Then she’d leave by 5:30 a.m. to start rounds at the hospital. My dad, an architect, had a contract for a building in New Haven, Connecticut, which was two hours and forty-five minutes away. It would’ve been easier for him to move to New Haven for the time of the construction of the building, but then who would have taken care of us when my mom was at the hospital at night? In my parents’ vivid imaginations, lack of at least one parent’s supervision was a gateway to drugs, kidnapping, or at the very minimum, too much television watching. In order to spend time with us and save money for our family, my dad dropped us off at school, commuted the two hours and forty-five minutes every morning, and then returned in time to pick us up from our after-school program. Then he came home and boiled us hot dogs as an after-school snack, even though he was a vegetarian and had never eaten a hot dog before. As she adds lemon juice, brown sugar, nutmeg, a pinch of salt, cinnamon, almond extract, maple syrup, then vegan butter and vegan milk and sifted almond and rice flour, she talks about how she worried about whitewashing her diet, about denying herself a fundamental part of her culture, and then about how others don't see her as authentically Korean since she is a vegan. I watch other videos by Joanne, soothed by her voice into feeling human myself, and into craving the experiences of love she talks of and the food she cooks as she does. I go to another profile, and watch a person's hands delicately handle little knots of shirataki noodles and wash them in cold water, before placing them in a clear oden soup that is already filled with stock-boiled eggs, daikon, and pure white triangles of hanpen. Next, they place a cube of rice cake in a little deep-fried tofu pouch, and seal the pouch with a toothpick so it looks like a tiny drawstring bag; they place the bag in with the other ingredients. "Every winter my mum made this dish for me," a voice says over the video, "just like how every winter my grandma made it for my mum when she was a child." The person in the video is half Japanese like me, and her name is Mei; she appears on the screen, rosy cheeked, chopsticks in her hand, and sits down with her dish and eats it, facing the camera. Food means so much in Japan. Soya beans thrown out of temples in February to tempt out demons before the coming of spring bring the eater prosperity and luck; sushi rolls eaten facing a specific direction decided each year bring luck and fortune to the eater; soba noodles consumed at New Year help time progress, connecting one year to the next; when the noodles snap, the eater can move on from bad events from the last year. In China too, long noodles consumed at New Year grant the eater a long life. In Korea, when rice-cake soup is eaten at New Year, every Korean ages a year, together, in unison. All these things feel crucial to East Asian identity, no matter which country you are from.

I have tried to get her to wait until she's eaten something, but she gets very scratchy when I do that, so these days I tend to give in straightaway and pour her a small glass from the carton in the fridge. You choose your battles. Sheba is a bit of a snob about drink and she keeps whining at me to get a grander sort. 'Something in a bottle, at least', she says. But I continue to buy the cartons. we are on a tight budget these days. And for all her carping, Sheba doesn't seem to have too much trouble knocking back the cheap stuff.

Pay attention, too, to the combinations of foods in traditional cultures: In Latin America, corn is traditionally cooked with lime and eaten with beans; what would otherwise be a nutritionally deficient staple becomes the basis of a healthy, balanced diet. (The beans supply amino acids lacking in corn, and the lime makes niacin available.) Cultures that took corn from Latin America without the beans or the lime wound up with serious nutritional deficiencies such as pellagra. Traditional diets are more than the sum of their food parts.

Then he sends me a picture of his face, frowning, and says, No, you don’t understand. Then another picture, closer, just his eyes. I REALLY like sweet potato pie. A series of pictures comes in several-second intervals. The first is a triangular slice of pie in Wallace’s hand. Then Wallace holding that slice up to his face—it’s soft enough to start collapsing between his fingers. The next one has him stuffing the slice into his mouth, and in the final one it’s all the way in, his cheeks are puffed out like a chipmunk’s, and he’s letting his eyes roll back like it’s the best thing he’s ever eaten. I purse my lips to keep my laugh in, but my parents are fine-tuned to the slightest hint of amusement from me, and they both look up. “What’s so funny, Eggs?” Dad says. “Nothing,” I reply. Nothing makes a joke less funny than someone wanting in on it, especially parents. Wow, I say to Wallace. You really like sweet potato pie. He sends one more picture, this one with him embracing the pie pan, gazing lovingly at it. We’re to be married in the spring. An actual laugh escapes me. If you take Alaska’s genetic code and you add her life experiences and the relationships she had with people, and then you take the size and shape of her body, you do not get her. There is something else entirely. There is a part of her greater than the sum of her knowable parts. And that part has to go somewhere, because it cannot be destroyed. Although no one will ever accuse me of being much of a science student, one thing I learned from science classes is that energy is never created and never destroyed. And if Alaska took her own life, that is the hope I wish I could have given her. Forgetting her mother, failing her mother and her friends and herself—those are awful things, but she did not need to fold into herself and self-destruct. Those awful things are survivable, because we are as indestructible as we believe ourselves to be. When adults say, “Teenagers think they are invincible” with that sly, stupid smile on their faces, they don’t know how right they are. According to his dossier, Ivan Denisovich Shukhov had been sentenced for high treason. He had testified to it himself. What sort of mission neither Shukhov nor the interrogator could say. So it had been left at that- -a mission. Shukhov had figured it all out. If he didn't sign he'd be shot If he signed he'd still get a chance to live. So he signed. But what really happened was this. In February 1942 their whole army was surrounded on the northwest front No food was parachuted to them. There were no planes. Things got so bad that they were scraping the hooves of dead horses--the horn could be soaked In water and eaten. Their ammunition was gone. So the Germans rounded them up in the forest, a few at a time. Shukhov was In one of these groups, and remained in German captivity for a day or two. Then five of them managed to escape. They stole through the forest and marshes again, and, by a miracle, reached their own lines. A machine gunner shot two of them on the spot, a third died of his wounds, but two got through. Had they been wiser they'd have said they'd been wandering in the forest, and then nothing would have happened. But they told the truth: they said they were escaped POW's. POW's, you fuckers! If all five of them had got through, their statements could have been found to tally and they might have been believed. But with two it was hopeless. You've put your damned heads together and cooked up that escape story, they were told. Deaf though he was, Senka caught on that they were talking about escaping from the Germans, and said in a loud voice: "Three times I escaped, and three times they caught me." Senka, who had suffered so much, was usually silent: he didn't hear what people said and didn't mix in their conversation. Little was known about him--only that he'd been in Buchenwald, where he'd worked with the underground and smuggled in arms for the mutiny; and how the Germans had punished him by tying his wrists behind his back, hanging him up by them, and whipping him. A normal woman would call the police at this point. But a normal woman would never have been paranoid enough in the first place to pretend to go to the toilet, only to sneak out of the fire escape and spy through a window to watch what her date does when he has five minutes alone with her drink. Nope. A normal woman would have gone to the loo, done a pee and topped up her lipstick. Or she’d have texted a friend about her hot date, feeling giddy with hope and excitement. Now, let’s think about what would have happened to a normal woman. A normal woman would have headed back to her date, smiling prettily, before sitting down and drinking her drugged drink. Then, a short while later, that normal woman would have started feeling far more drunk than she normally does after just a couple of drinks, but she’d probably blame herself. She’d wonder if maybe she’d drunk too much. Or maybe she’d blame herself for having not eaten earlier in the day because she didn’t want to look fat in her dress. Or maybe she’d blame herself because that’s just what she does; she blames herself. And then, just as she started to feel woozy and a bit confused, her date would take her outside for some fresh air and she’d be grateful to him. She’d think he was caring and responsible, when really, he was just whisking her out of sight, before she started to look less like she was drunk and more like she’d been drugged. And then the next thing she’d know, she’d be staggering into the back of a cab and her date would be asking her to tell the driver where she lived. And when she’d barely be able to get the words out and her date made a joke to the driver about how drunk she was, she’d feel small and embarrassed. And then she’d find herself slumping into her date’s open arms, flopping against his big manly body, and she’d feel grateful once more that this man was taking care of her and getting her home safe. And then, once the taxi slowed down and she blinked her eyes open and found they’d pulled up outside her flat, she’d notice in a fleeting moment of clarity that when the driver asked for the fare, her date thrust two crisp ten-pound notes towards him in a weirdly premeditated move, as though he’d known this moment was going to happen all along. As though he’d had the cash lined up, the plan set, and she’d feel something. Something. But then she’d be staggering out of the taxi, even sloppier than when she got in, and her legs would be buckling, and she’d cling to her date for support, her make-up now smudged, her eyes half-closed, her hair messy. She’d look a state and he’d ask her which flat was hers, and she’d walk with him to her front door, to the flat where she lives alone. To the place that’s full of books and cute knick-knacks from charity shops and colourful but inexpensive clothes. She’d unlock her front door, her hand sliding drunkenly over the lock, and she’d lead him into the place she’s been using as a base to try to get ahead in life, and then he’d look around, keen-eyed, until he spotted her bedroom and he’d draw her in. And then all of a sudden he’d be in her bedroom and she wouldn’t be able to remember if she’d asked him back or not or quite how this happened, and it would all be moving so fast and her thoughts would be unable to keep up – they’d keep sliding away – and he’d be kissing her and she’d be unsure what was happening as he pulled off her dress and she’d wonder, did she ask for this? Does she want this? Has she been a ‘slut’ again? But the thoughts would be weak, they’d keep falling away and he’d be confident and he’d be certain and he’d be good-looking and he’d be pulling off her bra and taking off her knickers. He’d be pushing himself inside her. The next day, he’d be gone by the time she woke up. She’d be blocked, unmatched...

If you already hate tofu, the term "tofu skin" is probably an effective emetic. But this stuff is addictive. You start by making fresh soy milk. I'm not going to soft-pedal how much work this is: you have to soak, grind, squeeze, and simmer dried soybeans. The result is a thick milk entirely unlike the soy milk you get in a box at Whole Foods in the same way Parmigiano-Reggiano is unlike Velveeta. Then, to make tofu skins (yuba in Japanese), you simmer the soy milk gently over low heat until a skin forms on the surface, then pluck it off with your fingers and drape it over a chopstick to dry. It is exactly like the skin that forms on top of pudding, the one George Costanza wanted to market as Pudding Skin Singles. Yuba doesn't look like much- like a pile of discarded raw chicken skin, honestly. But the texture is toothsome, and with each bite you're rewarded with the flavor of fresh soy milk. It's best served with just a few drops of soy sauce and maybe some grated ginger or sliced negi. "I'm kind of obsessed with tofu skins right now," said Iris, poking her head into the fridge to grab a round of yuba. Me too. In Seattle, I had to buy, grind, boil, and otherwise toil for a few sheets of yuba. In Tokyo, I found it at Life Supermarket, sold in a single-serving plastic tub with a foil top. The yuba wasn't as snappy or flavorful as homemade, but it had that characteristic fresh-soy aroma, which to me smells like a combination of "healthy forest" and "clean baby." Iris and I ate it greedily. (The yuba, not the baby.) Yuba isn't technically tofu, because the soy milk isn't coagulated. Japanese tofu comes in two basic categories, much like underpants: cotton (momen) and silken (kinugoshi). Cotton tofu is the kind eaten most commonly in the U.S.; if you buy a package of extra-firm tofu and cut it up for stir-frying, that's definitely cotton tofu. Silken tofu is fragile, creamier and more dairy-like than cotton-tofu, and it's the star of my favorite summer tofu dish. Hiya yakko is cubes of tofu, usually silken, drizzled with soy sauce and judiciously topped with savory bits: grated ginger or daikon, bonito flakes, negi. It's popular in Japanese bars and easy to make at home, which I did, with (you will be shocked to hear) tons of fresh negi.

Thea set the sliced cheese in his palm, realizing as she did that she was a little more buzzed than she'd intended to be, because she placed the cheddar on Leo's warm skin as delicately as if it were a piece of jewelry, a hollowed, painted eggshell. He laid the cheese over the eggs, then scattered a thick layer of chorizo coins over the cheese, and finally a handful of fresh sliced jalapeño. "And we're done," Leo said. He paused, looking around frantically until Thea realized that he had forgotten where the plates were kept. She reached beneath the prep counter and handed him two. "Thanks," he said. He ran a spatula down the center of the eggs and lifted a golden orange pillow onto each plate, dropping yet more paprika-scented oil onto the stove and the counter.

Talk about what’s most important to her—a clean kitchen? a cleared desk?—and do that first. Get home on time. You’re like a breath of fresh air for mother and baby both. Helping out means helping emotionally, too. Remind her how much you love her, how wonderful she looks, and what a great job she’s doing. There she is, holding your child. She really is beautiful, isn’t she? Remind her that this part is temporary. Most women feel it takes at least six weeks to start to have a handle on this motherhood thing. Life will settle down. But it takes a while.

If we didn’t know any better, we might assume from this that the removal of a rat’s ovaries makes it a glutton. The rat eats too much, the excess calories find their way to the fat tissue, and the animal becomes obese. This would confirm our preconception that overeating is responsible for obesity in humans as well. But Wade did a revealing second experiment, removing the ovaries from the rats and putting them on a strict postsurgical diet. Even if these rats were ravenously hungry after the surgery, even if they desperately wanted to be gluttons, they couldn’t satisfy their urge. In the lingo of experimental science, this second experiment controlled for overeating. The rats, postsurgery, were only allowed the same amount of food they would have eaten had they never had the surgery. What happened is not what you’d probably think. The rats got just as fat, just as quickly. But these rats were now completely sedentary. They moved only when movement was required to get food.

She drove back home with a smile, knowing she’d done a great job that day. “They need me! Otherwise, who else would have caught the slip hazard by the trash? No one, not even my manager!” she would say before bed. She was naturally helpful. It was tragic to see that kind employee, happy like a little child, be so great at some stupid shop, when in her pumped a heart large enough to fuel the future, a forest, or a country. There was no structure of life, or invention yet created, whose mechanism could righteously allocate the innocence and love embedded in the warm blood of a human being. There deserved to be. She was sacred. But the world, decidedly corporate, had seized her, eaten her up, devouring what was left of the lively.

What is diabetes? The term diabetes refers to a group of diseases that affect the way your body uses blood glucose, commonly called blood sugar. Glucose is vital to your health because it’s the main source of energy for the cells that make up your muscles and tissues. It’s your body’s main source of fuel. If you have diabetes — no matter what type — it means you have too much glucose in your blood, although the reasons why may differ. And too much glucose can lead to serious problems. To understand diabetes, it helps to understand how your body normally processes blood glucose. Processing of blood glucose Blood glucose comes from two major sources: the food you eat and your liver. During digestion, glucose is absorbed into your bloodstream. Normally, it then enters your body’s cells, aided by the action of insulin. The hormone insulin comes from your pancreas. When you eat, your pancreas secretes insulin into your bloodstream. As insulin circulates, it acts like a key, unlocking microscopic doors that allow glucose to enter your cells. In this way, insulin lowers the amount of glucose in your bloodstream and prevents it from reaching high levels. As your blood glucose level drops, so does the secretion of insulin from your pancreas. Your liver acts as a glucose storage and manufacturing center. When the level of insulin in your blood is high, such as after a meal, your liver stores extra glucose as glycogen in case your cells need it later. When your insulin levels are low, for example, when you haven’t eaten in a while, your liver releases the stored glucose into your bloodstream to keep your blood sugar level within a normal range. When you have diabetes If you have diabetes, this process doesn’t work properly. Instead of being transported into your cells, excess glucose builds up in your bloodstream, and eventually some of it is excreted in your urine. This usually occurs when your pancreas produces little or no insulin, or your cells don’t respond properly to insulin, or for both reasons. The medical term for this condition is diabetes mellitus (MEL-lih-tuhs). Mellitus is a Latin word meaning “honey sweet,” referring to the excess sugar in your blood and urine. Another form of diabetes, called diabetes insipidus (in-SIP-uh-dus), is a rare condition in which the kidneys are unable to conserve water, leading to increased urination and excessive thirst.
