauce. Stir until smooth, cooking over low to medium-low heat until the sauce coats the back of a spoon. Eat as a dinner party appetizer with lingonberry jam and plenty of toothpicks, or serve with buttered egg noodles or mashed potatoes as a main course, while listening to “I Wanna Be Loved” by the Andrews Sisters.

Tarte aux Pêches, Tarte aux Limettes, Tarte aux Poires, Tarte aux Cerises. Tarte aux Fromage Frais, both with and without Pruneaux. Tarte aux Citron et aux Amandes, Tarte aux Poires à la Bourdalue, and Tarte aux Fraises, which is not "Tart with Freshes," as the name of the Tarte aux Fromage Frais ("Tart with Fresh Cheese," of course) might suggest, but rather Tart with Strawberries, which was a fine little French lesson. (Why are strawberries, in particular, named for freshness? Why not blackberries? Or say, river trout? I love playing amateur- not to say totally ignorant- etymologist....) I made two kinds of pastry in a kitchen so hot that, even with the aid of a food processor, the butter started melting before I could get it incorporated into the dough. Which work resulted in eight tart crusts, perhaps not paragons of the form, but good enough. I made eight fillings for my eight tart crusts. I creamed butter and broke eggs and beat batter until it formed "the ribbon." I poached pears and cherries and plums in red wine.

In that sort of half-reverie which permits one to participate in an event and yet remain quite aloof, the little detail which was lacking began obscurely but insistently to coagulate, to assume a freakish, crystalline form, like the frost which gathers on the windowpane. And like those frost patterns which seem so bizarre, so utterly free and fantastic in design, but which are nevertheless determined by the most rigid laws, so this sensation which commenced to take form inside me seemed also to be giving obedience to ineluctable laws. HERE ARE MY TEN BEEF NOODLE SOUP COMMANDMENTS: 1. Throw out the first: always flash-boil your bones and beef to get the “musk” out. I’ve gone back and forth on this a lot. I would sometimes brown the meat as opposed to boil, but decided in the end that for this soup, you gotta boil. If you brown, it’s overpowering. The lesson that beef noodle soup teaches you is restraint. Sometimes less is more if you want all the flavors in the dish to speak to you. 2. Make sure the oil is medium-high when the aromatics go down and get a slight caramelization. It’s a fine line. Too much caramelization and it becomes too heavy, but no caramelization and your stock is weak. 3. Rice wine can be tricky. Most people like to vaporize it so that all the alcohol is cooked off. I like to leave a little of the alcohol flavor ’cause it tends to cut through the grease a bit. 4. Absolutely no butter, lard, or duck fat. I’ve seen people in America try to “kick it up a notch” with animal fats and it ruins the soup. Peanut oil or die. 5. Don’t burn the chilis and peppercorns, not even a little bit. You want the spice and the numbness, but not the smokiness. 6. After sautéing the chilis/peppercorns, turn off the heat and let them sit in the oil to steep. This is another reason you want to turn the heat off early. 7. Strain your chilis/peppercorns out of the oil, put them in a muslin bag, and set them aside. Then add ginger/garlic/scallions to the oil in that order. Stage them. 8. I use tomatoes in my beef noodle soup, but I add them after the soup is finished and everything is strained. I let them hang out in the soup as it sits on the stove over the course of the day. I cut the tomatoes thin so they give off flavor without having to cook too long and so you can serve them still intact. 9. Always use either shank or chuck flap. Brisket is too tough. If you want to make it interesting, add pig’s foot or oxtail. 10. Do you. I don’t give you measurements with this because I gave you all the ingredients and the technique. The best part about beef noodle soup is that there are no rules. It just has to have beef, noodle, and soup. There are people that do clear broth beef noodle soup. Beef noodle soup with dairy. Beef noodle soup with pig’s blood. It would suck if you looked at my recipe and never made your own, ’cause everyone has a beef noodle soup in them. Show it to me.

Hate is a pointless emotion to have inside you. It is like eating a scorpion to punish it for stinging you. 12. Go for a run. Then do some yoga. 13. Shower before noon. 14. Look at the sky. Remind yourself of the cosmos. Seek vastness at every opportunity, in order to see the smallness of yourself. 15. Be kind. 16. Understand that thoughts are thoughts. The gap between where you are and where you want to be. Simply thinking of the gap widens it. And you end up falling through. 25. Read a book without thinking about finishing it. Just read it. Enjoy every word, sentence, and paragraph. Don’t wish for it to end, or for it to never end. 26. Reasons to keep books: To read them one day! If you hope to read the book one day, definitely keep it. It’s fine to be aspirational; no one else will keep score on what you have actually read. It’s great to dream and hope that one day you do have the time to read all your books. To tell your story. Some people give away every book they’ve read explaining, “What’s the point in keeping a book after I’ve read it if I’m not going to read it again? It’s someone else’s turn to read my copy now.” If that works for you, then only keep books on your shelves that you haven’t read yet. However you can probably understand that the books that you haven’t yet read only tell the story of your future, they don’t say much about where you’ve been and what made you who you are today. To make people think you’ve read the book! This one may be hard or easy for you to admit, but we don’t think there is any shame in it. Sometimes we hold on to books because they represent our aspirational selves, supporting the perception of how well read or intelligent we are. They are certainly the books our ideal selves would read, but in reality—if we had to admit it—we probably never will. We would argue that you should still have these books around. They are part of your story and who you want to be. To inspire someone else in your household to read those books one day. Perhaps it’s your kids or maybe your guests. Keeping books for the benefit of others is thoughtful and generous. At the very least, anyone who comes into your home will know that these are important books and will be exposed to the subjects and authors that you feel are important. Whether they actually read Charles Dickens or just know that he existed and was a prolific writer after seeing your books: mission accomplished! To retain sentimental value. People keep a lot of things that have sentimental value: photographs, concert ticket stubs, travel knickknacks. Books, we would argue, have deeper meaning as sentimental objects. That childhood book of your grandmother's— she may have spent hours and hours with it and perhaps it was instrumental in her education. That is much more impactful than a photograph or a ceramic figurine. You are holding in your hands what she held in her hands. This brings her into the present and into your home, taking up space on your shelves and acknowledging the thread of family and history that unites you. Books can do that in ways that other objects cannot. To prove to someone that you still have it! This may be a book that you are otherwise ready to give away, but because a friend gifted it, you want to make sure you have it on display when they visit. This I’ve found happens a lot with coffee table books. It can be a little frustrating when the biggest books are the ones you want to get rid of the most, yet, you are beholden to keeping them. This dilemma is probably better suited to “Dear Abby” than to our guidance here. You will know if it’s time to part ways with a book if you notice it frequently and agonize over the need to keep it to stay friends with your friend. You should probably donate it to a good organization and then tell your friend you spilled coffee all over it and had to give it away! To make your shelves look good! There is no shame in keeping books just because they look good. It’s great if your books all belong on your shelves for multiple reasons, but if it’s only one reason and that it is that it looks good, that is good enough for us. When you need room for new acquisitions, maybe cull some books that only look good and aren’t serving other purposes.

Or maybe he understands that you've made a witty remark but, unsure of what to do with it, he holds it in his hand like some bit of conversational phlegm he will wipe away later. You spend another hour trying to find each other, to recognise each other, and you drink a little too much and try a little too hard. And you go home to a cold bed and think, That was fine. And your life is a long line of fine. And then you run into Nick Dunne on Seventh Avenue as you're buying diced cantaloupe, and pow, you are known, you are recognised, the both of you. You both find the exact same things worth remembering. (Just one olive, though). You have the same rhythm. Click. You just know each other. All of a sudden you see reading in bed and waffles on Sunday and laughing at nothing and his mouth on yours. And it's so far beyond fine that you know you can never go back to fine. That fast. You think: Oh, here is the rest of my life. It's finally arrived.

Fine it with Ovo-Pure (powdered egg whites), isinglass (granulate from fish bladders), gelatin (often derived from cow bones and pigskins), or if it’s a white, strip out pesky proteins that cause haziness with Puri-Bent (bentonite clay, the ingredient in kitty litter). Not tannic enough? Replace $1,000 barrels with a bag of oak chips (small wood nuggets toasted for flavor), “tank planks” (long oak staves), oak dust (what it sounds like), or a few drops of liquid oak tannin (pick between “mocha” and “vanilla”). Or simulate the texture of barrel-aged wines with powdered tannin, then double what you charge. (““Typically, the $8 to $12 bottle can be brought up to $15 to $20 per bottle because it gives you more of a barrel quality. . . . You’re dressing it up,” a sales rep explained.) Wine too thin? Build fullness in the mouth with gum arabic (an ingredient also found in frosting and watercolor paint). Too frothy? Add a few drops of antifoaming agent (food-grade silicone oil). Cut acidity with potassium carbonate (a white salt) or calcium carbonate (chalk). Crank it up again with a bag of tartaric acid (aka cream of tartar). Increase alcohol by mixing the pressed grape must with sugary grape concentrate, or just add sugar. Decrease alcohol with ConeTech’s spinning cone, or Vinovation’s reverse-osmosis machine, or water. Fake an aged Bordeaux with Lesaffre’s yeast and yeast derivative. Boost “fresh butter” and “honey” aromas by ordering the CY3079 designer yeast from a catalog, or go for “cherry-cola” with the Rhône 2226. Or just ask the “Yeast Whisperer,” a man with thick sideburns at the Lallemand stand, for the best yeast to meet your “stylistic goals.” (For a Sauvignon Blanc with citrus aromas, use the Uvaferm SVG. For pear and melon, do Lalvin Ba11. For passion fruit, add Vitilevure Elixir.) Kill off microbes with Velcorin (just be careful, because it’s toxic). And preserve the whole thing with sulfur dioxide. When it’s all over, if you still don’t like the wine, just add a few drops of Mega Purple—thick grape-juice concentrate that’s been called a “magical potion.” It can plump up a wine, make it sweeter on the finish, add richer color, cover up greenness, mask the horsey stink of Brett, and make fruit flavors pop.
