I was in the local shop today, getting something to eat for lunch, when I suddenly had the strangest sensation—a spontaneous awareness of the unlikeliness of this life. I mean, I thought of all the rest of the human population—most of whom live in what you and I would consider abject poverty—who have never seen or entered such a shop. And this, this, is what all their work sustains! This lifestyle, for people like us! All the various brands of soft drinks in plastic bottles and all the pre-packaged lunch deals and confectionery in sealed bags and store-baked pastries—this is it, the culmination of all the labour in the world, all the burning of fossil fuels and all the back-breaking work on coffee farms and sugar plantations. All for this! This convenience shop! I felt dizzy thinking about it. I mean I really felt ill. It was as if I suddenly remembered that my life was all part of a television show—and every day people died making the show, were ground to death in the most horrific ways, children, women, and all so that I could choose from various lunch options, each packaged in multiple layers of single-use plastic. That was what they died for—that was the great experiment. I thought I would throw up. Of course, a feeling like that can’t last. Maybe for the rest of the day I feel bad, even for the rest of the week—so what? I still have to buy lunch. And in case you’re worrying about me, let me assure you, buy lunch I did.

As I learned about the consequences of my food choices and as I recognized that I didn't have to eat animals, and that eating animals caused the animals to suffer, it caused an enormous footprint on our planet, and it wasn't healthy, it made since to go vegan. And, it's one of the best decisions I've ever made, and I think most people who've decided to go vegan share a similar experience. It's very empowering. And, when I went vegan I actually started eating a wide variety of foods I had never tried before. Different ethnic foods. You also start combining things in different ways, you start becoming more creative in the kitchen. But I went vegan just because it seemed to make sense, and it was aligned with my own values, because I didn't want to support this system that was so abusive to animals, and wasting and squandering so many scarce resources on our planet. And it was also healthier, so it was in my interest to eat food that was plant-based instead of animal-based. Living a vegan lifestyle makes a lot of sense.

I frown. “What people?” “Yupik. Some are Athabascan, or Aleut.” Jonah makes a left turn. “The villages that we fly into are mostly Yupik communities.” “Is that what Agnes is?” “Yup. She grew up in a village up the river. Her mom and brothers are still there, living a subsistence lifestyle.” He adds quickly, perhaps after seeing my frown, “They live off the land.” “Oh! So, sort of like farm-to-table?” Unlike all the other exchanges I’ve had with Jonah, I feel like I’m getting useful information about Western Alaska. “Sure. If you want to compare an entire culture’s way of life to the latest culinary trend . . .” he murmurs dryly.

We often view healthy eating as synonymous with restrictive eating, and we likewise view joyful eating as a guilty pleasure, something that begs for strict limits. I believe that real food allows us both the gift of nourishment, and the gift of pleasure, without unnecessary restrictions. Eating a diet of traditional foods helps us to develop a positive relationship with our food, not one born out of guilt and denial; rather, the traditional foods movement teaches us to purchase, prepare, and enjoy our food with intention.

That remark by Tim illustrates one reason for the rise and fall of Montana farming: the lifestyle was highly valued by older generations, but many farmers’ children today have different values. They want jobs that involve sitting indoors in front of computer screens rather than heaving hay bales, and taking off evenings and weekends rather than having to milk cows and harvest hay that don’t take evenings and weekends off. They don’t want a life forcing them to do literally back-breaking physical work into their 80s, as all three surviving Hirschy brothers and sisters are still doing.

Many in Richmond and Washington, DC, looked down on western Virginia, regarding it as a lawless place where poor families occupied land they didn’t own and didn’t farm, a lifestyle that was at odds with both the Puritan ideals of family and Southern aristocratic values. Something “had to be done” about this place. The Virginia government adopted a policy that anyone squatting on land in the western territories of the state could claim first rights to buy it, but if they couldn’t come up with the cash fast, they would have to either start paying rent or move on. Most families in western Virginia made their livings from the natural world or bartered; they didn’t keep money on hand. Great swaths of land were sold to rich investors in Baltimore, Philadelphia, and New York.

What Musk had done that the rival automakers missed or didn’t have the means to combat was turn Tesla into a lifestyle. It did not just sell someone a car. It sold them an image, a feeling they were tapping into the future, a relationship. Apple did the same thing decades ago with the Mac and then again with the iPod and iPhone. Even those who were not religious about their affiliation to Apple were sucked into its universe once they bought the hardware and downloaded software like iTunes. This sort of relationship is hard to pull off if you don’t control as much of the lifestyle as possible. PC makers that farmed their software out to Microsoft, their chips to Intel, and their design to Asia could never make machines as beautiful and as complete as Apple’s. They also could not respond in time as Apple took this expertise to new areas and hooked people on its applications. You can see Musk’s embrace of the car as lifestyle in Tesla’s abandonment of model years. Tesla does not designate cars as being 2014s or 2015s, and it also doesn’t have “all the 2014s in stock must go, go, go and make room for the new cars” sales. It produces the best Model S it can at the time, and that’s what the customer receives. This means that Tesla does not develop and hold on to a bunch of new features over the course of the year and then unleash them in a new model all at once. It adds features one by one to the manufacturing line when they’re ready. Some customers may be frustrated to miss out on a feature here and there. Tesla, however, manages to deliver most of the upgrades as software updates that everyone gets, providing current Model S owners with pleasant surprises.

The process of receiving teaching depends upon the student giving something in return; some kind of psychological surrender is necessary, a gift of some sort. This is why we must discuss surrendering, opening, giving up expectations, before we can speak of the relationship between teacher and student. It is essential to surrender, to open yourself, to present whatever you are to the guru, rather than trying to present yourself as a worthwhile student. It does not matter how much you are willing to pay, how correctly you behave, how clever you are at saying the right thing to your teacher. It is not like having an interview for a job or buying a new car. Whether or not you will get the job depends upon your credentials, how well you are dressed, how beautifully your shoes are polished, how well you speak, how good your manners are. If you are buying a car, it is a matter of how much money you have and how good your credit is. But when it comes to spirituality, something more is required. It is not a matter of applying for a job, of dressing up to impress our potential employer. Such deception does not apply to an interview with a guru, because he sees right through us. He is amused if we dress up especially for the interview. Making ingratiating gestures is not applicable in this situation; in fact it is futile. We must make a real commitment to being open with our teacher; we must be willing to give up all our preconceptions. Milarepa expected Marpa to be a great scholar and a saintly person, dressed in yogic costume with beads, reciting mantras, meditating. Instead he found Marpa working on his farm, directing the laborers and plowing his land. I am afraid the word guru is overused in the West. It would be better to speak of one’s “spiritual friend,” because the teachings emphasize a mutual meeting of two minds. It is a matter of mutual communication, rather than a master-servant relationship between a highly evolved being and a miserable, confused one. In the master-servant relationship the highly evolved being may appear not even to be sitting on his seat but may seem to be floating, levitating, looking down at us. His voice is penetrating, pervading space. Every word, every cough, every movement that he makes is a gesture of wisdom. But this is a dream. A guru should be a spiritual friend who communicates and presents his qualities to us, as Marpa did with Milarepa and Naropa with Marpa. Marpa presented his quality of being a farmer-yogi. He happened to have seven children and a wife, and he looked after his farm, cultivating the land and supporting himself and his family. But these activities were just an ordinary part of his life. He cared for his students as he cared for his crops and family. He was so thorough, paying attention to every detail of his life, that he was able to be a competent teacher as well as a competent father and farmer. There was no physical or spiritual materialism in Marpa’s lifestyle at all. He did not emphasize spirituality and ignore his family or his physical relationship to the earth. If you are not involved with materialism, either spiritually or physically, then there is no emphasis made on any extreme. Nor is it helpful to choose someone for your guru simply because he is famous, someone who is renowned for having published stacks of books and converted thousands or millions of people. Instead the guideline is whether or not you are able actually to communicate with the person, directly and thoroughly. How much self-deception are you involved in? If you really open yourself to your spiritual friend, then you are bound to work together. Are you able to talk to him thoroughly and properly? Does he know anything about you? Does he know anything about himself, for that matter? Is the guru really able to see through your masks, communicate with you properly, directly? In searching for a teacher, this seems to be the guideline rather than fame or wisdom.

If you compare what the government spends promoting whole plant foods versus what it spends promoting animal and refined foods, I doubt it would amount to a tenth of one percent. Compared to the billions of dollars spent subsidizing the meat, dairy, egg and sugar industries, for example, fruits and vegetables destined for human consumption receive zero subsidies. (Even feed crops destined for farm animal consumption receive subsidies, but those destined for human consumption do not. This, of course, is the result of meat and dairy industry lobbying.)

Our neighbor, Hugo du Toit, was a very handsome Afrikaner, who, with his two sisters, was a close friend of Louis Botha, the first Prime Minister of the Union of South Africa, and also a close friend of General Jan Christiaan Smuts, the Prime Minister of the Union of South Africa from 1919 until 1924. He became a South African military leader during World War II. Although some accuse Smuts of having started apartheid, he later stood against it and was a force behind the founding of the United Nations. He is still considered one of the most eminent Afrikaners ever…. At his expansive farm house, Hugo had autographed photos of both men on his study wall. Parties were frequently held at my grandparents’ home and the thought of roasted turkeys and potatoes which Cherie had prepared, brings back warm memories of a delightful era, now lost forever.”
The Colonial History of South Africa
For many years South Africa was occupied primarily by Dutch farmers known as Boers who had first arrived in the Cape of Good Hope in 1652 when Jan van Riebeeck established the Dutch East India Company and later by British settlers who arrived in the Cape colony after the Napoleonic wars in the 1820’s, on board the sailing ships the Nautilus and the Chapman. For the most part the two got along like oil and water. After 1806, some of the Dutch-speaking settlers left the Cape Colony and trekked into the interior where they established the Boer Republics. There were many skirmishes between them, as well as with the native tribes. In 1877 after the First Boer War between the Dutch speaking farmers and the English, the Transvaal Boer republic was seized by Britain. Hostilities continued until the Second Boer War erupted in October of 1899, costing the British 22,000 lives. The Dutch speaking farmers, now called Afrikaners, lost 7,000 men and having been overrun by the English acknowledged British sovereignty by signing the peace agreement, known as the “Treaty of Vereeniging,” on May 31, 1902.
Although this thumbnail sketch of South African history leaves much unsaid, the colonial lifestyle continued on for the privileged white ruling class until the white, pro-apartheid National Party, was peacefully ousted when the African National Congress won a special national election. Nelson Mandela was elected as the first black president on May 9, 1994. On May 10, 1994, Mandela was inaugurated as The Republic of South Africa's new freely elected President with Thabo Mbeki and F.W. De Klerk as his vice-presidents.

Even if you think you’re eating a super-healthy diet of grilled chicken breast, egg whites, “fresh” (but farm-raised) salmon, and nonfat Greek yogurt, your brain is being undermined by the invisible changes in your food supply. Just a few generations ago, almost all farms were family owned and operated. They’re now predominantly gigantic factory farms that pump their cows and chickens full of cheap feed that doesn’t just change the animals’ health—it changes yours as well. Environmental pollutants like mercury and BPAs can also affect the health of our brains, and fundamental changes in our lifestyle and environment play a vital role as well.

The cheap-food boom has been seductively comfortable for us all. Let's face it: Farming is damn hard work, typically done for damnable pay. By relinquishing this burden, by handing the reins to the corporations, we relieved ourselves of a lot of backaches, sunburns, and financial strains. We struck a deal: The agribusinesses got a guaranteed chunk of our income and our full faith in their ability to keep us sustained. In return, we got to pursue lifestyles that don't revolve around soil and toil and that allow us a measure of leisure time unprecedented in human history.

The time is ripe for confronting consumption. Not only are ecological problems like climate change more pressing than ever, consumerism has lost some of its allure in its North American epicenter. A majority of Americans already feel that their quality of life is suffering because of overemphasis on work and material gain. Encroachment of work and shopping on leisure time has millions of people searching for ways to restore balance in their lives—through lifestyles that trade money for time, commercialism for community, and things for joy. These people—”downshifters” or practitioners of “voluntary simplicity”—may one day attract the majority to their way of life by demonstrating that less stuff can mean more happiness. A North America that prospers without overusing the Earth—a sustainable North America—is entirely possible. All the pieces of the puzzle—from bike- and transit-friendly cities to sustainable farms to low-impact lifestyles—exist, scattered all over the continent. All that remains is for us to do the work of putting the pieces together.

physical activity level (PAL), the ratio of the energy you spend per day relative to the energy you would spend by resting in bed and doing absolutely nothing. PALs for male adults with clerical or administrative jobs that involve sitting all day long average 1.56 in developed countries and 1.61 in less developed countries; in contrast, PALs for workers involved in manufacturing or farming average 1.78 in developed countries and 1.86 in less developed countries.17 Hunter-gatherer PALs average 1.85, about the same as those of farmers or other people whose job requires them to be active.18 Therefore, the amount of energy a typical office worker spends being active on an average day has decreased by roughly 15 percent for many people in the last generation or two. Such a reduction is not trivial. If an average-sized male farmer or carpenter who spends approximately 3,000 calories per day suddenly switches to a sedentary lifestyle by retiring, his energy expenditure will decline by about 450 calories a day. Unless he compensates by eating a lot less or exercising more intensively, he’ll grow obese.

He had a theory that you had to start out by giving stuff away- preferably big stuff, worth, he figured, about a thousand dollars. At first, he said, people are discomfited by such a big gift. They try to make it up to you, by giving something big in return. And then you give them something else, and they give you something else, and pretty soon nobody is keeping score. As I described in the “Uncorked!” chapter, the economic background in 1970 was turning grim, and sales were weakening. I was concerned. And then, once again, Scientific American came to the rescue. Each September that wonderful magazine devotes its entire issue to a single subject. In September 1970, it was the biosphere, a term I’d never seen before. It was the first time that a major scientific journal had addressed the problem of the environment. Rachel Carson’s Silent Spring, of course, had been serialized in the New Yorker in the late sixties, so the danger to the biosphere wasn’t exactly news, but it could be considered alarmist news. The prestige of Scientific American, however, carried weight. In fact, it knocked me out. I Suffered a Conversion on the Road to Damascus Within weeks, I subscribed to The Whole Earth Catalog, all the Rodale publications like Organic Gardening and Farming, Mother Earth, and a bunch I no longer remember. I was especially impressed by Francis Moore Lappé’s book Diet for a Small Planet. I joined the board of Pasadena Planned Parenthood, where I served for six years. Paul Ehrlich surfaced with his dismal, and proved utterly wrong, predictions. But hey! This guy was from Stanford! You had to believe him! And in 1972 all this was given statistical veracity by Jay Forrester of MIT, in the Club of Rome forecasts, which proved to be even further off the mark. But I bought them at the time. Bob Hanson, the manager of the new Trader Joe’s in Santa Ana, which was off to a slow start, was a health food nut. He kept bugging me to try “health foods.” After I’d read Scientific American, I was on board! Just how eating health foods would save the biosphere was never clear in my mind, or, in my opinion, in the mind of anyone else, except the 100 percent Luddites who wanted to return to some lifestyle approximating the Stone Age. After all, the motto of the Whole Earth Catalog was “access to tools,” hardly Luddite.

In New England, subsistence farming, collective reproduction (communal living) and mutual use of the skills of the highly qualified intellectual labour-force via the substitution of capital-intensive re-production (hospitals, microwave ovens) by labour-intensive reproduction techniques (macro-biotics, yoga, bio-genetics, meditation, massage, walks and fresh air) were favoured by the agricultural structure, the climate (which imposes a certain discipline), the vicinity of metropolitan areas and low real estate prices. This constellation allowed a certain refusal of full-time intellectual work and the loosening of capitalist control over it. Under this aspect, the retreat to the countryside and the alternative lifestyle are forms of struggle by intellectual workers against capital. Capital has always had problems in controlling its intellectual labour force mainly because the profit returns are indirect and slow, particularly for disciplines like philosophy, literature and art.

Easy Ways To Make Your Favorite Foods Healthier
So you have decided that it is time to eat healthy. The only thing you know is that it's hard to change something that you have been doing all your life. The tips that you will find in this article will help you lead a nutritious life and to keep with it.
To avoid eating too much food at mealtime when dieting, use smaller plates, bowls and cups. It is instinct to fill up your plate so if you use smaller dishes, you will eat less food. Your mind will also let your stomach know you are full since you see a full plate when eating.
A great nutritional tip is to subscribe to a magazine devoted to nutrition. There are plenty of publications out there that offer interesting recipes, as well as, the latest information regarding health and nutrition. Having a nutrition magazine like this, can make cooking at home, a lot more exciting.
To stay away from sodas and other sugary drinks, you need to find an alternative. It is natural to have cravings for something sweet: why not try fruit juice? Or better yet, mix fruit juice and water. Buy some oranges and squeeze them yourself. You can do the same with a lot of fruits, and combine different kind of juices for flavor.
Try buying your fruits and vegetables at a farmer's market near you. Not only do locally-grown foods have a minimal impact on the environment, but they are also better for you, since small farms generally use less harmful chemicals. It's fun to walk around and sample all the delicious fruits and vegetables. Converse with the farmers to ensure you know exactly where and how the food was produced.
A good nutrition tip is to stay away from muffins and bagels when you're eating breakfast. Muffins and bagels tend to be high in sugar, and their glycemic index is pretty high. This means that they'll more than likely be stored as fat. Try eating oatmeal instead.
Salad is one of the best things that you can put into your body, and can limit the amount of fat that you consume. Instead of eating a hearty meal that is filled with calories and carbohydrates, eat a salad. This will go a long way in your quest for the perfect body.
If you are a big coffee drinker, try switching to decaf coffee. Decaf coffee is low in calories and can help you with your coffee cravings. If you need to add items to your coffee, such as sugar or milk, be sure to use the healthiest options available: for example, skim milk or sugar substitute.
Liven up your homemade omelet, by including fresh or frozen vegetables. Omelets have an irresistible attraction when they contain fresh or frozen vegetables. Vegetables add interest, as well as, texture, color, flavor and vital nutrients. Just slice some up, saute and then add them to the omelet just before you flip and close it up.
As you can see with these tips, switching over to a nutritious lifestyle is not as hard as it first seems. With the simple ideas presented in this article, you will be able to live a healthy and nutritious life. So no matter what kinds of foods you were eating before, if you follow these tips, you will succeed.

That is why, reflecting on that nauseating possible future, I am so grateful to Gorbachev for having done away with it. Not that meant to. He goofed, and that is precisely what I have to thank him for...He overlooked the fact that inviting everyone into the garden would not lead to deferential discussion with an elite, full of allusive hints and skirting around contentious matters. On the contrary, realizing that they now could speak out without getting beaten up, the denizens of the basement would climb up to the roof en masse and state bluntly that they had no water to drink and nothing to eat. The weight of their words, the reverberation of their stamping boots, and the indignation in their hearts would make everything come tumbling down.
I didn't regret that in the slightest. After all, what had I lost? Russia, my country, was still there. I still had my language, Tolstoy and Dostoevsky. Moscow and Kazan and Rostov. The army was still there, and the state. Even the bureaucrats were still where they had been. Kiev, Tallinn, and Riga did not vanish into thin air. Everything was as it had been. You could go to those cities if you wanted to. What had changed was that now you had a choice, you had freedom. What remains of that freedom in Putin's Russia today, which is trying to pretend it is the U.S.S.R., is in fact much more than there was then. You can now choose your profession, where you want to live, and your lifestyle. You no longer have to tie yourself in knots in a competition to see who can be the more two-faced in order to be allowed a trip abroad. You can just buy a ticket and go.
At this point someone almost always says, "Only nowadays you have to have enough money," and then reminisces about the social guarantees and equality in the U.S.S.R. In reality there was nothing of the sort. The social gulf between a collective farm worker and a member of the regional Communist Party committee was no less than the gulf we have now between an oligarch and one of today's many average workers. Housing and cars were, by an order of magnitude, less accessible than they are today. Sure, many people received accommodation for free, but to get it they had to wait twenty years. Of course, there is a huge difference in the ceilings for luxury and wealth then and now. In the U.S.S.R. the ceiling was on the first floor of a dacha in the "writers' village" outside Moscow. Now there is no ceiling; it has disappeared unimaginably far away, bursting through the roofs of French chalets and skyscrapers on the edge of Central Park in New York.
That, of course, is annoying But it does not alter the indisputable fact that although the mass of the population might indeed have been moved by grim tectonics, as Tolstoy would have it, it was nevertheless Gorbachev who started patching something up, but in the end hammered a nail in the wrong way and everything fell down. On its ruins, everyone was given the chance to live a decent life without the perpetual lying and hypocrisy. If, of course, they wanted it.
