One can picture it in animal species, those million salmon mating and spawning before dropping dead, or the billions of herrings that turn the seawater white with their sperm and eggs and cover the coasts of the northeast Pacific for hundreds of miles. But trees are very different organisms, and such displays of overripening feel out of character for a plant and more akin to our own species, with its uncontrolled, devastating growth. Shaking, he moved toward the curtain, gagging on the sickly smell of rust and roses, feeling the thin nylon glide between thumb and palm as he pulled it back to reveal his darkest nightmare and deepest regret. He could see the crimson water now, blood bubbles gliding over its surface and clinging to the legs dangling over the tub‟s edge. When he‟d pulled the curtain completely away from the tub and around to its opposite side, he saw her face. Her eyes were closed and he saw that her lids were bruised and purple against the translucent paleness of her face, drained completely dead white under the makeup she‟d brushed on before she‟d died. Staggering by the sight of her, he knelt by the tub and extended one shaking hand to touch her cheek. It all seemed as if he‟d walked into a horror film and once again he needed to prove to his mind that this wasn‟t real. His hand shook as he lifted it nearer to her flesh, waiting for the corpse, the supposedly dead and buried to move. He touched his quivering fingers to her face, feeling its claylike reality. The sensation caused an immediate shudder of revulsion and he fought not to vomit. Even as the moment came, the sight of her moving in the water startled him and he jumped away from the tub. It wasn‟t an obvious movement at first, only soft breaths moving in and out of her nostrils, but then her chest rose and fell with it and he quaked, feeling unstable where he knelt on the floor. Her eyes opened next and he felt the blood fall out of his face, wanting to scream but too afraid he would cause her to take some action, to reach out and touch him, proving well and forever that he was indeed insane. Scream and you might as well slit your own throat. He swallowed the scream like a rock and stared as her eyes moved slowly in their sockets, locking on him. Slowly, as if she‟d lost control of her muscles, she rose from the tub and looked down at him, smiling. Blood water slid down her bare body, over her neck, down her back and the smooth ridges of her breasts, to slip slowly down her thighs and down over her calves. A puddle spread on the floor, and as it extended toward him he struggled to his feet, skittering away from it. As he watched it spread, he shivered, weak as he started to cry frantic, horrified tears. Breaking down, he looked back up at her face and slipped to the floor once more, his knees incapable of sustaining his own weight. The smile grew wider as she strode to his shivering form, thrown on his side and struggling to rise. The blood water seeped into his clothes, making him sick, a drop of it trickling along the lobe of his ear and into it. And then she leaned down, holding those dim, stained curls of auburn out of her face and tucking them behind her ear. Her lips parted, blue beneath the strong crimson red of her lipstick, and she spoke into his ear with the chill breath of the dead. His eyes grew wide and horrified as she spoke, the hair on his neck rising, sending a maddening shiver of fear through him. “I‟ve returned, Raven.” She whispered “And I want what is mine.” The last thing he saw before his mind, finally, thankfully, shut down was her face in front of his. They were pursed for a kiss.

The shooting pain of instant frostbite so startled me that I lost my grip on the glove in my left hand, which the wind grabbed—whoooooosh—and sent into outer space. There was another pair of gloves in the pack on my back. But they might as well have been under my bed at home. In such a storm, there was no way I could take off that pack, put it down and rummage through it. The wind was strong enough to lift me bodily off the ground and drop me, which at one point it did. I didn’t have the time, or presence of mind, to consider my exposed right hand and forearm’s probable fate, or how I might fare in the future as a one-handed pathologist. I did reinsert my hand under my coat, a frozen Napoleon. Life and death were now the issue for all of us, with the odds against the former lengthening each moment.

He wanted to tire me out then drop 20 stone on top of me. He’s got the right idea; I’m knackered. It’s dead quiet except for faint music from the fair. No one was cheering encouragement, just a ring of brown faces watching us both with cold eyes. Kenny’s looking worried. Fuck it. I shouldn’t have looked round; he’s caught me with a right-hander full in the side of the head. My head’s ringing, I’ve gone deaf on that side and now I’m really pissed off. This has gone on for long enough. I had to take a risk. I turned my back on him, raised my arms in Kenny’s direction and said, ‘When are you going to ring the fucking bell?’ At the same time, I spun round and, as I’d hoped, the big animal was so surprised at me turning my back he dropped his arms. You never really think about it, the complex mechanics that go on inside a human body in order to make it function. The incomprehensible language the body has to speak to itself in order for you to have the thought to take a step forward, and for your feet to carry out the idea, all within the space of a fraction of a second. It’s beautiful and amazing and miraculous, but it’s also fragile. Anything can disrupt it, and then, the machinery stalls and breaks down, never quite working in the same way again. You can trip on an uneven walkway and never be able to put weight on one knee after that. You can become so ill that your body is simply unable to maintain the level of energy that it used to, even if you get better. Or, you can have a problem in your brain that no one knows about until it suddenly decides to make you drop dead in the street one day. One little hiccup is all it takes.

The thing about processed foods is that you’re starting with something that’s healthy in its natural state, and you are modifying it. As you progressively change that food, it becomes less and less nutritionally valuable. At some point, the food that started healthy becomes poison. If you go back one hundred years, this simply wasn’t a part of our diet. Take a moment to think about that: the sheer volume of man-made chemicals we’re putting into our bodies, and the unrealistic expectation that our microbiota will be able to process and eliminate them without any damage. It’s a shock that we don’t drop dead from this stuff and a total testament to the adaptability of our microbiome, even if this is likely contributing to mass bacterial extinction. It comes as no surprise that every 10 percent increase in consumption of ultra-processed foods is associated with more than a 10 percent increased risk of developing cancer and a 14 percent risk of early death. So what happens when you hit American levels of consumption—50 or 60 percent? I don’t think that every food additive is harmful in the long term, but we don’t know and likely will never know. There’s only one foolproof way to protect yourself from the potential poisons in our diet—get rid of them!

The hop flavor and aroma are more variable, with some versions having no hop character, while others have a fairly noticeable citrus or floral flair. Even when the hops are more prominent, they should not be overwhelming, and the hop bitterness should be balanced. The rye version of this style has a slight spicy, peppery note from the addition of rye in place of some or all of the wheat. The key mistake many brewers make is in assuming that American wheat beer should be similar to German hefeweizen. However, this style should not have the clove and banana character of a hefeweizen. This beer should not be as malty (bready) as a German hefeweizen, either, so all-grain brewers will want to use a less malty American two-row malt.
