Everywhere, forest-dwellers, both human and non-human, can be pushed out. Since 1960, 25 percent of the forests of Central America have been cleared for cattle. Once cleared, the poor soils will support grazing for a few years; then the graziers must move on. Shrub takes over the abandoned pasture, but the forest does not return. When the forests are cleared so the cattle can graze, billions of tons of carbon dioxide are released into the atmosphere. Finally, the world's cattle are thought to produce about 20 percent of the methane released into the atmosphere, and methane traps twenty-five times as much heat from the sun as carbon dioxide. Factory farm manure also produces methane because, unlike manured dropped naturally in the fields, it dies not decompose in the presence of oxygen. All of this amounts to a compelling reason...for a plant based diet.

When Rin Tin Tin first became famous, most dogs in the world would not sit down when asked. Dogs performed duties: they herded sheep, they barked at strangers, they did what dogs do naturally, and people learned to interpret and make use of how they behaved. The idea of a dog's being obedient for the sake of good manners was unheard of. When dogs lived outside, as they usually did on farms and ranches, the etiquette required of them was minimal. But by the 1930s, Americans were leaving farms and moving into urban and suburban areas, bringing dogs along as pets and sharing living quarters with them. At the time, the principles of behavior were still mostly a mystery -- Ivan Pavlov's explication of conditional reflexes, on which much training is based, wasn't even published in an English translation until 1927. If you read the labour press – there was a very lively labour press, right around here [Massachusetts] ; Lowell and Lawrence and places like that, around the mid nineteenth century, run by artisans and what they called factory girls; young women from the farms who were working there – they weren’t asking the autocracy to be less brutal, they were saying get rid of it. And in fact that makes perfect sense; these are human institutions, there’s nothing graven in stone about them. They [corporations] were created early in this century with their present powers, they come from the same intellectual roots as the other modern forms of totalitarianism – namely Stalinism and Fascism – and they have no more legitimacy than they do. The world I knew as a boy was flawed surely, but it was substantial and authentic. The households of my grandparents seemed to breathe forth a sense of the real cost and worth of things. Of course present knowledge of psychology is nearer to zero than to complete perfection, and its applications to teaching must therefore be often incomplete, indefinite, and insecure. The application of psychology to teaching is more like that of botany and chemistry to farming than like that of physiology and pathology to medicine. Anyone of good sense can farm fairly well without science, and anyone of good sense can teach fairly well without knowing and applying psychology. Still, as the farmer with the knowledge of the applications of botany and chemistry to farming is, other things being equal, more successful than the farmer without it, so the teacher will, other things being equal, be the more successful who can apply psychology, the science of human nature, to the problems of the school. We are told that small-scale farming is inefficient— this is true—and that because our factory farms feed the masses, and do so cheaply, we should be satisfied. And that's a deal that makes sense to nearly all of us: just keep the stuff showing up in produce bins and under cellophane in the supermarket cooler, and keep it relatively cheap, and we'll ask no questions. But in striking that devil's bargain, we sign away our responsibility for what's in that food, how it got there, and what was done to human communities to close the deal. To participate in a system and a way of thinking in which the act of eating is merely a commercial transaction is to sell out our spiritual and cultural patrimony. I understand the free-market reasons why Americans do this. But I don't understand why it is called conservative.

So are 25 percent of mammals and 41 percent of amphibians, in large part because of human activity. Hydropower and road construction imperil China’s giant pandas. The northern bald ibis, once abundant in the Middle East, has been driven almost to extinction by hunting, habitat loss, and the difficulties of doing conservation work in war-torn Syria. Hunting and the destruction of wetlands for agriculture drove the population of North America’s tallest bird, the whooping crane, into the teens before stringent protections along the birds’ migratory route and wintering grounds helped the wild flock build back to a few hundred. Little brown bats are dying off in the United States and Canada from a fungus that might have been imported from Europe by travelers. Of some 300 species of freshwater mussels in North America, fully 70 percent are extinct, imperiled, or vulnerable, thanks to the impacts of water pollution from logging, dams, farm runoff, and shoreline development.

Examined with attention, the dissected hare illuminates the parts and properties of all other animals and, by extension, their environment. The hare, like a blade of grass or a piece of coal, is not simply a small fraction of the whole but contains the whole within itself. This makes us all one. Our flesh is the debris of dead stars, and this is also true of the apple and its tree, of each hair on the spider’s legs, and of the rock rusting on planet Mars. Each minuscule being has spokes radiating out to all of creation. Some of the raindrops falling on the potato plants in your farm back in Sweden were once in a tiger’s bladder. From one living thing, the properties of any other may be predicted. Looking at any particle with sufficient care, and following the chain that links all things together, we can arrive at the universe—the correspondences are there, if the eye is skillful enough to detect them. The guts of the anatomized hare faithfully render the picture of the entire world. And because that hare is everything, it is also us. Having understood and experienced this marvelous congruity, man can no longer examine his surroundings merely as a surface scattered with alien objects and creatures related to him only by their usefulness. The carpenter who can only devise tabletops while walking through the forest, the poet who can only remember his own private sorrows while looking at the falling snow, the naturalist who can only attach a label to every leaf and a pin to every insect—all of them are debasing nature by turning it into a storehouse, a symbol, or a fact. Knowing nature, Lorimer would often say, means learning how to be. And to achieve this, we must listen to the constant sermon of things. Our highest task is to make out the words to better partake in the ecstasy of existence.

Yet the vast desolateness of the surrounding fells was awe-inspiring. It was mysterious, but easily imbued with fantasy and tamed by imagination. The sheltered lakes and fertile valleys satisfied her love of the pastoral. The hill farms and the sheep on the high fells demanded accountability. There was a longing in Beatrix Potter for association with permanence: to find a place where time moved slowly, where places remained much as she remembered them from season to season and from year to year.

Even though the woman was not human—the land—or was less than human—a cow—farming had the symbolic overtones of old-fashioned agrarian romance: plowing the land was loving it, feeding the cow was tending it. In the farming model, the woman was owned privately; she was the homestead, not a public thoroughfare. One farmer worked her. The land was valued because it produced a valuable crop; and in keeping with the mystique of the model itself, sometimes the land was real pretty, special, richly endowed; a man could love it. The cow was valued because of what she produced: calves, milk; sometimes she took a prize. There was nothing actually idyllic in this. As many as one quarter of all acts of battery may be against pregnant women; and women die from pregnancy even without the intervention of a male fist. But farming implied a relationship of some substance between the farmer and what was his: and it is grander being the earth, being nature, even being a cow, than being a cunt with no redeeming mythology. Motherhood ensconced a woman in the continuing life of a man: how he used her was going to have consequences for him. Since she was his, her state of being reflected on him; and therefore he had a social and psychological stake in her welfare as well as an economic one. You see the impact of humans on Earth’s environment every day. We are trashing the place: There is plastic along our highways, the smell of a landfill, the carbonic acid (formed when carbon dioxide is dissolved in water) bleaching of coral reefs, the desertification of enormous areas of China and Africa (readily seen in satellite images), and a huge patch of plastic garbage in the Pacific Ocean. All of these are direct evidence of our effect on our world. We are killing off species at the rate of about one per day. It is estimated that humans are driving species to extinction at least a thousand times faster than the otherwise natural rate. Many people naïvely (and some, perhaps, deceptively) argue that loss of species is not that important. After all, we can see in the fossil record that about 99 percent of all the different kinds of living things that have ever lived here are gone forever, and we’re doing just fine today. What’s the big deal if we, as part of the ecosystem, kill off a great many more species of living things? We’ll just kill what we don’t need or notice. The problem with that idea is that although we can, in a sense, know what will become or what became of an individual species, we cannot be sure of what will happen to that species’ native ecosystem. We cannot predict the behavior of the whole, complex, connected system. We cannot know what will go wrong or right. However, we can be absolutely certain that by reducing or destroying biodiversity, our world will be less able to adapt. Our farms will be less productive, our water less clean, and our landscape more barren. We will have fewer genetic resources to draw on for medicines, for industrial processes, for future crops. Biodiversity is a result of the process of evolution, and it is also a safety net that helps keep that process going. In order to pass our own genes into the future and enable our offspring to live long and prosper, we must reverse the current trend and preserve as much biodiversity as possible. If we don’t, we will sooner or later join the fossil record of extinction.

Rousseau saw the invention of farming as one big fiasco, and for this, too, we now have abundant scientific evidence. The rise of private property and farming brought the age of proto-feminism to an end. Sons stayed on the paternal plot to tend the land and livestock, which meant brides now had to be fetched for the family farm. Over centuries, marriageable daughters were reduced to little more than commodities, to be bartered like cows or sheep.30

And there was a kind of draught coming up from under the ground, as if something was hiding there and breathing, very quietly.

the planned destruction of Iraq’s agriculture is not widely known. Modern Iraq is part of the ‘fertile crescent’ of Mesopotamia where man first domesticated wheat between 8,000 and 13,000 years ago, and home to several thousand varieties of local wheat. As soon as the US took over Iraq, it became clear its interests were not limited to oil. In 2004, Paul Bremer, the then military head of the Provisional Authority imposed as many as a hundred laws which made short work of Iraq’s sovereignty. The most crippling for the people and the economy of Iraq was Order 81 which deals, among other things, with plant varieties and patents. The goal was brutally clear-cut and sweeping — to wipe out Iraq’s traditional, sustainable agriculture and replace it with oil-chemical-genetically-modified-seed-based industrial agriculture. There was no public or parliamentary debate for the conquered people who never sought war. The conquerors made unilateral changes in Iraq’s 1970 patent law: henceforth, plant forms could be patented — which was never allowed before — while genetically-modified organisms were to be introduced. Farmers were strictly banned from saving their own seeds: this, in a country where, according to the Food and Agriculture Organisation, 97 per cent of Iraqi farmers planted only their own saved seeds. With a single stroke of the pen, Iraq’s agriculture was axed, while Order 81 facilitated the introduction and domination of imported, high-priced corporate seeds, mainly from the US — which neither reproduce, nor give yields without their prescribed chemical fertiliser and pesticide inputs. It meant that the majority of farmers who had never spent money on seed and inputs that came free from nature, would henceforth have to heavily invest in corporate inputs and equipment — or go into debt to obtain them, or accept lowered profits, or give up farming altogether.
